which of these dates would be the best to do each park?? how are the crowds??

During the week it doesn't really matter. It is only weekends that many of the locals (myself included) converge on the parks. You should be fine with any of those days at whatever park you choose.

I would go to Busch Gardens 11/19 and SeaWorld 11/20. I would assume the further away from Thanksgiving the better.
