I made a pot of Chili...As I had no shredded cheese I added a block of cream cheese at the end ..It was yummy...DD who hates chili even liked it

We had chili tonight too. Shredded cheese on the side, sour cream, and Fritos. I like to layer mine in the bowl. It is sooo good! :)

All you chili makers, I have a question - does anyone have a recipe for authentic Texas chili? I usually just do the ground beef/turkey with seasonings, onions and tomatoes thing - it's okay, but ever since I saw the Bobby Flay Throwdown, I've wanted to try my hand at authentic Texas chili.
Since I gained a few lbs in WDW, I spent the last few days eating scallops, fish and turkey broiled with salad for dinner. Today I'm back where I was before I left for vacation, so I'm going to start adding back in some "regular" food - a little more variety.
Lindsay, I'm sorry to hear of your fall and glad you're getting better (if more colorful as well ;) )
I am definitely planning on making some of the great WDW dishes I tried during this trip, this fall. Particularly the filet mignon and mac and cheese at Jiko. It was fabulous and the recipe's pretty simple except for the red wine sauce.

We had a homemade chicken pot pie with mashed potatoes and cranberry sauce. Thick sliced tomatoes on the side. It was so good!

I kind of made up a recipe. I sauted cloves of garlic in olive oil and added chunks of boneless chicken breast. I browned one side of the chicken and then flipped it and added a full bag of frozen organic spinach. Then simmered this until cooked through. On the side I made a box of Annie's mac and cheese but it was different than the regular Annie's mac & cheese it was Gemmelli (sp?) shaped pasted in a creamy garlic sauce. So, I put a few spoonfulls of the macaroni and cheese on a plate and topped with the chicken and spinach. Almost everyone liked it...my son didn't like it (probably because of the spinach).

It's very tasty..I think it's the sun dried tomatoes and wine that give it so much taste.... I realy tweak it...Add a little more of this a little that too it ,including hot peppers...The Spinich Sun dried tomato wine mix is really good in Orzo,which I serve wth this..Using Parmigiano Reggianno instead of parmesan really kicks up the taste..The Parm. Reggiano is expensive but one small block of it lasts me a month

This afternoon was a BBQ in celebration of the life of a 22 year old who just died of leukemia. He was one of our Scouts a few years ago. It was actually very lovely. We told lots of stories and laughed a lot.
Tonight we went with my mom to Red Robin. She wanted to catch up with our DS who just started college the other day.
Tomorrow morning we're going to visit DH's parents and let them do the same. And we'll be back home for dinner. We have steak, baked potatoes, corn on the cob, watermelon and slaw planned. It'll be a feast! My sweet and sour slaw is to die for!
I'm also making DH throw some burgers on the grill. He leaves for New York on Tuesday, so I figure I'll pop them in the freezer and have a couple of good meals for nights when DD and I don't want to cook. :thumbsup2

Since hubby has an evening shift and dd is out of school for Labor Day, we will have a big lunch. I have a pork loin in the crockpot, baked potatoes with butter and sour cream, salad, grilled corn on the cob, and some type of dessert. Haven't decided yet. I better get crackin'.

I'm leaning towards eating early today, if I can talk DH into it. We are grilling. I am making an appetizer of grilled peel-and-eat colossal shrimp with garlic-tabasco butter. Mains are skewers of grilled fresh mozzarealla and bread with cherry tomatoes, red onions, and a pesto vinagrette, and then this recipe:
Grilled chicken and sausage with peaches, peppers, and black olive vinagrette (recipe from Chris Schlesinger)
1/3 cup olive oil
1/4 cup balsamic vinegar
1 tsp. minced garlic
1/4 cup pitted and chopped kalamata olives
salt and pepper to taste
2 firm but ripe peaches, pitted and chopped into eight chunks each
1 cup flat parsely. rinsed and dried
2 lbs. boneless skin-on chicken breasts
1 lb. hot italian sausage
2 red bell peppers, halved and seeded
1 red onion, peeled and sliced thickly
1/4 cup vegetable oil
1/2 lb. thinly shaved pecorino cheese
Whick together the olive oil, vinegar, garlic, black olives and salt and pepper to taste. Stir in the peaches and parsely and set aside.
Season the chicken with salt and pepper and grill until just opaque throughout. Grill the sausages until browned and cooked through. When the meats are done, cut them into chunks and toss them with the peach mixture.
Coat the vegetables with the oil and grill until well browned-about 3 minutes per side. Cut into chunks and toss with the peaches and meat (if your grill is big enough, grill everything at the same time)
Toss everything together until well coated with the dressing. Top with the pecorino and serve.
Serves 4-6.

We are having my version of the summer stew that is posted somewhere on this thread. it is so good, and I hope that having it on hand will help me loose a little weight. I am not having much luck in the willpower department.

I finally got around to making the Mexican Lasagna, and BOY, was it wonderful! Even my picky eaters loved it!
Tonight I'm making the chicken pot pie from this list. I'm really excited about it! I'm adding some frozen veggies to it so it will be a one dish meal. Haven't gotten as far as dessert, yet. We've got ripe plums and pears to pick, so maybe a cobbler or crisp. Don't know. Depends on how much time I have after the kids get home from school!

I have to say that my Chicken and Dumplings (recipe from this thread) is coming out great...I just tasted it before I put the dumplings in....I added onions, carrots celery, parsley, more water and S&P...also using bisquick dumplings , oh and I took the chicken out early so it would not dry out...I hope the family likes it...

Just got home from dinner at the in-laws. We had chicken bbq, potato salad, corn (canned) and I took Calico Beans. I was surprised we didn't have dessert. They are usually big dessert people.

We had a roast in the crockpot with green beans & potatoes. Seasoned it with onion soup mix and let it cook all day. Wonderful smells and taste.

We never had the hot dogs last night. I made the stew and cooked some fresh sweet corn, so we had that. No one was very hungry.
I got some red and yellow peppers yesterday, so I think I will make stuffed peppers this evening, using ground turkey. I'll add some mashed potatoes and a green veggie sliced tomatoes and cucumbers.

My sweet and sour chicken turned out yummy. I stir-fried some chicken, took it out then cooked my veggies. I added water chestnuts, baby corn, and some pineapple. Then a put in the S&S sauce. Oh boy, it turned out awesome!! It made me want to watch Lilo and Stitch or Magnum P.I., or something Hawaiian, LOL! :)

The chicken and dumplings I made last night was a hit (the recipe posted on this tread)...the dumplings were a little disappointing...not like my Mom's. SHe makes them nice and fluffy. I have to get the recipe from her...I will make them separate from the crockpot and just add them when its time to serve...DFi and DS8 loved it though...
I am make Sausage, Peppers, Onions and Potatoes tonight...now I just need to figure out if I am making subs or pasta on the side...I am thinking subs...

Oh my gosh!!!! Whoever posted the chicken pot pie recipe on page 3, you are amazing!!!! That was the best chicken pot pie in the world!!! DH raved about it, and my kids actually ate without complaining! There was a lot left over, so DH requested it for lunch today! Thank you, thank you!
Tonight for dinner we are having Cheesy Tuna dinner (from this thread). It sounds yummy! We'll also have steamed broccoli on the side. No dessert for us tonight!

Quick, easy and delicious:
Apricot Pork Tenderloin (can also use pork chops)
1 pork tenderloin or 4 pork chops
1 Tbsp. olive oil
salt & pepper
1 c. apricot jam or preserves
1 c. catalina or russian salad dressing
1 packet onion soup mix
1 clove garlic, minced
Season pork with salt and pepper and brown in olive oil until well browned. Mix together apricot jam, salad dressing, onion soup mix and garlic. Place pork in a foil lined baking pan and cover with sauce mixture. Bake at 350 for approx 40 minutes or until internal temp is 160.

HI, all!
I am extremely busy as this is my first week back teaching but I will share my embarrassing dinner with you all. And I will go grocery shopping this weekend and get back on my salads and fish and healthy stuff.
My dinner was two hot pretzels, a strawberry daiquiri and a handful of olives.
All eaten in front of excel, word (and a little DIS, shhh.)
This weekend I want to make some kind of healthy chili or stew that I can freeze to eat later in the week.
Any recipes?

I think I am making something with chicken...make chix and broccoli stir fry...DFI requested this. He started the Atkins Diet...claims it is the only thing that works for him so I am trying to cook for him and me and my son...this is something we all love...rice on the side for us and maybe a salad.
The APRICOT ROAST PORK sounds great. I make a chicken dish with almost the same ingredients...kind of like the POLYNESIAN CHICKEN on the boards...

I had this same problem the other night when I made the chicken and dumplings...my DFi loved it but he said it was not substantial enough...go figure...I even made a salad to go along with it!!!

Tonight we are having Navajo Tacos. Unfortunately, I don't know how to make Navajo Fry bread, so instead, I'm making scones from frozen roll dough, then we'll smother them in refried beans, taco meat (ground turkey), lettuce, tomatoes, sour cream, cheese and salsa. Messy, but yummy!
DH is on his own with the kids tonight as I have book group, so this will be a meal that everyone will eat. There will be a huge mess to clean up, but it's a small price to pay for some time away from the kids!

Last night was a quick meal because of Cub Scouts. We had broiled ham steak with a cherry glaze, mac & cheese and peas.
Tonight I'm making marinated grilled chicken breasts, angel hair pasta with fresh tomatoes/basil/garlic, steamed baby carrots and some green beans (straight from the can) because DS doesn't eat carrots.

I want to try the Apple Pecan Cheesecake!

I'm glad to hear the meatloaf turned out well! It sounded different with the stuffing and bbq sauce. I was surprised there were no onions! Is that the one you made? If it is, I'll give it a try! Especially if the kids will like it. :crazy:

A boboli pizza crust with fresh mozzarella and the last tomatoes from the garden with some garlic and basil baked until bubbly. And a salad with that new "salad spritzer" spray dressing - actually pretty good! :)
Thanks for the freezing tip Lindsay, I am probably going to make a soup and a chili this weekend to freeze. Maybe something else, too if I have time.

I lost my menu for the rest of this week, so I'm not sure what WAS on the plan for tonight. So, instead, the kids will have to deal with taco salad. I'm going to try the recipe in the Kraft magazine, and make cups out of flour tortillas for the salads. Hopefully, the kids will find it fun!

Last night we got home from work late, so we just made burgers (beef for DH, veggie for me).
Tonight I am trying a new recipe--I don't know if it is going to work. It's a marinade of beer, butter, red pepper flakes, garlic, rosemary, salt, sugar and pepper. The recipe called for chicken thighs but all I had was turkey breast, so I cut it into medallions and it is marinating. I am going to try and grill it over low heat...we'll see.
For other stuff, I am making a penne alfredo, green beans with almonds, sliced tomatoes, and corn on the cob. So, even if the grilled turkey stinks we will have plenty to eat. I'll let you all know tomorrow how it turned out.
Speaking of tomorrow, dinner is going to be an adventure, as we are planning on procuring and grilling bluefish for the first time. I have held a grudge against bluefish since the time I was a kid and a particularly feisty blue dragged my fishing Dad off a jetty in Rhode Island, right in front of me! The injuries he sustained ended up leading to knee surgery! If anyone has any marinades or sauces for bluefish that they'd recommend, let me know.

The turkey turned out really nice last night. I think the marinade would work on pretty much anything. Here is the recipe (you can use less red pepper if you don't like spicy)
Beer-Butter Poultry Marinade
1 12-ounce bottle dark or amber beer
6 tbsp. melted butter
2 cloves garlic, minced
4 sprigs of rosemary, minced
1 tbsp. red pepper flakes
1 bay leaf
1 tbsp. sugar
1 tsp. salt
black pepper to taste.
Combine all ingredients in plastic bag, add poultry and marinade at least 2 hours, or overnight. Discard marinade and grill till cooked (sorry, I can't provide bettr grilling instructions, DH is the grill master.)
Another amazing thing we had last night was a baked penne alfredo. It was so easy and delcious (and fattening!)
Baked Penne Alfredo
8 oz. penne, cooked al dente
4 oz. freshly grated authentic parmesean
1 1/4 cups heavy cream
salt and white pepper to taste
1 tbsp. butter cut into bits, plus more for greasing the dish
Combine the penne, cream, all but 2 tbsp of the cheese, and the salt and pepper in bowl and stir to combine. Place in greased baking dish, top with butter and reserved cheese, and bake in a 475 preheated oven about 10 minutes, until the cream is bubbling and the top is lightly browned.
Tonight we are having a seafood mixed grill: the bluefish I mentioned yesterday, with a mustard sauce, griled halibut with a vidalia onion marinade, and grilled tuna with my favorite sauce, devilled shallot butter. I'll post the recipe later as this post is so long! Sides are potatoes mousilline, asparagus, and sauteed summer squash.

Lulu..My trick is to use seltzer..This is my standard recipe and they always ome out as floaters not sinkers
1 cup matzo meal
1/2 cup seltzer
4 eggs, at room temperature
2 tablespoons shortening or olive oil
Salt and black pepper to taste
I'm a bit strange with my soup because I add tomato paste to the broth...I like a very rich broth..Not so much that it tastes like a tomato soup,just enough to give it a rih taste

I don't have an actual recipe...I put a chuck roast in the crock pot on low wth cut carrots ,onions, a packet of brown gravy mix, a small can of diced tomatoes, a bit of red wine(or balsamic vinegar) and either ginger paste or a teaspoon and a half of powdered ginger and garlic(minced)....I cook all day and by the end you have gravy and vegies ready with the roast.....You can eather cook mashed potatoes or add chunks of diced potatoes for the last hours

I haven't posted much on this thread, but I was so pleased with myself tonight I just had to share with someone, DH doesn't get the big deal LOL! I made shrimp for the first time. I have always been very intimidated by seafood especially shrimp so this was a huge cooking milestone for me :cool1:

Ok, for all you pot roast lovers out there, I'm going to post my recipe! It's incredibly easy, and DH says it's the best tasting pot roast he's ever tasted! I've tried so many recipes, but this is the one I'm sticking with:
2 boneless chuck roasts (2.5 pounds each)
1 envelope Ranch dressing mix
1 envelope Italian dressing mix
1 envelope brown gravy mix
1/2 cup water
Place roasts in a slow cooker. In a small bowl, combine mixes and water. Whisk together. Pour over roasts. Cover and cook on low 7-8 hours until tender.
I always add some carrots and onions with this.
Very yummy!

It's nothing fancy - but yummy -- and easy! We are having white pizza. I take Tyson precooked diced chicken breasts and "brown" them in a frying pan with lots of garlic. Then I use a Boboli crust, use alfredo sause, topped with the chicken/garlic and mozz cheese and have a salad on the side.
I have copied the pot roast recipe -- we are on the go most afternoons, so finding time to cook has been a real challenge.
Oh...and someone mentioned they were having meatball hoagies -- we are doing the same tomorrow night -- meatball subs. My husband grilled hotdogs yesterday and bought sub/hoagie rolls instead of hot dog buns :) so I had to find a use for them!

Ok, for all of you who wanted the Enchilada Chicken soup recipe, here it is:
Enchilada Chicken Soup
1 can fiesta nacho cheese soup, undiluted (you can use cheddar cheese soup if you don't like things too spicy)
1 can cream of chicken soup, undiluted
2 2/3 C. milk
1 can chunk white chicken, drained
1 can enchilada sauce
1 can chopped green chiles, optional
Sour cream
In a large saucepan, combine the soups, milk, chicken, enchilada sauce and chiles, if desired; mix well. Cook until heated through. Garnish with sour cream.
I like to make a batch of cornbread muffins. I make them mini size, and the kids put them in the bottom of their bowls with the soup on top. Very yummy!

I don't usually use 2 chuck roasts, but I NEVER halve the sauce stuff. I just use it to make a really yummy gravy for some potatoes, and over the roast. Just my opinion! I like a lot of gravy!

I wonder if you could freeze one of the roasts after you cooked it and have it still be good when you thawed it out? I'm all for cooking in advance for a busy day. That recipe sounds really good. I'll have to try it.
DD gets out of musical practice at 7:00. I'm an officer of our church women and we're having a wine and cheese party at (you guessed it) 7:00. Soooo, dinner is probably going to be a sandwich on the way to the party or a pizza after it's over. Poor DD is going to be starving if we have to wait. It's at grandma's house, so I guess I'll just have to sneak her some appetizers to eat while she's doing homework. :teeth:

I'm not a huge pork fan but I thought the pork chops were good. I served them with egg noodles. DH loved them & is taking the leftovers to work tomorrow. DD4 loved them, DD3 didn't eat any, she has given up eating I think. :rolleyes:
Here's the recipe:
Crockpot Sweet & Sour Pork
* 1 onion
* 1 carrot
* 2 stalks celery
* 1 red bell pepper
* 1 can pineapple chunks, drained (save juice)
* 2 lbs. thick cut boneless pork chops
* reserved juice from pineapple
* 3 T. apple cider vinegar
* 2 T. soy sauce
* 1 T. cornstarch
* 2 T. brown sugar
* 1/4 tsp. ground ginger
* 1/4 tsp mustard powder
* 1/2 tsp. garlic powder
* 1 or 2 dashes hot pepper sauce

Add cornstarch, stirring until dissolved. Mix in remaining ingredients & pour over pork chops. Cook on low for 6-8 hours. I thickened the sauce with a little more cornstarch at the end.

Tonight I am making Rachael Ray's chicken pot pie soup. I haven't made it all year so this will be a treat. Here's the recipe:

1 tube jumbo bake-off butter biscuits, from the dairy aisle of market (recommended: Grands by Pillsbury)
Sweet paprika, for sprinkling
1 1/2 pounds chicken breast pieces, diced
3 tablespoons butter
2 ribs celery and greens from the heart, chopped
1 medium yellow onion, chopped
1 large carrot, peeled and diced
Salt and pepper
2 teaspoons poultry seasoning
3 tablespoons all-purpose flour
1 cup shredded potatoes, ready to cook hash browns, available in sacks on dairy aisle
1 pint half-and-half or cream
1 quart chicken stock, available in boxes on soup aisle
1/4 teaspoon grated nutmeg, a healthy grating
1 cup frozen green peasPreheat oven according to package directions and arrange biscuits on cookie sheet. You will have 4 extra biscuits. Save them for ham and cheese or egg and cheese breakfast sandwiches the next morning. Sprinkle biscuits with a little paprika and bake for 10 to 12 minutes. In a medium pot over medium to medium high heat, cook chicken in butter 2 minutes then add veggies and season with salt and pepper and poultry seasoning. Cook 5 minutes more, add flour cook another minute. Add potatoes, then whisk in half-and-half or cream and chicken stock. Add nutmeg. Bring soup to a boil by raising heat, then turn heat back to simmer and cook soup another 10 minutes. Adjust seasonings. Add peas. Stir in to warm them through a minute.
Serve mugs of soup with biscuits on top to cap the mug: chicken mug pies!

I jut need to decide what sides I am having or if I should just do it over a tossed salad...DFi is on Atkins so I am trying to stay away from carbs...Thank God for instant rice and mashed potatoes for me and DS8!!! :sunny:

DH is out of town until Friday, so I get to eat whatever I want (or I guess whatever the kids will eat ;) )

I think my remarks yesterday regarding the "cliqueshness" were a direct result of the kind of weekend that I had, it's nearing the 1 yr anniversary of my dad's death, the closer it gets the more depressed I am. I'm not a huge pork fan but I thought the pork chops were good. I served them with egg noodles. DH loved them & is taking the leftovers to work tomorrow. DD4 loved them, DD3 didn't eat any, she has given up eating I think. :rolleyes:
Here's the recipe:
Crockpot Sweet & Sour Pork
* 1 onion
* 1 carrot
* 2 stalks celery
* 1 red bell pepper
* 1 can pineapple chunks, drained (save juice)
* 2 lbs. thick cut boneless pork chops
* reserved juice from pineapple
* 3 T. apple cider vinegar
* 2 T. soy sauce
* 1 T. cornstarch
* 2 T. brown sugar
* 1/4 tsp. ground ginger
* 1/4 tsp mustard powder
* 1/2 tsp. garlic powder
* 1 or 2 dashes hot pepper sauce
* 6 oz. can tomato paste

I am glad I stumbled upon this thread. I love to cook, and I am always looking for new recipes to try. Tonight in our household we are having:
Grilled BBQ Chicken Breasts, Roasted Potatoes (Cut mini red-skinned potatoes into halves or quarters, and toss in a ziploc bag with some olive oil and italian seasoning. Transfer to a baking sheet and bake at 400 degrees until browned),and Corn Casserole (recipe below)
Corn Casserole
1 15 oz can corn, drained
1 15 oz can creamed corn
1/2 C butter, melted
1 pkg Jiffy corn muffin mix
2 eggs
1 C. cottage cheese
1/3 C sour cream
salt and pepper to taste
Mix all ingredients together and put in a greased casserole dish. Bake at 350 degrees for approximately 1 hour, until casserole is set and lightly brown on top. Sometimes I substitute mexicorn for the corn, add a small can of green chilis, and add a handful of cheddar cheese to this. You could add browned sausage or cubed ham for a complete meal.

Sounds good! A friend once made something similar for me, except he added cream of mushroom soup and shredded chicken. It was so good. I think I'll have to try your recipe!
Tonight we had chicken sausage and peppers and onions. Just something simple and easy.

Although sometimes I don't want to try involved recipes such as this because I buy all the stuff, prepare everything, get excited about it...and no one likes it. They just want the standard Shake n Bake pork chops! Oh well! That's whats for supper tonight: Shake n Bake port chops, broccoli and rice.

Sure, you can "smother" chicken as well. Just dust the chicken with flour and saute in a little oil, add sliced bell peppers and onions, a little water or white wine, cover and "smother" over low heat until done. Sometimes I cheat and mix up a pack of gravy mix and add it for even more gravy. Down here we "smother" pork chops, chicken and even a tougher cut of steak, like a round steak.

We're having Boar's Head hot dogs, corn, and maybe mac & cheese. I don't feel that great today so I'm glad I planned on an easy dinner tonight. We also have cub scouts that I'm going to try to get out of and just send DH with DS. I almost always have to take DS by myself so DH better not complain when I tell him I'd rather stay home.

We had sausage last night too! I made chicken-apple sausages, pan roasted with apples, sage and onions. We also had mashed potato cakes from the leftover potato moussiline and broccoli (again).
Tonight I am making shirred eggs and serving them with a compote of roasted cherry tomatoes, garlic, and rosemary. Plus some crustry bread.

Since DH is out of town, and my kids don't like to be adventurous, I decided to go easy on myself. I'm making Pizza Meatloaf Muffins, green beans, baked potatoes, and for dessert................fresh peach pie! I just picked a ton of peaches off our tree, and it's either make a pie, or start canning them. I just don't feel up to canning, and I already have pie crust in the freezer, so that seems to be easiest. I know the kids will be happy!

I'd love your peach pie recipe Glynis. :) I have to make 4 pies for DD4's preschool bake sale & I don't do pie. I'm a little scared. It needs to be a fruit or pumpkin pie with homemade crust. My last attempt at pie crust was a disaster. It was hard as a rock.

That's what I would normally do, but they said no store bought crusts. I think that's ridiculous. When they see my homemade pie crusts they're going to change their mind about homemade being better. :rotfl:

That is unbelievable!!! :furious: They should be very greatful to the parents for donating their time and "store-bought" pie crusts.

I agree with this! You are technically making the crust yourself when you bake it - before that it's just dough, so you're only buying the dough, really. :)
The only "rule" for a bake sale I've ever heard was "no nuts" due to allergies, but to not accept pies with premade crusts is a little much.
If you can only do fruit or pumpkin pies, apple's pretty easy. I used to have an apple tree (golden delicious) in my yard growing up, so we'd make one at least once a year. Firmer apples like granny smith are good, too.
Apple Pie
Slice about 6 apples (peeled) and toss with 2 T flour, 2 tsp cinnamon, 1/2 tsp. salt, 1/2 tsp. ginger, 1 T lemon juice, 1 tsp. vanilla and 6 T sugar. (We usually use a large freezer bag). Pur into prepared pie crust and drizzle with 2 T honey. Dot top with 6 T butter. Top with second pie crust. Brush crust with beaten egg and vent. Bake 1 hour at 400 degrees.
Today we had turkey breast, with cranberry sauce, Stove Top stuffing and spaghetti squash.

We had a New England boiled dinner last night. Tonite I made a homemade vegatable soup and we had leftover roaasted chicken and gravy, stuffing and mashed potatoes.

I used to make homemade crust all the time, and it never tasted good, and was always hard and heavy. Now, I only use the Pillsbury rolled kind. It tastes better than my homemade. If they are insisting on homemade crust, you might want to try a pie with a graham cracker crust. I've got quite a few pie recipes for those. If you want them, let me know and I'll post them.

We're trying the baked corndogs and steak fries tonight. It sure is hard to coat the dogs with that batter, but they're looking good. So far, it's not melting off. Maybe we'll have some fruit too.

I have a FANTASTIC pecan pie recipe. In fact, a brother in law swears that he decided to propose after tasting this pie, so he could have it always! If you want, I'll post that with the peach recipe.

Oh, my gosh! This is so simple, and so yummy!
Pizza Meatloaf Muffins
1 1/2 pounds ground beef
1/2 C. pizza sauce
1/4 C. bread crumbs
1 egg, beaten
1/2 tsp. Italian seasoning
Mozzarella cheese
Beat the egg in a bowl. Add the pizza sauce, bread crums and Italian seasoning. Mix well. Crumble the beef over sauce and mix well. I always use my hands. Divide into 12 greased muffin cups and press along the bottom and up the sides, leaving a depression in the middle. Fill the depression with mozzarella cheese. Bake at 350 degrees for about 20-25 minutes, or until meat is no longer pink.
Serve with warmed pizza sauce.

Here is my peach pie recipe. I got it from a Betty Crocker cookbook that I got as a Christmas gift when I was 12. This is for a 9 inch pie plate.
Pastry for 2 crust pie
5 cups sliced fresh peaches (about 8 medium)
1 teaspoon lemon juice
1 C. sugar
1/2 C. all-purpose flour
1/4 tsp. cinnamon
2 Tbs. butter or margarine
Heat oven to 425 degrees. Toss peaches and lemon juice. Stir together sugar, flour and cinnamon; mix lightly with sliced peaches. Turn into pastry-lined pan; dot with butter. Cover with top crust. Cut slits and flute. Cover edge with 2 to 3 inch strip of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking. Bake 35 to 45 minutes or until crust is nicely browned and juice begins to bubble through slits in crust. Serve warm.
Pecan Pie
Pastry for single-crust pie
1 cube butter, browned and cooled a bit (this is important. Cook the butter until it's a nut brown color. DO NOT LET IT BURN! I do this over low heat and keep an eagle eye on it!)
3 eggs beaten lightly with a fork
1 C. sugar
1 C. white karo syrup (I've also used dark karo, and the new brown sugar flavor; all yummy)
dash salt
1 tsp. vanilla
1/2 tsp. lemon juice
1 C. chopped pecans, plus some whole pecans for garnish
Preheat oven to 425 degrees. Line a pie pan with pastry and put into fridge while mixing the filling. Mix all above ingredients except pastry and pecans for garnish. Pour into unbaked pie pastry. Add whole pecans to bowl in which you made filling and stir so that they are glazed with any leftover filling. Arrange whole pecans around edge of pie, to make a wheel like decoration. Crimp pie crust. Bake at 425 for 15 minutes and 325 for 40 to 50 minutes. You may cover this pie with a foil tent if it is getting too brown.
I just have to share; at Thanksgiving time my husband's family all get together the Monday night before Thanksgiving for Pie Night. Our reasoning is that everyone stuffs themselves on Thanksgiving, and can't enjoy the desserts, so we set aside one night simply for the pies. Everyone makes as many pies as they want (I usually do 5) and we put them all out on the counter and cut them into tiny pieces and everyone can sample whatever they want to. It's a fun tradition, and one that everybody looks forward to each year. Anyway, when I started making this pecan pie, DH's step father tasted it, and from then on, he began requesting that pie. His wife started making pecan pie for him, and he would always tell her, "It doesn't taste like Glynis's." That is one pie that I HAVE to make each year! My BIL even requested it as his last meal before his gastric bypass surgery. That's all he ate: one whole pecan pie!

By the way, sugarpie, I'm looking for a couple of different pumpkin pies as well. Something out of the ordinary!

I have to chime in on the piecrust issue. They probably want to advertise the pies as homemade and don't feel they can do that if they have premade crusts, etc. I have to admit I agree. I've been involved in sales where people show up with pies that are fresh from the shelf at Safeway. I think it's really misleading to sell them at a bakesale when people think they're buying homemade.
I don't like the premade crusts very much, so I do the next best thing. Krusteaz. You buy it in a box in the baking isle, add a little water and roll it out yourself. I have no guilt calling it homemade if I rolled it myself!

I think it depends on the nature and reason for the "bake sale". If it is purely fundraising for a youth event, I don't think (based on 15 yrs. experience) that the purchasers care whether or not goods are homemade or store bought. The idea is to raise money for the kids and their functions. We've had many "bake sales" for our church group to raise money for the kids to go on an annual retreat/vacation and everything was gobbled up, whether homemade or store bought. The idea is to support the kids, no matter what the quality of the product is!!

I have another school event...The PTA is having Back to School night where they invite families to come for pizza...so we will be going there.
There are so many great recipes that I am hearing about that I want to cook...

At my house we have Pooh and Kitten everything. We are the corniest couple you will ever meet, but we never fight, so I guess being silly is an ok problem to have :)
Now mind you, this is a recipe for 2. You can skew it to feed more.
4 eggs
A splash of milk
Salt and a good helping of pepper
a pack of pepperoni-style Canadian bacon (I chop it into little pieces)
A good handful shredded cheddar cheese
A few drops of Tabasco
Some butter to cook with, just a pat
I combine the eggs, milk, and hot sauce. Then throw in the bacon and cheese, S&P. Add butter to your skillet and cook like regular scrambled eggs. They are yummy, light, and fluffy!!

I think I've come to the conclusion that my "homemade" pie crust will be Pillsbury. :goodvibes What are they going to do if my crusts are store bought, kick my daughter out of her outrageously expensive preschool? The whole point of the bake sale is to raise money for the scholarship fund, so whatever I do should be good. :)
Last nights pot roast was SO GOOD. Thanks Glynis! :cool1: Of course I didn't have all the ingredients & had to improvise. I used a 2.5 lb. chuck roast, a pkg. of gravy mix, half a pack of ranch dressing mix, a splash of prepared Italian dressing, a small can of beef broth, & some onions. It was the best roast I've ever made. :cheer2:
What's for dinner tonight??? I can't bring myself to cook on Friday nights, so hopefully we'll go out or order a pizza.

So…last night’s dinner…I told you I was making pizza. Pizza is usually a foolproof dinner at my house. Simple: heat up the pizza stone for about an hour, sprinkle with cornmeal, stretch the dough over the stone, add toppings, and bake until browned and bubbly. Yummy, easy, and tasty. Well, I must have annoyed the kitchen gods, because that is not how it went last night.
Things started out normally enough: I popped the stone in the preheated oven and headed off to do something else. After a while, I noticed a smell. A ‘toasty’ smell. Then all the smoke detectors started blaring. OK, no problem, every once in a while the heat from the oven trips the detectors. I got my giant fan and set it up under the smoke detectors, which stopped the alarms. Off I went again, but after a while I noticed that the “toasty” smell was getting stronger.
I went back in to the kitchen to find smoke pouring out of the oven. Hmm…it turned out that the stone had absorbed some oil from some pizza I reheated a while ago, and now the oil was burning off. I knew there was no way to get the stone to stop smoking without running it through the oven’s cleaning cycle, so I just pulled the stone out of the oven and let it cool off. Apparently, all these warning signs were not strong enough for my addled brain, because I continued with my menu plan.
So. I sprinkled the now cooled stone with cornmeal, stretched the dough, etc., and put it into the oven. About 10 minutes later, it looked done. Bubbly cheese, toasty edges…time for dinner! I got the pizza peel and went to remove the pizza from the stone. Except. The pizza would not come off. The dough had fused to the stone, creating a completely unremovable concrete-like crust. OK. Deep breath. I pulled the entire stone out of the oven to see if I could break the seal with a knife. I managed to get an edge to release, and peered under the crust, only to find that the bottom of the dough had not completely cooked. Of course it hadn’t! The stupid stone was cold when I put the crust on it! At this point I actually started jumping up and down in front of the stove out of frustration.
Fine. Back into the oven to cook the bottom of the crust. 10 minutes later, the pizza was back out of the oven. The edges were quite brown. The cheese was…definitely melted. But darn it, we were having pizza! So. I hacked, and I scraped, and I swore, and eventually, with the help of DH, was able to extricate approximately half of the pizza from the stone, which we ate in grim triumph.
The other half of the pizza is still sitting on my stove, permanently fused to the stone. When I get home tonight I will be throwing out my stone. And DH will be taking me out to dinner. And we will not be ordering pizza.

I am on my second pizza stone. The first cracked in the oven. It was Pampered Chef and the salesperson said that happens every now and then...just my luck!

Sorry about the pizza disaster. I wouldn't throw away the stone. I bet if you soaked it in water you could scrape it off. I have three pizza stones and I don't know what I'd do without them.
Speaking of stones, do any of you have a gingerbread house mold? I found one a few months ago at a garage sale and thought my DD 15 and I might attempt to make a gingerbread house this winter, just for fun. I wondered if anyone had a good recipe? And any tips for baking on these house mold stones? You push the dough into the different parts and then put them together once they're baked. It's like the Pampered Chef ones, just a different brand.
I still don't know what I'm fixing for dinner. :confused3 I could fix dirty rice or spaghetti or grilled cheese. Guess I'll wait until DH gets home from his trip to decide.
I'm hoping to try the Reuban Chicken sometime this weekend. DD won't eat Swiss cheese, but I'll fix hers with Provalone or Mozzarella and she'll be happy.

I'm sorry about the pizza disaster, but I also got a bit of a :teeth: when I visualized you and the stone facing off! I love all of my stones, and would be lost without them.
I did not cook tonight. I am having a new mattress and foundation delivered tomorrow, and needed to shop for new linens, so we finished the leftovers in the fridge when I got in.
Now all that I can think of is Glynis's pot roast, so I am thawing 2 chuck roasts out for Sunday dinner. I think of something for Saturday.

Anyway, I decided I did not want to go out after all. I seared a veal rib chop for DH, and made myself a broccoli-cheese stuffed chicken breast, but I really didn't want it (BOR-ING). The best parts were the sides, a new pasta-cheese recipe, and the first brussel sprouts of the year, yum! :)

We had steak fajitas and sopa azteca (tortilla soup) - the recipe from San Angel Inn that's in the WDW cookbook. I really wanted a warm autumn soup and the avocados were on sale and perfectly ripe so it was a good choice. I couldn't find pasilla peppers, so I just used some jalapeno from my garden and ground ancho. Tasted great!
