Tonight, NC Beast is having leftover pork BBQ from our day early anniversary lunch out and I'm having some BBQ chicken (frozen from last week) plus some veggies.
Yesterday we had bbq burgers.

We had artichoke chicken tonight...it is so yummy.
3 1/2 to 4 cups cooked chicken...cubed
1 large can artichoke hearts drained and cut (I use 1/4 of the big jar at Costco)
1 can cream of mushroom
1 can cream of chicken
1 cup mayo
1 tsp garlic
Place the chopped artichokes at the bottom of a baking pan and then top with chicken. Mix the soups, mayo and garlic and put on top of the chicken.
1 C grated cheese
1 C corn flakes
8 pieces cooked bacon crumbled
2 T butter (melted)
I put the corn flakes and bacon in a zip lock and crush the corn flakes a bit..then I add the cheese and shake it up. Pour on top of mixture and top with the butter. Bake at 350 for 30 minutes.

I am in the mood for some comfort food tonight so I am making homemade vegetable soup. If anyone wants me to post my recipe I will. I am making some cornbread to go with it :)

My Mom is sick, so I'm not home enough to be cooking, and DH is at the mercy of my DD. I am keeping the marguarita chicken recipe though, looks super!

I had a bit of a picnic dinner tonight with bread, brie, salad and some leftover curried chicken. The curried chicken salad was really yummy so I'll post the recipe (originally procured by DSis). Three notes: I never make this quantity. It's pretty easy to 1/3 or 1/2. I never use celery...yuck. I buy a pretty decent brand of curry powder. The kind you get in a lot of supermarkets tastes gross. I like the sweet curry from Penzeys Spices (they ship).
Curried Chicken Salad -- Serves 6
6 split chicken breasts, skin on
olive oil, salt, pepper
1.5 c mayonnaise
1/3 c dry white wine
1/4 c mango chutney (Major Greys is a widely available brand, although this time I used Hot Mango Chutney by Crosse and Blackwell)
3 tbsp curry powder
1 c diced celery
1/4 c chopped scallions, white and green parts
1/4 c raisins (use golden raisins...they look nicer)
1 c roasted cashews
Preheat oven to 350 (or prepare your grill). Rub chicken with olive oil, salt and pepper. Cook (or grill) until done...about 40 minutes in oven, about 25 on the grill.
Remove skin and dice chicken into bite-sized pieces. Put in glass or ceramic bowl with celery, scallions, raisins and cashews.
Combine mayonnaise, wine, chutney, curry and 1.5 tsp salt in a food processor. Mix until smooth.
Combine mayo mixture with the rest of the ingredients. Serve at room temperature.
One other note: This can be made in advance so the flavors combine better, but leave out the cashews until ready to serve. They get mushy in the refrigerator. And don't forget to let the dish come to room temperature. It doesn't taste as good if it is too cold.

First off, I must point out that I NEVER out celery in my curried chicken salad, or anything else for that matter! I do not know where Dsis got that idea.
Tonight we are grilling brown sugar-spice crusted chicken and corn on the cob. Sliced tomatoes and basil and crusty bread on the side.

Hi, guys. I thought I'd hop on to add mine before I go to the store to pick up a few things. It's Thai Chicken pizza, based on a recipe I saw on the Food Network , but with my own changes.
Thai Chicken Pizza
2 leftover grilled chicken breasts
1 jar Thai Peanut Sauce (12 - 16 oz)
1 can coconut milk (16 oz.) I use "lite"
2 T cornstarch
2 T water
1 bag ready made pizza crust dough from freezer section (10 - 12 oz.) or use your favorite homemade dough recipe
1/2 cup unsalted peanuts, chopped
1 1/2 cups mushrooms, sliced
1 1/2 cups bean sprouts
1 red bell pepper, sliced
5 scallions, sliced
2 cups mozzarella cheese, shredded I use part skim
Preheat over to 400 degrees.
Put peanut sauce and coconut milk into saucepan. Whisk together cornstarch and water. When peanut sauce mixture is warm, add cornstarch slurry, whisk well and bring to a boil. Remove from heat to cool and thicken.
Roll out pizza dough and press it into a pizza pan (I use 12")
Spread sauce on dough. Put half of peanuts, half of sprouts, half of scallions, sliced chicken and veggies (mushrooms and pepper) on top of sauce. Sprinkle cheese and remaining bean sprouts over the top. Bake until cheese bubbles and begins to brown- about 20 minutes. When done, slice into 8 slices and sprinkle remaining peanuts and scallions over the top.
You can add red pepper to the sauce if you like it spicier. I'm serving this with a salad with Asian Sesame dressing (Ken's lite) and probably a cocktail since it's Friday in the summer. :sunny:

Nothing too exciting for us here today. I made myself a cheeseburger, and grilled some sausages for the kids. I also made some orzo pasta with butter and chives. DS and DD think no meal is complete unless some sort of pasta is involved. They also each had a huge bowl of blueberries.
For the record: I never said that DSis puts celery in her curried chicken salad. I know she doesn't. She hates celery as much as I do. However, the original recipe, written in DSis's handwriting, has celery as an ingredient. She claims a demon must have seized her hand. Feel free to ignore or include the celery at your own discretion.

Just wanted to stop in, I haven't posted in a long time, summer is busy with the kids all off school etc.
Spent a week in Florida panhandle for vacation, and now back to work!
Lindsay, sorry about your driving to PF and having to spend so much time on the road!!
We had an extra-long drive to Panama City this time. DD was at a camp in Murray Ky, we picked her up on the way, then headed down toward Nashville, of course we hit there right at rush hour, so we were slowed down a lot. Spent the night in Alabama, then went on the next day to the condo we rented in PCB.
Originally we thought we might stop in Memphis, (DD 21 and DD 11 are both Elvis fans) but that didn't work out time wise.
Anyway, glad the thread is still here, I may get back to cooking something decent now. Family reunion is today, we bring a dish to share, and then probably will get KFC or Subway for our main meal.
Lindsay, your corn/blackbeans sounds like something I'm making to take along, its a cold salad, I'll post it later when I finish working here.

This afternoon we are going to my coworker's wedding and will probably go out to eat depending on the food at the reception (please don't take this the wrong way. It's just if they have a lot of food there's no need for us to go out to eat. If they just have cake and mints we will, know what I mean??)

Good Morning Lindsay et al! I have no idea what we will have for dinner. Supposed to be in the upper 80's here (very hot for Maine) and I think I caught ds's strep throat. None of which makes me want to do any cooking. Chinese maybe, or pizza. OR dh can cook!

I'm making gardenburgers on onion buns. I'll also have mango slices and strawberries on the side. I know it doesn't sound too exciting but I love gardenburgers since I don't eat meat.

Sorry I haven't been posting here but we finally moved into our new house this week and my computer just got hooked up today ~ this is me when I saw the Dis, LOL :yay: :dance3: :cheer2:
Anyway, since we are basically living out of boxes at this point, we have been doing a lot of BBQing and take out. Tonight we grilled thick cut pork chops seasoned with a Creole rub and had some homemade fries on the side. :sunny:

We stayed over at my parents' house this weekend. Yesterday we had fajitas with guacamole, sour cream, grilled steak and chicken, Spanish rice, cumin corn and refried beans. My brother was bemoaning the fact that he overcooked the steak, but I didn't complain since the steak is usually still mooing when he cooks it the way he likes it.
Today, we had swordfish with pesto, Mom's famous eggplant sticks, sweet potato sticks and broccoli, which Mom put Molly McButter on...Dad can't have butter, but I can't stand the chemical stuff. I didn't eat the broccoli. Everything else was yummy though, and the pesto was so garlicky, there is no need to fear vampires here tonight.

I have been at my Moms everyday, so no cooking in my house!
Tonite we had a great meal. DS and DDIL are going home this evening, so i wanted a nice dinner before they got on the road. We had shrimp cocktail and bruschetta on garlic bread for starters. I fixed a tomatoe, cucumber and onion salad, fresh corn on the cob, baby corn and sugar pea stirfry, grilled steaks and a turkey medalion wrapped in bacon for DD.

Yesterday DH and I joined his parents for dinner out. They wanted to go to a Japanese teppanyaki type place. I had never been to one before, and if I do not go again, that will be fine with me.
Tonight DH is working late, so I am making something easy: grilled turkey, carmelized onion, and cheddar paninis, with veggie slaw on the side.

Here are a couple of new recipes I tried last week. We ate them as lunch! (Along with a bunch of other junk food... at least these had healthy stuff in them!) Hope you enjoy...
Made these for our weekend away with friends. Consensus was, I should've made a triple batch (at least!!) of the spinach dip! I made a double batch of the hummus, which was also very good. But the spinach dip was amazing!! (Both are from the 12 Best Foods Cookbook by Dana Jacobi, I highly recommend this cookbook!!!)
Curried Spinach Dip
1 tsp curry powder
1 tsp cumin
1/4 tsp turmeric
1/8 tsp cayenne pepper
1 vegetable boullion cube
2 tsps canola oil (I used olive)
1 small red onion, finely chopped
1 large clove garlic, finely chopped
1 10oz bag frozen spinach, defrosted, squeezed dry
2 tbsps light cream cheese
1/2 cup fat free plain yogurt
salt/freshly ground black pepper to taste
Combine first 4 ingredients in a bowl. Dissolve the bouillon in 1/2 cup hot water and set aside.
Heat oil in medium skillet over med-hi heat. Saute onion until soft, about 4 minutes. Mix in garlic and continue cooking until onion starts to brown, about 3-4 minutes. Mix in spices.
Add spinach, pulling it apart with your fingers. Pour in the boullion. Simmer until spinach mixture is dry (5 minutes or so).
Remove from heat and mix in cream cheese and yogurt. Season to taste with salt and pepper. Serve warm, accompanied by pita chips or crackers.
Black Bean Hummus
15 oz can black beans, drained
1 clove garlic, minced
1/4 cup soft silken tofu
2 tbsps tahini
1 tsp cumin
1 tbsp olive oil
1 1/2 tbsps lime juice
salt/pepper
Process all ingredients in food processor. (Season to taste with s/p.) Serve in a bowl, garnished with a sprinkle of sweet paprika.

I'm making garlic shrimp (just shrimp sauteed in olive oil with garlic, parsley and some lemon juice, maybe a splash of white wine if I have any- I think I only have red :guilty: ) over some steamed rice with a salad on the side. I'm considering steaming some broccoli, too. It's pretty good dipped in the garlic sauce from the shrimp. :cloud9: Plus, I need some vitamins as I had light chocolate pretzel ice cream for lunch. :rolleyes:
There's tons you can do with chicken, but since it's summer, grilling's my favorite. Soak in Italian dressing, or olive oil garlic and lemon, or barbecue sauce or your favorite rub, or teriyaki sauce - whatever you like. get some crusty rolls (whole wheat, Italian, whatever) and make a salad. Grilled chicken sandwiches and salad is a favorite summer meal of mine- esp. if you put fresh mozzarella, roasted red peppers and fresh basil leaves on the sandwiches. Mmm. :cloud9:

Tonight we are grilling some roasted garlic flavored organic chicken sausages and some asparagus. I am making macaroni and cheese too. Hopefully we will get to eat earlier than last night, when dinner was at 9:45 PM! That's too late for a Monday!

I made a bacon and cheddar cheese omelette, crispy potato cake, and broccoli. The kids also had a bowl of blueberries. I ate my blueberries at breakfast. The dinner was tasty, but I am glad I don't have a cholesterol test tomorrow.

We had a great meal last evening at the Adams Mill. Today is a busy day, I have tickets to take my DGD to a childrens production of Beauty and the Beast at 11 AM, but the theatre is an hour away. Then I need to run to the drug store for my Mom, and my Aunt, make sure they have dinner, and then I can fix dinner for my family. I think basil garlic spinich and tomato over gamelli with some rotiserie chicken. I'll fix a salad and maybe garlic bread.
Bengalbelle: I'm sorry that you still are not feeling well. The heat and humidity cannot be helping much.

How about a picatta preparation? Lightly pound the tenderloins until evenly thick (you can skip this step if they are already about the same thickness), then dip in flour, egg, then breadcrumbs. Sautee in olive oil until browned on both sides and cooked through. Set the tenderloins aside in a warm place and add some white wine to the pan, scraping up all the browned bits. Cook for a minute or so, then add in lemon juice, capers, and parsely. Finally add in a tablespoon or two of cold butter and whisk until the butter is melted and the sauce is emulsified. Season with salt and pepper to taste, add the tenderloins to the sauce and serve. You can serve this over pasta if you want to.

I think I am going to grill some bratwurst if it doesn't start pouring before it's time to cook. We'll have pasta with butter and herbs, sauerkraut, and some green veggie...I'm not sure what I have.

Tonight I am making one of my DH's favorite pasta dishes. Here's the recipe:
Eggplant pasta
1 large eggplant, peeled, diced into 1/2 inch cubes, heavily salted and drained in a colander for one hour
1 28. oz can tomatoes (I like muir glen best)
3 cloves garlic, minced
1 onion, minced
olive oil
1/2 tsp dried oregano
1/4 tsp. red pepper flakes, or more to taste
salt and pepper to taste
pasta
chopped basil and parmesean cheese for serving
FYI, the reason you want to salt the eggplant is to draw out the bitter juices. After it has drained for one hour, rinse well to remove the salt, then dump into a clean kitchen towel. Wring the towel to extract as much liquid as possible.
In a large saute pan, heat about 4 tbsp. olive oil until quite hot but not smoking. Saute the eggplant in the oil until golden brown and cooked through, then remove with a slotted spoon, leaving the oil behind.
In the leftover oil, saute the garlic and onion until tender. Add the can of tomatoes and their juices, breaking up the tomatoes with your hands. Add the eggplant, oregano and red pepper flakes, and then simmer the sauce for about 20 minutes, or until it has reached a desirable consistency for you. Season with salt and pepper to taste.
Meanwhile, cook your pasta until al dente, then toss the pasta with the sauce and the basil, and serve, passing parmesean cheese at the table.
The sauce recipe makes enough to coat at least 1 lb. of pasta--maybe 1 1/2 lbs.

There is a woman on the local channel here who owns a farm and makes homemade pie fillings. She just showed a recipe that sounds so good! I think I might make it for dinner.
She took a baking dish and put a layer of apple pie filling in the bottom (her homemade), then boneless pork chops on top of that and a layer of stuffing on top.
Maybe it is because I haven't had breakfast yet but that looked so good. My DH would hate it though as he doesn't like sweet mixed with savory.

I think it is for Geico. They say that the website is so easy to use a caveman could do it. Then they show really sophisticated cavemen who are offended by the commercial. So the next commercial shows the guy taking them to a nice restaurant to apologize and one caveman orders roast duck with mango salsa and the other says he doesn't have much of an appetite.
It is so stupid but it cracks me up everytime.

I hate them, but we can't refuse her so I guess it will be a burger at the fair grounds. Along with cotton candy, popcorn soda, fries, fried dough, an anything else my DH and little Princess see.

Tonight I am grilling DH a strip steak--I've go it marinating in a mix from the Babbo cookbook--red pepper flakes, sugar, salt, garlic, porcini mushroom powder, black pepper, and olive oil.
I'm also trying a new recipe--it's basically cornbread, but instead of cooking it in the oven, you wrap small servings of the batter in corn husks and then grill them--quasi tamales, I guess. If it comes out good, I will post the recipe.
Other sides will be sweet corn with butter, green beans, and sliced tomatoes.

Grilled Striped Bass with Garlic-Mustard Sauce
Striped bass (figure about 6 ounces per person)
Olive oil, chopped fresh thyme, salt and pepper for marinating
Marinate the striped bass in olive oil, thyme, salt and pepper for an hour or so, then grill until just cooked through, about 10 minutes, turning once.
Garlic-Mustard sauce (for six servings)
7 tablespoons butter
4 cloves of garlic, finely chopped
1/4 cup dijon mustard
1 tbsp. fresh thyme, finely chopped
2 tsp. lemon zest
Melt the butter and stir in the remaining ingredients. Whisk over medium heat until blended, about 2 minutes.
Serve sauce over fish

Well, yesterday my BF and I ended up taking my 3 yo nephew to Chili's. He had a little cabin fever since his little sister was born last week and he doesn't go out like he used to, or get attention like he used to. So, he wanted to go to the bookstore (B&N) and we took him there and to Chili's.
I had Margarita chicken with pico de gallo over rice and black beans. It was pretty good. Their mango iced tea is delicious.
So, today, I'm grilling that turkey london broil for sure. And I am going out to get sweet corn now. :goodvibes

The fish was SO yummy. You know summer is really here in New England when you can get striped bass. It's here for such a short time, I could eat it every night!
Our sides were green beans with basil, summer squash and zucchini, and scallion potato pancake. DSis didn't like the potato pancake, but the rest of us thought it was good.

We are so fortunate because our good friends have a large family farm in the next town, so we have the best produce all summer and into the fall. I cannot wait until our native tomatos are ready, but we are a bit behind because of the rain.

Yesterday was a crazy day! DGD had fallen the evening before, and her gum was still a little swollen in the AM so I took her to the dentist for an xray. SHe was fine but the day went off kilter from there. It was so hot that my neighbor and I spent the afternoon watching the girls play in their pool and run under the sprinklers. After my DH got home he took her down to the lake for a few hours, so we took advantage of Subway, finished off with homemade Frostys (1 cup milk, 1/2 cup Quik, 4 cps vanilla ice cream. Blend well, and freeze at least 1 hour. You can adjust the proportions to suit your own taste.). Tonite is the chicken caserole.

My pasta dish was really yummy, and easy, so I'll post the recipe. I have to give credit to DSis for suggesting a bacon and avocado sandwich, so that inspired this dish.
Bacon, Avocado and Tomato Pasta
Serves 2
1/2 box pasta (I used farfalle)
6 slices bacon (mine were small, if the slices are larger when cooked you would probably only need 4)
1/2 pint grape tomatoes, cut into fourths
1 ripe, but still firm, avocado
2 tbsp fresh lemon juice
chives, cut into small pieces
olive oil
salt
pepper
In boiling salted water, cook the pasta according to box directions.
At the same time, cook bacon in a skillet on medium heat until crisp, about ten minutes.
Drain pasta and either return to pot or put in serving bowl. Add enough olive oil so the pasta doesn't stick.
When crisp, put bacon on paper towels to cool slightly.
Peel avocado, remove pit and dice into 1/4 inch chunks. Add to pasta, along with tomatoes, lemon juice and a handful of chives.
Crumble bacon and add to pasta. Toss gently to combine and add salt and pepper to taste. Serve at room temp.
This was good, but when I make it again, I will add some lemon zest and some red pepper flakes. I think that will make it even better.

Lindsay, I've done the bacon on the meatloaf before and it was very good. But before I put it on top, I cooked it about halfway done and that helped to eliminate too much bacon grease seeping into the meatloaf and by the time the meatloaf was done, the bacon was just crispy enough. :thumbsup2
I'm feeling the need for a very indulgent meal today for some reason so I am going to go pick out some really nice, thick steaks and we are going to grill them ~ I'll make some mashed potatoes with real cream, parmesan and butter and I'll also make a pot of fresh corn on the cob. :teeth:

I'm making turkey cheesesteak sandwiches- based on a recipe from an old Susan Powter cookbook.
Turkey Cheesesteak Sandwiches
Saute 1 slice red onion and 1 bell pepper in Pam. (sometimes mushrooms if we have them) Add thinly sliced strips of shaved turkey (from the whole turkey breast at the deli). (about 1 lb.)
Season with salt and pepper.
Preheat oven to 400.
Slice 2 large deli rolls in half. Place open faced on a cookie sheet and top with one fourth of the turkey. Top with a slice of reduced fat provolone cheese.
Serves 4 for lunch (or children), 2 for dinner.
I will likely be serving this with some salad.

Well, I have to change my menu, as the idea of eating a sausage sub after spending the afternoon baking in the heat does not sound appealing at all! I think I am five pounds lighter than I was before the game from all the sweating I did. (But they won. whoo-hoo!)
Instead, I am making a spinach-ravioli salad. It's really yummy, and I'll post the recipe tomorrow. Right now I have to get off the computer and go make it!
Two final thoughts: Why is it that I just spent three weeks in a tropical place and did not get sunburned once, but after three hours at Fenway, my chest is as red as a cooked lobster? To keep this thought food related, I will add that the italian ices at Fenway are the best thing EVER for staying (somewhat) cool.
Dsis changed her dinner menu too--she's having indian food, and I am jealous!

It was excellent! I used assorted boneless chops, doubled the recipe to fit in a 10 x15 inch pan, and baked at 350 for 1 hour.
DH did not like it, but I knew this before I started, he does not like anything "mixed up" and prefers his "meat and 'taters" without "stuff all over it" :confused3.

We are having leftover meatloaf today. I didn't make enough smashed potatoes so we are going to have meatloaf sandwiches. MMM! Turns out I didn't buy any tomato sauce for my meatloaf and just used ketchup. It was the best loaf I have ever made and my hubby agreed!! :)

My DH's aunt always made the best stuffed cabbage in the world, so I asked his cousin to make them with me. She poured ketchup in the mix, not tomatoes, sauce or my Mom's old standby tomato soup. I have always added a bit of ketchup to my ground meat recipes since then, and they are so good. I'm glad you enjoed her trick, she would have been tickled to know that others liked her "little secret".

Could you possibly substitute tomato sauce for the crushed tomatoes? I like tomato products, but not the actual tomato. Strange, aren't I? :)
I'm not the OP, but just wanted to say that I hate raw tomatoes, too. (It's the "gel" that surrounds the seeds for me.) However, I love salsa, tomato sauces, etc. Crushed tomatoes are much more like plain tomato sauce than raw tomatoes, or even the whole tomatoes in the can because they don't have the same texture- no seeds, gel or skins. I even found I can eat raw tomatoes if I blanch, skin and seed them.
You probably could sub plain sauce, (without seasonings, sugar, etc.) but then the texture would be more souplike. I think you might like the crushed tomatoes anyway, if you're like me. It adds that slight chunky texture in it. If you don't mind the pieces in salsa, it might not bug you.
I'll be busy tomorrow so I'll post my dinner now. :)
I will be making kielbasa and pierogies with kale. (Rachael Ray has a recipe for her Polish Stir Fry with Herbs and Sour Cream- I can share it with you if you like- but I've made a few tiny changes. :) ) I might need to start the meal with a shot of vodka for tradition, though. 1 bag mozzerella shreddered cheese Or any cheese you want to use.
4 rolls split
In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Sprinkle with cornstarch. Stir in tomatos, oregano,salt,onion salt. Cook uncovered, for 5 minutes or until slightly thickened . Add 1/2 the bag of cheese:cook and stir until cheese is melted and blended.
Place hamburger buns cut side up on a baking sheet: spoon about 1/4 cup meat mixture onto each bun half. Top each bun with remaining cheese over the meat mixture. Broil 6-8 minutes.Enjoy :wave:

I haven't quite decided, yet. My choices are Nutty Salmon with brown rice pilaf and broccoflower, or Chicken with Paprika Cream, brown rice pilaf and broccoflower. It will depend on how I feel when it's time to cook.
Knowing me, I'll probably go with the salmon as I can do it in the microwave and not heat up the house.

This is our favorite pasta dish. Tonight we are having this with shrimp! We make it with either chicken or shrimp. I found this recipe in a Sam's Club buisness member publication, but I have altered the recipe a little for our taste.
Penne a la Vodka
1 pound boneless/skinless chicken breast
1/2 C olive oil
2 tsp Kosher salt
2 Tbsp. minced garlic
1 Red thai chile, seeded and chopped
1/2 tsp black pepper
1 lb penne pasta
3 Tbsp unsalted butter
3 14.5 oz cans diced tomatoes
2 bay leaves
2 Tbsp Vodka
1 Tbsp lemon zest
1/8 C fresh basil
1. Marinate the chicken in olive oil, salt, garlic, chile, and pepper in refrigerator for 1-2 hours.
2. Pull out chicken to place on grill, and grill until done, and then cut into bite size pieces. Pour marinade into a skillet and saute for 4-5 minutes.
3. Add the tomatoes, butter, and bay leaves to the skillet and simmer gently for 5 minutes.
4. Add the vodka and lemon zest, bring to a boil for 1 minute.
5. Remove from the heat, add basil and set aside for 3-4 minutes.
6. Add the drained, cooked pasta, and the grilled chicken.
7. Top with Romano or Parmesean cheese (optional) and serve.

Just discovered this wonderful thread & have copied many recipes. I work until 6 almost every week day, so week night cooking is pretty quick & basic for me. I try to cook "good" food on the weekends & use my crockpot whenever I can during the week.
Tonight is spaghetti with meat sauce, salad, and garlic bread at our house.
Lindsay, could you please post your vegetable soup recipe? We eat a lot of soups & stews in the fall & winter & I am always looking for new recipes.

What a coincidence, I was just about to ask that question! :) Lindsay, I'd love to have your recipe for vegetable soup. I'm a vegetarian and I can't believe I don't even have a recipe for vegetable soup! :blush:
Today it is so hot outside, it's 100 degrees right now and it's supposed to be even hotter. I'm going to have a veggie sandwich with onions, tomatoes, avocado, lettuce and garlic hummus on pita bread. On the side, I'm having raspberries, blueberries, watermelon and some other fresh fruit. :sunny:

Thanks for asking! :) This soup is very forgiving. Feel free to add/substitue/take away any of the veggies/seasonings you don't care for.
1 lb. lean ground beef/ground turkey (brown it and let it drain on paper towels. You don't have to put meat in this if you don't want to, but if you do, sprinkle it w/ salt and pepper while browning)
Heat a soup pot on medium high heat. Saute the following ingredients for about 5 minutes or so. Just long enough for the onions to get tender and the carrots not be so hard.
3-5 carrots, chopped
1 medium sized sweet onion, chopped
1 bay leaf
Add your beef/turkey to your veggies and combine. Add about 2 cups of beefstock and a 16 oz. can of tomato sauce (I think it's 16 oz., it's the soup can size). Bring to a boil. When carrots are good and tender add some frozen corn and frozen peas (I use the little baby peas). I never measure these, I just put in enough to look like there's plenty. Then add a can (or 2, your choice) of diced potatoes, drained. When all the frozen veggies are heated through, your soup is done.
Sometimes I add some fresh or dried flat-leaf parsley at the very end. It brightens the soup up.

Oops, I made a boo boo. It's actually beef stock I use, not chicken. But to answer your question, it should be fine with veggie :) I use to just add water but found the stock gave the soup a deep flavor I really liked.
Adding parsley at the end is a really good idea, I would have never of thought of that.
Some thyme would also be good in here. Sometimes I go nuts and add a lot of herbs, sometimes I don't. Depends on how quickly I need to get the soup made.
ALSO: If you like Jiffy cornbread (you know, the sweet kind), it is AWESOME broken up in this soup!! COMFORT FOOD!!!

1st layer is browned ground beef seasoned with a packet of fajita seasoning and a small can of green chilies.
2nd layer is refried beans and the 3rd layer is shredded colby jack cheese.
Bake until cheese is melted and bubbly and then top it with sour cream and fresh chopped tomatoes.
I'll make a pan of homemade cornbread on the side. :sunny:

LAst evening we went to the Chowder Pot for dinner. MMMMMMM! I had lobster bisque baked potatoe and coconut crusted talapia with mango salsa. It was amazing, and so much to take home.
Today it is muggy so I may avoid outdoor cooking. I am in the mood for a roast pork, but we'll see when I finally get to the weekly shopping.

Yesterday I made DH a seared rib eye steak, and a panko-crusted chicken breast with honey mustard sauce for me. Sides were macaroni and cheese, seared spinach, garlic bread, and spicy corn-zucchini saute.
Today we are having grilled striped bass with the same sauce we had last week, along with mashed sweet potatoes, green beans, and my Mom is making her unduplicatable eggplant sticks.

6 chicken breasts..This
1 tbsp olive oil
3 cloves garlic,minced

1 cup chicken broth
1/2 Cup sun dried tomatoes

Parmesan cheese
1) Grill chicken in a large skillet with olive oil and garlic until it gets nice and brown on both sides

Tonite we are having spaghetti and sausage with my homemade red sauce. I use lots of garlic, onions and mushrooms, and grate fresh parmesano regiano (sp) into it at the table. I also will have garlic bread and a green salad. Ice cream sundaes for dessert.

1/2 C. flour
1 C. sugar
2 eggs, slightly beaten
1/2 C. butter, melted and cooled
1 C. chopped nuts (I like pecans)
1 C. chocolate chips
1 tsp. vanilla
Mix all ingredients together and pour into unbaked pie shell. Bake 45-50 minutes at 350 until set. Serve warm with ice cream.

Today is Pioneer day here in Utah. We are having fried chicken, ranch potato salad, a jell-o mold and root beer floats for dessert while we watch fireworks. If I get really ambitious, I'll whip up some strawberry shortcake as well. I've got the jell-o in the fridge, the chicken marinating in buttermilk, and the bacon cooked for the potato salad. Should be easy to throw together later and put in the picnic basket to take to the fireworks.

This is so odd!! I made this exact pie yesterday to take to a get together. It is awesome!! The best way to describe it is it taste like the middle of a chocolate chip cookie that's not quite done :)

I got this recipe from my sister last Thanksgiving. My 8 year old daughter informed me that she was making the pies for Thanksgiving. I wanted a pie that she would be able to make and not ruin. It was so yummy! I'm not really an ice cream person, so the whipped cream sounds perfect to me!

I'm still trying to be "good" before I leave on vacation, though.
For dinner tonight, I am making Lindsay's Ritz Parm chicken- with low fat Ritz and light butter with some thyme like Lindsay suggested. We've got some fresh growing here, so I like to use it while I can.
I will be serving it with baked sweet potatoes, steamed green beans and a salad. Tomatoes are finally turning red and ripe in the yard. :)

I got home late last night--too late to grill the cornish hens, so we ended up having chanterelle mushroom, shallot, and brie omelets, white asparagus, and baguette.
Hopefully I will get home earlier tonight and be able to grill the hens and the corn on the cob. Otherwise, it's takeout!

I put chicken in the crockpot with some taco seasoning sprinkled on it with Salsa, cooked on low all day. When I get home I'll shred it and we'll have chicken tacos.

Tonight is Nutty Salmon, brown rice pilaf and steamed broccoflower. Yummy! And the best thing is the salmon is cooked in the microwave. No heat in my kitchen today!

Chicken noodle casserole & steamed veggies
Chicken Noodle Casserole
1 Pkg. Egg Noodles
1 Lg. Can of chicken or 1 lg. chicken breast
1 Lg. Can of cream of chicken soup
1 Cup shredded cheese (I prefer mexican blend)
1/2 Cup Sour Cream
I usually sprinkle a little extra cheese on top.
Cook the noodles & chicken (if you didn't get canned). Combine all ingredients until creamy and bake at 350 until bubbly and the cheese is brown.

Great thread!!! I had some dental work done today, so don't want to eat anything too hard. We're having Annie's Macaroni & Cheese. My children have been eating this since they were toddlers...I figured it was a healthier alternative than the Kraft. (???)
Sometimes, I take half of the finished m&c and mix it with a can of tuna and a can of peas. It's good!

DD helped tonight and we made a chicken alfredo pasta dish with asparagus mixed in and topped with fresh chopped tomato. There were supposed to be mushrooms in it too but she doesnt like them :sad1:

1 1/2 cups Italian bread crumbs, eyeball it
Handful flat-leaf parsley, chopped
1/2 cup Parmigiano-Reggiano, a couple of handfuls
1/4 cup extra-virgin olive oil, eyeball it, plus some for drizzling
3 to 4 cloves garlic, finely chopped
4 tenderloin steaks, 1 inch thick, cut into bite sized pieces
Salt and pepper
5 to 6 cups arugula, chopped
1 lemon, juiced
Preheat broiler to high.
Mix bread crumbs with parsley, cheese. Warm the oil and garlic over low heat to infuse flavor, 5 minutes. Pour
oil into bread crumbs and combine to distribute equally and moisten the bread crumbs.
Season the meat with salt and pepper. Coat the meat in bread crumb mixture to coat evenly. Spread meat onto
baking sheet and broil until crisp and meat is tender, 6 to 7 minutes. Serve meat on bed of shredded arugula. Give a squeeze of lemon juice over the beef and
arugula.
When I make this again I won't coat the meat as heavily with the breadcrumbs. It was still really good but overpowered the meat a little.

I also wanted to share this recipe for Chicken Piccata that my DH made Sunday night. He said it was really easy and it was very tasty. If you notice the disclaimer below it says this recipe was provided by a professional chef and was scaled down. DH said there was way too much chicken broth, so he ended up pouring a lot of it out. We decided next time to make more sauce, using cornstarch to thicken it up a little, then serve it over angel hair pasta.
4 (6-ounce) chicken breasts
2 cups all-purpose flour, seasoned with salt and pepper
1/4 cup olive oil
1/4 cup lemon juice
2 cups chicken stock
1 tablespoon capers
1/3 cup unsalted sweet cream butter
Dust the chicken breasts with the seasoned flour; shake of any excess. Heat the olive oil in a heavy sided medium saute pan over medium heat and then add the chicken breasts. Saute until golden brown on both sides. Once the chicken breasts are browned, drain the oil and add the lemon juice, chicken stock, and capers to the pan with the chicken. Reduce for about 5 minutes, turning the chicken breasts halfway through. The chicken is done when it is firm to the touch. Turn off the heat and add the butter, stirring until melted. Put 1 chicken breast on each of 4 plates and drizzle with remainder of the sauce.
