Hmm, plenty there to choose from, first of all I have never been to any of these. However , I have researched a bit as we have booked 3 ADRs for next month.
Cape May & Crystal Palace Character Breakfast's and Whispering Canyon Dinner.
Of the 3 breakfast restaurants you list all were on our shortlist and from what I know about them they are all good - it probably comes down to which characters you want.
I have heard mixed reviews about Whispering Canyon but really like the look of the menu there so that gets a thumbs up from me too.

Hi
I like Liberty Tree dinner. The food was really nice. We also like Garden Grill. If there are more than two of you, you have your own table booth and the characters comes upto you. Garden Grill is more private in my opinion. Plus the resturant is above the Land Ride here is a link http://disneyworld.disney.go.com/wdw/dining/diningDetail?id=GardenGrillDiningPage

We though CG really over-rated and food very mediocre with children tearing around and the noise was unbelievable.
I'm not a fan of Chef Mickey's either, but the rest look good. Do consider Jiko's and Cape May.
