Thanks to the wonderful folks who posted their crockpot recipes here, I have a roast cooking away in mine. (thank you to whoever posted the cranberry sauce/brown sugar recipe! my house smells divine!:thumbsup2 ) I would like to make roasted potatoes (my DH's fave) but i have never had any success. :sad2: Do I roast them at high heat for a short amount of time or low heat for longer? My grandmother used to make them PERFECT ..kind of crispy on the outside but soft and sweet on the inside. :love: any suggestions to help me master this simple:confused3 dish?

My grandmother roasted hers in solid shortening, i.e. Crisco. I haven't been able to duplicate hers with healthier oils.

I slice the potatoes in half or quarters, boil them in heavily salted water for 10 minutes, drain them and then dry them off completely on paper towels. I drizzle a cookie sheet with oil and heat it up in a 350° oven. Then I throw the potatoes in, toss them in the hot oil, and bake them for about an hour. When they are done, season to taste. Sometimes I toss them in crushed garlic before putting them in the oven.

I pretty much use the same method as in the Ina Garten recipe, but I first toss mine in vegetable or olive oil, then in parmesan cheese and Montreal steak seasoning before baking. mmmmmmmmmmm.....::yes::

Roasted Potatoes

INGREDIENTS
2 pounds red potatoes, cut into quarters
2 tablespoons vegetable oil
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried rosemary, crushed
DIRECTIONS
Preheat oven to 450 degrees F (250 degrees C).
Place potatoes in a large roasting pan and toss with oil, salt, pepper, and rosemary until evenly coated. Spread out potatoes in a single layer.
Bake in preheated oven for 20 minutes, stirring occasionally. Serve immediately.
