All I can say is YUM!!!!

1/2 stick butter
small onion, chopped
1/2 to 1 bell pepper chopped (optional, to taste)
1 can beef consomme'
1 cup raw rice
1 small can mushrooms


Melt butter and saute' onion & pepper until tender, mix all remaining ingredients together with onion and pepper. Pour in baking dish and bake at 375 degrees until tender.

I make a recipe that is similar, but with College Inn chicken, instead of beef. The original recipe called for 1 FULL stick of butter. I never make it that way - even though it's wonderful with all that butter!

Rice Pilaf

1/2 stick butter
1 clove garlic, minced
1 cup rice, uncooked
1/2 c Tri-color Orzo
1/2 cup almonds
2 1/2 cup chicken broth (College Inn or Swanson or make your own with bouillon)

Melt butter, add onion & garlic. Stir over low heat a few seconds, then stir in nuts. Add rice & orzo; stir until well-coated. Add broth & bring to a boil. Continue stirring & lower heat until it starts to bubble gently. Cover & cook 25 minutes.

Ohh! Both of these sound good. I'm a carbo lover-- I love rice and pasta and bread all the time.
