<font face="comic sans ms"> I have to eat black-eyed peas today for luck. I'm not even superstitious, but I do like family traditions. So, I will make my mom's Hoppin' John recipe. Here's how:
3 strips bacon
1/3 cup chopped onions
1 1/2 cups canned blackeyed peas
1 1/2 cups cooked rice
1 cup diced ham
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Place bacon in 1 1/2 quart microwave-safe dish. Cover with paper towel. Cook in microwave oven on full power for 2-3 minutes or until crisp. Remove bacon. Drain all but 1 Tablespoon of bacon drippings from dish. Add onion ; return to oven. Cook on full power for 2 minutes or until onion is tender. Stir in remaining ingredients except bacon. Cover and cook at full power for 3-4 minutes or until hot. Crumble bacon and sprinkle over top. Serves 4-6.
Every new year should start off with a recipe that contains both bacon and ham. It's a great way to start off with healthy eating habits. ;)
