Years ago a co-worker made a cake using Pistacchio pudding...it was so good, I still remember it!
Does anyone know the recipie?

My mom makes a pistachio cake with the pudding in the cake and in the Cool Whip frosting. I'll have to see if I can get her to email me the recipe.

My sister makes one with the pudding and chocolate chips in a bundt shape. I can get that recipe if you want it. :)

Oh, I forgot to mention my mom's is a bundt cake too, but I'm sure you could do a round layered or 9x13 if you wanted to.

Here's the recipe I use:

1 white cake mix
1 pkg pistachio pudding
3 eggs
1 c oil
1 c 7-up (room temperature)

mix and bake at 350 degrees for 50 minutes in greased, floured bundt pan

1 pkg pistachio pudding
1 envelope Dream Whip
1 1/2 c cold milk

Whip for 5 minutes. You can use the frosting to frost the outside, or cut layers and put it between, or mound it in the middle of the bundt.

Store in refridgerator.

It's been a long time since I've made it and unfortunately the size of pudding box wasn't written in my directions. I'm guessing small?

I do remember it was a bundt cake...believe it or not I have been married 18 yeras and don't own a bundt pan!! :confused3 :rotfl:

I finally got the recipe from my mom.

Pistachio Cake

1 white cake mix
5 eggs
1/2 cup vegetable oil
1/2 cup milk
1/2 cup water
3 boxes intant pistachio pudding (small boxes)
9 oz. Cool Whip
1 cup cream

With an electric mixer, combine cake mix, eggs, and oil. Add water and 2 boxes of pudding. Mix well. Pour into bundt pan, bake at 350° for 50 minutes. Don't overbake. Very important! - cool completely before frosting.

Fold together Cool Whip, 1 box of pudding, and cream. Not sure why, but she said to let the frosting stand for 15 minutes before putting it on the cake. Refrigerate cake until ready to serve.
