My friend's mom made this artichoke casserole that was so good. I haven't had it forever. I'm going to the store tomorrow to get the stuff.

1/3 c finely chopped onion
3 cloves minced garlic
2 tablespoon olive oil
2 whole eggs
2 egg whites
1 14 ounce jar/can artichoke hearts, drained and roughly chopped
1/2lb shredded swiss cheese
1/4 c matzo meal
2 T fresh minced parsley
salt and pepper to taste
3 T grated parmesan cheese

Preheat oven to 325°

Saute onion and garlic in olive oil over low heat until translucent, set aside.

Beat eggs and egg whites in bowl. Fold onion & garlic, then mix in the rest of the ingredients.

Pour into a greased 8x8 baking dish and sprinkle top with parmesan.

Bake 30-35 minutes, or until a knife comes out clean. You can eat it warm spooned onto plates or let cool and cut it into squares.

Have to ask though, what's matzo meal? Is it like a corn meal product?

It is kind of quiche like. Matzo is an unlevened cracker/bread. When crushed into meal it is similar to crushed saltines.
