If we wanted to eat dinner at Animal Kingdom Lodge and were staying offsite, can we do it now? Do we drive in and show them our PS?

Yes, you can have dinner at Animal Kingdom Lodge no matter where you are staying (on or off-site). So long as you have a Park-Hopper or Annual Pass, you have unlimited access to the Disney transportation system. This would include a bus to the AK lodge from one of the theme parks (whichever you happen to be visiting that day).

I never drive in WDW, but so far as I know (someone else can clarify this) you can get a 3-hour or so parking pass at the AK Lodge (or other Disney resorts) for dinner.

We have stayed offsite and eaten at many of the resorts. Just drive up to the gate and give them your PS number. They've always waved us thru, every time, without checking and without a time limit for parking. However, we always go in May or September when the crowds are lower. They may very well check to make sure of your PS, so be sure you do have one. We enjoy having dinner and checking out the resort and grounds.
