My husband and I are looking to spend a night near Universal. From there, we are going to the Swan and Dolphin for a conference and will not need a rental car while there. What is going to be the best/cheapest way for us to get from the airport to an off-site hotel near Universal and back to the Dolphin?
Personally, I would just use a cab.

If you don't want a cab, but would prefer a towncar service, we have used the following, all with success. I believe they all offer rates for R/T between Disney and Universal right on their websites:

Personally, even though Florida Tours is a board sponsor, they were my least favorite of the three.

I tell everyone to rent the car even if it costs more (gas, rental fee, parking).
I assume you'll be doing the Disney Magic Express to get from the Disney hotel to the airport, is that why you don't want to rent the car?

Limo would be the best idea if you don't want to rent the car. If you do decide to stay onsite at Universal, then it's best to put that part of your trip at the end after Disney, because once you go with FOTL, you'll be spoiled. Otherwise keep an open mind, because many Disney people drive over to Universal for a day, then come in here saying it was just ok or they didn't like it. They arrive at 11am when it's most crowded and find any excuse to say they had a bad time. That happens because these people don't stay at a Universal hotel to get the full experience, and they show up late. When you go, try to get there at 8am and you'll have park to yourself for 2 hours.
