Can anybody please advise on how busy the parks are in the first three weeks of July in the evening. We are staying on site 6th-8th and 13th-17th and were hoping to maybe go offsite for dinner and then maybe do a few rides when we get back.
Also, are there any restaurants offsite within walking distance or do we need to take jump in the car? Thanks in advance:) .

Most resturaunts offsite are things like McDonalds, and I guess they are within walking distance. But for the most part they're quicker if you get in the car. The crowds in july wont really matter will they? You'll have express.

We have had to queue 20-30 minutes in the past, using express. We have never tried July evenings before and I was wondering if we would could be waiting the same amount of time or is it likely be a shorter wait? If anybody advises that it will be the same kind of waiting period, we shall make more of the mornings and less of the evenings. As we have 10 nights at Disney with all the early mornings that entails, I was hoping to get a few lie-ins at Universal.

We had Express also and found that the evenings weren't any worse/better than the daytime hours. It was all wonderful! Our waits were never more than 10 minutes, at the most. I think you'll be fine, either way.
Yes, you'll need to jump in the car to go any restaurants off-site. There are many that are close (Golden Corral is just one that comes to mind), but not close enought to walk to...
Have a great trip! We'll be there at the same you are (6th thru 13th)!

With the changes to express pass, you'll have no problem. Why? Because people can't get express passes during the day to use at night. The people who buy the express booklets will probably use the passes during the day. That leaves only hotel guests going thru the lines at night.
Directly across the street from the parking garage is TGIFridays, The Ale House, Kobe Japanese, Burger King, and Golden Corral. The Ale House is worth the visit, great food, usually packed between 8-10pm. That's rush hour for the restaurants, try going earlier, or they'll give you a beeper and you'll have to wait. You could walk over, but it will take you about 20 minutes.
