Anyone have a good cookie recipe that I can make ahead of time? I'd like to make some cookies for vacation on Saturday but don't want to make them the night before, I'll be busy packing. Something I can make tonight or tomorrow and bake and put in the freezer? Or make the dough ahead and pop them in the oven Friday night?

I just make my regular cookie dough (choc. chip, p-nut butter, sugar, etc.) and freeze that. I use my cookie scoop and scoop them out on cookie sheets, pop 'em into the freezer until firm them plop 'em into a gallon freezer bag. When you are ready to bake just pull out how ever many you need and bake as you usually do. It will take a bit longer than usual, but I've never had to adjust my oven temp. Good luck!

OT, but if you like to cook/freeze in advance, check out www.30daygourmet.com :)

Cookies from cake mixes! Super Easy! (http://www.disboards.com/showthread.php?t=681495) People have frozen the cookies &/or the dough ahead of time. :thumbsup2 Since you drop the cookies on the sheet by the spoonful, they take no time at all.

I do this with my Christmas cookies. It sure saves time! Love the freeze method!
