Planning a Disney Trip for May, just me and my fiance. Anything we should definitely check out? I mean the parts of the park or certain attractions you may feel are overlooked:).

If you have the time, I recommend a spot of resort-hopping, checking out the if-only hotels (If only I had the money....) Definitely check out the Boardwalk one evening, watch Wishes from the beach at GF,visit DTD at night.
