Probably throw some chicken or burgers on the grill--supposed to be beautiful today, but rain tomorrow--need to head to the store so I can cook up that yummy sounding roast tomorrow!

I have an awful headache after spending the day in the sun (it was wicked hot here) putting up our new tent. So I don't feel like doing much cooking. I'm making my version of McDonald's Filet of Fish sandwiches and broccoli. Besides DS10 told me not to make anything really good because he has a cold and wouldn't be able to enjoy it. :rotfl:

Glynis's pot roast is awesome!!!!!!!!!!!!! My fave pot roast before this was the Paula Deen one that I posted on this thread. I guess I'll have to alternate between the two. Glynis's is much easier. THANKS GLYNIS!!!!!!

Well, it came out pretty good! At first the sauce was a little weird- the flour from the shrimp and minced garlic made little blobs that floated in melted butter. So, I ended up whisking in some more broth and some Wondra and it made the sauce nice and smooth.

I made preserved lemons only two days ago. They're supposed to sit for at least a week minimum before using but I figured it would be okay. I'm going to try this again after they've had a week to pickle.

Preserved Lemons

Take desired amount of lemons (I used 6) and quarter. Toss with 1/2 cup kosher salt. Pack into a sterilized jar. Top off with freshly squeezed lemon juice (I used bottled, but all the recipes told me not to :) ) Seal jar. Shake once a day to distribute brine evenly and prevent salt from settling to the bottom. Some recipes add herbs like bay leaves and cinnamon sticks but I didn't think Spoodles did so, so neither did I.



Garlic Shrimp with Preserved Lemons

2-4 T olive oil
1 lb of shrimp, cleaned and peeled
2 eggs
about 1 cup Flour, seasoned w salt and pepper
4 cloves garlic (I minced them this time, but I might try leaving them whole next time, just smashed)
1 cup chicken broth
1/3 cup white wine
Juice of 1 lemon
the rind of 1 preserved lemon
½ stick butter
Wondra flour
fresh parsley

Heat olive oil in pan.
Dredge shrimp in flour, then egg. Then fry one minute each side.
Set cooked shrimp aside.
Saute garlic in half the half stick of butter. Add wine to deglaze pan, and 3/4 of the chicken broth. Simmer ten to fifteen minutes until reduced slightly. Add remaining butter, lemon juice and preserved lemon. Toss with shrimp and heat through. Push heated shrimp to one side of the pan. Add remaining chicken broth and shake in a small amount (1 teaspoon?) of Wondra. Whisk until sauce is smooth. Add salt to taste. Sprinkle with fresh parsley and serve! (Rice, couscous or crusty french bread would be good to mop up the sauce)

Definintely not bad for a first try at replicating it! I will definitely do it again!

I got a little sick yesterday so we didn't go to the movies. I think I have a little bug so I am chilling this morning. Didn't get to see the movie :( Anyway, I am going to make black bean chili and cornbread.

Thanks. I mentioned I thought it may be the BBQ I had the other day but I don't think that's it anymore. I would have been over it by now. Oh well. :) I am feeling better today though. Hopefully we will get to finish up season 2 of Lost today :)

Today we are having my favorite shrimp recipe in the world, I'll post it a bit later if anyone is interested - Garlic & Wine Grilled Shrimp, I do a Rachael Ray pasta dish that goes well with any seafood dish - Lemon Spaghetti to go with the shrimp!!

I'm not really sure what we'll do for dinner today. I was going to do the Chicken Reubens, since DH was supposed to be home in time, but he just called and said that he won't be home until middle of the night. I know the kids won't eat the Reubens, so I'm kind of up in the air. I'm flipping through the Kraft Food magazine, and I'm looking at a Mac N Cheese chili or lasagna. I know the kids will eat it if there's mac n cheese in it!

Dessert is fresh peach pie! My tree had to be picked before we get a freeze tonight, so I'm spending the day making pies, jam and bottled pie filling! I predict that we'll be sick of peaches before too long!

Just back from the grocery and now have the "Glynis roast" in the crock pot--also got the fixin's for the sweet and sour pork and chicken reubens!! Sounds like a yummy week at our house!!! Thanks for all the wonderful recipes!! :thumbsup2

Last night we had Santa Fe Chicken Salad (grilled and sliced chicken breasts, lettuce, corn, black beans, cilantro, fresh tomatoes and shredded cheese. The dressing is equal parts ranch dressing and salsa), and Banana Fudge Cake. I don't make dessert too often, but my parents and Aunt came over for a visit at 7:30 last night, and I wanted to serve them a little sumthin sweet. I hadn't made the cake before and it turned out to be a good, moist cake with great chocolate and banana flavor.

Tonight we are having cheese manicotti, and maybe some wine, Yeah, I need some wine.

My husband is wierd! After having that fall apart tender pot roast yesterday, he suggests to me the next time I fix a roast, "please fix it so that it can be carved". :confused3 Has anyone ever done this? I guess he's talking about, for instance, when you go to a buffet, there is a carving station. Anyone with ideas?

Kathy- Men are weird. I am thinking that a roast in the oven with less liquid is usually more "carvable" but also not as tender and moist. Maybe he wants slices for sandwiches and that's why he doesn't want it too fall apart tender? I know I love fall apart tender! :)

This is very basic and I make it in the crock pot

Categories: Meat
Yield: 6 Servings
6 lb Single beef brisket
2 lg Onions, sliced
1 cl Garlic, minced
¾ c Brown sugar
½ c Vinegar
1 c Catsup
1 c Water
1 tb Salt
¼ ts Pepper

Place brisket in heavy skillet and brown on all sides, add onion and garlic and brown. All other ingredients are now added simmered (covered) until meat is tender, about 2 1/2 to 3 hours. Randy Rigg


For the Latkas....

This favorite is always a crowd pleaser during Chanukah, the Jewish Festival of Lights.
Oil was burned in the original menorahs and now plays an important symbolic role
in many fried foods.

2 medium potatoes
1 egg(beaten)
1/4 cup matzoh
1/4 c parmesano Reggiano
vegetable oil

Peel and coarsely grate the potatoes.
Mix with the beaten egg and flour.
Drop teaspoon size pancakes into hot vegetable oil.
Brown on both sides.

Serve with applesauce and sour cream


Makes 10-12 small latkes.

I usually double this and make bigger Latkes...I also like to add green onions to this

Tonight for dinner we are having Garlic Swiss Merlot Chicken with sauteed zucchini and rice.

We have tried the Chicken Reubens and Glynis' pot roast. They were delicious!

Jenny, your latkas sound wonderful and I have filed that away. I love different latkas, made sweet potato one year and they were good. We are celebrating Rosh Hashanah on Friday and I am trying to come up with a menu. Our dinner meat will be smoked turkey. Not sure what else yet. Haven't given it much thought yet.

INGREDIENTS:
1 (8 ounce) package wide egg noodles
6 eggs
5 tablespoons unsalted butter, melted
1/2 cup white sugar
1 (8 ounce) can crushed pineapple, with juice
1 1/4 teaspoons vanilla extract
1 teaspoon ground cinnamon
1 (8 ounce) can sliced pineapple, drained
1/4 cup candied cherries (optional) I use marichino sp.?

DIRECTIONS:
Boil noodles in boiling salted water just until softened; do not cook through. Rinse, and drain.
Beat the eggs with the melted butter. Mix in sugar, crushed pineapple with juice, vanilla, and cinnamon. Stir in the noodles. Spread into a greased 9 x 13 inch baking pan. Place pineapple rings decoratively over the top. Place a cherry in the center of each ring if desired
Bake at 350 degrees F (175 degrees C) for 50 minutes, or until golden.

Today we had family linner under duress: The Eagles were on at 1 (my Dad--we're originally from Philly) and the Patriots on at 4 (everybody else). We couldn't figure out the best time to eat but settled on around 3 PM. So, linner was pretty similar to last week: seafood mixed grill: seared pepper tuna with devilled shallot butter, grilled bluefish with mustard-horseradish toppping, and maple-glazed almond-crusted cedar planked salmon (the least successful of the fishes). Sides were corn fritters with real maple syrup, the usual eggplant sticks, broccoli, and awesome brandywine tomatoes from my sister's garden with basil from my garden and fresh mozzarella cheese.

Here is the deviled shallot butter recipe:

1 lb. tuna steak

5 tbsp. butter
1/4 cup minced shallots
1/2 tsp. red pepper flakes
1 tsp. tabasco sauce
juuice of 1 lemon
2 tsp. mustard powder
salt and pepper to taste

Melt the butter over low heat and then add the shallots. Let cook until softened. Do not brown the shallots. Meanwhile, mix together the other ingredients, then add to the softened shallots.

Coat the tuna with coarsely ground peppercorns and salt to taste, then pan sear in olive oil or grill until done to your liking. (I prefer my tuna rare, so sear about 2 minutes per side).

Slice tuna and serve with shallot butter.

Serves 4-6

That sounds really good..I always make mine and serve it with a mango salsa or a green salsa

I wanted to try the pot roast recipe, but the roasts looked really fatty at the store yesterday. Guess I'll try again for that one next week.

Tonight is DH's last night home, before another two weeks of travel. DD is away for dinner so I'm fixing a pot of dirty rice and some cornbread.

The banana fudge cake sounds like something I should file away. Bet my family would love that. And the pineapple kugel is something I'll have to try. DS loves pineapple. What is good served with it? And I'm the crockpot queen. I'd love more crockpot recipes. It saves my life in the winter when my DD has a busy schedule.

I bought a family pack of ground beef and cooked it all today. Some went to meatballs and the rest just got scrambled. I'm pleased that I've made some headway on 6 dinners in one go. I can just pull one packet out of the freezer and finish it up. Don't you just love it when you make fixing dinner easier?

I teach 4th grade. This is only my 2nd year so it's nonstop work! I'm also a single mom in a situation where my "X" does NOTHING!!!! So, needless to say I have a "full plate"!
Speaking of full plates; tonight is grilled cheese sandwiches and left over Mug Pie Soup!
Unfortunately there is no more of the pot roast. We used one 2.5 lb. roast and it all went! It was very good. My son said it was the best thing he ever had!!! :thumbsup2

Glynis, your pot roast was so yummy and SO EASY!!! DH absolutely loved it! Tonight we're going to use the leftover roast in Beef Stroganoff casserole.

Last night we had baked salmon stuffed with crab, steamed yellow squash and steamed broccoli with a dash of lemon. Really good. For desert we had pumpkin bread & cream cheese frosting. (It was the easiest recipe for pumpkin bread, I think it was 4-5 ingredients using Bisquick!) Delicious. :) It's just about gone.

Tonight I think we'll have eggplant parmesan, some greens and some banana bread. For the banana bread, I just use yellow cake mix & bananas (sometimes walnuts). Follow the recipe for using the yellow cake mix (extra moist) add bananas & nuts, blend well. If I have a bunch of bananas I reduce the liquid a bit. Place the mixture into two loaf pans (greased) and bake on 350 for about an hour. I check it with a knife to see if it's done. (Sometimes it needs extra time because of the liquid the bananas add to the mix.) It always turns out super! :)

I teach 4th grade. This is only my 2nd year so it's nonstop work! I'm also a single mom in a situation where my "X" does NOTHING!!!! So, needless to say I have a "full plate"!
Speaking of full plates; tonight is grilled cheese sandwiches and left over Mug Pie Soup!
Unfortunately there is no more of the pot roast. We used one 2.5 lb. roast and it all went! It was very good. My son said it was the best thing he ever had!!! :thumbsup2

I've had a killer cold so the cooking has been as easy as possible- Saturday pot roast in crockpot with potatoes, Sunday pot roast/potato soup for lunch with grilled cheese and BBQ beef sandwiches (pot roast!) with tater tots for dinner. Dinner tonight? Leftover pot roast makes it's final appearance as shredded beef soft tacos. Gee, I want some fish soon! :fish:

I don't sear the roasts before putting them in the crock pot. I'm sure you could, I just like the convenience of throwing everything in the crock pot and letting it do the work for me!

When I made it I seared the roast, but I don't think it matters. :)

I'm sorry I'm not an expert - maybe someone else can answer. But, I would say "yes" - it probably would be the same. I set the oven timer for 4 hours and went back to it a couple of times and flipped the roasts twice. And toward the end I kinda cut into the middle of one to make sure it was done. At the end of 4 hours it was so tender it was falling apart. Very yummy!!!!!!

Ok, I see that there have been a few requests for my banana fudge cake recipe, and I am very happy to share it with you:

Banana Fudge Cake
1 pkg chocolate fudge cake mix
1 large ripe banana, mashed

Frosting
1/2 C butter
1/4 C. water (or less)
5 1/2 C powdered sugar
2 pkts pre-melted unsweetened chocolate
1 small ripe banana, mashed
1 tsp. vanilla

Prepare cake according to package directions, and beat on low speed with a hand mixer for 1 minute. Add mashed banana; beat on high for 2 minutes. Pour batter into a greased 9 x 13" pan and bake for 35-40 minutes, or until toothpick inserted comes out clean, at 350 degrees. Allow cake to cool completely. For frosting, in saucepan heat butter and 2 T water until melted; beat in 4 C powdered sugar, pre-melted chocolate and mashed banana with a hand mixer until smooth. Add enough remaining powdered sugar and water to desired spreading consistency, if needed. Stir in vanilla. Frost cake. Store cake in refrigerator.

I think if Rachel Ray ate this cake, she would think it is "yummo".

Dinner in the Bixby household (that would be mine) was a tad boring this evening. I had an evening meeting, and worked all day, so decided to try one of those Marie Callendar (sp?) crock pot meals. Has anyone tried these? It's an all-in-one kind of a thing, and I tried the chicken and noodles. It was okay considering I was in a pinch for time. We had corn muffins and mandarin oranges with it. And, yes, we had leftover banana fudge cake. Yummo!!!!

Creole inspired shrimp w. rice. I made a box of whole grain rice a roni Spanish rice flavor with tomatoes. I sauteed some onion, celery and green pepper and added some shrimp and two kinds of hot sauce. Together it was pretty good. :)

Don't be intimidated by the crock pot!!! Seriously, it is one of my favorite kitchen gadgets! During the school year I use it at least twice a week, what with music lessons, karate, dance lessons, etc., I just don't have much time in the kitchen. I just love that I can get dinner started around noon and just forget about it until dinner time.

I can get you some really easy crockpot recipes to start with. I'll dig them out and post them later.

Last night we had baked ziti and tonight we are having Shake N' Bake chicken thighs with mashed potatoes and veggies. They were on sale and DH only likes thighs so it will be an easy night.

We leave for Disney in 10 days and I've been busy busy busy so it won't be anything too fancy here for awhile. ;)

The Bruschetta Chicken bake was really good! We really liked it a lot. If you've got this months Kraft Food magazine, check it out! If you don't, here's the recipe:

Kraft Bruschetta Chicken Bake

1 can diced tomatoes, undrained
2 cloves garlic, minced
1/2 C. water
1 pkg. Chicken flavor stuffing mix
1 pound chicken breasts, cubed
1 tsp. dried basil
1 C. shredded mozzarella cheese

Preheat oven to 400 degrees. Place tomatoes with their liquid in medium bowl. Add stuffing mix, water and garlic; stir just until stuffing mix is moistened. Set aside.

Place chicken in a 13 X 9 baking dish; sprinkle with the basil and cheese. Top with the stuffing mixture.

Bake 30 minutes or until chicken is cooked through.


Tonight we're having the Mega Meatball pizza that was posted on this thread. I'm making it with a whole wheat crust. Wish me luck! I've never tried making pizza dough before, so it should be interesting!

I started my pot roast with carrots and onions. I will serve it with mashed potatoes or buttered noodles. I'm leaving the choice to my DGD. Also a green veggie.


I started some homemade rolls, and hope that they come out okay. I made them once before, and they were good, but this time I cut the recipe in half, so wish me luck!

It's really easy to make.

Take 4 chicken breasts and butterfly them-then fill each with about 1/2 oz of fresh goat cheese(cream cheese works well, too). Sprinkle with salt pepper and basil. Then simmer them on medium heat, covered with your favorite marinara. Even my picky boy eats this up!

Ok you guys, I HAVE to share this dessert I made. I got it off Everyday Italian. They are espresso brownies and OH...MY...WORD!!! They were so good!!!

Nonstick vegetable oil cooking spray
1/3 cup plus 2 tablespoons water
1/3 cup vegetable oil
2 large eggs
2 tablespoons plus 2 teaspoons espresso powder
1 (19.8-ounce) box brownie mix (recommended: Duncan Hines)
3/4 cup semisweet chocolate chips
1 teaspoon vanilla extract
1 1/2 cups powdered sugar
1 tablespoon unsalted butter, room temperature
Preheat oven to 350 degrees F.

Spray a 9 by 13-inch baking pan*** with nonstick spray. Whisk 1/3 cup of water, oil, eggs, and 2 tablespoons espresso powder in a large bowl to blend. Add the brownie mix. Stir until well blended. Stir in the chocolate chips. Transfer the batter to the prepared baking pan. Bake until a toothpick inserted into the center of the brownies comes out with a few moist crumbs attached, about 35 minutes. Cool completely.

Meanwhile, dissolve the remaining 2 teaspoons of espresso powder in the remaining 2 tablespoons of water in a medium bowl. Whisk in the vanilla. Add the powdered sugar and butter and whisk until smooth. Pour the glaze over the brownies. Refrigerate until the glaze is set.

Note: I didn't have enough powdered sugar to make the glaze, so I cut the glaze recipe in half and it was perfect!!!! ***Also, the recipe says use a 9x13 pan. Giada used what looked like an 8x8 or a 9x9 pan, and that's what the brownie box said as well, so I used a 9x9 and baked for 35 minutes***

ETA: One more thing about the brownies. I couldn't find any espresso powder, so I just bought a jar of instant espresso and it worked just fine. It may be a "potAYto/potAHto" kind of thing :)

I use Tastefully Simple brownies because I make the worst brownies ever, but I am going to try these.

I have chicken thighs for tonight, I'm not sure what I am doing with them. DD wants to go back to the Big E and if I can drag DH, I want to go too. She said that there were no crowds Monday night, $20 for an all night pass on the rides, and her DD could walk on all that she wanted. Now if DH comes, we can get him a bracelet, and DD and I can go through the state houses while he goes on the rides with Kady :thumbsup2 . Wish me luck.

Ok, for all you pot roast lovers out there, I'm going to post my recipe! It's incredibly easy, and DH says it's the best tasting pot roast he's ever tasted! I've tried so many recipes, but this is the one I'm sticking with:

2 boneless chuck roasts (2.5 pounds each)
1 envelope Ranch dressing mix
1 envelope Italian dressing mix
1 envelope brown gravy mix
1/2 cup water

Place roasts in a slow cooker. In a small bowl, combine mixes and water. Whisk together. Pour over roasts. Cover and cook on low 7-8 hours until tender.

I always add some carrots and onions with this.

Very yummy!

2. When do you add your veggies to the crockpot?

Tonight will be Paula Deen's "Lady and Sons Fried Pork Chops", not very healthy, but OH so good, with mashed potatoes and gravy and a green vegetable(not sure what yet). Last night's Ham & Cheese stuffed chicken was awesome, DS ate so much, we have no leftovers! :rolleyes:

Lindsay - when I did Glynis's pot roast I only used one roast and I threw the onions and carrots in with the roast at the beginning, just scattering them all around the roast. It was EXCELLENT!!

Haven't been here in a while, but the weather is turning chilly and the Spaghetti and Meatball Stoup sounds good. Haven't had that for a long time, but tonight's the night. I cna leave it here for the older kids, youngest DD is auditioning for a play at our local theater.

BTW, had to add, Lindsay, there can never be TOO MUCH CHOCOLATE!! :rotfl: :sunny:

In my home, there is no such thing as too much chocolate ;) .

I use Tastefully Simple brownies because I make the worst brownies ever, but I am going to try these.




I use those soemtimes too. Expensive, but they are heaven!

Tonight we are doing chicken parmesan. Maybe salad and garlic bread.

Well, the smothered pork chops last night were also a hit!!! I wasn't really sure how to make them (I just winged it from TigerKat's explanation) but I seasoned flour and then coated the pork, then fried them quick in EVOO. Then I took them out and added the peppers, onions and seasonings to the pan. After cooking them a few minutes I added some flour, then added beef broth stirred and added the chops back in and simmered for 25 minutes...I don't know if that was right but it rated a 9 out of 10...I just started having the family rate dinners so I know if I can make them again...here is what we have so far:

Chicken Ruebens = 10
Pizza Meatloaf Muffins = 9
Smothered Pork = 9

*Everything is a 10 for me since I love food and I guess I make them (seasonings etc to my liking!!!) :) :) :)

Tonight I am making Lindsay's Crockpot Italian Chicken with pasta and steamed broccoli...by the smell of it, it's gonna be a 10!

I'm making grilled garlic shrimp, a green vegetable and angel hair pasta tossed with garlic sauteed in evoo or Pasta Roni Angel Hair Pasta w/ Herbs (depends on how much time I have).

Smothering is a "to each his own" kind of dish. You did it exactly as I do, I'm glad you enjoyed it. The smothered dishes can be changed to use your favorite seasonings, make more or less gravy, etc. Just throw in whatever you have on hand!! :thumbsup2

Well, the sweet and sour pork is back on 'cuz had a chance to run to the store.

I have a question for all you cooking gurus--I'm going out of town this weekend and leaving DH with both kids for 2 days (I know scary!) Anyway, would it be okay, in your expert opinions, to cook up some meatballs and then freeze them? :confused3 That way all DH would have to do would be to defrost them and throw them in some prepared sauce. Thanks!

Oh and Lindsay, I have to agree with the consensus--there is NO such thing as TOO much chocolate!! :lmao:

Just quoting you because it's been mentioned already, I said ALMOST too much chocolate :) I love chocolate in every shape and form, and nothing is ever to chocolatey for me :)

I'd make a big batch of meatballs, use half that night and put the rest in a freezer bag. I should start doing that again. Lately I've been only making enough for one night's dinner.

Ok, Glynis. Everyone is saying how yummy this is, so I am going to try next week. I have 2 questions though.

I usually make it with just one! It turns out fine. However, I never half the gravy recipe. I love a lot of gravy with my stuff. I also throw the veggies in at the beginning. Good luck! I hope you like it!

That's what we're having, too! Spaghetti and Meatball Stoup with homemade breadsticks. It's definitely soup weather here, raining all day long! I can't wait to make it.

By the way, the mega meatball pizza was a huge hit with my family! I made a whole wheat crust and it was great too!

I had a really nice dinner planned, but now I don't want to cook it. I am so lazy. Guess I have to. Here it is:

So, last night we had a change of plans. We had an appetizer of gnocchi with a butternut squash-curry sauce, topped with shredded maple duck confit, followed by a statler cut roast chicken breast with a light cumberland sauce with bacon-roasted fingerling potatoes and a watercress salad, and ricotta torteloni with veal shank in a tomato-veal broth. Then we had a cheese plate and some grapes and almonds.

NO, I did not cook that! We went out to dinner. It was good. :)

So, tonight we are having the menu I planned for last night.

DD came home last night begging for pizza. So I scrapped the spaghetti and salad plans and sent for take-out. :teeth: It's nice to have a night off now and then and I bought enough that we can have the rest on Friday before the homecoming game.

Tonight it really will be spaghetti and a salad. My meals don't sound very creative lately. It's hard just cooking for the two of us.

I freeze them all the time...you can even put them in beef gravy over noodles or sweet and sour sauce over rice...or on top of pizza...the list can go on...

It's really easy to make.

Take 4 chicken breasts and butterfly them-then fill each with about 1/2 oz of fresh goat cheese(cream cheese works well, too). Sprinkle with salt pepper and basil. Then simmer them on medium heat, covered with your favorite marinara. Even my picky boy eats this up!

I have always used a dutch oven on the stove burner, as did my Mom. You could braise the roast on a very low heat and it would be fantastic. If you use the oven make sure that the roasting pan is sealed well and use a low heat. I think the secret of Glynis's roast is the seasoning combination. I am still raving about it to anyone who will listen.

We did go to the BIG E last night so it was fair food for us! I had a gyro and a finnish pancake, DD had apple crisp :confused3 and my DH, who was taking the little one on all the rides while DD and I explored the State houses, ate corn dogs, hot dogs and pizza. I wish I had my camera becasue the picture of my Paul Bunyan type of guy stuffed into the flying bumblebees would have been priceless :lmao: !

1/2 cup mayo
1/3 cup sugar
1/4 cup milk
1/4 cup buttermilk
2 1/2 Tablespoons fresh lemon juice
1 1/2 Tablespoons white vinegar
1/2 teaspoon salt
1/8 teaspoon pepper
2 Tablespoons onion, minced
8 cups cabbage, very finely chopped
1/4 cup carrot, grated

In a large bowl, whisk together all ingredients, expect cabbage and carrots. Add cabbage and carrots, mix well. Cover and refrigerate for at least 2 hours before serving.

Why, thanks! I can't take all the credit since I clipped it from a magazine, (can't remember which one) but I'm glad everyone likes it! I love to make pot roast, and since this one's so easy, it made it's way into my recipe file! DH thinks it's hilarious that y'all like my recipes. I didn't start cooking until 4 years ago. Up until then, he did all the cooking. Guess I'm getting pretty good at it!

The sweet and sour pork turned out great last night :thumbsup2 , unfortunately, DH informed me after the fact that he doesn't like sweet and sour anything (he'd rather his mouth be on fire from a pepper of some sort) So, I guess unless it's just me and the kids, I won't be making it again :sad2:

Going to try the Reuben Chicken tonight and maybe whip up some meatballs to freeze for DH if I have time. I mentioned to him about just defrosting the meatballs and having spaghetti and meatballs with the kids this weekend, and I really think that he thought I was joking. That might just be too much cooking for him--they'll probably survive on frozen pizzas and chicken nuggets :rotfl: . Could be worse I suppose! :rolleyes:

Glynis, I have a roast in the crockpot with your name on it. :) Everyone has raved about it so I thought I'd give it a try. Smells great. We're having it with green beans and mashed potatoes. I was in such a rut with the way I cooked my roast. The same old way for years! It was just an easy old stand by recipe. So I'm excited to try something new!

I can't wait to try a bunch of other recipes from page one! It all sounded so good. Thanks again Lindsay and everyone! :)

Tonight is enchilada bake, sort of mexican lasagne with tortillas instead of noodles. You can make it with ground beef or chicken. Tonight is ground beef.

Here are the requested recipes


Spinach with sun dried Tomatoes and wine..
1 Bag frozen spinach
1 Tbsp olive oil
1/4 bottle of sun dried tomatoes in oil (diced)
1/2 c wine or balsamic vinegar
2 cloves garlic, diced

1 lightly brown diced garlic in olive oil
2 add spinach and cook until warm
3 add wine or vinegar and sun dried tomatoes
4 cook another 5 minutes until hot and wine is reduced..
This is really good mixed with Orzo

Pasta Alfredo
Sorry but portions are not exact as I *railroad* this recipe

1 package pasta of choice..I use fetachini or ziti

1 stick butter
flour as needed..I use wondra to prevent lumps
2 cloves garlic,diced
2 c Milk for richer sauce use heavy cream
1 c parmesao reggiano
dash nutmeg (optional)
dash lemon juice (optional)
Pepper
Cook pasta seperatly while preparing sauce
1 melt butter in pan and add garlic
2 add flour to make a thick paste
3 add milk(or cream) and stir to mix in butter and flour paste. Cook on medium low and stir frequently..This stuff burns FAST
4 Once mixture is warming add shredded parmegianno raggano( plain parmesan can be substited,but the reggiano really makes a difference)
Again,the amount of cheese you need will really differ.. add what you want..You may also need to thicken with more flower
4 Add a dash of nutmeg and lemon juice..The lemon juice really gives it a fresh flavor..I am very generous with the pepper as we love the stuff
5 Pour sauce over pasta and serve

Tips
For chicken alfredo brown chicken breast tenders in olive oil.Place chicken on pasta and pour alfredo sauce on top

I made chili. I've been wanting to try Texas style chili forever (where you dice steak really fine instead of using ground beef) and I finally had an evening w/o a second job to try it! I used a few recipes from foodtv.com and played around with them - using some things from one, some from another, wine instead of beer, making one spice mix instead of two, etc. It ended up coming out really great.

Midnight Kiss Chili

DBF and I decided to call it this, because it surprised him that it was sweet and fiery at the same time. Also, the ingredients come together slowly and leave a little tingle on your lips. :)

First blend together your spice mix:
4 tsp. onion powder
1 T cumin
1 tsp. garlic powder
1 tsp. cocoa powder
1 tsp. cinnamon
¼ tsp. nutmeg
¼ tsp. cardamom
¼ tsp. cloves
1 T ancho chile powder
1 T chipotle chile powder
½ tsp. salt
4 tsp. black pepper

Then, dice 3 lbs. of steak into ¼ inch cubes.
Dice 1 large Vidalia onion into very small dice.
Dice 1 large or 1 ½ medium green peppers into very small dice.

Heat 1 T olive oil in a Dutch oven. Add onion and peppers. Stir and cook 2-3 minutes or until slightly wilted. Add steak and cook, stirring as needed just until most of the pink is gone from the meat.

Add 2 cans diced green chiles, 1 lg can plum tomatoes, crushed by hand, 1 lg can plain tomato sauce, 1 cup red wine, 1 can beef broth and 1 can chicken broth (14 oz. each)

Add spice mix, stir and bring to a boil.

Lower heat and simmer for at least 1 hour on low.

Mix together 1 tsp. Hula Girl hot sauce, 2 T maple syrup, 2 T brown sugar, 1 T ancho chile powder, 2 T chipotle chile powder and 1 T cumin.

After chili has cooked, add the sauce mixture above. Simmer ½ hour longer. Taste and add salt or hot sauce as needed.

In addition, I bought ingredients for Glynis' pot roast - we'll have it on Saturday. I have to try it. I can't be left out. :)

Last night I roasted chicken thighs and served with farfalle pasta in a light garlic and cream sauce. I also reheated the leftover pot roast which was even better the second day. I'm glad because I did not pay attention to the chicken and it was a little dry.

So...tonite will be chicken salad sandwiches and what ever else I feel like making to go with them.

Spaghetti. I usually take my jarred sauce and add to it (sort of a store bought/homemade). I recently got 10 jars of prego for .80 each so it's a good thing my family LOVES spaghetti.

Crab Dip as requested

1 cup Velveeta cheese, cubed
1 cup swiss cheese, cubed (I use the shredded kind)
1 can Campbell's condensed cream of shrimp soup
1 cup milk
1/2 tsp cayenne (I use a bit more as we like ours spicy)
1/2 tsp paprika
crab legs chopped into small bite size pieces (what I do is freeze whatever is left after we have a crab leg meal. A few small packages give me enough--we prefer more cheesy dip than crab chunks) You can also use imitation (we don't like this) or lobster.

Combine everything except for the crab in a pot and heat over low heat until melted, stirring to as needed to prevent scorching. When melted stir in crab. Add crushed red pepper if desired and serve with crusty french bread.

The sun was shining brightly then POOF transformer blows. Entergy took its good ole time gettin around to fixing it. You can get a dose of New Orleans on Monday nite football. Here are requested recipes. The recipe for Paula Deen's pork chops calls for 6 cups of oil, I didn't like how they came out when I tried it that way, so now I just put about 1/2 inch of oil in the skillet so that they are not covered in oil, just able to fry nicely on each side. Also, her house seasoning is simply garlic powder, salt & pepper.

"Lady & Sons Fried Pork Chops"

6 c. vegetable oil
House seasoning
6 pork chops
1 c. buttermilk
1 c. all purpose flour

Heat oil to 350. Sprinkle house seasoning on both sides of the pork chops, rubbing in to the meat. Pour buttermilk over the meat and turn to coat all sides. Season flour generously with house seasoning. Dredge each chop into the flour and shake off excess. Place chops into the oil and cook until golden brown on each side. If the chops are thick, take one out when you think they are done and cut into it at the thickest part, cook remainder accordingly. Drain on paper towels.

This is by no means a healthy recipe, but occassionally INDULGE!!


The following recipe after prepping can be grilled, roasted or baked. My method is to place broccoli onto aluminum foil and wrap it up. Place the pack of broccoli on a cookie sheet and bake at 375 for approximately 30 - 45 minutes.

Lemon/Parmesan broccoli

3 large stems of broccoli (1 1/2 lbs)
1/3 c. olive oil
2 1/2 Tbsp fresh lemon juice
1/4 tsp. salt
1/8 tsp. pepper(freshly ground)
3/4 c. grated parmesan cheese

Cut broccoli into serving size stalks, leaving stem on (3 1/2 inch lengths). Hold each stalk vertically with flowerets down on a cutting board and cut in half.
Place broccoli into large plastic bag. Combine oil, lemon juice, salt and pepper in a bowl, pour into bag with broccoli. Seal bag and marinate at least 30 minutes. Can be done early in the day. Put parmesan cheese into another large plastic bag. When ready to prepare, remove broccoli from bag and place into bag with parmesan cheese and shake until well coated. At this point all that is left is to decide how you wish to cook it.

Last night I ended up making a pan-seared ribeye steak with blue cheese butter for DH, and a bacon-wrapped cheese stuffed chicken breast for me (didn't eat it though). I also made green beans, roasted cauliflower, and macaroni and cheese.

Today I think we are going out to dinner with my sister and my parents, though I have not heard from any of them yet, so plans may have changed.

Well, I'm finally trying it! Glynis' Pot Roast is in the crockpot. I surrounded it with baby carrots, Yukon Gold potatoes and Vidalia onions. Everyone that comes in the house remarks how great it smells, so that's a good sign. :)

I'm considering making a salad if I feel up to it. I've got a lot of work to do today and it will be nice to have dinner cooking itself. :)

Dislifer, I haven't tried my recipe in the crockpot yet, but I imagine it would turn out pretty good. I'd stir it around every few minutes when it's first cooking, but it has to cook to awhile, in the covered Dutch oven, which sounds like a pretty good match for a crockpot. The little chunks of beef are really tasty, too!

Here's a suggestion for finding recipes quickly. I cut and paste my recipes (ones from this thread, or foodtv.com, or anywhere else) into Word. I save the document as the recipe's name and keep all the documents in a separate folder on my desktop called "Recipes". One day when I feel ambitious, I will organize them into "desserts" "soups" "main dishes" (a folder for each) and put those folders in the main "Recipes" folder.

When I want to find a recipe, all I have to do is click "Recipes" and click on the one I want.

It's great, because I can add notes and suggestions ans possible substitutions each time I use the recipe. It can't get stained and my laptop is easily brought into the kitchen.

Edited to add .This is a beef brisket not a corned beef brisket... This is a great time to buy beef briskets and save them as they are always on sale at this time of year...They also come cheap in December

Well I made the famous roast today, but I have a question. Everyone thought it was good, however I put carrots in there and they came out so salty. My husband and dd love salt and hubby said they were like eating a salt stick. :rotfl: The meat didn't taste salty at all, just right. Do you think it was the brand of brown gravy or what? I used the grocery store brand. Has anyone else had this problem? Why did my carrots get all the salt and the roast got none? I added no extra salt so just not sure where it came from.

Super easy recipe and really quick about 15 minutes start to finish.

1lb crawfish(shrimp),peeled
olive oil to coat pan
fresh baby spinach(use frozen 'til fresh is on the shelves again-defrost &drained)
1pkg feta cheese
1pkg bowtie(penne whatever you like),boiled
1pkg pine nuts

Wilt spinach in olive oil.(with frozen,warm spinach in oil)
Add seafood,warm through.
While seafood is warming,toast pine nuts.
Place seafood & spinach in bowl,add pasta,&feta,toss.Sprinkle with toasted pine nuts. Serve immediately.

Well, I was wrong about my leftover guess from the catering gig. I actually had orange glazed chicken, scalloped potatoes, california blend veggies, and a roll. :) Finished it off with a piece of lemon cream cheese cake. Yum!

I got enough left overs to last until we leave for vaca. :) We will be sick of it by the time we leave but I'm not grocery shopping with just a few days to go!

I have tried my own version of this, they are all probable similar. It comes out pretty good. Not the same as a start to finish lasagna, but for a quick version. it is fine.

Today were are having marinated steaks on the grill(if the weather cooperates-suppose to have storms :rolleyes: ) skillet potatoes, corn and chocolate cake for dessert. Yesterday's chicken in the crockpot was yummy so I'll share:
Crockpot chicken

4 boneless chicken breasts
1 small onion chopped
1 tsp minced garlic
whole baby carrots
potatoes
celery
1/2 box frozen peas
1/2 box frozen corn
1 tsp rosemary
1/2 tsp oregano
1/2 tsp pepper
1 small bay leaf
2 TBS butter
2 packs chicken gravy
1can chicken broth
1 can refrigerated biscuits(I used pillsbury butter flavored)

Combine all ingredients except frozen veggies and biscuits in crockpot , add water to cover if broth isn't sufficient. Cook on low for 7-8 hrs. 3/4 way through cooking add frozen vegts. and cut chicken into smaller pieces. Last 1/2 hr.to 45 mins. add biscuits.

Enjoy! The amount and type of veggies is an individual thing, and I don't measure, whatever looks right to you, same with the seasoning, I just put in an amount as a guide. If you like a lot of liquid just add more water/ chicken broth since the biscuits do soak up a lot.

Tonight was leftovers for me. DD got fed at church, so I didn't want to cook just for myself.

I have a rolodex for my recipes. Well, actually I have several. One has holiday and party stuff, one baked goods, and one every day recipes. I like this method because I can put a few cards in my purse and copy down a recipe anywhere. When I get home it can go directly into the rolodex (and they are alphabetized too). I also keep a few here at the computer so if something catches my eye, I can copy it down. I've found I could get rid of some of my cookbooks, by copying the recipes I was interested in to cards. This is a good thing because I have about a million cookbooks. Someday I hope to have them pared down to just a few. The huge benefit of this method for me is that I can go to chicken recipes and find all of them in one place instead of digging through tons of recipes.

Hmmm, that's a puzzle. I wish I could help, but I've never had that problem. It could be the store brand of gravy. Did you put the carrots on the bottom of the crockpot? I usually put the roast in first, top it with the gravy mixture, and then add potatoes, carrots and onions. Sorry I'm not much help!

Did you chop the carrots up really fine? If they're really tiny, they have more surface area to soak up more juice. Also, did you mix the packets up with the water and pour it evenly over the whole roast? Just trying to think of ideas . . .

I put my carrots on the bottom and they were a tad salty, but no one complained, now I know to put them on top.

That is what I did too and it came out perfect. I gave the recipe to a co-worker who was gonna make it this weekend and I can't wait to see what she says.

BTW, I was reading the October issue of Better Homes and Gardens and they have a whole section talking about pot roasts and also several recipes. I had to laugh cause nothing can be easier or tastier than Glynis' recipe! :thumbsup2

For dinner tonight we had Cheesy Chicken Enchiladas. I made dessert too: Chunky Apple Cake with Butterscotch Sauce. It's getting to be apple season around here, so I am pulling out my apple recipes.

Dinner was with the in-laws...chinese food, blah. I hate chinese food, so greasy and salty. Oh well, it made them happy and dinner tomorrow will be better. I stopped at a farm stand and got some corn on the cob and peaches.

Ooooo, I want both those recipes!!! I love enchiladas, but don't make them often. And I love anything with apples!!!!!

Well, like I thought, after I made those meatballs for DH to feed the kids this weekend, all they ate was pizza. SO, we'll be having spaghetti and meatballs tonight. Maybe whip up some garlic toast as well.

But what makes them so good is this combo: sprinkle in some pine nuts and canned mandarin orange slices and use Lite Raspberry Walnut dressing. Those things together make it very tasty. I tasted a salad like this at a Publix grocery store cooking demo and it was great. We might have some cheese toast with the salad.

While watching our Saints playing in the Superdome tonight for the first time since you know what, the "K" thing, it's gotta be beans & rice dawlin along with leftover gumbo from yesterday!!

I saw Racheal Ray make a lasagna with ravioli one day this week on her new show. Has anyone ever tried this? It looks like it would save a lot of time, just wondering how good it is!! :confused3
I tried it and it was delish! Very easy and quick to make, too!
