View Full Version : It's zucchini season, share your recipes

I have been fortunate to receive some zucchini from a friend's garden.

Please share your recipes for zucchini, yellow squash, tomatoes, and anything else that the garden is providing in abundance. I would especially like a low fat recipe for zucchini bread that still tastes good.

Here's what I've been making:

Italian Zucchini

2 cups thinly sliced zucchini
1 medium onion, thinly sliced
1 clove garlic, pressed or minced
1/2 medium green pepper, chopped
1 tablespoon olive oil
1/2 teaspoon basil leaves
1/2 teaspoon salt
Dash pepper
1 medium tomato, peeled if desired, cut into 1/2 inch chunks

Combine all ingredients, except tomatoes in 2 quart casserole.
Cover.
Microwave at High 4 to 5 minutes, or until zucchini is tender-crisp. Stir in tomatoes. Recover; microwave at High 1 minute to 2 1/2 minutes, or until tomatoes are tender. Serves 4.

Zucchini and Potato Bake
1 medium zucchini, quartered and cut into large pieces
2 medium potatos, peeled and cut into large chunks
1/2 medium red bell pepper, seeded and chopped
1/2 clove garlic, minced
1/4 cup dry bread crumbs
2 tablespoons olive oil
paprika to taste
salt to taste
ground black pepper to taste

1. Preheat oven to 400 degrees F.

2. In a medium baking pan, toss together the zucchini, potatoes, red bell pepper, garlic, bread crumbs, and olive oil. Season with paprika, salt, and pepper.

3. Bake 1 hour in the preheated oven, stirring occasionally, until potatoes are tender and lightly brown.

Yummy Zucchini!


I love just putting some margarine in a sauce pan with parmesan cheese. Put the zuchinni on top of it. and cook until soft. turn over cook the other side.
The kids love it!

I like to cut zuccini and squash lengthwise and brush both sides with EVOO and put them in the George Foreman Grill or on the outside grill if weather permits. I cook them just a few minutes, so they are still kind of crisp. I also add grill seasoning for flavor. YUMMO! :thumbsup2
