I have an HP 2210xi all in one. There is one the borderless 4x6 photo, Hagaki card, A6 card and user defined paper size. What do I do for the 8 1/2 x 11 borderless signs that I want to make for our ship's door?

I don't think that your printer will print a borderless 8 1/2x11. I bought a new printer for the downstairs computer so that I could print borderless pictures in more sizes.
