My dinner yesterday went kaput and it was supposed to last us 2 days. So I am going to thaw out some chicken I have already cooked, slather on some BBQ sauce and have sandwiches tonight. Yum yum (yeah, right). I'm still peeved my dinner was icky. Oh well! :)

Tonight we are having BBQ chicken
zucchini sticks
macaroni salad
Zucchini sticks
Wash zucchini, cut into sticks(leave peel on, gets too soggy if there's none), dip in egg white(you can use a whoe egg, I guess, I found this recipe when I was doing WW, so I still use just the white), dip in Italian seasoned breadcrumbs and place on cookie sheet sprayed lightly with cooking spray.
If you want a little extra spice liek i do, sprinkle chili powder over the sticks.
Bake for 20 minutes at 375. If necessary put under broiler to crisp them up.
Macaroni Salad
1/2 box elbow macaroni, cooked, rinsed, drained and cooled.
1-2 cans of tuna in water
2 stalks of celery, diced
(if desired,1 small onion, diced)
mayo, salt and pepper
1-2 hard boiled eggs
Mix everything except the eggs together, slice eggs and arrange them on top of the mac salad.

I had dinner alone again tonight as DH had ANOTHER dinner with the clients (thankfully the last one, or he'll have a coronary from all the steakhouses he's been going to!). I made one of my old favorites from college, and a dish that DH just hates (from eating it too much when we were in college!): toasted country bread rubbed with garlic, topped with seared mushrooms, and a gruyere-white wine sauce. For extra badness, I even added some crumbled bacon tonight! Unfortunately, I have a rotter summer cold, and could not eat much. Oh well, what I had was tasty.

The enchiladas were FANTASTIC! I had 3 left for lunch tomorrow and the dog ate them when I was out of the room!! She is sleeping in her room tonight instead of with us because I'm afraid she will have diarrhea. Damn dog!

Tonight is my husband's monthly Geek meeting, so I am on my own tonight. I stopped yesterday and picked up a sandwich at the deli at the grocery store. Light dinner then watching "From Hell" for me tonight :)
I am expecting a day from hell at work today so I will need to unwind tonight. I may treat myself to a glass of wine.

What is a geek meeting?
It's is actually called The User's Group. The meet once a month and they have a speaker, usually someone from Microsoft, or somewhere like that. They talk about advances in programming and whatnot (what my husband does) and they have dinner, door prizes, and general socializing. It's just easier to call it his Monthly Geek Meeting :) :) :)

I'm having an easy, quick and delicious dinner. Fish Sandwiches. I know that this recipe sounds weird but it is really tasty. I found the recipe a few years ago, tried it and everyone loved it:
Fish Sandwich
Use Ciabatta Rolls (warm in oven if you want)
Split them open (for a sandwich)
Place cooked breaded fillet of fish (I use frozen)
Top this with cole slaw and Lays Baked Potatoe Chips
Delicious, Yummy and MESSY!!!

Today I am making the crockpot Italian chicken listed on page 1. You are supposed to serve it over angel hair, but this time I am making it with penne rigate. Man, this dish is so good, real comfort food :)

Last night, I was going to make grilled tuna and grilled salmon, but right before I started cooking, DD said to me, "My belly doesn't want fish tonight." It turned out her belly wanted a great big burger, so she had that while DS and I had sausage.
Tonight is the tuna and salmon, macaroni and cheese (in case the kids' bellies still don't want fish), and spinach.

I'm being lazy tonight.
I boiled a pound of penne pasta, heated up two jars of Classico Four Cheese spaghetti sauce, threw two packages of already cooked and diced Louis Rich oven roasted chicken into it, and mixed it all together.
Then I sprinkled some mozzarella, asiago, and parmesan cheese over it, stuck it under the broiler and served it with a salad and garlic bread.
It makes a huge pot, so DH can take it to work this week, too.

We ended up having turkey burgers last night as DH was not in the mood for pasta. I have decided that I do not like turkey burgers. They are just too dry. I'd rather have a boca burger or a garden burger instead.
So, tonight we are having the pasta I was going to make last night.

liamsaunt...have you tried buying the ground turkey with the higher fat content. I believe it is 85/15. I make them really thick and they are great. The leanest ground turkey is tasteless and dry and I find that I only like using it in sloppy joes and dishes where other flavors are there to make the dish.

Last night I ended up grilling a marinated pork rib eye roast on our new grill and we had cheesy mashed potatoes, fried zucchini, and sliced red and yellow tomatoes to go with it.

Yes, I have tried that kind, and it is a bit better. Last night's were some preformed organic things--probably the low fat stuff.
The truth is that I am not a huge meat eater. I was a vegetarian for almost 10 years, then added back seafood, and later poultry a few years after. I really enjoy seafood, but am still not huge on poultry, and I don't eat red meat at all. I cook all kinds of meat for DH, and will eat a little bit of poultry, but usually only a few bites. I'm more of a vegetable person. Oddly though, I really like bacon! I guess I am just weird.

My computer has been down, and I have been using the laptop, which I hate! We have had a variety of chicken dinners, with vegetables from the farm.
DH is cutting tobacco fir the next couple days, so we are alll out in the field. Dinner tonite will be sausage and peppers on a grinder roll. I'm not sure for the weekend, it depends how much time I am in the field.

I sympathize with you! I often think about when that day comes in my house and I think I will be an absolute wreck!

I went grocery shopping this afternoon and found marinated turkey strips in chipotle citrus. I threw them in a skillet with green peppers and onions. We had those in wraps with the leftover guacamole I had made earlier this week. It was really good!

I feel more like myself today. I'm still missing DS, but I'm not nearly as blue.
We're getting ready to sit down to a late dinner of spaghetti with spinach and asiago sausages sliced in it, corn and French bread. We can also have a slice of chocolate cake, since I have some in the oven. Just realized the only green thing is in the sausage and I'm not sure that counts. ;) Oh well. We'll have to have lots of green tomorrow.

Yes! My mom made it this time and she went a little overboard with the chicken, but it was still good!
I forgot to mention that as of Tuesday (unless this baby decides to come sooner) I'll be eating hospital food for 3-5 days. Fortunately this hospital has really good food. You can even order gourmet meals to be delivered to your room. DH and I got one when I had my son as a gift from the chef, who knew my FIL.

Last night I made roasted garlic sausages with carmelized onions, some local sweetcorn on the cob, broccoli, and sliced tomatoes.
I'm not sure what we are having for dinner yet-DH and I are going to the store to pick out some yummy stuff. He gets to pick the menu, as he has to leave for a business trip to Mexico tomorrow morning. I do know that we are having grilled oysters for an appetizer.

Lindsay, I make a really easy BBQ Chicken Pizza.
Boboli thin pizza crust
Cubed cooked chicken, leftover grilled if I have it or precooked (like Louis Rich)
Sweet Baby Ray's Honey BBQ Sauce or whatever kind you have on hand
Shredded mild Cheddar cheese
Sweet Onion, chopped
Besides spreading the crust with BBQ sauce I also coat the chicken with it before I put it on the pizza.

We ended up doing an extended family dinner at DH's request yesterday, so the menu ended up as "big daddy" cut (2" thick) porterhouse steaks on the grill with a cilantro-chili butter. I don't eat red meat so I grilled a piece of chicken stuffed with cheese and chipotle peppers for me. Sides were Mom's famous eggplant sticks and green beans with toasted almonds. Liam doesn't like meat either, so I made him his favorite meal--rice, corn, black bean, and montery jack burittos.
I mentioned in yesterday's post that we were going to try grilled oysters for an appetizer. Well, it didn't work! Maybe we left them on too long (4 minutes), but they looked all shriveled up and yucky. I guess I prefer my oysters raw.
Today's family linner (without DH :( ) was grilled striped bass and swordfish. The striped bass had a simple garlic-parsley butter, and for the swordfish we made a sauce of tomato, cream, lemon, onion, and basil. Sides were (again! Fresh batch!) Mom's famous eggplant sticks, a killer salad of tomatoes from the garden, cukes, kalamata olives, feta, and a mustard-red wine vinagrette, a zucchini-summer squash saute with thyme, and WAAAY too rich twice baked potatoes. We also had some stuffies (stuffed quahogs), but I didn't eat those as they had bell pepper in them and bell peppers wreak havoc on my digestive system.
Tomorrow I have the day off from work and I am going to Cape Cod with Dsis and the kids and my Mom. Dinner will be fried clams at Captain Frostys! Yum!

Our tomatoes are coming in fast and furious, so we'll start off with a big salad. Then I'll do up some scallops in olive oil with rosemary and garlic and serve them over some pasta with some shredded mozzarella on top. If that doesn't hold us, we'll go out for some sherbet...

Tomorrow is the first day of school. I'm thinking we may do breakfast for supper tomorrow night. I could make ahead a breakfast casserole and just do fruit to go with it.

The meatballs with ramen noodles sounds good. Post it here if you find it, okay? It did make me think of a chicken and ramen recipe I used to have. I'll have to look for that one.

This sounds so good!! Do you mind posting a recipe for me? :)I've never actually made them before. It's just an idea that came to me when I was trying to figure out what to do with the little rolls I have. I'm going to use my meatball recipe, but make them bigger and flatter. I haven't decided whether I'm going to grill them or bake them in the oven, like I do with the regular meatballs.
Here's the meatball recipe:
1 egg
1/4 cup milk
1/2 cup dry bread crumbs (I use Progresso Italian Style)
1 Tablespoon dried onion flakes
3/4 teaspoon salt
1 - 1½ lbs. ground chuck
Beat egg, add milk, onion, salt and bread crumbs - mix well. Add ground beef and combine. Make meatballs, any size. Bake at 375º for 25 minutes (for golf ball size).

We didn't end up on the Cape today because it is pretty overcast and a little too cool for swimming. Hence, no fried clams for my dinner. Instead, I am planning on making a cheddar cheese souffle, an arugula salad, and a tomato confit that I will serve on crusty bread.

I could give you the recipe, but I have to warn you that I can never make it come out right. I have stood next to my Mom and watched her make them, and I still can't duplicate it. They either come out underdone, or the eggplant mysteriously disappears inside the coating. If you still want it, I will post it, as long as you don't hold me responsible if the recipe doesn't work for you either! :)

I just have to say that Glynis's Ranch Potato Salad was a big hit here! Littlest DD had a huge plate of it, DH said I definitely have to make it again and even oldest DD's friend who was here for dinner told me 3 times how good it was! Thank you, Glynis!! :thumbsup2

We're having hamburgers with sweet potato hash
Sweet Potato Hash
2 sweet potatoes
1 tomato (squeeze to get seeds and juice out)
1 red pepper
1 zuchini
1 C corn
1/2 C lima beans
olive or peanut oil
salt and pepper
Dice all vegetables into small 1/4 inch pieces. Coat your pan with oil (I prefer peanut) and start your sweet potatoes first. Let those cook for about 5 minutes then throw in the rest of your vegetables. Just let them cook until they are tender and then add your salt & pepper to taste.
Also, if you like certain vegetables more than others, feel free to change how much of what you put in. Sometimes I put cooked & chopped bacon in too. It adds a different flavor but it is excellent with or without.
I'm telling you, this stuff ROCKS. It is sooooo good.

I'm making a Mexican Cornbread casserole. I have no recipe and am just throwing it together tonight. It'll have a bottom layer of shredded chicken breast and taco sauce, then a layer of shredded cheese, then the top layer will be a very moist Mexican cornbread. I've been gone and busy all day and hadn't thought about dinner at all...had to use some chicken in the fridge.

I made grilled chicken on a bed of angel hair pasta with olive oil, garlic, fresh basil and fresh tomatoes. We had our usual broccoli too. The pasta was so good I could have eaten all of it myself.

I made mine a little different. My stomach cannot "stomach" really hot and spicy foods, nor shriimp (even though I LOOOVE it), so here are the things I switched.
*I left out the hot peppers and added 1 huge green bell pepper.
*Instead of andouille sausage I used smoked turkey sausage. Since I didn't put shrimp in it, I diced the whole pack instead of half. And I stirred it INTO the pasta, not on top.
*I don't cook with beer so I just used 1 1/2 cups of chicken stock.
*My husband and I don't like tomatoes (the actual tomato, not sauce or soup, etc.), so I added at 15 oz. can of tomato sauce instead of the crushed tomatoes.
*Since the heavy cream is added to "cool off" the spicyness (is that a word?) I only added a few tablespoons because mine wasn't hot. Oh and I used half-and-half instead of cream.
Ok, I think I got it all. Seriously, it was so yummy I thought my husband was going to have a foodgasm!! :)

I recycled our leftover meatloaf and made tacos. Really good. We finished off the peach crisp with some ice cream afterwards. :)

Tonight I made a salad using Romaine lettuce, grilled chicken, Caesar Salad dressing, croutons, feta cheese, cukes, grape tomatoes, purple onions
It was very good and easy (a quick clean up too!)

We did a mexican inspired meal tonight. My partner made some homemade guacamole (2 avocados, juice of 1/2 a lime, 1 small diced onion, and 3 or 4 of our fresh tomatoes from the garden, diced)which we had with tortilla chips, and I made stuffed papayas:
2 papayas, split in half, seeds removed
1/2 lb. lean ground beef
fresh ginger root, grated, to taste
chili powder
raspberry chipotle salsa
Brown the ground beef with the chili powder, grate the ginger into the beef, add 1/4 cup of the salsa. Arrange the papaya halves in a baking pan skin-side down, scoop beef mixture into centers of papaya halves and bake in 350 degree oven for 15 minutes.

Last night I had pasta with cherry tomatoes from the garden, basil, garlic, olives, and onions, along with some pesto bread.
Tonight DH is able to catch a flight back from Mexico in time for a late dinner (hooray!), so I am serving grilled jumbo shrimp with garlic aioli, an heirloom tomato salad, and a sesame ficelle bread from my favorite bakery (Iggys, for those of you from around Boston).

Last night I made a really nice pasta with a sauce of three different kinds of heirloom tomatoes chopped up and sauted briefly in a little butter with basil. It was really good!
Tonight...maybe nothing as my DH is really sick. :( Remember how I mentioned he had to go to Mexico for a business trip earlier this week? Well, last night he woke up with a 103 degree fever and the old Montezuma's revenge! Poor guy. Hopefully his doc will hook him up with some cipro soon.

It really isn't!! Trust me, I don't make complicated things! :) A little tip that may help, chop up some of your veggies and chicken earlier in the day and stick them in the fridge. That way some of your work is done :) It seemed like a lot of steps the first time I made it, but the second time it was a breeze!

BIG Shrimp cocktails (they were swimming in the ocean last night, poor guys)
followed by ham steak, left over pot roast veggies (carrots and potatoes) and garlic bread (because I have leftover roasted garlic from a crockpot chicken dish) and probably sherbet for dessert.
Easy dinner because I've already steamed the shrimp and have chilling on ice, made the cocktail sauce and everything is done already except for warming it up! :banana:

We had an Italian Carbona (sp?) the other night. It was a meal in a box deal. I heard about the dish first on Rachel Ray. (She doesn't use the box.) Anyway, it made a lot & we didn't finish it all even though it was pretty good. I'm turning the leftovers into a spaghetti bake with extra sauce, shredded cheese & meatballs. Smells great! I'll add a salad and we'll have rice crispy treats for dessert. :)

Today is DD's 9th birthday so she gets to pick where we go for dinner. She wants McDonalds. Blech! We don't eat there very often so I guess if she wants that as a treat, that is cool. Cheap too! We tried to talk her into Friday's because she loves the dirt & worms dessert there or Cheeseburger in Paradise because a cuban sandwich sounds awfully good to me but she seems to want McDonalds. I think she also wants to play at the playground. ;) Sooooo, McDonalds it is.

Don't ask! We're rescheduling to next weekend. I got up and looked at the weather as it was nasty looking out. HUGE rain on the radar. Looked like there was no possible way it wouldn't rain for hours. So we brought in the sign (which had been torn apart and set on fire during the night most likely by little punks) in and decided to cancel it.
After all that, it never ended up raining. Not one drop! Ohhhh I was ticked but I can laugh about it now...really. I know that if I would have dragged all that stuff out, it would have poured so either way it is fine. It is looking like really nice weather next weekend so we'll just do it then.

Pot Roast
(courtesy of Paula Deen)
1 - 3lb boneless chuck roast
salt, pepper, garlic powder
1/4 c. vegetable oil
1 onion, thinly sliced
3 bay leaves
3 or 4 beef bouillon cubes, crushed
2 garlic cloves, crushed
1 (10 3/4 oz) can condensed cream of mushroom soup
1/2 c. chardonnay
Liberally sprinkle roast with salt, pepper and garlic powder. Using a skillet over high heat, sear roast until brown in oil. Place roast in crock pot, and layer onions, bay leaves, crushed bouillon cubes and garlic over meat. Combine soup and wine and pour over roast. Cook on low for 8 hours.
Enjoy - I have done this with chuck roast, sirloin tip and rump roast. All came out wonderful. I also thicken the gravy a little after it's done with a cornstarch slurry!!

We had bbq beef sandwiches. I put some tip steak in the crock pot this morning with bbq sauce and by tonight it's falling apart.... put it on a nice soft roll (with cheese if you like) and everyone loved it! My dh had 3 sandwiches (they are smallish rolls). It's something different anyway- we get tired of the same old same old!

Tonight we are having leftover black bean chili. Boy was it good!!! I did something a little different this time. Instead of 1 lb. of ground beef, I added 1 lb. ground beef and 1 lb. ground turkey (not the EXTRA-lean kind, that's too dry for our taste). Mmmmmm! It was yummy!!

I have some catching up to do.
Friday DH was too sick to eat, so I just made myself a mushroom omelet.
Saturday I made chicken Milanese, and served that with macaroni and cheese, roasted cauliflower, and hollowed out pattypan squash stuffed with tomatoes, onions, and parmesean.
Sunday’s family linner was grilled cedar planked salmon on a bed of rosemary and pears, a fresh tomato tart which I baked on puff pastry, sautéed summer squash and zucchini, and Mom’s famous eggplant sticks. I changed the recipe for the salmon a bit and actually liked it better than the old recipe. Here is the new sauce:
Combine 3 tablespoons bourbon, 1 tbsp. soy sauce, 1 tbsp. brown sugar, ½ tsp. freshly cracked black pepper, 1 tbsp. maple syrup, 2 cloves chopped garlic, 1 tbsp. freshly grated ginger, and salt to taste in a very small saucepan and simmer over medium low heat until reduced by half and thickened. Put this glaze on your salmon before grilling.
Finishing sauce: combine 4 tbsp. butter, 1 tsp. maple syrup, 1 tsp. soy sauce, salt and cayenne pepper to taste in a small saucepan and melt over low heat, stirring, until butter is melted and ingredients are combined. Pour this sauce over the fish when it comes off the grill.
I’m not sure about tonight’s dinner yet. DH is still sick so I will have to see what he is in the mood for.

Hi all! I got back from our vacation early Sunday morning, so yesterday was not a productive day in the kitchen. I joined my DD for a school shopping marathon to two Childrens Place stores, the Disney Store (of course) and the stride Rite store, so I made a quick family favorite goulash with ground turkey tomatoes, onions, tomato soup, a little ketchup and elbows.
Tonite it is beef and broccoli, orange chicken, and some kind of starch. DH is going to the farm after work, so I want a fast meal.
Tomorrow is DGD first day of kindergarden so I want a special meal for her. I always did this when my kids were little, and I am feeling a bit nostalgic as I saw my youngest for a few days :cloud9: , and now I miss him more than ever :sad1: .

We had pot roast last night (Sunday) too. YUM, with mashed potatoes and creamed spinach...DH had brussels sprouts. Made the potroast in the crock pot. I sear it as well and season and then just pour a can of french onion soup over it and let it go. ITs great.
Tonight I was going to have spaghetti and meat balls but I was too tired when I got home (should have stuck it in the crock pot too) so we went out to a BBQ restaurant. (But neither of us got BBQ)

Toinght I am making spaghetti!! I am making my sauce a little different. Rachael Ray browned up some pancetta in her sauce recently and it looked so good I'm going to give it a try!!

Tonight is easy night at my house. I'm making mac and cheese for the kids and DH and I will have leftover curry, and a baked bean casserole from last night. Sides will be cornbread, and a green salad. No dessert tonight. We pigged out on Cinnamon brownies yesterday.

Happy birthday to our birthday girls!
Yesterday I fixed baked ziti. It's a simple recipe and it's pretty good. (Can't remember if I already told you what I was fixing and I'm too lazy to go back and look)
Today, I have a whole chicken cooking in the crockpot. Tonight I'll bone it and use part of it to make broccoli/rice au gratin. I figure with fruit and a vegetable, that'll be plenty for dinner, and I should have lots of chicken left-over to use for another meal. :thumbsup2

Yeah, I'm ok. Just a little bruised, stiff, and sore.
I have a walk-in shower. I was giving it a quick cleaning job. I have a hand-held shower head thingy and I was rinsing the floor off. I dropped it and I was leaning over to get it. Well I was sitting kinda half on the bathroom tile and half on the slight incline of the shower. (in my wheelchair of course) I leaned over a little too far started to fall so I caught myself on my hands and was about to work my way back up (kind of a lost my balance kind of thing). Anyway, my wheelchair had other plans. I didn't have my brakes on and the center of balance must have been way off. My chair ended up going forward and I fell smack down on my footrest and got wedged.
My husband was in the shower in the other bathroom. I had semi-screamed when I fell and he didn't hear me. When he opened the door he yelled, "You ok?" I, still wedged and now crying, "Help me please!!!" He comes running and gave me a hand. Lordy, I have no idea how I got wedged, but wedged I was. I scraped my back on my footrest getting myself out.
I am sitting here with tears in my eyes as I type this. I'm not really hurt, it just scared the padiddle out of me.

We're having an easy dinner tonight. I'm planning sloppy joe's, roasted potatoes and something green.
Tomorrow night we're doing Taste of Norman. Our town's high school music programs sell tickets for $15 and area restaurants set up tasting booths at the local university. The whole $15 is divided between the schools because the restaurants donate the food. The schools make lots of money and it's really lots of fun. We get to try lots of yummy new things.

Last night's dinner was really gross. We had to work late and so just stopped for some takeout sandwiches from Panera Bread. Maybe we ordered wrong but they were just ooky. Not recommended.

My sciatica was acting up so badly last night--I stayed on the couch because I was afraid if my husband moved AT ALL in the bed, it would be too painful for me. Unfortunately, halfway through the night I woke up and my whole lower back was so swollen I couldn't move and I had to holler for Dh to come and carry me to the bathroom. *sigh*
I'm feeling better todaym, so he'd getting pork chops (his favorite) for dinner as a treat for being so good to me.
It's really the simplest recipe; brown the chops (salt and pepper them) with some oil and an onion, then cover with some ketchup and a can of cream of chicken soup. Sounds kinda weird, but SOOOO tasty over a bed of rice with some fresh biscuits.
He's also getting a chocolate cake. :goodvibes

Thanks for the kind words, but I wasn't rushing. A quick clean up was just a spray and rinse kind of clean, not a down-on-my-hands-and-knees clean. That's what I meant :)

It's been crazy here, so no cooking or Dis'ing for the past few days. It's crunch time on the farm, and we partner with a friend so that both have enough help. This means that I have a lot of driving because I shuttle the guys back and forth. Oh well, it's almost done, just hope that the rain holds off a bit.
Lindsay, I just saw that you were hurt, those bruises look wicked! I hope taht you hurt less than those bruises show.
I have been watching this storm, and hope that those in the path do not suffer any damage.

6 chicken breasts..This
1 tbsp olive oil
3 cloves garlic,minced
1 package spinach
1 cup chicken broth
1/2 Cup sun dried tomatoes
1/2 cup white wine
Parmesan cheese
1) Grill chicken in a large skillet with olive oil and garlic until it gets nice and brown on both sides
2) When the chicken is about half done add remaining ingredients and simmer for about 15 minutes..The wine can be replaced with chicken broth if need be
3) Serve chicken with spinach/sun dried tomatoes on top..Throw some parmesan cheese on top

Even though I missed the deadline for the paper we went ahead and tried the garage sale today. We made $170! Not too shabby! We're doing it again next weekend with my cousin and we are going to put it in the paper so hopefully we will do even better...I still have plenty left.
But anyyyway...my aunt brought us some leftovers from her catering gig so no cooking. We had chicken breast stuffed with ham and mozzarella cheese, mashed taters, green beans and rolls with cinammon butter. It hit the spot!

We will be having pasta salad with frozen country fried steak patties on onion rolls. Lunch is leftover meatloaf sandwiches.

DH is out of town today. I don't usually like to cook while he's gone, since my kids are not adventurous eaters. However, I like the look of the Mexican Lasagna recipe posted here. So, I think I'll try that. If the kids don't like it, they can have cereal for dinner!

Glynis: You sound like me...my kids are so unadverturous too and they're not too young anymore!!! So, if they don't like it around here...cereal or yogurt!!!

Yup. I refuse to make 2 separate dinners: one for me and DH and one for the kids. If they don't like what I made, they can make sandwiches or cereal! Most of the time, they don't want to go to the trouble, so they'll try what I make. Of course they grumble, but eventually they eat it! Why didn't anyone tell me that parenting was this hard?

It's very tasty..I think it's the sun dried tomatoes and wine that give it so much taste.... I realy tweak it...Add a little more of this a little that too it ,including hot peppers...The Spinich Sun dried tomato wine mix is really good in Orzo,which I serve wth this..Using Parmigiano Reggianno instead of parmesan really kicks up the taste..The Parm. Reggiano is expensive but one small block of it lasts me a month
