My DS's birthday (17) is tomorrow, but he'll be at Kings Island all day with friends, so we're celebrating with the family tonight. He requested cheesecake, and I asked what he wanted for dinner - pizza!! I said don't you want me to cook anything special? He answered, well, Mom, you have so many special things all the time, I thought I'd give you a day off. :rotfl: He knows how to say nice things to women.... :sunny:

Tonight we're having a recipe originally posted by Vettechick. We LOVE this roasted chicken recipe, but tonight I'm going to try it on wings instead of roasting a whole chicken. We'll have green beans and corn on the cob on the side and banana pudding for dessert.

Roast Sticky Chicken-Rotisserie Style

INGREDIENTS:

4 teaspoons salt
2 teaspoons paprika
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon white pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
2 onions, quartered
2 (4 pound) whole chickens

DIRECTIONS:
In a small bowl, mix together salt, paprika, onion powder,
thyme, white pepper, black pepper, cayenne pepper, and garlic
powder. Remove and discard giblets from chicken. Rinse chicken
cavity, and pat dry with paper towel. Rub each chicken inside
and out with spice mixture. Place 1 onion into the cavity of each
chicken. Place chickens in a resealable bag or double wrap with
plastic wrap. Refrigerate overnight, or at least 4 to 6 hours.
Preheat oven to 500 degrees F (120 degrees C).
Place chickens in a roasting pan.
Using a very high oven temperature (500 degrees F/260 degrees
C) is essential. This intense heat will make the skin deliciously
browned and crunchy. After 20 minutes or so, the oven
temperature is reduced (350 degrees F/175 degrees C) so that
the meat can finish cooking before the skin burns. Check the
meat after an hour.

I grilled some boneless chicken breast, made some guacamole, and we had chicken burritos. Well, I should say, I had chicken burritos. DS had black beans and rice burritos and DD mainly just had rice, with a couple bites of chicken and carrots thrown into the mix.

We had Barber Chicken the low fat one stuffed with broccoli and cheese.
These are found in the frozen section and are great when you don't feel like cooking...I only buy them when they are on sale(otherwise they are kind of expensive) and then I keep them in the freezer for lazy nights. I made the Barber Chicken, broccoli and a salad.

These are really not bad for frozen ~ I especially like the one with brie and apples in the middle and the nice thing is that since I have so many different tastes in this house, everyone can have the kind they like without me having to do 6 different things from scratch. ;)

stacy347-I live in CT and I never saw the ones with brie and apples!!! That sounds so "gourmetish"!!! I would love to try it!!! I'll have to keep looking; maybe we will get that type of Barber chicken one of these days!!! :)

I made enough nutty chicken last night to feed us tonight. We will have leftover succotash (my version) to go with it. I get a night off! :)

Today we are having a stir-fry dinner and I'm going to do sirloin strips, baby corn, water chestnuts, and some sliced onion in the stir-fry sauce and then serve it over their choice of ramen noodles or beef fried rice. :sunny:

I did not cook yesterday, I was still sick. Tonite, if I feel better I am having roasted apricot chicken with prunes and sage along with fresh corn and a salad. I'll make some kind of potato to have with it.

We are having taco salad for dinner tonight. We are about at the end of our food budget for the month, so we're back to basics. The kids like it, though, so it will be fine! I just like to try new things.

Last night I had Turkey Sausage Breakfast. I made it with homemade turkey sausage. It was good but I need a better recipe for the sausage, the one I had wasn't spicy enough for me so I put hot sauce on it. Yummy.

INGREDIENTS:
1 pound ground turkey sausage
4 eggs, lightly beaten
4 green onions, finely chopped
1 (16 ounce) package frozen hash brown potatoes
1/2 cup milk
1 1/2 cups shredded Cheddar cheese



DIRECTIONS:
Place turkey sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, stir together eggs, green onions, hash browns, milk, cheddar cheese and cooked sausage. Pour mixture into a 9x13 inch baking pan.
Bake in preheated oven for 60 minutes.

Last night we got home from work to find our house filled with folks trying to finish the renovation (one of these days!), so we went out to dinner at a small local place. It was really good. We split an app. of fried calamari with arugula, and then I had pan-seared halbut with tomato pasta and baby vegetables in a white wine-herb broth. DH had seared striped bass and jumbo scallops over thin saffron pasta.

Tonight I am making grilled sausage and corn on the cob, sliced tomatoes and garlic bread.

DH and I are heading to Tanglewood this weekend (the summer home of the Boston Symphony Orchestra) with Dsis and our parents. We are planning some pretty nice picnics for the concerts. Let's hope the weather holds! Since we won't have internet this weekend, I'll post our picnics now:

Friday: cold fried chicken, pasta salad with cherry tomatoes, fresh mozzarella, and pesto, garden salad, canteloupe and watermelon

Saturday: baguettes, brie, pate, tomato-basil salad, assorted antipasto, cherries, strawberries, and chocolate covered raspberries.

Sunday: curried chicken salad, sweet sesame noodles, whatever we have left from the other picnics, and more chocolate covered raspberries.

As DSis posted above, I'll be away this weekend, and like Glynis, we are also at the end of our food budget for the month, so there isn't too much in the house. We had BLTs and chips (I know...bad!) on the side.

Tonight I think will be cereal- we are going to the State Fair and I KNOW everyone will eat a bunch of crap there so I'm not going to cook.

Tonight we are going to my mom's house, she's cooking dinner for my husband's b-day. We are having chicken and rice with a carrot a broccoli casserole (I will HAVE to post this recipe later!!). We will be having derby pie for dessert.

Recipe please!!!! This sounds delicious!!!

2 roasting chickens, cut into pieces
1 (12-ounce) jar apricot preserves
15 medium dried plums, pitted
1/3 cup olive oil
1 tablespoon white vinegar
3 pinches salt
20 grinds black pepper
10 cloves garlic, peeled
20 to 30 sage leavesPreheat oven to 400 degrees F. Trim any extra fat from the chicken pieces and transfer them to a large roasting pan or broiler pan. If you don't have a roasting pan that's large enough, use 2 identical 13 by 9-inch baking pans.

Toss all of the ingredients together with the chicken until the chicken is evenly coated with the sauce. Arrange the chicken pieces skin-side up in the pan, spaced evenly apart.

If you're looking to prepare in advance, you can do everything up to this point and cover the roasting dishes and refrigerate until you're ready to roast the chicken.

Roast, uncovered, until the tops of the chicken pieces are browned and the chicken is cooked through, and the juices run clear, about 35 to 40 minutes.






This is a favorite in my home. Okay, not my DH because it has stuff on it.

Tonite DD and DSILL are out shopping with Kady, so it is just DH and me. I think we will just have sandwiches and chips. He loves this kind of meal, and the poor guy has been eating food that he detests all week long. :guilty:

Saturday we are attending a 25th wedding aniversary, so I am not cooking. Sunday I will make it up to him and fix meal that does not have fruit, jam, twigs, weeds, leaves, or all in one pan for him. Then the Derby Pie for desert. :thumbsup2

Tonight we are having Pizza Meatloaf Muffins with green beans and yellow pear tomatoes from our garden (yum, yum). For dessert, I'm leaning to ice cream sundaes to get rid of some odds and ends of ice cream that are filling my freezer.

I had a pork roast in the crock-pot yesterday that we were going to have last night, but by the time we got home I was too tired to deal with it so we just had BLTs.

Looks like we are having pulled pork at our house tonight! We have been eating a lot of pork this summer because it seems to be so much cheaper than beef has been. I can't believe that price of beef lately. Baby back ribs were almost the same price per pound as ground chuck this week!

I had a rough day today and couldn't go anywhere since bf was working on my car (It's a gross story, I can't tell it on a thread about food) so I threw together whatever I had in the fridge/yard.

I started with sauteeing an onion in a teaspoon of EVOO and adding a package of ground turkey breast and browned it up. I added a can of diced tomatoes, a can of corn, some zucchini, jalapeno and cilantro from the yard and letting it all simmer.

I made a package of Whole Grain Rice A Roni Spanish Rice flavor in the microwave and tossed the two together. They're still simmering. I'm considering sprinkling a little low fat cheddar on top. BF won't complain about any dish with cheese on top.

I haven't thought of a name yet. Maybe after I taste it. ;)

Well, we ended up not trying the new Japanese place, it's not open for lunch on Saturdays, nor was the movie playing in town. So we ended up driving to Chattanooga and eating at American Cafe and saw Lady in the Water there. Food was awesome, movie was ok, and M. Night was quite nice on the eyes :)

bengalbelle ~ Taco Macaroni isn't anything fancy...just a pot of mac & cheese mixed with a pound of taco meat, 1/2 cup of sour cream and sprinkled with taco sauce and shredded cheese. I do different variations on it ~ I didn't even end up making it today, LOL. I made Beef Stroganoff instead. :)

We spent the day at the beach today. So, no way was I cooking dinner. I told the kids I wanted to go to this restaurant in Guilford, CT called "The Place". It's a neat little place....a very big menu is posted with the following items: lobster, steak, bbq chicken, a couple of types of fish, corn on the cob...that's about it. The entire restaurant seating is outdoors at round wooden tables with tree stumps as seats.
Ok...here goes...if you don't believe me...I have his autograph and 2 pictures on my cell phone camera (which I need to learn how to hook up to something so I can print out the pictures)...there sitting right at the next table, with a baseball hat and sunglasses trying to be incognito......................

It was definitely him because the owner of the restaurant started talking to him and all the employees were staring.

We went out to dinner tonight. DD and I had chicken buffalitos at Buffalo Wild Wings. DH and DS had wings.

Let me look up a couple of our favorites to share, since you've shared so many with me.

Easy Old Fashioned Sweet and Sour Cole Slaw

1 1/2 lbs. shredded green cabbage
1 t. salt
2/3 c. sugar
1/3 c. cider vinegar
1 c. whipping cream (do not whip)

Place shredded cabbage in covered dish in refrigerator for several hours to chill. Mix dressing ingredients. Pour over cabbage 30 minutes before serving. Chill and serve. It's really rich, but it's so good!

Chicken Breasts in Champagne Sauce (from Southern Living many years ago)

2 T. margarine or butter
4 chicken breast halves, skinned and boned
1/2 c. sliced fresh mushrooms
1/3 c. champagne
1/3 c. sour cream
1/8 t. salt
1/8 t. pepper

Heat butter in skillet. Add chicken and brown on both sides. Remove chicken to a 1 qt. baking dish, reserving drippings in skillet. Add mushrooms and saute. Remove mushrooms and set aside. Stir champagne into drippings. Simmer until heated. Pour over chicken and bake covered at 350, 20 minutes or until chicken is done. Remove chicken to platter, reserving liquid. Whisk sour cream, salt and pepper into liquid until smooth. Add mushrooms. Pour over chicken. Serve with wild rice and a salad. (My DH first made this for our anniversary one year and it was a huge hit!)

Mam-maw's Sausage Macaroni and Cheese (the ultimate comfort food)

1 lb. sausage
1 c. chopped onion
3 oz. macaroni (about 3/4 c.)
1 can cream of celery soup
2/3 c. milk
3 slightly beaten eggs
2 c. shredded cheese (I use cheddar)
optional topping of bread crumbs and margarine

Brown sausage and onion. Drain. Put in square baking dish. Top with cooked and drained macaroni. Combine soup and milk, heat. Stir in small amount of hot mixture into eggs. Then return the eggs to the hot soup. Add cheese. Pour over macaroni. Top with crumbs and melted margarine or butter if desired. Bake at 350 for 40-45 minutes.
(Note: I double this recipe, but cut the cholesterol a bit by still using only one pound of sausage, only two eggs and maybe three cups of cheese. Thought I'd give you the original one and you can play with it if you like.)

My Favorite Pizza Crust

1 pkg rapid rise yeast
1 c. warm water (not too hot or two cold)
1 t. sugar
2 1/2 c. flour
1/2 c. yellow cornmeal
1/4 c. EVOO
toppings of your choice

Mix and let rise 1 hour. Spread on hot pizza brick or greased cookie sheet. This dough is very elastic and pliable. It's my favorite. Put on your favorite toppings and bake in a hot oven until done. How long depends on how thick the crust is and how hot you have the oven. Mmmmm! My family loves this stuff.

Painted Desert Casserole

1 can asparagus
1 can green beans
1 can peas
1 can cream of mushroom soup
1 can sliced water chestnuts
1 can sliced mushrooms
1/4 lb. butter, melted
1/2 lb cheddar cheese, shredded
bread crumbs

Layer drained vegetables in 9x13 dish. Spred with undiluted soup. Top with cheese. Shake on breadcrumbs and drizzle with butter. Bake at 350 for 40 minutes. (I know it sounds weird, but it's fantastic!)

It is super easy and very good.

2 Lg. cooked chicken breast - shredded after cooked (make sure not to overcook and make it tough)

1 pkg. fresh button mushrooms - you could substitute any mushroom you like here or have a mixture.

Alfredo Sauce - I make my own with a bechamel base (butter, flour, cream/milk) and add parmesan cheese, salt, pepper, nutmeg. You could use a jarred alfredo if you wanted to but the sauce is pretty quick.

Lasagna Noodles

Mozzarella Cheese

Parmesan Cheese

----

Cook the chicken, noodles, & sauce. Layer the noodles, sauce, chicken, mushrooms, & cheese like you would any other lasagna. Top with parmesan cheese.

Tonight I should use up our leftover roast. I guess I'll fix my mom's roast beef hash. My DH loves it and it's so easy. Let me know if you want to know how to make it. It's a simple meat and potato dish, but it's a great way to stretch another meal out of leftovers.

I've had a change of heart. They had marinated pork chops, buy one package - get one free at the grocery. Sooooo, we're grilling lots of pork chops tonight (and saving some for later this week). That'll make for an easy dinner in a couple of days. And we found two flavors, so the family won't be tired of it. :thumbsup2

Guess I'll do the roast beef hash tomorrow. Now I need to figure out what to fix with my pork chops. Maybe we'll have baked potatoes or rice and a veggie.

We are invited to our friends this evening. They bring their produce to the market in kent every Saturday, and came home with a lot of steamers. They are grilling them with some potatoes. I don't know what else. I made lemon cheese squares and brownies for dessert.

I got a little crazy today! I made 2 chicken recipes that I found on this thread; one for today-chicken with Rice Krispies and one for tomorrow-Chicken with Ritz Crackers. Then I made home-made cole slaw and for dessert: Derby Pie. Wow!!! All the posters were right, the Derby Pie was delicious!!!!

Wow, everyone has been cooking amazing dinners this weekend! I saw a couple of recipes I am going to try soon. We ate our Tanglewood picnic early today, and just spent the past three hours fighting traffic on the turnpike to get home, so it's time for a late dinner. Of course, I am tired, and have a headache from traveling, so I'll admit that the late "dinner" is just going to be nachos.

Let us know. I use Paula Dean's recipe for baked spaghetti, but because pasta is a favorite here in my home, I like to check out new ones.

Tonight will be tacos for the kids, and taco salad for me and DH. Nothing glamorous, but the kids will eat it! I'm going to add some kidney beans to stretch the ground turkey I'm using. I think I'll also make some homemade guacamole to go along with it. That sounds yummy!

I think I am making these turkey burgers I have in the freezer. It's a gamble because we've never had them before, and it is very possible my children will hate them. I am making macaroni and cheese as a side dish (backup meal if the burgers are terrible), and we will have broccoli for our veggie.

My family doesn't like the taste of turkey burgers, either, but I've learned to flavor them with other things. Add green onions, and water chestnuts to the burger and then baste them while they are grilling with teriyaki sauce. Even my pickiest eater will eat these.

You can also flavor the burger with taco seasoning and make taco burgers.

Add some salsa to it when you make meatloaf. It's all about experimentation with ground turkey.

I'm glad you had the mac and cheese to fall back on!

Our central air unit stopped sending air through today, so I am not cooking. The repair man came and removed the brand new expensive air filter that I purchased and my DH put in yesterday. It was supposed to rap more dust particles. Seems it also traps air flow. Now it works like a charm, but it is too hot to start, so fresh cucumbers and snadwiches for us.

We are having leftover baked spaghetti w/ tomato basil bread tonight. Man, it was awesome!! Recipe is below.

WFD at your house??

1 package spaghetti (16 oz.)

1 ½ lbs. ground beef

1 medium onion chopped

½ cup chopped green pepper

1 can (10 ¾ oz.) cream of mushroom soup

1 can (10 ¾ oz.) tomato soup

1 can (8 oz.) tomato sauce

1 cup water

2 tbs. brown sugar

1 tsp. salt

1 tsp. dried basil

1 tsp. dried oregano

½ tsp. dried marjoram

½ tsp. dried rosemary, crushed

1/8 tsp garlic salt

1 cup shredded part-skim mozzarella cheese, divided

Break spaghetti in half and cook according to instructions. Meanwhile, in a Dutch oven, cook the beef, onion, and green pepper over medium heat until meat is no longer pink; drain. Stir in the soups, tomato sauce, water, brown sugar and seasonings.

Drain spaghetti; stir in meat sauce. Add ½ cup of cheese. Transfer to a greased 9x13 baking dish. Cover and bake at 350 for 30 minutes. Uncover and sprinkle with remaining cheese. Bake 10-15 minutes longer or until cheese is melted.

We don't eat a lot of milk products when he's around because he shouldn't have them. He's lactose intollerant.

It isn't sweet in the very least!! I was worried about this too and it tastes the complete opposite than I was expecting :) I told my husband there was 2 tbs. brown sugar in the sauce. He stopped eating, looked at me and said, "Seriously? I never would've known."

The Noodle Bowl was a huge hit and it was really easy. I used baby carrots (cut in half) instead of sliced carrots, broccoli, and snow peas. I also used sandwich steaks that I had pre-grilled earlier this week and then sliced. It turned out great. DD told me to fix it sometime when one of her friends is coming to dinner, and that's a big compliment.

Tomorrow DS and DH are going out to dinner at DH's old frat house, so DD and I are going out somewhere. I figure if they get the evening out, so do we.

Last night we had spaghetti and sausage with a green salad. Tonite I have some boneless country style ribs marinating in a chinese red sauce. I am going to roast them and serve with some roasted red potatos and onions with garlic and olive oil and some grilled eggplant. A green salad on the side.

A little tip on the spaghetti: if you find multitasking hard when cooking, as I o sometimes, you can get the sauce all ready and then just leave it on low and THEN cook the spaghetti. That's what I did. While I was making the sauce I got my water going. When the sauce was done, I cranked 'er up and then dropped the pasta.

Good tip, thanks! As for the bread, oh well! I'll think of something. My kids most likely wouldn't have eaten it anyway with tomatoes and "green stuff" on it. I'll probably just make some breadsticks. Or generic garlic bread.

Thanks to those who had suggestions on how to spruce up turkey burgers to be edible. Unfortunately, my children now have them on their Most Hated List, so I could coat them in chocolate and they wouldn't eat them (yes, I know that would be disgusting, but you get my point...I hope).

Last night, we had grilled bratwurst, carrots and pasta with chives from my garden. Today, it is 100 degrees with who knows what percentage humidity, so there was no cooking, even though the AC seems to be working okay. We had takeout from the local clamshack. It was good, but in retrospect, a big salad probably would have been better.

I just made this for the first time. It was DEEE licious! :teeth:

Layered Fiesta Casserole

Serves 6

1 - 1 1/2 lbs. lean ground beef - I used 1 1/2 pounds.
1 - green pepper, chopped - I only used a 1/2
1 - red pepper, chopped - I didn't use this
1 - 16oz jar of Thick and Chunky Salsa. I used the mild type.
1 can (14 1/2 oz.) diced tomatoes, undrained. I also used a can of mixed diced tomatoes and chilies, about 12 oz. also undrained.
1 - pkg. (10 oz.) frozen corn, thawed. I used a can of corn, drained.
12 - flour tortillas (6 inch)
1 1/2 cups Shredded Sharp Cheddar Cheese.

Preheat oven to 375F. Brown meat with peppers in a large skillet, stirring frequently, drain. Stir in salsa, tomatoes and corn. Bring to a boil. I cooked the ground beef in a fry pain and then put the beef and other ingredients in a large sauce pan to cook up everything.

Spoon 1 cup or so meat mixture onto bottom of a 13x9-inch greased baking dish. Top with 6 tortillas, overlapping as necessary. Spoon half of the remaining meat mixture over tortillas, top with 3/4 cup of the cheese. Top with remaining 6 tortillas and meat mixture. Cover with foil.

Bake 25 to 30 min. or until heated thoroughly. Remove from oven, uncover. Sprinkle with remaining 3/4 cup cheese. Let stand 5 minutes or until cheese is melted.

About 400 calories per serving. I served it with Lipton's Fiesta Sides Taco Rice and applesauce. Easy and fast to make and really good! :thumbsup2

I made mine a little different. My stomach cannot "stomach" really hot and spicy foods, nor shriimp (even though I LOOOVE it), so here are the things I switched.

*I left out the hot peppers and added 1 huge green bell pepper.

*Instead of andouille sausage I used smoked turkey sausage. Since I didn't put shrimp in it, I diced the whole pack instead of half. And I stirred it INTO the pasta, not on top.

*I don't cook with beer so I just used 2 cups of chicken stock.

*My husband and I don't like tomatoes (the actual tomato, not sauce or soup, etc.), so I added at 15 oz. can of tomato sauce instead of the crushed tomatoes.

*Since the heavy cream is added to "cool off" the spicyness (is that a word?) I only added a few tablespoons because mine wasn't hot. Oh and I used half-and-half instead of cream.

Ok, I think I got it all. Seriously, it was so yummy I thought my husband was going to have a foodgasm!! :)

We had a huge storm here yesterday and lost power not too long after I started cooking the ribs and potatoes. I finished them after it came back on and served with a salad. They were good, even though the cooking time was really off. DH was ecstatic because this is the kind of meal he loves.

The storm actually came in handy because it gave us a chance to test the generator. Now I want one that will run my ovens and furnace because if this happens in the winter, we are the last to get our power back.

Last night I made a potato/onion package with garlic and butter to cook on the grill. Grilled some drumsticks marinated in italian dressing, along with corn and a dilled cucumber salad with onions. It turned out really good!

Tonite my DD and her family is going to the Festival of Mt Carmel, so DH and I are going to have leftovers. I have plenty in the fridge, so it will be a "free" night for me!

Creamy Avocado Sauce

1 ripe avocado
3-4 scallions, white and light green parts, chopped (I use regular onion if I don't have scallions)
3-4 tbsp finely chopped cilantro
1 small jalapeno, ribs and seeds removed, then chopped (if your jalapeno is really hot, you won't need this much. You can also substitute hot sauce)
1-2 tbsp fresh lime juice
1-2 tbsp sour cream
salt to taste

Put all ingredients in food processor and blend until smooth. Adjust flavors as necessary by adding more lime juice, cilantro, hot sauce or salt. Add more sour cream if you want it creamier.

If you're not serving this right away, put plastic wrap directly on the surface of the sauce and refrigerate. You can also save leftovers this way and have it again the next day...or if you're like me, with nacho chips later that night :blush:

Friday: I made pizza--really simple margaharita style. I could only have one slice because my stomach was still under the weather.

Saturday (today) hmm...I must be feeling better because right now the plan is to stuff chicken breasts with broccoli and cheddar cheese, wrap them in bacon and do them on the grill with some corn on the cob and a spinach salad.

There wasn't much roast beef left over from yesterday but I got a bunch of shreds so I'm going to make Beef & Noodles tonight with the leftover scalloped potatoes & green beans.

I want to make grilled salmon tonight, but I have to get to the store first and DH needs to get the propane tank filled. Not sure if those two things are going to happen so I may change the menu.

DH has been out on a landscaping job since early this morning and he may not be willing to go back out for the propane when he gets home.

So sorry I didn't update yesterday! We had plans to leave for Pigeon Forge at 6:45. We had the alarm set up to wake us up with plenty of time to spare. Alarm didn't go off and we didn't get up until 5:45. ARG!! So I didn't have time to update.

Anyway, we went to the Apple Barn yesterday so I didn't have to cook :)

Today we are going out somewhere, just don't know where.

Well, Friday night we ran errands, and DH was craving a giant grinder from a local grinder shop, so I had a Meatball and cheese, he had a large ( i mean enormous) roast beef. So good.

Yesterday was a busy day. I spent the day at my Moms, and then joined my DH at a neighbors farm. He was running a crew all day, so we had a light supper. I had the rest of my grinder, and DH had ham sandwiches.

I'm not sure about this evening. DH will be out at the neighbors farm all day. I want to cook a turkey on the grill, but I'm not sure if I can find a fresh one today. We'll see when I get to the market.

Usually, DSis posts this, but since she hasn't...we had the usual family Sunday meal. We had grilled striped bass with mustard sauce, Mom's famous eggplant sticks, sauteed squash with thyme, green beans with basil and a crispy potato pancake, which DSis and I agree was disappointing. It wasn't crispy enough, but that was because the fish cooked much quicker than expected this week.

Tonight we are having homemade vegetable soup. I am going to make it early in the day and put it in the fridge for tonight since it's going to be so hot (I want winter to get here quick!!). I normally make cornbread for this but I am not heating the oven to 450 for 18 minutes. Blech!!

I'm going to make some grilled chicken breasts that have been maranating in some smoked pablano pepper salad dressing. As a side I'm going to have grilled squash and zuccini and some Southwest Chipotle pasta salad.

BTW has anyone seen those really neat box meals at Target? They have box meals for really fun sides like the Southwest Chipotle pasta, and many others.

For tonight I have the pork roast, potatoes, & carrots with the spiced cider/water over it, that someone posted previously, cooking in my crockpot. My DD said it already smells yummy, so am looking forward to it. I love my crockpot--so nice to walk in the door from work & have almost nothing to do to put dinner on the table!

Morning! It's a bitter 27 degrees here this morning :cold:

I am making my husband's numer 3 favorite :) It's a Rachael Ray recipe. It's Spaghetti and Meatball Stoup (I keep the "stoup" in there because it really is thicker than soup, thinner that stew). I am serving it with garlic bread. Here's the recipe:

1 carrot, diced
1 medium yellow onion, chopped
3 garlic cloves, chopped
1 (14 oz.). and 1 (8 oz.) can of tomato sauce
3 cups chicken stock
1 package portobellini mushrooms, thinly sliced
1 pound ground beef or turkey
½ cup Italian bread crumbs
½ cup grated cheese
1 large egg, beaten
2 T. chopped parsley leaves
½ lb. spaghetti, broken in half
1 cup basil, torn or shredded


1. Combine beef/turkey, cheese, bread crumbs, egg and parsley. Roll into 1½ inch balls. Set aside.


2. Heat a medium soup pot over medium heat. Add EVOO. Sauté carrots, onion, garlic, and mushrooms for 5 minutes. Add tomato sauce and stock and cover pot. Turn up heat and bring to a fast boil. Cook for about 5 minutes.


3. Remove lid and slide meatballs in soup. Bring back to a boil and add noodles. Reduce the heat and simmer soup for 10 minutes or until meatballs are done and spaghetti is tender. Stir in basil and remove from stove. Serve with bread and cheese.

Last night we went out to dinner--split an antipasto, then DH had a parmesean risotto with local tomatoes, and I had a seared chicken with fontina cheese and mushroom sauce, grilled asparagus, and yukon potatoes.

DH is taking a client to dinner tonight, so I am just making myself a BLT, with tomatoes from the farmers market.

We are having Italian Beef in a Bucket Sandwiches

Italian Beef in a bucket
INGREDIENTS:
3 1/2 pounds beef roast: sirloin tip or rump roast
12 ounces (jar) Italian Giardiniera drained
12 ounces (jar) pepperoncini peppers
1 envelop Italian salad dressing -zesty Italian
10 ounce can beef broth
PREPARATION:
Place roast in slow cooker (3 1/2 quart). Mix all other ingredients together, draining oil from giardiniera - mine was water packed. (When adding giardiniera and pepperoncini, use 1/2 jar for a mild version or all for a spicier version).

Serve on Kaiser rolls with Parmesan or Provolone Cheese

I haven't posted in a while because I've been put on bedrest for the rest of the pregnancy so no more cooking for me. Our family is sending food during the week (DH works late a lot) and DH is cooking on the weekends. My mom asked me if I had any new recipes I wanted her to try so I came here to browse.

Sunday DH made Paula Deen's baked spaghetti and it was pretty good. We'll have that and grilled chicken tenders tonight. It's clean out the fridge night.

Hi! Well, I went away for the weekend and yesterday I was in severe pain at work, called dentist this morning and had my wisdom tooth pulled today. So, my dinner was a scoop of tuna salad and some passion fruit sorbet. :) Minimal chewing for me.

That's okay - over the weekend my parents took my boyfriend and I out for some fabulous dinners: Friday was Chinese food, Saturday was the best lobster bisque and broiled lobster tails (the others had french-fried lobster tails). Sunday we went to Applebee's and the waitress gave us lots of extra sides to make up for a really long wait. I had a half size grilled chicken Southwest salad with no dressing, trying to be good but ended up eating a few bites of the loaded mashed potatoes and buffalo fingers, too.

I have a lot of canned crabmeat here. I'm thinking of ideas for using that for tomorrow. Any suggestions?

Last night we also had BLT's. We had local corn on the cob to go with it and fresh peaches for dessert....easy but yummy.

Tonight we had tacos from a local place. They're awesome. Their corn tortillas are handmade and are real thick and soft...almost like a cakey tortilla...not sure how else to describe them, but they're famous around here...

I have some ham steaks in the fridge, so I think I will grill them and serve with a salad and veggie. I don't know what kind of starch yet.

Thank you all so much! I am a stay at home dad, and I am always trying to come up with ideas for dinner. I can't wait to run through this list...

I thought that I would add one of my personal favorites... King Ranch Cassarole.

1 can cream of mushroom soup
1 can cream of chicken soup
1 (10 ounce) can rotel
1 (4 ounce) can chopped green chilies
2 cups chicken broth
18 corn tortillas, cut into quarters
2 cups cooked chicken, chopped
3 cups shredded monterey jack and cheddar cheese blend

Preheat oven to 350.
In large bowl, soak tortillas in broth for 2 minutes.
Remove tortillas and set aside.
Add soups, Rotel,& chilies to broth.
Mix well.
Grease a 9 x 13" baking dish.
Layer 1/3 tortillas, 1/3 sauce, 1/3 cheese& 1/2 the chicken.
Repeat layers twice, ending with tortillas, sauce, then cheese.
Cover with foil& bake for 45 minutes.
Remove foil, bake an additional 5-10 minutes.

Back from camping and trying to jump back into a "normal" routine. Just found out that my niece and her husband are in a babysitting bind, so I volunteered to watch their kids. So, we will be having a very simple barbecue of hot dogs, hamburgers and corn on the cob with potato salad on the side. Hopefully that will feed my family plus the 6 other kids. Maybe I'll make cupcakes for dessert. Hmmm, might need to think about that!

The maple-glazed salmon recipe listed on Page 1 is excellent. You can even just make the glaze and not bother with the cedar plank.

I also like honey/mustard glaze (equal parts honey and mustard) on salmon, or sometimes I marinate it in Good Seasons Italian dressing for 30 minutes and grill it. When the fish comes off the grill, I drizzle melted butter over it. If I'm feeling ambitious, I add garlic or herbs, or both to the butter. Hmm...I may need to get some salmon for tomorrow.

Here's another tip: my previous fishmonger (we moved) recommended that whenever you grill fish, you should marinate it in olive oil for at least 30 minutes before grilling. It keeps it moister. I usually also add salt, pepper and sometimes lemon juice.

Tonight we just had take-out pizza. I spent the afternoon weeding my garden and staking up my tomato plants, so I didn't feel like cooking.

Dh and Ds are leaving today to go camping (dd and I will join them tomorrow afternoon) so it's girls night here. We are going to make some Mexican something (corn tortillas, lean ground beef and black beans, fat free refried beans and low fat cheese) We are on Weight Watchers, so we are going to try to have something "special" yet stay on track. We are going to watch a chick flick (Chocolat maybe) and have fun!

I used a foil package for this salmon, and seasoned it with garlic powder, onion powder, dill, kosher salt and pepper. I also melted some butter and rubbed it in, and then let it sit in the fridge for about 30 minutes. It really was very good. The recipe said to grill for 15 minutes, but this was a 2 lb piece of fish, so it took longer.

I am going to use a maple glaze and finish the fish with bacon the next time.

Tonight we're having greenbeans and potatoes in the crockpot...YUM. Normally I would put in some smoked sausage but I really need to get a jumpstart on losing the weight I've gained back recently. I'll just season with a tiny amount of bacon grease(cuz pork fat rulz) and some onion. It'll just be me and 2 of my DD's and they both love this stuff. May also dig up some fresh sliced tomatoes and some fresh sweet corn....

Tonight we are doing fajitas with guacamole, refried beans, grilled chicken, fresh tomato salsa, seared corn, and sauteed onions.

Tonight it's just me. So I'll be having pasta salad. And if I am feeling ambitious I'll maybe cook up a chicken breast and add it to the salad.

MIL sent home tons of BBQ sauce last night. We usually go out to get BBQ, so I don't cook with it much. Any ideas? I was thinking maybe someone would have a crockpot BBQ recipe that I could use it with or something like that.

Haven't decided on tonight's dinner yet. We may be having spaghetti. I have it on hand and it's easy.

If you like pork ribs, they would be excellent with your barbecue sauce and you could cook them in your crockpot. I usually cook mine wrapped in aluminum foil with the barbecue sauce for a few hours in a low oven, but I'm sure the crockpot would work as well. I usually get the babyback ribs, but the St. Louis style might work better for you since you'll be cooking them all day.

Before putting the ribs in the crockpot, boil them in 2 quarts water, 1 bottle dark beer (you can leave this out if you object to cooking with alcohol), 1 tbsp minced garlic, 1 onion (peeled and cut into quarters), 1 tbsp black peppercorns, and 1 tbsp red pepper flakes for 30 minutes. You can do this the night before.

Then just put the prepared ribs in with the sauce and cook on low in the crockpot. I bet they would be falling-off-the-bone delicious!

Tonight we're having grilled porterhouse steak (DD is very excited), spinach and some sort of pasta. I guess I had better go figure that out now.

Care to share your Ranch Potato Salad recipe?

Sure! It's very easy!

Ranch Potato Salad

2 lbs. red potatoes
1 8 oz. ranch salad dressing
1 C. shredded cheddar cheese
1/2 C. real bacon bits
Dash garlic powder

In a large pan of water simmer the potatoes for 20 minutes or until tender. Let cool for a few minutes, then cube. While potatoes are simmering, mix together the rest of the ingredients in a large bowl. Add cubed potatoes and toss lightly to coat.

You can adjust the bacon and cheese and dressing to taste. This is so yummy I get requests for it all the time! It's become my "signature" dish at pot luck get togethers! Hope you like it!

I'm about to grill some chicken leg quarters. When they're nice and brown I'll paint them with BBQ sauce and put them in the oven for 30 minutes. Haven't figured out what to make with it yet.

The rib recipe sounds really good. I've copied that one down. Unfortunately, we had ribs last night with the sauce. :rotfl: So I guess I'll go with a pork roast or some chicken instead.

Looks like tonight we're having salad, pot pie and maybe some watermelon. I've got to fix something that can hold over until 10:00 when DS gets off work and that should keep.

Tonight we are going to have homemade pizza. We were going to have them last week but it was just too dang hot to heat up the oven. It's supposed to rain all day today so that will help :)

We had the ham steaks last night with mashed potatos and green beans. I served some cucumbers with the meal. We did not have them on Wednesday becasue I decided to take my DGD to the Summer House for ice cream, and needed a very fast dinner. Beef and broccolli, mandarin chicken and a lo mein. Cosco and Lipton to the rescue!

Tonite I have to go to a Lia Sofia party, so DH ison his own. We are having my MIL's homemade pizza. She also made some kind of brownie that I heard was terrific! It is usually worth going to a jewelry party to sample her pizza :thumbsup2.

Once you try it, you'll never go back! My kids HATE the mayo/mustard based potato salads. This one, they'll eat every day if I'd let them!

Tuesday ~ lunch at Le Cellier, dinner in World Showcase (letting everyone get what they want)
Wednesday ~ breakfast at 'Ohana, skipping lunch, dinner at Backlot Express
Thursday ~ lunch at Pinocchio's Village Haus, dinner at Cosmic Ray's

I was planning to make steak and chicken burritos tonight, expecting that we would have plenty of leftover steak from last night. However, DD ate almost the entire steak last night...did I mention that she is four -- almost five -- and weighs under 40 pounds?...so we had chicken burritos (DD claimed very small piece of remaining steak), with rice, guacamole, black beans, cumin corn, and monterey jack cheese.

Well, I finally decided to make Mexican Casserole. I haven't tried this recipe before, but it sounds good. I'll let you all know tomorrow!

I'm also cooking up some yellow squash and making a mix of cucumbers and yellow tomatoes from our garden.

We had BBQ chicken sandwiches for dinner with some chips. Then DH and I went out for a date night and had movie popcorn and an ice cream cone on the way home. Health food at it's finest. :rotfl:

Tomorrow we are going to a back-to-school party at the home of one of DH's co-workers. We're taking chips and cowboy caviar. For dinner :confused3 we may be eating more of the BBQ, as we have a lot left.

We went to the big cookout for lunch, so we're really not very hungry. We're either doing soup and sandwiches or leftover BBQ tonight with some cowboy caviar on the side. Personally, I'd just like to cut the watermelon that's been sitting on the kitchen counter the last couple of days. It's calling my name. ;)

We are having leftover Mexican casserole tonight. It turned out really well.

Here's the recipe:

1-2 pounds ground beef
1 envelope taco seasoning (I used one but should have used more)
1 small chopped onion
1 large can diced tomatoes
1 can kidney beans, drained
2 cups shredded monterey jack cheese
1 bag Nacho cheese Doritos

Brown the ground beef in a skillet with onion. When browned, add taco seasoning and the tomatoes. Cook until heated. Add the kidney beans. In a greased casserole dish, layer the meat, Doritos, and cheese. Repeat layers ending with cheese. Cover and bake for 20 minutes until cheese is melted and casserole is heated through.

Serve with extra chips on the side, and top with olives and sour cream if desired.

The kids and I are going to the Red Sox game tomorrow, so we did the family dinner at my parents' house today. For a change of pace, we had...chicken burritos. Yes, the same meal I made yesterday, just in a different house. It was okay, but the best part was Mom's eggplant sticks.

Tomorrow, I expect dinner will be Fenway franks, peanuts, popcorn and maybe ice cream, hopefully to the tune "Dirty Water."

I am making a broccoli rice and chicken in the crockpot today. I got the recipe off allrecipes.com, I think. Here's the recipe:

2 pounds chicken tenders or boneless chicken breasts cut in strips

1 1/4 cups uncooked converted rice

1 package Knorr's Cream of Broccoli Soup Mix

1 1/2 cups chicken broth

pepper, to taste

Place rice in a lightly greased slow cooker/Crock Pot. Sprinkle with parsley and pepper. Top with chicken pieces. Mix together the soup mix and broth. Pour over chicken and rice. Cover and cook on low for 6 to 8 hours.

ETA: I haven't made this before so I will report how it turns out :)

We just got a brand new huge gas grill(awesome price at Lowe's!) and we're going to break it in tonight(have errands to do today). I think we'll just do hamburgers and hotdogs, potato salad, and either fried corn or corn on the cob. Not sure about dessert, but we rarely do a Sunday meal without it. :)

Lindsay, Thanks for the heads up on that one! I printed it out and was going to make it when the weather gets cooler. I have this thing about crock pots; I think that they are a fall/winter thing! I'll skip this one though...too bad, it sounded like it would be good!

PS - for dinner tonight, I just had a grilled hamburger and salad. I haven't eaten real dinners the past week because of my wisdom tooth being pulled.

Lulu, first of all, it strangly had no flavor. Also, even though I greased the crockpot, I had a burnt layer on the bottom. My chicken was VERY dry, even though I cooked it for 6 hours. The flavors just didn't mesh well.

Today's dinner was so...weird! We usually have the early "linner," but darn, Dsis and the kids were at the Red Sox (whoo-hoo Red Sox), and my folks went to Rockport, so it was just me and DH...we had seared striped bass and jumbo scallops (set off the smoke detector!!) with a blood orange hollandaisse sauce (love, love, lurf! holllandaisse, but the blood orange made it a touch too sweet), cesear salad with homemade garlic croutons, seared green beans, and mac and cheese.

Actually, they do serve quite a variety. Lots of comfort foods like chicken fried steak, hot roast beef sandwiches, etc.

But we had breakfast for dinner tonight. We all chose to eat omelets. I had a chicken fajita omelet and it was pretty good.
