Well, last night I ended up making herb roasted chicken breasts with skin on mashed potatoes, gravy, and corn..
Tonight it'll be meatloaf, steak fries and maybe some green beans with bacon and onion. I think I'll try to make a rhubarb cream pie to surprise Dh tonight...I'll use the pie crust made with oil and milk that I posted about in the COOKING forum.

Tonight, I'm having my former coworkers over for fondue night. Haven't decided whether both fondue pots will be cheese fondues or one court boullion and one cheese.
For dessert, the little chocolate fondue pot will be going. That one does a cool fondue, not warm. Jury's still out on whether we like it that way!

Today for Sunday linner we had grilled halibut marinated in olive oil, horseradish, coarse grained mustard, cider vinegar, rosemary, and parsely, served with garlic parsely butter . Sides were eggplant sticks prepared by my Mom (nobody else can make them), pureed roasted carrots with cumin, roesti potato cake, and then the bad parts:
Roast asparagus (ARGH! Did not peel them as my sous chef was at the playground with her kids instead of helping me make dinner!);
And THE WORST dish ever, creamed corn with vanilla. AWFUL! This recipe was in a cookbook called "Best American Recipes 2005-2006." This recipe was NOT the best. It was so sweet!! If you like candy corn for dinner, this recipe might be for you. Otherwise, avoid!!

Morning all! It's May1! Where is this year going?
Tonight we are having a beef roast with carrots and potatoes. I am making it in my Crockpot. I just pour a few cans of Beefy Mushroom soup on top and let it cook. Mmm mmm mmm! :)

Good morning!
I have a long day at work, so it's crock pot day here as well! Pork loin roast, with a packet of seasonings, carrots, potatoes, and all yummy when I get home! All the kids have to do is set the table!
Yesterday was one of DH's favorites, salmon. He gets to eat dinner with us only on the weekends, with him working 2nd shift, so it was his choice. I made macadamia-crusted salmon with ginger-lime sauce, rice pilaf, and broccoli/carrots.
Lindsay, yes, the Ritz chicken is sooo good. It's rare in my house to find something everyone will eat.

I was washing teh front porch and furniture, so they grilled some pork, beef and borbon salmon. DD made crostini with fresh mozz, basil, garlic and tomatoes. Yummy. They served strawberry margaritas on the clean porch before dinner.
I am spending every SUnday in th eyard if I get nice meals served to me. :goodvibes

I'm hoping to convince DH to go get us a new charcoal grill after work today, and if he does, we'll be grilling steaks! :banana:
I really prefer charcoal to gas, but I do love gas for the convenience.
I found this at Walmart: http://www.walmart.com/catalog/product.do?product_id=4308906 They actually have a better version in the store which has two side tables and it's just a little bigger. Target has one that's a lot nicer, but it also costs twice as much. With our upcoming trip, I don't want to spend an arm and a leg. We bought a $20 el-cheapo charcoal grill back in 96 or 97 and it lasted us until last year!

Not sure WFD tonight. My boys have Tae Kwon Do and my DH is flying late. It may very well be McD's for the kids on the way home and I'll just whip up a salad. Not very tempting, I know.

My fondue recipe is really easy. We vary the cheeses from time to time. Costco had a demo of a new brand and those were really good-if I didn't have our three already, I would have bought these.
Start with:
2 tbspns minced garlic
1 teaspoon salt
1 teaspoon pepper
1 teaspoon curry powder
8 oz of beer or wine
Heat in fondue pot until it boils, stirring regularly.
Then add by handfuls
5ozs shredded cheddar (coat with corn starch after shredding)
5oz shredded swiss (coat with corn starch after shredding)
Stir in after adding each handful until completely melted, then add another handful.
Our preferred cheeses are Irish Cheddar, Emmantaler and then adding Helluva Good seriously sharp. The recipe calls for two, but we'll put three. Based on the Costco demo, the next time we buy cheese, it'll be a gouda fondue.
We serve with ham, apples, bread, asparagus and sausages.
I also made a chocolate fondue. DH and I dipped strawberries and brownies, the kids just wanted the marshmallows and pretzels.
No idea what tonight is-probably more fondue, since everyone loves it. I'm working all nights this week, so DH is probably thrilled the freezer is packed with meals I made at work.

Boy, my husband sure is going to get a nosefull when he walks in the door. Not only have I had a roast in the Crockpot all day, I made some Congo Bars and some Pink Lady Blondies. Mmmmmmmmmmm!! Here's the recipes:
Congo Bars
¾ cup melted butter
1 lb. box light brown sugar
2 eggs
2 ½ cups flour
¼ cup milk
12 oz. package chocolate chips
Combine butter and sugar. Beat in eggs and add to mixture. Add flour, then milk and vanilla. Mix well. Add chips. Bake in a greased 9x13 pan at 350 for 30 minutes.
Pink Lady Blondies
1 cup all-purpose flour
1 teaspoon Clabber Girl or Rumford baking powder (http://www.recipegoldmine.com/cookbrownOQ/cookbrown292.html)
1/2 teaspoon salt
1/2 cup butter
3/4 cup packed brown sugar (http://www.recipegoldmine.com/cookbrownOQ/cookbrown292.html)
1 teaspoon vanilla extract
2 eggs
1 Pink Lady Apple, cored and chopped
1/2 cup chopped pecans, walnuts or macadamia nuts
In small bowl, stir together flour, baking powder and salt. In medium saucepan, melt butter and brown sugar until blended. Remove from heat. Stir in vanilla extract. Beat in eggs, one at a time. Stir in flour mixture until blended. Stir in chopped apples and nuts. Spread in buttered 8-inch square or 8-inch round pan. Bake in preheated 350 degree F oven until cake tester inserted in center comes out clean, about 20 to 25 minutes. Cool, then cut into bars.

I'm doing some kind of chicken tonight(again)...along with spinach pasta and parmesan cheese and not sure of a veggie...my freezer is getting kind of low.
Lindsay...love those recipes you posted...can't wait to try them.
Last night I made a rhubarb custard pie, probably do that for dessert again.

I am creating dinner tonight. Usually my family doesn't complain too much when I do this...
I had a half a chicken leftover that I really needed to use. So, I boned out all the chicken meat, and used the bones to make a chicken soup. (I also added spinach to the soup. as well as rice and the little ugly noodles I made when making the fettucine noodles.)
Now I am working on a creamy garlic sauce to go with the chicken chunks I cut up, and spinach over the pretty fettucine noodles. I am just debating wheter or not to use a little provolone and mozzerella cheeses I have with the teeny bit of parmesean...Also have some lettuce for a nice salad and some good sourdough rolls.
I hope this comes out.

FISH FILLETS AND GINGERED LIME SAUCE
Ginger-Lime Butter Sauce
1 1/2 lbs. fish fillets, such as halibut, mahi mahi, salmon or other fish fillets
Seasoned salt
1/4 c. all purpose flour
3/4 c. finely chopped macadamia nuts
1 egg, beaten with 1 tbsp. water (I used egg beaters)
2 tbsp. butter
2 tbsp. vegetable oil
GINGER-LIME SAUCE:
6 tbsp. butter
1 tbsp. fresh lime juice
1 1/2 tsp. finely grated ginger root
Rinse fish; pat dry with paper towels. Cut into 4 to 6 serving pieces. Sprinkle with seasoned salt; lightly coat with flour and gently shake off any excess. Place nuts into a shallow dish. In another dish, beat together the egg and water. Dip flour coated fish in egg mixture; roll in nuts until evenly coated on both sides.
In a large, heavy skillet heat the butter and oil. Add fish and pan fry over medium high heat 4 minutes on each side until fish fillets are golden and test done. Arrange on a platter or serve individually on warm dinner plates. Pass the Ginger-Lime Sauce.
GINGER-LIME SAUCE: In a small saucepan over low heat melt butter and stir in lime juice and ginger root.
You can adjust the lime juice and ginger root to satisfy your taste buds! Yield: 4 to 6 servings.

Last night we had the most delicious steaks on our gas grill. DH brought home that charcoal grill I wanted and if I can get DS to finish putting it together, we'll be doing burgers tonight. :thumbsup2 Now that it's grilling weather, I'll probably not use my kitchen much.

Tuesday night means panini night at my house. I think I am going to bread and sear some chicken and make chicken parmsean sandwiches. It is cold and rainy here today, so this should fit the bill/
Remember yesterday I said we would probably just eat junk food at the park during the ballgame? Nuh uh. If anyone is from Boston reading this, we went to Great Bay before the game and had the most awesome halibut seviche tacos, tuna sashimi, and split a trout with a mushroom-asparagus-potato-quail egg hash. It was REALLY good, and the waitress told us that if you eat there on game day, you can valet your car at the restaurant for only $12--way better than the $90 the stupid Texaco station is charging to park. And, of course, the Red Sox won! :)

Here's my recipe from last night, the original recipe was for salmon and I used Mahi Mahi. It also called for chicken boullion but I substituted wine for that. The only problem I had was that it didn't make much sauce so next time I think I will up the amount of liquid. Other than that it was very yummy.
Pan poached fish
INGREDIENTS:
1/2 cup water
2 tablespoons lemon juice
1/4 cup white wine
2 (4 ounce) fish fillets
1 tablespoon butter
2 tablespoons capers
ground black pepper to taste
1 tablespoon chopped fresh parsley
DIRECTIONS:
Bring water, lemon juice and wine to a boil in medium-sized skillet. Reduce heat to a simmer and place fish fillets in pan. Cover and simmer over low heat, 10 minutes per inch of thickness, measured at thickest part; or until fish flakes when tested with a fork. Remove fish from pan; keep warm.
Boil remaining liquid in the skillet until it is reduced to approximately 1/4 cup. Whisk in butter and stir in capers. Spoon sauce over fish. Season with pepper and sprinkle with parsley.

DD has an ice skating show rehearsal tonight so we are eating early. I have a big pot of spaghetti sauce with meatballs and sausages in it simmering and I just put the pasta water on the stove. Hopefully, it boils soon because I am starving! Bread and salad complete the meal.

Tonight we are having an awesome dish my husband loves, and I got the recipe straight from the DIS!! :) It's crockpot Italian chicken. My thanks to whoever originally posted it. Here is the recipe:
1 package chicken tenders cut into bite-sized pieces
1 can cream of mushroom soup
4 oz. cream cheese
¼ cup butter, melted
1 .7 oz packet dry Italian dressing mix
½ cup white wine
Put chicken in bottom of Crockpot. Mix soup, cream cheese, butter, and Italian dressing together. Pour over chicken. Top with white wine.
Cook on low for 6-8 hours. Serve over angel hair pasta.
Mmm mmm mmm! It tastes similar to chicken alfredo :)

It is so raw today that I am thinking of comfort food. I am roasting chicken with prunes, sage, garlic and apricot jam. So Good! with mashed potatoes, green beans, tomatoes and cucumbers with a cucumber dressing, and if I am still going, clam chowder to start. My DH is going to be checking out a shed again tonite, so he will need something to warm up.

We're eating early again tonight because DS has a baseball practice. Actually, it is more a team-building exercise at this point because the weather is lousy, so the coach is having the boys over to his house. Brave man.

I did not end up using my chicken last night--instead I made carmelized onion and steak panini for DH and carmelized onion and roasted mushroom panini for me.
Tonight I am making chicken milanese--chicken breast pounded thin, breaded and sauteed, then toppped with arugula salad.

I'm hungry for salad, so I'm going to make a big salad tonight and try out those wishbone spray dressings. I'll also make garlicky green beans with almonds, and either chicken or pork chops on the gas grill.

Well, unlike my apparently ravenous sister, I am feeling completely uninspired to make dinner tonight. I'd like to go out to eat, but DH and I are going to be doing that a lot soon, as the workers arrive Saturday to rip my house apart (replacing all carpet with pergo, and all walls ceilings, and trim are being painted).
Maybe I will just make a souffle and a salad.

I think I am just going to have Snow Crab legs for dinner. I have had to much lemon based dishes this week. I had the poached fish Monday, Lemon Shrimp on Tuesday and Lemon Chicken last night. :rolleyes:

However, here is a recipe for anyone looking for a great Cinco de Mayo dish. DSis can tell you what cookbook this comes from, but it is so delicious, I wish I could make it! Unfortunately, we recently discovered that DS has a severe shrimp allergy, so we can't have shrimp in our house. I will miss this tomorrow.
Shrimp Ceviche
1/2 c plus 2 tbsp fresh lime juice
1 lb unpeeled small shrimp (41/50 count per pound)
1/2 med white onion, chopped into 1/4 inch pieces
1/3 c chopped fresh cilantro
1/2 c ketchup
1-2 tbsp vinegary Mexican bottled hot sauce (Tamazula, Valentina or Bufalo preferably. I've substituted regular hot sauces with no ill effects.)
2 tbsp olive oil
1 c diced, peeled cucumber (seeds removed)
1 sm, ripe avocado, peeled, pitted and cubed
salt
Bring 1 quart salted water to a boil and add 2 tbsp lime juice. Scoop in shrimp, cover and let water return to a boil. Immediately remove from heat, set lid askew and pour off liquid. Replace lid and let shrimp steam off heat for 10 minutes. Spread out shrimp in lg glass or stainless steel bowl to cool. Peel and devein shrimp. Toss shrimp with remaining 1/2 c lime juice, cover and refrigerate for an hour.
In small strainer, rinse onion under cold water. Shake off excess liquid. Add to shrimp bowl along with other ingredients. Add salt to taste. Cover and refrigerate if not using immediately. I do not add the avocado until I am ready to serve, if making in advance.
You could make this tonight and enjoy tomorrow. You can either roll it up into tortillas, or if you're feeling extravagant, fry up some premade tortillas into chips (cut the tortillas into 8 wedges and fry in shallow oil until light brown, then salt). Of course, fry the tortillas right before serving. Then scoop up the ceviche with the chips. YUM!

It's LindsayDunn228 Recipe that is already on Pg28. I change out a couple of the veggies, and use 1lb ground sirloin and add some red wine to the sauce. The bread sticks were from an idea from Giada De Laurentis. Store bought dough in the can, cut in half, and roll in parmesan...they turned out amazing! The left overs of the pasta toss are even better! Taking them in to work tonight! :teeth:

Tomorrow is Derby Day, we're going to a party at some friends house, there will be BBQ, hot brown, Derby Pie, of course mint juleps, and lots of fun.
It is also a surprise 50th Bday party for the host, who doesn't know what his wife has planned! :teeth:
I'm bringing a veggie and dip tray, I'll post the dip recipe if it turns out good.
Also told her I'd bring cookies for the kids. I thought I had a horseshoe cookie cutter, but I didn't. (I have a set of about 100 cutters that I got for Christmas one year from my kids). I do have one of a rose, so I'm making rose cookies, then arranging them on a plate in a horseshoe shape, like the wreath they put on the winning horse.

The recipe my sister posted above is from Rick Bayless' book Mexico: One Plate at a Time. This is an excellent cookbook if you like Mexican food--it has both traditional and contemporary recipes.
Anyway, for dinner tonight I am making the above seviche, some guacamole, and also fish tacos (not really Mexican, but oh well!). Margaritas too. Yum!

2 cukes sliced thin
4 or 5 roma tomatos sliced thinn
red onion sliced thin
wishbone italian dressing to cover
mix all in bowl and refrigerate I also add sliced black olives and crumbled feta cheese!! Yum!

We are having shredded beef Chimichangas.The beef has been cooking in the crockpot all night and spells divine
enny's *Malbertos* , Mock ALBERTOS Chimichangas
This is made in several steps.. The roast goes the night before. I make the pica de Gallo the next afternoon,The sauce an hour before serving
Shredded beef
1 small to medium sized pot roast..You are better off with a cheaper cut like Rump or Chuck roast
1 Jar of salsa
1 c fresh cilantro
One green pepper ,sliced (optional)
One onion slicked (optional)
Jalapeno's (optional)
1 The night before place roast in crock pot with just a little water. low temp
2 The next morning drain out a bit of liquid and throw in a jar of salsa..The roast may be fork tender already and will easily shre..If not you can shred it later
3, 1 hour or so before serving add fresh cilantro ,pepper and onion..If you like it hotter add canned jalapenos or green chili's
Pico De Gallo
2 tomatoes diced
2 onions diced
1 c cilatro (Use half the cilantro for shredded beef,half for pico degallo..Ifthere is a lot you can add some to the sauce also)
Dash of lime
dash of cumin
dash of chili pepper
1 Cut all ingrediants and place in a bowl,add lime juice ,cumin and cilantro.For hotter Pico de Gallo add jalapenos
Green pepper sauce
1 lg cn tomato sauce
1 medium sized can green chilis
cilantro (optional)
Jalapenos (optional
1 Super easy.Throw this all in blender of food processor
2 Heat and keep warm in pan on stove
Putting it all together
Large sized burritos,However many you need
vegetable oil
Bag Cheddar or Monterrey jack cheese
Sour cream
1 Heat some oil in a pan..Not a huge amount of oil ,but enough to fry it
2 Place a generous helping of shredded beef on burrito ad fold into a burrito shape
3 PLace burrito,flap side dowin in oil unil brown
4 FLip over and brown other side
5 place on a plate and immediately pour some sauce over the chimichangla
6 Add whatever toppings you like,,Sour cream,cheese, PicoDeGallo
Tips
This may sound complicated but it's not..The shredded beef is simply a matter of throwing a roast in a crock pot..You can often squeeze 2 meals from this by making enchiladas or shredded beef tacos another night.
These have become my Superbowl Sunday tradition

We are going to have leftovers today. Last night my DH and I entertained a couple of friends for a nice Saturday evening dinner.
We started with my DD's now famous crostini (I called her a bunch of times while making them), fresh cut fruit with prosciutto wrapped melon ans champagne cheddar, prosciutto roast pork and gravy, parmesan roasted potatoes (these were so good), sugar peas steamed in apple juice, and finished with mint, lemon and butter, corn on the cobb and a salad. I baked a wheat beer bread. Chocolate apricot cake for dessert.
Dinner was so good, and now I don't need to cook today.:goodvibes
I did bake some 7 grain muffins with apples, carrots and raisons. Hope they are good.

DSis usually posts our Sunday linner menus, but her house is being renovated and she is without home computer and TV access for at least a week :eek:
Today was beautiful in the Boston area, so we had seafood mixed grill. The fish counter looked so good, we could hardly restrain ourselves. We prepared four different kinds of fish (all grilled): rare tuna with deviled shallot butter, halibut fillet with vidalia onion marinade, swordfish with Northwoods seasoning, and barramundi (Australian sea bass) with garlic/mustard sauce. All were delicious. None of us had tried, or even heard of, barramundi before. It was excellent. There were five of us eating, and we bought close to 3 pounds of fish (normally WAY too much), but at the end of the meal, there was only one small piece of halibut left.
Sides included Mom's famous eggplant sticks, mashed fingerling potatoes with cream cheese (DSis complained that they were gluey, but everyone else ate them), roasted asparagus and cornbread.
I love Sundays.

There is nothing better than fresh herbs added to good food! What herbs are you growing. I don't think I can have one indoors, my kitchen is on the west side, so not enough light for keeping plants like herbs healthy during the winter months.

Okay Lindsay, I give up! I keep think about Spaghetti Stoup, :confused3 so that is what we are having tonite. I was waiting for all of the frost warnings to go away to plant my herbs, only my peppermint survived from last year. Since I don't have a kitchen or a computer available to me at home right now, my posts are going to have to be about what we scrouged up for dinner the night before until I can get access to the kitchen again.
Last night we did not feel like dealing with the dustbomb that is our house at the moment, so we went out to a local italian place. We split an antipasto plate with grilled vegetables, some cheeses, and mixed greens. Then I had ricotta gnocchi in a light fresh tomato sauce and DH had braised short ribs over polenta. It was a nice relaxing evening.

Well, I didn't get around to making my roasted chicken yesterday after all...turned out to be a crazy day so I made an easy burrito bake dish (layers of tortillas alternated with layers of taco meat, refried beans, cheese and taco sauce).
Today I am making a big pot of beef stroganoff and some warm bread to go with it :sunny:

Not sure about tonight, it will be either fish or who knows what. My mother wants to "cook" tonight which means something in the crock pot. Most times she tells me she wants to cook she forgets :rolleyes: and I am left with nothing for dinner and have to come up with something. I was smart this time and took out fish. :thumbsup2
Last night I had Turkey Barbeque with roasted purple potatoes :cloud9: I got ground turkey from the Amish market and it was really good.
1 onion, chopped
1 T. oil
1/2 lb ground turkey
1/2 a bottle of barbeque sauce
(in my case I used two bottles that were a 1/4 full)
I sauted the onion in the oil, then added the turkey. When almost cooked I added the barbeque sauce, turned the heat down to low and let simmer for about 30 min. Served on a whole wheat kaiser role.
For the potatoes I cut them up like fries, drizzled them with olive oil, sprinkled on some salt and pepper and baked at 375 until they were slightly crispy and done in the middle.
A nice, quick, yummy dinner.

Also, I have a question. I have always heard when you use thyme you strip the leaves off backward and discard the stems because they are woody. Every time I pick my own out of my new herb garden, this method doesn't work. My stems are quite soft and when I try to strip the leaves off, they just break off. Would it hurt anything to just chop the whole thing up together and not worry about the stems being in there, since they are really soft? Any hints or suggestions?

No. Chop em up fine and you will be fine. I use tender stems in my food all the time.
Now for dinner tonite, I am heating up the spaghetti stoup for DH, SIL and the little one. My DD and I are getting a sandwich out because we are attending my niece's senior awards program at her university. :cheer2: Can't wait to hear some cheers for her because she is one of the top two catchers in the country, but she gets uncomfortable if she hears us singing her praises.

Can you eat something a tiny bit spicy? If so, Rachel Ray has a great baked Chimichanga recipe. You can substitute black beans for the meat. I'll post if you want it.

This is the basic recipe. I steam 1/2 of the cabbage, and I also mix the cheese in with the entire mixture. I leave out the cilantro, I don't like it. You can adjust the heat by adding more or less of the chipoltles (found in the mexocan section with the refried beans, and chiles) INstead of the meat, use refried beans, black beans etc. you can also use beef from the deli if you wish to. Serve with black bean salad , recipe below.
1 pound thickly sliced smoked turkey from deli counter, chopped
1 tablespoon chili powder
2 cups shredded slaw cabbage, available in produce department
1 to 2 chipotles in adobo sauce, available with Mexican and Spanish foods in market -- use 1 for moderate heat, 2 for extra hot chimichangas
1 cup tomato sauce
3 scallions, chopped
Salt and pepper
4 (12-inch) flour tortillas
1 1/2 cups, 6 ounces, shredded sharp cheddar, smoked white cheddar or Pepper Jack cheese
2 tablespoons vegetable or olive oil
1 cup sour cream
2 tablespoons chopped cilantro leaves or flat-leaf parsley
1 vine ripe orange or yellow tomato, seeded and finely choppedPreheat your toaster oven to 400 degrees F or high. Place turkey in a bowl and season with chili powder. Add shredded cabbage, chipotles in adobo, tomato sauce, scallions. Toss filling to combine and season with salt and pepper. Place tortillas in a kitchen towel and set in microwave. Microwave on high for 1 minute. To build, place a generous handful of cheese near one edge of the tortilla. Pile 1/4 of your filling in the tortilla. Tuck sides up and roll tortilla tightly. Repeat to make 4 large stuffed tortilla wraps. Brush the toaster oven baking tray with vegetable or olive oil. Brush the wraps with oil and bake until deep golden all over, 15 to 17 minutes. Top with sour cream, cilantro or parsley and chopped orange or yellow tomato, as garnishes.
Black Bean Salad:
1 can, 14 ounces, black beans, rinsed and drained
2 cups frozen corn kernels
1 small red bell pepper, seeded and chopped
1/2 red onion, chopped
1 1/2 teaspoons ground cumin, half a palm full
2 teaspoons hot sauce, just eyeball the amount (recommended: Tabasco)
1 lime, juiced
2 tablespoons vegetable or olive oil, eyeball it
Salt and pepper
Combine all ingredients in a bowl. Let stand at least 15 minutes for corn to fully defrost and flavors to combine, then toss and serve. The corn will also place a quick-chill on this easy side-salad as it defrosts -- no need to refrigerate!

Ah yes, the weird quirks of pregnancy. When I was pregnant with DS, I couldn't eat seafood at all, and normally I love fish.
We do meatless meals pretty regularly here. What kinds of food do you like? Frittatas are good this time of year if you don't also have an aversion to eggs. There's a lot you can do with pasta. I like pasta fresca and pasta with asparagus/lemon sauce. Loaded baked potatoes are tasty and filling. I also have a recipe for sweet potato burritos that is really good, and it can be made in advance.
Let me know if any of that sounds good and I can post the recipe, or if you tell me what kind of food appeals to you right now, I probably have other ideas. DSis was a vegetarian for a while, and still doesn't eat that much meat, so I have a wide variety of meatless recipes she has given me over the years.

So, despite my lack of kitchen access, last night I perservered and plowed out a path to the toaster oven and the microwave. The oven is completely inacessible still. I managed to make us some toasted sandwiches, but I banged my head at least six times on various kitchen implements, so tonight it is back to take out!

Small change in plans tonight. I got out the kabobs and the salmon smelled rank!! I was worried about it anyway because yesterday was it's expiration date. I figured one day wouldn't make a difference. I pulled it out of the fridge, opened the package and PHEW!!!!! I always heard if your fresh fish (not frozen) has a distinct odor then don't cook it.
Hubby is stopping by Subway on his way home :)

I haven't been around for a few days, but its still nice to go back and read what everyone has had. Last night we had teriyaki chicken breasts, skin on mashed potatoes and green beans(DD loves these). I've been running all day today and am too tired to cook, but I think I'll do cheeseburgers on the George Foreman for the girls and a salad for me. Maybe some steak fries to go with.
I've been wanting to try the Spaghetti and meatball Stoup for months, so maybe I'll get around to that soon enough.
Does anyone have a decent recipe for cubed steak?? I bought several pkg's and froze them because they were on sale at our local meat market, but I totally forgot how plain they can be(not to mention grisly)...I'm tired of frying them!

Have you tried Swiss Steak? I've made it in the crock pot or you could bake it. I just put the steaks in the pot, salt and pepper them then add sauted onions and a can of tomatoes. You can also look on www.allrecipes.com.

DH went to Subway to get subs for dinner. That Chicken Bacon Ranch looked really good on the website so I asked him to get me one. I told him exactly what I wanted on it and he come back with it covered in hot peppers. I HATE hot peppers, he has known that for 15 years. So I guess I don't get to eat dinner tonight. We have absolutely nothing in the house. I wouldn't really care so much, except that I was so busy today I haven't had a chance to eat. Last thing I had was a salad for dinner last night.

This is the basic recipe. I steam 1/2 of the cabbage, and I also mix the cheese in with the entire mixture. I leave out the cilantro, I don't like it. You can adjust the heat by adding more or less of the chipoltles (found in the mexocan section with the refried beans, and chiles) INstead of the meat, use refried beans, black beans etc. you can also use beef from the deli if you wish to. Serve with black bean salad , recipe below.
1 pound thickly sliced smoked turkey from deli counter, chopped
1 tablespoon chili powder
2 cups shredded slaw cabbage, available in produce department
1 to 2 chipotles in adobo sauce, available with Mexican and Spanish foods in market -- use 1 for moderate heat, 2 for extra hot chimichangas
1 cup tomato sauce
3 scallions, chopped
Salt and pepper
4 (12-inch) flour tortillas
1 1/2 cups, 6 ounces, shredded sharp cheddar, smoked white cheddar or Pepper Jack cheese
2 tablespoons vegetable or olive oil
1 cup sour cream
2 tablespoons chopped cilantro leaves or flat-leaf parsley
1 vine ripe orange or yellow tomato, seeded and finely choppedPreheat your toaster oven to 400 degrees F or high. Place turkey in a bowl and season with chili powder. Add shredded cabbage, chipotles in adobo, tomato sauce, scallions. Toss filling to combine and season with salt and pepper. Place tortillas in a kitchen towel and set in microwave. Microwave on high for 1 minute. To build, place a generous handful of cheese near one edge of the tortilla. Pile 1/4 of your filling in the tortilla. Tuck sides up and roll tortilla tightly. Repeat to make 4 large stuffed tortilla wraps. Brush the toaster oven baking tray with vegetable or olive oil. Brush the wraps with oil and bake until deep golden all over, 15 to 17 minutes. Top with sour cream, cilantro or parsley and chopped orange or yellow tomato, as garnishes.
Black Bean Salad:
1 can, 14 ounces, black beans, rinsed and drained
2 cups frozen corn kernels
1 small red bell pepper, seeded and chopped
1/2 red onion, chopped
1 1/2 teaspoons ground cumin, half a palm full
2 teaspoons hot sauce, just eyeball the amount (recommended: Tabasco)
1 lime, juiced
2 tablespoons vegetable or olive oil, eyeball it
Salt and pepper
Combine all ingredients in a bowl. Let stand at least 15 minutes for corn to fully defrost and flavors to combine, then toss and serve. The corn will also place a quick-chill on this easy side-salad as it defrosts -- no need to refrigerate!

Ah yes, the weird quirks of pregnancy. When I was pregnant with DS, I couldn't eat seafood at all, and normally I love fish.
We do meatless meals pretty regularly here. What kinds of food do you like? Frittatas are good this time of year if you don't also have an aversion to eggs. There's a lot you can do with pasta. I like pasta fresca and pasta with asparagus/lemon sauce. Loaded baked potatoes are tasty and filling. I also have a recipe for sweet potato burritos that is really good, and it can be made in advance.
Let me know if any of that sounds good and I can post the recipe, or if you tell me what kind of food appeals to you right now, I probably have other ideas. DSis was a vegetarian for a while, and still doesn't eat that much meat, so I have a wide variety of meatless recipes she has given me over the years.
I like most everything. I love vegetables, with the exception of beets, brussel sprouts, greens (like mustard, collard), sweet potatoes.
No problems with eggs right now. I love pasta, mexican, asian, italian...
We're not big bean eaters. When we eat beans it's usually black beans, pinto beans or white beans (I guess Navy?)
I'm probably not being much help, it's just meat that seems so yuck right now. If y'all have ideas, I can probably tell you if we'll like it or not.

Tonight I am grilling some teriyaki chicken and putting it in chunks on top of a salad. I have hearts of romain, mushrooms, spinach, carrots, broccoli, cauliflower, and a sesame ginger dressing I found thanks to the DIS :)

Last night's dinner was takeout from a local middle eastern place. We had hummus, baba ganoush, fatoosh, stuffed grape leaves, pita, tabouli, and a tomato-lettuce salad with mint dressing. All of this was really good, especially the baba ganoush, and there were leftovers for lunch today and tomorrow.
The two things we had that were not a big hit were zaatar pie (too much thyme), and baklawa (underbaked).
Tonight DH has to take a client to dinner, so I am going to my parents for some home cooked food for a change.

bengalbelle, here are two really easy ideas:
Pasta Fresca:
in a food processor, combine 6-8 plum tomatoes, 1 small clove garlic (you can leave it out if garlic is upsetting you right now), 8-10 basil leaves, 2 tbsp olive oil, and salt and pepper to taste. Process until relatively smooth.
Chop 4 ounces of fresh mozzarella into smallish cubes, and grate about 1/4 cup parmsean cheese.
Cook your pasta until al dente, then drain, reserving some of the cooking water. Toss the pasta with the sauce, the cheese, and as much cooking liquid as is necessary to get the consistency you like. Top with parmesean cheese and extra chopped basil. This is good hot, warm, or at room temperature.
And an easy egg recipe (no real name for it, DH just calls it "egg dish")
Preheat your broiler, and have ready a small ovenproof gratin dish or similar for each person you are serving.
Per serving, have the following on hand:
2 or 3 eggs, cracked into a cup (keep each serving in its own cup)
1 tbsp. butter
1 tbsp. cream
2 tbsp. grated parmesean cheese
2 tbsp finely minced herbs (I use thyme and parsely)
salt and pepper to taste
Place the butter and cream in the gratin dish, and put under the broiler until the butter is melted and the cream is a little foamy. Remove the pans from the oven, and tip in the eggs. Top with the cheese, herbs, and salt and pepper. Place back under the broiler and cook until the whites are solid but the yolks are still runny, about 5-6 minutes (you can cook the eggs further and it still tastes good). When the eggs are done, set aside for a minute or two to cool a bit and finish firming up, then serve with crusty bread for dipping.

I haven't finalized my dinner menu, but I do know it involves chicken.
Bengalbelle here are a couple more ideas for you:
ASPARAGUS PASTA (this was in Gourmet a long time ago):
1 bunch asparagus, ends removed and cut into 1 inch pieces, tips and stems divided.
1 tsp finely grated lemon zest
1/4 c extra virgin olive oil
1 lb pasta, preferably with ridges
1/2 c grated parmesan
In large pot, cook asparagus stems in boiling, salted water until tender (6-8 mins). Remove (don't dump out the water) and rinse under cold water to stop cooking. Put in blender or food processor.
Cook tips in same water until tender (3-5 mins) Again, remove and rinse under cold water. Set aside.
Add zest, olive oil and 1/2 c cooking water to blender or food processor. Blend into a sauce.
Cook pasta in same cooking water until just underdone.
Reserve 2 cups cooking water, then drain pasta. Return to pot with sauce, add 1/2 c reserved water and finish cooking pasta. Add more water if necessary.
When pasta is done, add asparagus tips to heat through, and parmesan.
Season with salt and pepper and serve.
CAULIFLOWER CASSEROLE (we usually make this as a side dish, but it is definitely filling enough to be a main dish...plus, added bonus: It fills one of your daily dairy servings.)
1 head cauliflower, cut into florets
2 tbsp butter, plus more to grease the baking dish
2 tbsp flour
1 c milk
1 c grated cheese (I usually use cheddar, but gruyere is good too)
Optional breadcrumb topping:
2 slices firm white bread
2 tbsp butter, melted
salt and pepper
Heat oven to 375.
Grease a glass baking dish.
Parboil the cauliflower either on the stovetop in boiling water or in the microwave. Drain, rinse under cold water and add to baking dish.
In a skillet, melt the 2 tbsp butter. When melted, add the flour and whisk together over low heat. Continue whisking until mixture is bubbly. Add the milk and whisk constantly until mixture is smooth and has thickened. Add 1/2 cup cheese and stir until it has melted and the sauce is smooth. Pour sauce over cauliflower.
If making the breadcrumb mix, cut the edges off the bread and discard or save for another use. Cut into small squares. Toss with the melted butter and remaining 1/2 c cheese. Season with salt and pepper. Put on top of cauliflower.
If not making the breadcrumbs, just top the cauliflower with the remaining cheese. Cover with a lid or aluminum foil and bake 45 mins. Remove lid or foil and bake an additional 10 mins or until crumbs or cheese is lightly browned.

Morning all!!
Today I am cleaning my house so I needed something quick to make tonight. On that note, I am making hamburgers steaks with sauteed peppers and onions, and onion rings. My hamburger steaks aren't rocket science, but here's a recipe if anyone wants it:
1 lb. hamburger meat (I use turkey/chicken sometimes)
A good tbs. or two of grill seasoning
1 tbs. or so of parlsey
A couple of tbs. of Worcestershire (I just sprinke till it looks good)
2 cloves of garlic, finely chopped
About 3/4 cup of Parm cheese
I preheat a big skillet over medium high heat and spray it with Pam. I cook the patties about 5 minutes or so on each side.

DS has been begging me for meatloaf, so meatloaf it is. So funny, I grew up dreading meatloaf and I have a child who would eat it every day. :teeth: But then, my mom's recipe called for 2 lbs of ground beef, rolled in a ball and tossed in the oven at 350, baked until dry and hard. Mmmm mmmm.
Anyway, I take 1 lb ground beef, & 1 lb of sausage, mix with 2 eggs, a dash of worcestershire, salt & pepper, diced onions, diced green peppers, diced celery (it's a frozen mixture, and I use about a handful), 1 cup whole oats, half can of tomato soup. I form two small loaves, top it with the rest of the tomato soup, and lay a couple of slices of bacon across the top. Bake for about an hour at 350.
I'll also make some garlic mashed potatoes and a veggie.

1 lb ground beef (or turkey)
1 small can of tomato sauce (I think it's 8 oz.)
2 tbs. or so of grill seasoning
Bread crumbs (I eyeball this one; start out with about a 1/2 cup and add more as needed)
Couple of splashes of Worcestershire
1 egg (beaten first)
I add a sprinkle of parm cheese sometimes
Parsley
Mix together and bake at 350 for an hour.

Last night I made the Spaghetti and Meatball Stoup Lindsay posted. It was good, but DH and I kept thinking the meatballs had an odd flavor. It wasn't until I was cleaning up the kitchen that I realized I had grabbed cilantro instead of parsley :teeth: (I actually do know the difference, but was in a huge hurry and grabbed it-the parsley and cilantro were right next to each other)
Tonight we're having the stoup as leftovers.
Lindsay the recipe you posted here is a little different from the Meatball Stoup recipe of Rachel's that is posted on foodnetwork.com. Did you adapt it yourself or are there 2 recipes?

I'm making a chicken dish that my aunt made last week
1 pack. of boneless skinless chicken breasts
1 can cream of chicken (or whatever you have) soup
1/2 cup white wine
1 package Stove top stuffing for chicken
1/4 cup butter/margarine melted
Swiss cheese, sliced
Mix soup and white wine, set aside. Mix stuffing mix with melted butter, set aside. Spray a 13X9 pan with cooking spray and put the stuffing mix in--spread over whole pan. Layer chicken on top of stuffing, lay a slice of swiss cheese over each piece of chicken. Pour soup/wine mix over chicken. Bake at 375 until chicken is cooked through--DAunt added some chopped cremini mushrooms on top of soup mix, and then topped with toasted almonds when chicken done. MMMM!

Today we ate at my parents' house with DSis and BIL, who were happy to get out of their paint fume-filled house. The weather continues to be miserable here, so we went with a comfort food standard: roasted chickens, mashed potatoes (with the skins on that weren't gluey like the ones DSis made last week. Mom does these things on purpose), Mom's excellent eggplant sticks, broccoli and of course, gravy.
Tomorrow, I am hosting my parents for Mother's Day. We are having sirloin roast, roasted potatoes, brussels sprouts and leftover eggplant sticks, and gravy. I may also make cauliflower casserole. I just hope I don't mess up the roast. The last time I made sirloin roast, it was completely raw at the time it was supposed to be cooked, and I ended up (gasp!) microwaving slices of it so we could eat it. That was three ovens ago though, so hopefully I will have better luck tomorrow. Mom has to work in the morning, so she is going to be REALLY upset if she gets here and doesn't get a decent piece of roast beef. Wish me the best!

He woke up and we all went to Olive Garden and he didn't give us a bit of trouble about it. Then we went to Borders where I ended up buying two Imagineering Field Guides -- one for Magic Kingdom and one for EPCOT. He also made out in the deal, getting two books and a CD. He hasn't been shopping with me in so long that he forgot that mama always takes care of him in a bookstore. :teeth:
At OG, I got a berry sangria (yum!), DS and I split a calamari appetizer, and we both ordered the shrimp and crab ravioli. I'm stuffed now and need a nap.

The blackstrap pork chops are loin chops done in a brine and then the blackstrap sauce is done at the end. Its got red pepper, blackstrap molasses, a little vinegar and some brown sugar. My MIL got one of those cast iron grills that go on two burners-it was great.
DH doesn't like pork chops, so he had flank steak.

Black Bean Chili
1 lb. ground beef
1 red/sweet onion chopeed
1 green/red bell pepper, chopped
A few cloves of garlic, chopped
8 oz. can tomato sauce
1/2 box of beef broth (I think that's 2 cups)
A sprinkle of cumin
4 cans of black beans (I use Bush's with a seasoned sauce)
A cup or so (a few handfuls) of frozen corn
Heat a soup pot on medium high heat. Add the beef. Season with salt and pepper. After it is almost browned, add the peppers, onions, and garlic. Saute until tender, but not mushy. Add the stock and tomato sauce. Then beans. I add the juice too, it helps to thicken the soup. Add corn. Bring to a boil. Sprinkle with cumin. If you like, add some chili powder. Taste for seasonings. Mmm mmm mmm! :)
ETA: This is NOT a spicy chili!!!! My stomach cannot hack hot chilis and/or chili powder (don't know why, I used to be able to), so I leave them out. Feel free to add either or both and spice it up!!!

I've managed to clear enough room in my kitchen so that I can use one burner on my stove, so tonight I am making ravioli with tomato-cream sauce (have to heat it in the micorwave), garlic bread, and a tossed salad.
Yesterday I went to my inlaws for Mother's Day. DH and I brought all the groceries and made chicken marinated in a soy glaze, roasted asparagus, seared summer squash, and from-scratch macaroni and cheese. It was all good, but I think my MIL might have been a little miffed. Apparently, she told my DH that she wanted Chinese food, which he neglected to mention to me :rolleyes:

Tonight we're having Mexican Lasagna. It's a simple dish to prepare and it tastes so good. It also freezes really well. We made it the day before a beach trip, froze it, let it defrost during the drive then popped it in the oven the next night. I've also tried it with both corn and flour tortillas and we like both.
Easy Mexican Lasagna
This simple and delicious one-dish supper calls for almost
no preparation (especially if you buy precooked, cut-up
chicken).
3 cups chopped cooked chicken breast
1 (15-ounce) can black beans, rinsed and drained
2/3 cup canned diced tomatoes and green chiles
1 teaspoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon pepper
1 (10 3/4-ounce) can fat-free cream of chicken soup
1 (10 3/4-ounce) can fat-free cream of mushroom soup
1 (10-ounce) can enchilada sauce
Vegetable cooking spray
9 (6-inch) corn tortillas
1 cup (4 ounces) low-fat shredded Cheddar cheese
1 cup (4 ounces) shredded Monterey Jack cheese
Toppings: shredded lettuce, nonfat sour cream, mild chunky salsa
Cook first 6 ingredients in a saucepan over medium heat 10 minutes or until thoroughly heated.
Stir together chicken and mushroom soups and enchilada sauce in a saucepan; cook, stirring often, 10 minutes or until thoroughly heated.
Spoon one-third of sauce into a 13- x 9-inch baking dish coated with cooking spray; top with 3 tortillas. Spoon half of chicken mixture and one-third of sauce over tortillas; sprinkle with half of Cheddar cheese. Top with 3 tortillas; repeat layers once with remaining chicken, sauce, Cheddar

I do have a question--what do you all do to "dress up" regular stove top stuffing and pork chops?
I saute celery and onions and use chicken stock instead of water. For pork chops I would add some apples. Cook your chops the way you like them, then assemble them on a platter over the stuffing.

Well, last night we had chili dogs. It's usually something simple around here for supper as DH works 2nd shift and at least one of my DD's is usually somewhere else. As much as we love the good stuff, it's just easier to do simple :rolleyes:
Tonight I think I'm doing fried chicken. DD16 has been bugging me about making it, so I think tonight's the night..and all DD"s will be home. I'll probably also do from scratch mashed potatoes and gravy(not much of an instant potato girl here) and some kind of veggie.

Best of luck with the surgery! Here's a simple, but filling smoothie you could try.
Yogurt Smoothie
2 c vanilla yogurt (low-fat-to full-fat okay, depends on your preference. I use Stonyfield Farm, but anything that is not too sweet would work)
1 banana, preferably pretty ripe but definitely not green
1 c frozen blueberries
water
Put yogurt, banana and blueberries in blender. Add water until mixture is desired texture.
I like to have this in the mornings...even when my teeth aren't hurting. Speedy recovery :wizard:

Tonight we are having Smoky Chicken Patties and onion rings. I got this recipe from a 30 Minute Meals episode. It was the one devoted to her dog. It was SOOOOOO sad!! Anyway, in honor of Rachel's dog, we call these "Boo Patties." Here's the recipe (note: it's also in her 365: No Repeats cookbook):
1 1/2 pounds ground chicken breast
1 tablespoon smoked sweet Hungarian paprika, available on spice aisle in small cans, a palmful
1 1/2 tablespoons grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)
1/4 to 1/3 cup chopped parsley, a couple of handfuls of leaves, chopped
1/2 medium yellow skinned onion
4 cloves garlic, finely chopped
2 tablespoons extra-virgin olive oil, 2 turns of the bowl
8 slices sandwich white or whole-wheat bread
2 to 3 tablespoons butter, softened
2 cups chopped baby spinach, watercress or arugula
Heat a large nonstick skillet over medium high heat. Place chicken in a bowl and add the smoked paprika, grill seasoning and parsley to it. Using a hand held grater or microplane, grate the onion into the chicken. Add the garlic and mix to combine. Drizzle the chicken mixture with about 2 tablespoons extra-virgin olive oil and form 4 large thin patties then place them in the pan. Cook patties 5 minutes on each side. Toast bread slices and spread liberally with softened butter. Serve patties on buttered toast with some chopped dark greens.

Last night I made Cracker Chicken (FamilyFun)
24 butter crackers, such as Ritz
1/4 cup grated Parmesan cheese
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
10 small, skinned chicken drumsticks or about 1 1/2 pounds boneless, skinless chicken breasts cut into 1-inch-wide strips
2 large eggs
2 tablespoons honey
1 tablespoon water
1. Heat the oven to 400°. Combine the crackers, Parmesan cheese, paprika, garlic powder, salt, and pepper in a food processor and process until the mixture resembles coarse meal. (If you don't have a food processor, you can crush the crackers in a sealable plastic bag using a rolling pin.) Transfer the mixture to a shallow bowl or a sheet of waxed paper.
2. Rinse the chicken with cold water and pat dry with paper towels. In a shallow bowl, beat the eggs, honey, and water until blended. Dip the drumsticks or breast pieces into the egg mixture, then dredge them in the cracker mixture. Place the chicken on a lightly oiled baking sheet.
3. Bake drumsticks for 15 minutes, then turn them over and bake for 15 minutes more or until the chicken is tender and the coating golden. Bake chicken strips for 16 to 20 minutes, turning once.

Tonight I'm making American Chop Suey (also FamilyFun)
1 1-pound box elbow macaroni
1 medium onion, chopped
olive or vegetable oil
1 pound lean ground beef
Salt and pepper
1 28-ounce jar pasta sauce
1/4 cup, plus garnish, grated Parmesan cheese
1. Cook the pasta according to the package directions. Saute the onion in a little of the oil, then add the meat and cook over medium-high heat until done.
2. Drain the grease from the pan, then add salt and pepper to taste.
3. In a large saucepan, combine the sauce, the 1/4 cup of cheese, and the beef mixture and bring to a simmer. Add the pasta, turn off the heat, and let it set for 5 to 10 minutes before serving.
4. Finally, garnish individual portions with the additional grated cheese.

Last night i did go ahead and fix fried chicken, cream cheese mashed potatoes with homemade gravy, and corn. I love bread or rolls with my meals, but the girls don't eat it much so I rarely fix it. I need to get my bread maker out..I'm sure that'll grab 'em!
Tonight it'll be homemade pizza with mushrooms and pepperoncini peppers(Our favorite).

I don't think I've ever seen Uncle Charlie's sausages, but now I will look for them. I am always looking for the perfect sausage. I topped mine with green peppers and onions. I sliced the peppers and onions, put a little olive oil on them, salt and pepper, wrapped them in aluminum foil and cooked it on the grill with the sausages. It was yummy. And best of all, it didn't rain. :)

Marseeya, we are in the same boat here. I did the same thing last night....again :confused3. We had ground turkey stuffed peppers in red pepper shells, along with mashed potatoes and corn. I served a garden salad with dinner.
Now tonit I am going to try to stick to my plan. Thick pork chops marinated in a teriyaki marinade, and grilled. I think salad, green beans and some kind of starch. My DGD is graduating from preschool today, so a fun cake for dessert.
Now if it rains, I may change my mind.....

Yesterday I was at a wedding, so no cooking. The food was surprisingly good...clam chowder to start, Caesar salad in the middle, and prime rib for the main course.
Today, we had the usual linner at my parents' house. DSis's house is still a mess, so my mom and I were in charge of the meal. However, I had no input in the planning because I definitely would not have planned this...and judging from DSis's demeanor, she wouldn't either. We had grilled halibut with a mustard sauce, asparagus risotto with fontina cheese, and grilled baby squash. The fish was delicious, but to be honest, I really wasn't in a halibut mood today. The risotto was only okay. The texture wasn't really right and the fontina was a bit overwhelming. Plus, it had three egg yolks in it, so I guess I was not sold on the recipe from the start. The baby squash was just gross. I can say this because I grilled it. The baby zucchini was squishy and the patty-pan was bitter. Yuck.
I am having a serious snack later!

We are finally back to normal. Yesterday we celebrated my nieces graduation from Central with lasagna, sausage and peppers, meatballs, and a nice salad with italian bread. Lemon bars and chocolate mousse cake for dessert. Yummy!
Tonite we are having hamburgers on the grill, (turkey burgers for DD) with potato salad, and tomatoes and cucumbers for salad.

Today the farmer's market opens up, so I am going there after work to see what I can find for dinner. I am hoping for at least a good baguette and some cheese--not sure what kind of veggies will be around yet.
Backing up, last night we made roasted chicken, sweet onion, munster cheese, and arugula toasted paninis. They were pretty good. Sunday was the yucky meal Dsis mentioned earlier. Saturday was really busy, so we just had grilled burgers (portobello mushroom burger for me, beef for everyone else).

Tonight I am making a Rachael Ray dish that I skewed a little bit. It's Cashew Chicken (not the Asian version). Her original recipe used honey roasted nuts, I use cashews. I will post my recipe. We are having a succotash made with red onion, a green pepper, and black beans. Also I'm making a tomato parmesan angel hair pasta. What a feast!!

Nutty Chicken
2/3 cup (eyeball it) cashews
½ cup plan bread crumbs
1 T. grill seasoning
2 eggs
Splash of milk
½ cup all-purpose flour
3-4 boneless, skinless chicken breasts
1. Preheat oven to 350.
2. Put nuts, bread crumbs, and grill seasoning in a food processor and combine. Pour breading into a bowl.
3. Beat eggs and milk and place in a bowl. Pour flour into a separate bowl.
4. Dust both sides of chicken with flour. Dip chicken into egg and then coat with breading.
5. Preheat a nonstick skillet over medium high heat. Add vegetable to lightly coat the bottom of the pan. Brown chicken about 3-4 minutes on each side or until light golden in color.
6. Place chicken in the oven a cook about 10-15 minutes or until chicken is done.

I haven't posted in a while..DH took a day off work and we had a great weekend here so it's been pretty busy.
Last night one of my DD's was gone and so the others had left over baked steak while I made a black bean soup for myself. We also had a homemade Sugar Cream Pie with the baked steak.

I have some tomato paste but I've never tried that in my meatloaf before. I usually use tomato sauce. I'm really not in the mood to experiment so I am going to just go with the hamburger steaks. Will saute some onions for the top and I think I have some fries in the freezer.

I'm working, so I'm bringing in my leftovers. Cashew Chicken with Pineapple.
Hubby and kids are having Parmesan Chicken with asparagus. I'm so hoping there are leftovers this time-last time I didn't get any!

Morning!
Tonight I was all set to make meatloaf and cheesy garlic smashed potatoes, but I have no tomato sauce or ketchup. So I am going to make hamburger steaks instead. Lindsay, I use tomato paste all the time, and it is just fine. I tend to toss some in whenever I think ketchup would be good.
I will warn you that I am the Queen of Experimentation. My family says that I "Nanitize" everything, and lately my DH is begging me to stay away from the computer and "5 star recipes". :confused3
Anyway, they were all happy last night. Kielbasa (turkey, of course) on the grill, sauerkraut, cucumbers and tomato salad, macaroni salad with spinich and herbs, and picles.
DH was happy to have plain food.
Now I am not cooking tonite. I want to get my Holiday shopping out of the way, so DD and I are heading to Sams club.

It's DS10's last day of school so we're taking him out to celebrate. He wants to go to a Japanese place so he can get edamame and sushi. We had sushi at my brother's house a couple weekends ago and DS loved it. It was all cooked stuff. I've never ordered it at a restaurant so I'm going to be a little lost tonight. Any advice?

If it stops raining, I'm going to cool some burgers and hotdogs on the grill. If not, then I think I'll do some chicken on the Foreman grill and make some veggies and rice.

I forgot to mention that the Mu Shu Chicken Wraps I made last night were NOT a hit. We just didn't like the sauce at all. I want to try them again, but maybe use the sauce for the Bourbon Chicken recipe I posted a while back.

Last night I made Spaghetti with a chicken and broccoli alfredo sauce(didn't have enough fettucini for everyone) and garlic bread. No idea WFD tonight...getting sort of bare in the kitchen...

Dinner will be rushed tonight due to baseball practice (only three more weeks, I think!) We're having honey soy chicken wings, and I haven't figured out the rest yet. Maybe rice and salad.

Not cooking tonite either. We are supposed to get some wild weather, so after work I am running some quick errands, and then I'm doing nothing in the kitchen.

Sorry I have not been posting every day! I was sick earlier this week. Catching up...
Wednesday: Nothing. I had a nasty stomach bug and hit the bed right after getting home from work. Yuck!
Thursday: Feeling better, yay! We grilled some chicken marinated in a bourbon-honey sauce, and glazed it with sweet baby rays barbeque sauce at the end. We served that with some seared asparagus and bruschetta rubbed with tomato and garlic.
Tonight I am grilling a ribeye steak for DH (weather permitting!) and serving that with blue cheese butter. I am also grilling up a bunch of wild mushrooms and serving those on rigatoni with some parmesean and lots of black pepper, with a little chicken stock to keep things moist. Also will make some broccoli.

We've had lots of activites so we've been eating on the run. I haven't known ahead of time what we're having so I haven't posted. I still read this thread every day, though.
I was diagnosed with Gestational Diabetes yesterday so I'll have to get better at planning meals. Luckily I'll be able to take DS to morning swim practices starting Tuesday so I'll have more evenings at home to prepare dinner.
Liamsaunt, sorry you were sick. Hope you're on the mend now!

I guess I won't be cooking again tonight or tomorrow or Sunday. DH is on vacation and since we aren't going anywhere he wants to go out to eat a lot. Last night was Asian, tonight is either going to be Mexican or Italian, I think. Tomorrow is a party at a friends house and then Sunday is my cousin's graduation party.
