If/When they release a discount (free dining), I hear they release it first to Disney Visa cardholders. I am considering opening a Disney Visa account now so I can be prepared. However, is it really worth it? Do you have to prove you are a cardholder when you book with the discount? If you wait a few days until it is released to the public, will it be too late to get the resort/room I want?

The Visa thing is not really a seperate discount, you just get in a couple days earlier so the selection of resorts, ADR's etc are better.

Last year when I booked my Disney Visa special, I had to put the deposit on my Disney Visa card. It didn't matter how I paid the balance though. As far as availability, I booked before the general public and I did not get my resort choice - and that was just for the free ticket upgrade promotion. If you are looking for the free dining promotion I am sure that the available rooms go really fast.
