We aren't going to the parks, but thought we could visit the Disney Resorts, are there any fun things to do at any of the Resorts?
Some time of Family riverboat cruise or anything else fun?

You can rent water craft at alot of the resorts, here is a list from the WDW website:
Choose from a fleet of motorized and non-motorized craft that are available for rent. Sea Raycer by Sea Ray® boats, sailboats, SunTRACKER pontoon boats, Boston Whaler Montauk boats*, pedal boats, kayaks and canoes are some of the items available at various Walt Disney World® Resort hotels.

Fort Wilderness has carriage rides, you can go horseback riding, there are pony rides for the younger children..they use to have a petting zoo but I am not sure if they do any longer. POR/POFQ has horse drawn carriage rides and I think WL does too. POR has a fishing hole, for catch and release fishing. Alot of the resorts have bike rentals
