Best day to go and best rides at US

First time for my husband and I to Universal Studios this december. We are thinking of going on monday december 14. What is the best day to go, and why? And what are your three favorate rides at Universal Studios?

Monday is a good day because it is the slowest then. And my three favorite rides are:
1. MIB
2. BTTF
3. Jaws
