Thanks for all of the info, Ladies. Today I went with my brother to my sister's house for lunch and he gave us the disbursement from my Mom's home. We all were thanking God that he could not reach my other sister, she is a pill. Gail can call her. Anyway, it is not a lot of money but it is enough and while I am going to pay some bills ( I can't believe I am going to do this), I want to share with my family, so I am thinking a family trip, minus my oldest who would rather chew glass than go to Disney, would be nice. I'll give him money and he can use it for whatever.

Now I really don't want to cook so I'm glad that I made that soup yesterday. It is hearty enough for dinner with a salad and bread.

Hey Y'all,

After having a bad bug hit me on Sunday, I can finally think about food again.

Nancy, I think that's a nice way to use the money. We've gone between Thanksgiving & Christmas and loved it. The lights & decorations are so wonderful. Don't miss the "Santa's" from around the world in Epcot's WS. I also think the MVMCP is worth the extra bucks, the parade, fireworks & snow are so nice. And I second or third the Osborne Family Lights too.

Lauren, If I ever finish the house renovations & decide to plan a party, I'll need to hire you! What great ideas!

Aimee, The party sounds fun & with all the great ideas & recipes you're getting it's gonna be wonderful!

I think we'll have roast beef panninis for dinner.

Becky, Beautiful souffle even if it did overflow.

DD & I tried our hand at pasta making on Saturday. It was fun & very good. We made a light wheat fettucine that came out really good. Served it with a spinach pesto sauce and chicken.

Has anyone else made pasta at home? Any tips or info. for me?

Evening all--

Well we will be having seafood tonight for my b-day, but Kris will pick it up and bring it home.
Ross is home sick and we are going to the DR's at 8:30 tonight to see if he needs an antibiotic or inhaler or what. Last week he had the sniffles etc, and I figured it was just a cold, as Kris and I each came home from vacation with one. Ross then came home once last week with a fever of 104.5 and by bedtime it was normal, and he went to school. Over the weekend he has been coughing almost nonstop, and not eating, and I kept him home today and figure we better go get this checked.

I wish I could ship his heavy coughing down to my mother as she is struggling to cough up all the junk in her lungs from being on the Vent for a week. She had a rough morning, but they are working on things, and she is feeling a bit better this evening. Pulmonary might go in with the scope and suck some stuff out, and try to help her out a bit, they have put her in a bed that sort of taps her in the back every half hour to help break it up. Her nurse said it was the Caddilac of beds, lol.

We are having Lobster stew and Lobster rolls, mmmmmmm!!! A lobsters worth of meat in each one!!

Nancy--I think your mother would love what you are doing with the money...it will be a trip in her memory. (she would also be proud that you are paying some bills too;))

All this talk of me party planning makes me miss my last job...:sad1: I was in charge of planning sales awards trips, dinners, team building events, etc...I really wish I could find something that I would love to do like that again. I just moved too far away to stay with the company...

So, if anyone wants me to plan a party, let me know!!!

I have never made pasta but what you made over the weekend sounds awesome! :thumbsup2

I hope that you are feeling better now. Years ago I bought a pasta maker, another gadget I had to have, used it one time with my niece and then packed it up and put in in teh basement. I am of no use to you.

I hope that Ross gets rid of his cough. My sister said the kids are all sick and they have been swamped. She is a respiratory therapist at Childrens but worked across the street for years. I'll ask her about that Cadillac of your Mom's. Coughing is so hard when your lungs are tired.

My SIL is asking her friend to stand up as well so I won't have carte blanche when we do something for her, but I know I'm calling you!

I am afraid I'm going to bother you a lot for a bit. When we went to the MNSSHP we were sorry that we only bought tickets for one night. Should we think about tickets for two evenings? DGD is a character junkie but I am not sure if there are so many at this one. Also, any advice on the CP? We definitely are going to check out the Santas. I think we are going to plan 7 nights and we are not worried about getting to everything, we are going to concentrate on the special Christmas effects, the rest will be a bonus. I am going to see if my sister's girls can get time off. I would love for them to join us. All this planning and I am not sure we can do this :rotfl:

Well, the Chicken Ala King was a HUGE hit! Of course I altered the recipe...here it is...not the most diet friendly dish but oh so good!

4 chicken cooked chicken breast, cut into cubes or roughly shredded
1 small onion, diced
3/4 cup carrot, diced or sliced
3/4 cup frozen broccoli, cooked but not mushy (cooked fresh is fine)
3/4 cup frozen peas, cooked but not mushy
4 heaping tbs of flour
1 cup chicken stock
2 cups warm milk
salt, pepper, nutmeg, garlic powder to taste
2 tsb sherry
rice or toast to serve ala king on (would be good with biscuits too)
*** Add more stock or milk if needed at end of cooking

In a pan, melt butter and saute onion and carrot for about 5 minutes. Stir in flour and cook for another 5 minutes.

Take pan off the stove and slowly whisk in chicken stock, then milk. Return to stove and season. Bring to a gentle boil and cook another 10 minutes. ***See above.

Add chicken and remainder of vegetables. Cook another 5 minutes. Serve over rice or toast.

Add chicken, sherry, broccoli and peas.

Then give him one med 40 min before the other, etc etc................he has bacterial pneumonia, along with cellulitis on his right cheek, and maybe influenza as well.........the trifecta of illness! (he might also have a sinus infection which would explain why the cellulitis on the cheek came from) He should be feeling better after a day or two of antibiotic in him, and he will rest well with the cough med with codeine.
What a week.......I also have my grandmother having eye surgery on Thursday to deal with as well.....As long as I stay healthy I can handle this all, lol.

Now off to watch american idol that we dvr'd.

It is almost 1am and I just talked to my mom, she could actually say a few words tonight, that I could understand, her voice was loud and she could put 3-4 words together for mini sentences. Which was amazing to me, considering this time last week, I was thinking I would never talk to her again! Her nurse said that her lungs were sounding much clearer as well, and so far they are holding off on going in to clear them out for her!!! Off to bed now!

I ended up not enough enough tomato sauce to make jambasta last night. Scott drove my car so I couldn't pick some up. So I ended up making baked salmon and rice. Tonight I will make the jambasta.

Lindsay I would use a hearty bread like a Italian. Does your Grocery store have a variety of breads? I would look for a larger loaf of crusty bread.

I still have to decide on my dinner tonight. So far I have stuck to my resolution of not going to the store and just using what I have in house first :woohoo:

I am just popping in to post a recipe since I've lurked here a bit and gotten some great ideas!
Tonight I am making vegetarian chili. Love this recipe!!

Longaberger Vegetarian Chili (yes it's Longaberger, shi shi foofoo chili)

1/4 cup vegetable oil
2 large onions diced (about 3 cups)
2 large red peppers cored, seeded and diced
4 cloves garlic
2 T ground cumin
2 tsp ground coriander (I can never find this since I moved out of eh US and need to mash my own)
1 tsp cayenne pepper
2 tsp paprika
3 T chili powder
1 t dried oregano
2 tsp salt
1 tsp black pepper
Two 28 oz cans diced tomatoes, drained
One 28 oz can crushed tomatoes
One 16 oz jar medium hot salsa
12 oz beer
Two 15.5 oz cans white hominy, drained
Two 15.5 oz cans black beans, drained
Two 15.5 oz cans kidney beans, drained
Two 4 oz cans diced green chilies
Juice of 2 limes
One 8 oz bag frozen corn
1 bunch fresh cilantro, stems removed corsely chopped


Heat oil in heavy bottom 8 qt or larger pot over med hi heat. Add onion, pepper and garlic and cook 5 minutes stirring frequently until veg are soft.

Combine the 8 spices and seasonings in a small bowl and then add teh mixture to the veg. Cook for an additional 5 min stirring frequently.

Add tomatoes, salsa, and beer. Lower heat to med and simmer for 15 minutes. Add the hominy, beans, chilies and lime juice and simmer 30-40 min.

Stir in corn, heating it thoroughly for 5 to 7 minutes. Mix in fresh cilantro and serve.

I will also make some cornbread to serve with it.:cloud9: Perfect cold weather food.

Wendie, Poor Ross. I am glad that he got his meds and hope they kick in fast. Boy, you are having a rough week. You need a big strong cocktail! :hug:

I am going to see my Mom today so I need to make something quick: meatloaf, lipton garlic shells and some kind of veggies...I like corn and peas the best with meatloaf so probably those.

Seriously, I like you so much more than my older sister, Gail got the short straw yesterday and had to call her ;), my brother was positive she would not call him back, his wife said she was done making the calls and then being treated like an outlaw, and I rub her wrong, so Gail is always the short straw :rotfl:

Janice, my sister used Italian bread yesteday and sliced it thick. OMG! They were so good!

I am not as on track as you are with your resolution becasue Costco did not have any ground turkey ( I ma going to need to get there today) but I am trying.

Tonight we're going to the stockshow to see the Extreme Bull Riding - I am STOKED! I love me some violent sports.

We'll be dining at our favorite mexican place beforehand with the ILs. They have the BEST salsa.

How was the bull riding? My brother used to ride the rodeo circuit, and it just about killed me! I was the designated family member. I got to go with him, and meet him at the hospital. The kid was stepped on, gored, thrown more times than I can count, and has had every bone in his body broken by bulls. On the upside, he does have some nifty belt buckles!!! I hate to think of the arthritis that's awaiting him! Luckily, his wife convinced him that fatherhood was just as risky and dangerous as riding the bulls.

Dinner tonight will be sweet and sour meatloaf, green beans and some kind of potato. If I get really industrious, I'll mash my own, if I'm lazy, I'll just do instant. It's that kind of day. It's snowing like crazy, and supposed to clear up which means that the temperature (21 degrees now) will plummet to about 10. Brrr. I'm supposed to drive to the library today, but we'll see if I ever leave the cozy nest of my home!

Nancy -- We didn't do any character greets at the Christmas party, but there are definitely characters around. I don't think there are as many as at the Halloween party though. The parties are never sold out that week, so you could always go one night and if you want to go a second time, you could buy the tickets there. We thought one night was enough.

Wendie -- Sorry to hear about Ross. I hope those antibiotics kick in quickly.

Caili is sick too. She started throwing up this morning, and this is really bad news because we are supposed to be on a bus tomorrow morning at 7:30 to go to Lake Placid. Hopefully, the bug will run its course quickly or else I have no idea what we are going to do.

I don't know what is for dinner yet...probably some kind of pasta. Maybe Caili will be able to eat a little of it by then.

Oooh, it was fun! Didn't see anyone hurt too badly, though a few limped off. Some are smart enough to wear helmets with face guards, thankfully.

It was very cool.

Tonight will be spinach and cheese ravioli in a basil pesto cream sauce. Probably a little too rich but I wasn't feeling like tomato sauce. Might change my mind later tonight, though.

Well dinner isn't a plan yet. Buddy sat through two performances of Kady's winter concert and I went to the afternoon one. Now I have to get her to dance so I did not have time to go to the store in between. Buddy said we should play it by ear and I really want o go out. At least I do now. It is getting COLD here so I may just want to stay in my nest too, GLynis.

Nancy -- We didn't do the Candelight Processional. We thought it might be a little slow for the kids, plus you have to get in line an hour before the show usually. If we did it, we would do one of the packages to avoid the line waits.

Caili is feeling much better. She took a long nap and then woke up thirsty and hungry. She isn't quite skipping around the house yet, but she did do a couple of twirls on her way back to her room.

That means we are off to Lake Placid in the morning for Caili's competition...should be cold! Hopefully, it will be fun too. I've never been. Have a good weekend, everyone, and I will be back Monday!

Now I have to get her to dance so I did not have time to go to the store in between. Buddy said we should play it by ear and I really want o go out. At least I do now. It is getting COLD here so I may just want to stay in my nest too, GLynis.

Aren't you ready for spring? We had a nice day here but it is supposed to get really cold on Sunday. We haven't gotten much snow this year but I hate the cold. In my mind I think I hate the cold ever since I spent one winter in Disney on the CP. :sunny: :earsgirl:

As far as the Candlelight Processional, its the narrated Xmas story with a choir. It really is a nice show...I am not 100% sure that Kady would like it...I can't remember how long it is...Kathy can gove you more details...;)

Well, I tinkered with my meatloaf recipe again (Tom and Andrew hate when I do that to food they love) and it was Great! I substituted about 3/4 of the oatmeal (I use this instead of breadcrumbs...can't even tell) with French's Fried Onions...soooooo good! :thumbsup2

I wanted to used the Martha Stewart recipe that Kathy posted but couldn't find it...can anyone help me?

Mmmm. Making Green Chili Chicken Stew tonight and can't wait until DH gets home!

Just finished getting it on to simmer and saw this thread, so i thought I'd share:

(I substitute their green chili with mild red salsa. It makes it very mild, just tasty, not hot. This is my favorite salsa (medium hot) straight out of the jar, too!)

It seems that a lot of us are in the mood for chili tonight! I read briarmom's recipe, which sounds awesome, and thought about making that, but when I got home I discovered I did not have any kidney beans, so instead I made a pot of black bean soup, and I am serving that with some cheese quesadillas with some guacamole. The guacamole is a little tart because the avocado was slightly underripe. I'm trying to think of a way to fix it. Maybe just stir in a bunch of sour cream! I am sooo hungry!

Nancy - The Candlelight processional was 30-40 minutes long. I recommend you do the package, but you still have to wait in line, which we didn't know. There's a line that starts forming about an hour before the show time for the package people. You are guaranteed a seat and there are no bad seats. Any other questions, I'd be happy to answer. I'd recommend a World Showcase restaurant if you do a package as you're closer to the American pavillion. We did Chefs De France, which was really good. Check out my Dining review:

I had a busy day with no cooking just warming up the leftover pasta. I spent the day with a girlfriend I don't get to visit with very often. We've been friends since DD 25 & her son 26 were in montessori preschool together. Even thought the weather was horrible here today, rainy, cold & windy, we still went out to lunch. Then I picked up Alexis & she was good enough to let us chat for hours with not too much interuption.

Laura, Sorry that Caili was sick but good luck in Lake Placid!

Lindsay, I will use whatever bread looks best at the grocery. Around here that usually either french bread or italian loaf. But when I can get to Whole Food or some of the better groceries (not as close to home) I will pick up any sort of hearty crusty bread that sounds appealing. And to me anything goes on for panini's, your fav cheese, meats, veggies. Would be a great idea for small get-togethers too. Just provide lots of fixins & let everybody have what they like!

Just a quick note to let ya'll know we got back safe and sound and made it through the marathon w/o too many issues (heck, we didn't die, so that's a plus) We had a great trip and some great eats! Have no idea what's for dinner tonight. I have to run to the store first. I'll talk more about the trip later, but now gotta go get DD ready for school.

I am going to try once again to make stuffed peppers tonight. But I hear the DGD wants to use her gift certificate that she gave her Pa to go out to Red Robin and a movie. There is no school tomorrow so I don't see how he can get out if it :lmao:

Kathy- honestly, it this something you would go to again and is it something that only adults minus Buddy would like. He does like to go to the symphony for their Christmas Concert though, so is this comparable?

Plus, I have leftovers, and it freezes really well since there is no dairy in it.

I have never made homemade pasta! I actually don't own a stand mixer (but I reaaaalllllly want one!), and I don't have a pasta maker either. I have made gnocchi from scratch before a few times. In general I have had better luck with ricotta-based gnocchi than the potato ones.

I am not sure what is for dinner tonight. I have a ton of vegetables at the house (parsnips, carrots, fennel, beets, broccoli, green beans, potatoes (3 kinds!), scallions, winter squash, celery, turnips, plus a bunch of different herbs. So, I am going to try and think of something that will use LOTS of vegetables. Maybe a roasted root vegetable cobbler or something like that.

The sweet and sour meatloaf was WONDERFUL last night!!! I used ground elk, and it was yummo!!! DH wants me to tell you all that you should give it a try! It's fast (microwaved) and easy, 2 requirements that I know a lot of you have!

Dinner tonight will be the brown sugar pork chops from this thread! It's really cold here, so it will be nice to have a warm, comforting meal. I'll probably make brown rice to go with it, and I'm still thinking about a veggie!

Morning Y'all,

I have Alexis home today. She was up during the night with foot & leg pain, that her Mom had to give her tylenol to get her back to sleep. Then she had nightmares after she arrived here, so I let her stay home. Anyone else's kids have leg or foot pains like that? The doctors don't have a name for it but don't seem concerned.

My DD is home sick too, with a really bad cold/sinus infection/feeling sucky from a root canal. And she insists that there is nothing Momma can do for her, no soup or other food or medicine needed! :confused3 My baby really doesn't need me anymore! :sad1:

Becky, Why I am not surprised that when you do make pasta it is totally from scratch! No machines even needed! Can't wait to see what you come up with for the veggies!

Glynis, Don't you love elk! We've only had it once when a friend got one hunting in Texas, but that is great meat! I don't think we can buy it anywhere though? You are able to purchase it in the groceries up there?

Lindsay- don't feel too badly. I know I can cook (although you can't prove it around here lately :rotfl2:) but my food never looks as good as the pics posted.

No, no, I have never made pasta from scratch!! I am not that talented! The only pasta-like thing I have made from scratch is gnocchi, and that's nothing like the process of making linguini or whatever. My pasta is usually Barilla all the way!

Becky, I beg to differ! You are uber-talented! Making gnocchi definitely qualifies as pasta from scratch in my book! :thumbsup2 I mean I used the kitchen aid mixer, dumped in the ingredients, mixed it up. Took out the dough, kneaded it only a minute or two by hand, flattened it & fed it through the pasta rollers. A little time consuming but definitely not rocket science!

Nancy, Alexis' Mom had those pains when she was a kid too, so she tends to not worry about it. I've asked Alexis doc about it before & he just said some kids get that. :confused3 But waking her up crying during the night has me a little concerned. DD said her hubby cooked last night, my SIL's cooking though is usually either tacos, or on the grill. Last night it was tacos, but DD said she sort of felt like eating that today & she had canned soup but wasn't really in the mood for soup. I think I'll roast the chicken early & make some mashed potatoes to bring to her, something I know she'll enjoy.

Lindsay, Only occasionally does my food turn out well enough for pics! I even then it never looks as great as Becky's!

If he likes the symphony he'll like CP. Johnny & I loved it and would do it again, but I am a sucker for anything Christmasy. Kyle & Abi weren't impressed. IMO it's not at all for kids, the ones around us were bored. If you enjoy Christmas caroling and choirs you'll enjoy it. The orchestra was amazing.

My Jacob has pains in his legs and feet frequently! The doctor refers to them as "growing pains." He says that with the bones growing, it can be painful for some kids. It's worse at night, because that's typically when kids are still enough for discomfort to be noticed. We give Jacob tylenol and a heating pad when it happens. It's really bad. On a funnier note, the same thing used to happen to my brother when he was little. My mom always thought he was trying to get attention, so when he asked her what was wrong with him she told him he had a case of "gold brick." The next time it happened, he came to her and told her that his gold brick was acting up!:rotfl:


The elk was a gift from that same brother. He grew up to be quite the outdoorsman! He was a bull rider, now he is a professional hunter/guide. His wife doesn't particularly care for elk, but he knows that we love it, so he gave us about half of the bull elk that he shot last year! I LOVE IT!!! I wish that we could get it in the stores, as I find it has a lot more flavor than ground beef, but at least I know my brother will keep me in stock!

Sheryl, hope DGD and DD are feeling better...I had pains in my heels when I was younger. I cannot remember what is was called but because I grew fast, my bones were not attached. I had to wear an insert in my shoes for a while. It kinda sounds like growing pains.

What a day...I had the inspector here for the bathroom...again, then I exercised (I am trying to be really good with that at least), I started taping paper down to protect the floor as we tear down the paneling and then the cable guy was here...in the interim, Riley took pride in undecorating the tree I still have up and broken glass is every where!!! I scolded him and put him back in his crate BUT...I guess he ate some candy canes. He's got minty clean breath and pink paws. Gotta love em!

I better go take a shower or else I'll scare even the demons away! :rotfl:

I think tonight will be tuna casserole. DH hates it, but he plays basketball after work until about 930 tonight so he said he would just drive through Taco Bell on his way home.

How someone can find Taco Bell better than tuna casserole is a mystery to me. It's comfort food for me.

Oh - I saw snow flurries today! It was so bitter cold but they were pretty for a brief moment.

Afternoon all--

I missed yesterday, between the phone ringing nonstop, and Ross being sick, it was an interesting day to say the least.

Ross is still feeling a bit icky, though his cough is much better this afternoon. I think that the antibiotics are starting to work, (fingers crossed). His face is clearing up as well from the cellulitis. He actually asked me to cook him a 1/4 of a cube steak, so I was happy he was getting hungry finally. (he hadn't eaten since Sunday). He is still pretty quiet, and didn't go to school again today. He will stay home tomorrow as well, though it is looking like it will be a snow day (or ice) tomorrow. They don't have school next week on Monday or Tuesday either as it is MLK day, and then Tuesday is inservice, so he will be plenty rested.

Good news on my mother....she finally passed the swallow test, and was able to eat mashed potatoes, applesauce and apple juice. (she isn't allowed water, but can have apple juice....does anyone know why that is?) I talked to her for about 10 min today before her voice was giving out, and she was getting tired. I am just so proud of her, she is doing amazing. She will have to have a thoracentisis (sp) done this evening to help remove some excess fluid in her lungs so she can breath a bit better.

Becky--Please keep us posted on how Caili does when you hear from Laura!!

I don't know why but people choke on water and other liquids are a little thicker.

I'm glad that Ross is feeling a little better. Good thing he has some time off from school to kick this thing!

Dinner changed. I went shopping and Costco had some chicken Alfredo on sale. I could not make if for that price so that is dinner with a green salad. Kady is going to have soy mac and cheese and chicken nuggets.

We are in for a lousy day tomorrow so I am going to stay in.

The doctor won't allow her water because it is to "thin" and it will go into to her lungs. In stroke patients you have to add a thickner to liquids for this very reason. The esophagus is relaxed and doesn't close off so food and liquids don't get into the lungs.

So glad she is eating.

I hope Ross feels better sooner than later.

Y'all, I am SO hungry! I made my tuna casserole, waiting anxiously for it to be done, and it tastes like cleaner. I can't figure out what is wrong with it! I ate a plate, but kept getting this thought that I was slowly poisoning myself with Clorox so I stopped. It tasted disgusting anyways.

Here I am up late again tonight. I got excited earlier because our granite came in for the vanity & the whole thing went in today! Looks great & I was trying to decide on where to put the drawer & door pulls. The sink is not working yet but should be tomorrow! Thinking about it is keeping me from getting sleepy I think!

I decided to do beer can (albeit I used a coke can with lemon & wine) in the oven, with roasted garlic creamed pototoes & southern-style green peas in a roux (for DD & Alexis) and mustard greens for DD & me. Worked my patootie off to get it done early enough to run it over to DD in time to get back home & eat at a decent hour. DD was understanding but still a little bummed that her DH was not staying home to take care of her, but instead was going wait in line to meet Saint's player Deuce McAllister.

The chicken came out beautiful & I wish I had the time to take a pic.

Wendie, So glad for you that your Mom is doing well!

Thanks all for a little insight on "growing pains", maybe I won't worry about her so much. Bob & I will literally be in the role of grandparents for Alexis at school next week. They will have a grandparents Mass & reception for her grade and we will be the only ones who will be able to go. I cannot wait to see it completed! When we did the kitchen over I wanted granite counter tops and I wanted them dark green with the black running through. We spent so much on the cabinets and the appliances that I could not justify the granite at that time and it was the easiest to upgrade later. I am not sorry (too much) but live to see everyone else's granite. Now my sister has black granite throughout her kitchen and hates it :confused3. I just shake my head when she whines :rotfl2::rotfl2:

Don't you love being a GP? It's a shame that Alexis other set is not going to make it to her reception but knowing that the two of you are there will make her day! My DGD other set of GP's are not involved with her and Buddy and I cannot understand how that can be. He says "more for us" but it is a shame really. I think that is why my SIL never says anything to us even when we may spoil the little one. He told my DD that as long as we love her he doesn't care what we do.


Kathy- I just studied your dining review. Yes I said studied :thumbsup2. I had been trying to stay away from them because they make me so hungry but now I have added a few new places to my wish list. We are thinking of getting the Deluxe plan so that we don't have to pay any meals oop but if I keep drooling over the signature restaurants I am in trouble :rotfl:. Kady wants to know when she can tell Pa we want another trip so that she can "plan" with him, she is already trying to decide where she wants to eat..future foodie that she is, and it is killing her to keep it in.

In the meantime she is saving her money (she says she is going to pay for the trip) by moving money from one container to another. That way her Pa won't have to pay so much money :goodvibes He doesn't stand a chance. The last time he teased her about not knowing if he could go to Disney she dragged him into her room, took out all of her purses and told him she would share her money with him so that he could go. The next day he told me to book the Poly so that she could stay where Lilo lives. He's been watching her look for chores around the house so he knows she has something up her sleeve :rotfl:

Morning all. Last night was the Lemonade Crockpot Chicken served with some rice. Tonight will more than likely be our traditional pizza night out. Gives me something to look forward to all day--I think I could live on pizza and beer!;)

Okay, quickie dining review from the past week

Ohana's for dinner. Food was good (not spectacular, but we've eaten there before, so I knew what to expect) Service was bad! I had to remind him that we hadn't gotten our Ohana potatoes (my fav. part), our veggies, or the sauces to dip the meat. Just seemed really chaotic. But we got to see Wishes while having our dessert (which is so yummy!), so that made the evening really nice

Yak n Yeti counter service at AK--actually I was pleasantly surprised. We thought we'd try it b/c it was new. And it was a nice change from burgers and nuggets. I had the honey cripsy chicken and the fried rice. Was really good--however, if Asian isn't your cup of tea, steer clear of here

Spoodles for dinner. Was really good. I really loved the dipping sauce for the bread (combo of olives, pepperoncinis, oil...yummo!) I had the Lemon Garlic shrimp linguinie. It was a huge portion and very tasty. Also had the greek salad and it was really good. I had the panna cotta for dessert, which was also very good. The biscotti left something to be desired though

Rose and Crown for dinner.We had a nice time here even though the patio was very dark and HOT (they had the warming lights on--think hamburger warming lights) We had them turn them off, but I thought my cheeks were on fire it was so hot. Had a nice Harps on tap. Started with the dinner salad with the mustard vinagrette. It was so good. They do offer a stilton dressing as well. I had the bangers and mash for dinner. The sausages were a little salty, but all in all, very nice. My FIL had the Fish and Chips and I couldn't believe the size of the fish fillet.

Beaches and Cream for lunch. I really love the feel of the old fashioned soda fountain. I had a burger and onion rings. The onion rings were to die for. The brownie ala mode sundae we had for dessert was also yummo!

Laura called yesterday and they arrived safely. Thankfully neither of them are sick, so that is a good thing.

Shovan, that beer can chicken (or should I say wine can chicken :laughing: ) sounds really good. Can I have your recipe? I've never made bcc before.

Last night I made more soup! This is an asian soup with udon noodles, edamame, shiitake mushrooms, garlic, ginger, scallions, cilantro, chili paste, and a poached egg. It was yummy:

Tonight I am making a filet for DH. I am also making a couple of recipes out of this month's Fine Cooking magazine (probably my favorite cooking magazine)--macaroni and cheese in individual ramekins, and sauteed mushrooms with balsamic vinegar and brown sugar. I am also using up some of my root vegetables to make a mixed roasted root vegetable thing.

Wendie, I am really glad to hear that your Mom continues to improve.

I decided to do beer can (albeit I used a coke can with lemon & wine) in the oven, with roasted garlic creamed pototoes & southern-style green peas in a roux (for DD & Alexis) and mustard greens for DD & me.


I've never done a beer can chicken before. I thought you had to do it on a grill? Please share the recipe.:goodvibes

I'm not sure if I mentioned last weekend that Kyle was asked to try out for the Louisiana Knights traveling summer team which is mainly for exposure to the colleges. I was kinda happy that he was a longshot to make the team as the up-front cost is $2500. He got "the call" last night, he made it.:scared1: Between this and buying him a car I'm afraid that means no vacation for us this year.:sad1: I am happy for him and told him that we would do whatever it takes to further his baseball career. I may be shaking a can on the street corner this weekend, and oh we are accepting donations!:rotfl:

See below for the detailed methods that I've followed for both the grill & the oven. In the oven, be sure to put the chicken & can in a pan deep enough to catch any spills.

Becky, That's what I need, Wine in a Can! :rotfl:

Here's the "recipe" I used yesterday.

Shovan's Wine Can Chicken!

Mix a wet/dry rub of
3 tbsp. cajun seasoning mix
1 tsp. ground rosemary
1-2 tbsp. chopped garlic
lemon zest

In the can (open a coke/beer can & pour out the coke, open the can all the way around with a key can opener)

2 tblsp. lemon juice
half the can of white wine
Add some of the seasoning mix in the can.

Push the lemon rinds & about 5 cloves of garlic deep in the chicken cavity first. Then shove the chicken onto the can. Place the can in a oven safe pan, deep enough to catch the drippings. Roast in a 350 -375 degree oven about 1 hr 45 min - 2 hrs. Until chicken is very browned, skin is crispy. You can check for doneness by cutting where the leg meets the body. If the juices are clear it's ready.

I think this mix was just about the best I've done. I've been using wine, garlic & rosemary for a while, this was the first time I placed the lemon juice & zest in the can & chicken cavity.

Beer Can Chicken

Cooking in the oven is the simplest method. To cook the bird on the grill, use Steven Raichlen's instructions below. Serve with lots of mashed potatoes and a spicy gravy made from a combination of half drippings and half chicken stock.

1 medium whole chicken (4 to 5 pounds)
2 1/2 tablespoons Memphis Rub (recipe follows) or your own rub
1 can (12 ounces) beer at room temperature

Rinse chicken inside and out, drain and pat dry.
Sprinkle 1 tablespoon of the rub inside the neck and body cavity, then rub another 1 tablespoon all over the skin of the bird.
Pop the tab on the beer can. Using a "church key"-style can opener, make 6 or 7 holes in the top of the can. Drink or pour out the top inch of beer, then spoon the remaining dry rub through the holes into the beer.
Holding the chicken upright, push the chicken down onto the beer can so that the can goes into the cavity.
Stand the "stuffed" chicken on a roasting pan. The bottom of the beer can and the two legs form a triangular support. If the chicken is too big and the beer can unstable, buttress the legs with skewers. No trussing or further basting is necessary.

To roast in the oven:

Preheat the oven to 350 degrees. Roast about 2 hours until the skin is crisp and the juices run clear when the bird is poked with the tip of a knife. Allow the finished bird to rest before carving.

To cook on the grill:
Set up the grill for indirect grilling, placing a drip pan in the center.
If using a charcoal grill, preheat it to medium.

If using a gas grill, place all the wood chips in the smoker box and preheat the grill to high; then, when smoke appears, lower the heat to medium.
When ready to cook, if using charcoal, toss half the wood chips on the coals. Oil the grill grate. Stand the chicken up in the center of the hot grate, over the drip pan. Spread out the legs to form a sort of tripod, to support the bird.
Cover the grill and cook the chicken until fall-off-the-bone tender, about 2 hours. If using charcoal, add 10 to 12 coals per side and the remaining wood chips after 1 hour.

It's helpful at this point to enlist a second pair of hands. Using tongs, lift the bird to a cutting board or platter, holding a large metal spatula underneath the beer can for support.

Have the board or platter right next to the bird to make the move shorter. (Be careful not to spill hot beer on yourself.) Let stand for 10 minutes before carving.
It's easier and safer to pull the beer can out of the bird and toss the beer can into the sink. But for show and drama, you can carve the meat off the upright carcass.

Serves 4 to 6.

Last year they lived 5 minutes from the school, but wouldn't give a definite answer as to whether or not they would go. I left a funeral to attend & they are not there when I arrived. They showed up very late after all the little "performances" by the kids. Both the grandmother & her husband came & brought the the great grandparents, so then she had a crowd of people who looked like they were there for the free lunch only! So I left & went back to the funeral. Argh! This year, a church service is part of the deal & only sandwiches & doughnuts are being served, so I'm pretty sure they wouldn't attend anyway! I am going to look into Chefs but I really am interested in the Flying Fish. Is it on the DDP? We ended up with a lot of OOP so I think I might just need to pay in upfront and get it overwith. Then all we need to worry about is tip and wine :thumbsup2 and mojitos for Jeff and Risa.

Dinner tonight is up in the air. Alan is feeling a bit guilty because his work schedule the last week has had him leaving before the kids get up, and coming home long after they've gone to bed. He wants to do something fun with them tonight. We'll see what he has planned. If he can't come up with something, I'll make tomato soup and grilled cheese sammies.

Hooray for Caili!!!! I always wanted to be a figure skater, but never really had the chance. I grew up in a small town with absolutely no skating facilities anywhere near. There was one pond up the canyon that froze sometimes, and my neighbors across the street, had a basketball court that they would freeze each winter, but not enough to really do anything with. Tell Caili how proud we all are of her!!!

Lauren - I hope that you enjoy the fondue! It really is a fun way to eat, and can be very filling!!!

I thought this casserole was okay, DH really liked it. It was easy, cheap, and low cal so I am not complaining.

Mexican Tortilla Casserole

Ingredients
1 lb. extra lean ground beef
14 oz. can no-fat refried beans
1/4 cup salsa
4 whole wheat tortillas
1 1/2 cups shredded cheddar cheese
Optional: 1/2 to 1 cup shredded carrot

Nutritional Info
Fat: 24.3g
Carbohydrates: 27.9g
Calories:447.7
Protein: 27.6g

Heat oven to 350 degrees.
Fry ground beef until no longer pink.
Stir in can of refried beans and salsa.
Heat mixture through.
Spray round casserole dish with no-stick cooking spray.
Lay one tortilla in the bottom of the dish and spread approx. 1/4 of beef and bean mixture on top.
Sprinkle approx. 1/4 cup of cheese over that.
Continue to layer, then top all with remaining cheese.
Bake 15-20 minutes, or until hot and cheese on top is lightly browned.

Optional: For more nutritive value, add shredded carrot to beef and bean mixture. For lower fat, use reduced fat cheese, or reduce quantity of full-bodied cheddar.

Number of Servings: 6
