Tonight we had turkey tenderloin marinated in a lemon garlic sauce, stuffing, corn and italian bread. I had the day off so I try to fix a half way decent meal when I'm home.

Had Fudruckers tonight, had planned on making meatball subs but I totally messed up and didn't realize that tonight was a fundraiser at Fudruckers that I needed to go to.

I think we should all go to liamsaunt's house for dinner one night. :teeth:

Tonight I am making a grilled ribeye steak with blue cheese butter (for DH only, I don't eat red meat), corn fricassee, roasted asparagus, and sliced tomatoes with basil (If the market still has the brandywine tomatoes I saw there earlier this week. Where they got them from this early I have no idea!).

Thank you! I just really like to cook. It's one of my hobbies. I don't have any formal training or anything like that.

I use recipes sometimes, and sometimes I make things up. I own (ahem) a lot of cookooks (we'll just leave it at that), and I tend to read them cover to cover to get ideas. I also subscribe to cooking magazines, though I have been letting lots of them expire. My favorite is Fine Cooking.

As far as menus, I just try to put together things that sound good to me. I like to eat lots of vegetables and very little meat (I was a strict vegetarian for about 10 years, and meat is still not my favorite). DH likes meat though and I don't mind cooking it at all. So, when I make meat I also have lots of vegetables since I know I am only good for one or two bites of the chicken.

In general, I try to plan the menu with at least two vegetables and one starch. I make chicken and/or seafood a couple of times a week, and DH has red meat once a week.

I'm currently making a huge pot of ground turkey/bean chili for quick meals this weekend... however tonight we may have crab cakes, mixed veggies, and salad.

I'm working at the fish fry at my kids school tonight, so some of us are eating there, DD is babysitting, so making her grilled cheese ahead of time. Not too great of a cooking night!

I really like to cook too, but I live with my DM and she has been out of work on disability for the last 4 months. She worked evenings and I work during the day so I could make all the mess I wanted and as long as I had everything cleaned up before she got home things were good. She is very OCD and if she comes home and there is a mess she gets major attitude. :rolleyes: On top of that she has been driving me crazy because if I am in the kitchen cooking she has to get right on top of me so she can see what I'm cooking. She is bored out of her skull sitting home and when I am there she has to know what I'm cooking, eating, doing, talking to on the phone, if I've talked to so and so, etc, so I spend the majority of the time in the family room which is my part of the house and she won't bother me there usually. That's not to condusive to cooking anything that takes more than 15 min. She has something she does on Weds. nights so that is the one night I can cook and I have been so busy at work lately that I haven't had the energy to cook anything good. :guilty:

I "collect" recipes, I have a lot of cookbooks, magazines that I have kept for the recipes in them, the little recipe cards you can get in the seafood and meat dept., clippings, you name it. My mother goes to the Dr. next week to see when she can go back to work. :woohoo: Then hopefully I will have my kitchen back and I can get creative and have lots of ideas to offer to my Dis friends. :goodvibes

I'm going to do something with a halibut steak tonight (not sure what yet :rolleyes1 ), but I wanted to post what I made last night because it turned out so good!

Crock Pot Pork Roast

1 to 2 lb. Pork Roast
3 to 5 potatoes, cut into 2" long pieces (3-4 pieces per potato)
1 lb. baby carrots
12 oz. water
3 envelopes spiced apple cider mix

Put cut potatoes and carrots in crock pot, put roast in the center. Mix the apple cider mix with the water and pour over the roast and veggies. Cook in crock pot 6 hours on high or 8 hours on low.

Came out so tender, with the apple and spice flavoring infused in the roast and the potatoes; yummy! :thumbsup2

Bucky, that sounds absolutely out of this world! Does the apple cider mix make it sweet? I don't like things too sweet, but just a touch of it wouldn't be bad.

When I make crockpot pork roast, I just throw it in with a cup of water and some onions. What you make sounds so much better.

Dinner tonight was boxed pasta salad. :rolleyes: I'm sick, so DS thought he was doing me a favor by making the pasta salad. I really appreciated it, but he wouldn't give his sister any, so I have to cook for her now. :rolleyes: He doesn't get it, but I do have to give him points for trying.

A lot of times on Saturday's we go out to eat. Today we have some errands to run so we are going to Chili's. My hubby has their Monterrey Chicken on the brain and now I do too LOL!

I've put a spiral ham in the oven. I think I'll roast some asparagus with garlic and olive oil. Couscous and corn will finish dinner.

Later we'll make brownies and watch Narnia. I barely cook them. I love gooey brownies. :thumbsup2

Tonight we are having:

We went to the Cheesecake Factory for lunch yesterday and had the leftovers for dinner. I had the Grilled Shrimp & Bacon Club(YUM), DH had the BBQ Pulled Pork Sandwich and DS10 had Roadside Sliders.

Don't know what I'm cooking tonight, yet.

So we ended up going to a french-cambodian restuarant last night. It was kind of meh.

Today for Sunday linner we have a couple of extra folks added to the usual group, so I am roasting three fat chickens with lemon, thyme, rosemary, and lots of butter stuffed under their skins, and serving that with a huge pot of mashed potatoes, steamed broccoli, honey-roasted carrots, and sauteed green beans with almonds. My Mom has agreed to step into the kitchen and make her famous gravy for the birds. I am confident that it will taste better than last night's meal! :)

Since I've started my low fat, low cholesterol diet, it's getting challenging. to say the least, to find interesting meals. The up part of all this will hopefully be that I've lowered my cholesterol and won't have to go on any medication. I've already lost 6 1/2 pounds in 2 weeks. :thumbsup2

So here's tonight's offering.

Summer Stew

4 boneless skinless chicken breasts
3 each medium zucchini and summer squash
1 bag of frozen mixed vegetable. I use the cauliflower and broccoli combo.
1 Good Seasons Italian Dressing Pack
1/2 tsp garlic powder.
1 stick of margarine.
1 box of Rice Pilaf or Mahatma Saffron yellow rice. You may want to double that if you are going to serve this dish for more than one night.
Save some of the chicken broth (water that the chicken was cooked in) to make the rice.

Boil chicken until thoroughly cooked, about an hour. When cooled, cut into cubes.

Slice the squash. Take the margarine and melt in a large pot. Add a half to 3/4 pkg of the Good Seasons dry Italian Dressing Mix. Add the squash and the frozen vegetables. Stir well. Bring to a boil and then simmer covered for 45 minutes or so. Then add the chicken and simmer another 30 minutes stirring occasionally until the vegetable are fork tender.

If you're using 2 boxes of rice pilaf make it with a 1/2 cup of the chicken broth and 3 cups of water. Omit the margarine if you use the chicken stock.

Serve the chicken/vegetable mix over the rice pilaf. Serve with a salad and/or some garlic bread.

Oh my, this looks good. I am going to make it this week.

We, well not DH because we cannot pull him away from the greenhouse this time of year, had lunch at the Olive Garden with my DD's Meme, aunt and cousin. So tonite we are just going to have leftovers and home made grinders. I usually fix a nice Sunday supper for whoever wants to join us, but I am feeling lazy tonite.

Just wanted to add that you can use mushrooms in that recipe. I use mushrooms in a lot of dishes I make (they're one of my favorites!!) but they're especially good in this dish because they pick up the flavor of the Italian seasonings. Fresh sliced or canned work equally as well.

Didn't feel like cooking tonight, so DH and I are having Mickey waffles, sausage and applesauce. DS didn't want waffles so he's having a Kid Cuisine(2 chicken legs, corn, pudding).

Tomorrow it's marinated grilled skirt steak, I think.

I have a Pork roast & sauerkraut in the crockpot. We'll also have mashed potatoes and green beans. Dh loves this dinner, except for the fact that the house will smell like sauerkraut for awhile. :rolleyes:

We're having another Rachael Ray recipe tonight (can you tell I love her stuff? :rolleyes: ) Anyway, the recipe title is really long but it boils down to Cuban Sloppy Joes with smashed Yucca root and plantain chips! Oh, and another sauerkraut lover here--unfortunately DH doesn't share my German roots, so I don't get to make it very often

Tonight is my husband's monthly geek meeting so he won't be home until 8-9:00. I decided to have a girl's night. My two best friends (we are cousins, they are sisters) are coming over. We are having an Asian theme. Hot and cold sesame noodles (recipe below, courtesy of 30 Minute Meals), springs rolls (courtesy of the grocery store freezer section), and strawberry pie (I know, has nothing to do with the theme, just a craving). We will also have some green tea. Afterward we are watching "Mystery Date." :)

Hot and Cold Sesame Noodles

1/2 pound spaghetti
1/4 cup Tamari dark soy, eyeball it
1/4 rounded cup smooth peanut butter, softened in microwave 15 seconds on high
2 tablespoons cider or rice wine vinegar
1 tablespoon dark sesame oil, eyeball it
2 tablespoons hot sauce (I am leaving this out, tummy doesn't like hot sauce)
2 cups shredded cabbage and carrot mix, available in produce department
1 cup bean sprouts or pea shoots, any variety, available in produce department
3 scallions, chopped on an angle
2 tablespoons sesame seeds

Cook pasta to al dente, with a bite to it, then cold shock it to stop the cooking process by running it under cold water in colander. Drain the pasta very well. In the bottom of a large bowl, whisk together soy, peanut butter, vinegar, oil, sesame oil, and hot sauce. Add noodles and veggies and toss to combine the noodles and coat them evenly with sauce. Sprinkle scallions and sesame seeds throughout the salad and serve.

Last night I did not end up making what I said I was going to. I forgot that I had to go shopping to pick up an Easter dress for my niece after work. By the time I got home, there was no time to do all the chopping and blanching you have to do to make pasta primavera. So, instead I just cooked some tortellini, and made a quick sauce of butter, cream, parmesean, basil, green peas, and lots of pepper. I also threw together a salad of arugula, chopped tomatoes, and balsamic vinagrette, topped with smoked mozzarella that I lightly breaded and fried until it just started to melt.

Tonight we are eating in front of the television with american idol, and I am making roasted portobello mushroom sandwiches, served on ciabatta bread with roasted garlic, montery jack, and herbs. Go withs are cole slaw and oven fries.

I have another no cooking night. Last night we took my DGD to Chuck E Cheese because she filled her goals chart. Tonite, she needs to go to the dentist for 2 fillings. She has reflux, and it ate the enamel on her teeth, and the dentist thinks that they should be filled. This is the second time my DD is trying to get this done. The last time it was a disaster, so we are taking her to her favorite restaurant, Red Robin, if the dentist thinks it will be okay. WIsh her luck, will you?

Tonight at our house is grilled, whole chicken seasoned with cumin. I'll have mine with some type of avocado salsa or sauce...haven't quite dreamed that up yet...potato salad, and probably grilled asparagus. The kids will have the chicken plain, the asparagus, and bread.

It smells amazing, so I hope it is good.

Thanks for all of your kind words. I didn't sleep last night. I couldn't get my dad out of my mind.

We are having Garlic Roast Chicken with Rosemary and Lemon. Mmmmm!! I am making teriyaki noodles to go with it. Here's the recipe:

2 ˝ lbs. boneless, skinless chicken breasts, cut into thirds
6 cloves garlic, crushed but NOT chopped
3 T. fresh rosemary leaves
3 T. EVOO
1 lemon, zested and juiced
1 T. grill seasoning
˝ cup white wine

Preheat oven to 450.


Arrange chicken in a 9x13 casserole dish. Add garlic, rosemary, EVOO, lemon zest, and grill seasoning. Toss and coat chicken in all the ingredients, then place in oven. Roast 20 minutes. Add wine and lemon juice to the dish and combine with pan juice. Return to oven and turn oven off. Let stand 5 minutes then remove chicken from the oven. Spoon pan juices over chicken and serve.

tonight we're having chicken pot pie....DH returns tonight from a business trip and will be looking for some home cooked food after a week of eating out.

Lindsay ~ just wanted to say thank you for starting this thread....I don't really enjoy cooking and usually put it off all day long. You (and all the other posters) have inspired me to be a better planner! Lots of really yummy recipes here!

1 boneless pork loin (2 to 3 lbs)
3 T softened butter
3 oz finely chopped prosciutto
2-3 T finely minced garlic
2-3 T chopped fresh rosemary (1 to 1 1/2 T dried)
1 to 1 1/2 T [armesan cheese
black pepper
1 to 2 cp white wine (I used chicken stock)


1. mix butter, prosciutto, garlic, rosemary, and pepper and set aside

2. Preheat oven to 350

3. Cut slits about 1 inch long and 1/2 in deep on top of the roast

4. Spread the butter mixture all over the top of the roast. Make sure that you fill the slits that you made earlier ( You can do this the day before if you want, just cover in plastic wrap and let stand for about 30 minutes before placing in the oven)

5. Put roast in pan and cover with the wine

6. Baste every 30 minutes or so, for about 1 1/4 to 1 1/2 hour

7. Let rest about 15 minutes

This looked like a lot of work to me, but I used the processor for chopping and mixing the butter ingrediants. I also made this early in the day and let the flavors penetrate teh meat. It was pink on the inside with a nice coating on the outside the reched into the meat where the slits were. The pan juices added a nice touch to the gravy, but could have stood alone.

I am going to use this recipe for Christmas dinner, as I have a DD who refused red meat. We always have a prime rib and some kind of pork roast. I look for ideas to make a pork roast stand out and I think that this one will be easy and elegant.

My menu tonight depends on what the weather is like around 4. If it is sunny, I am having grilled littleneck clams with garlic and herb butter, crusty bread and salad. The children will have leftover chicken from last night, bread and salad.

If it is raining, I am having linguine and clams, bread and salad, and the kids will have chicken, linguine w/EVOO and parmesan, bread and salad.

1 ounce peach schnapps
1 ounce vodka
4 ounces (1/2 cup) Kern's peach nectar
2 or 3 ice cubes

1. Combine all of the ingredients in a blender. Blend on high speed for approximately 30 seconds or until ice is completely crushed and the drink is smooth.
2. Pour into a 12-ounce glass and serve with a straw.

Makes 1 drink.

Then I'm making one of DS10's favorite dinners. Grilled smoked sausage, mac & cheese (box kind) and broccoli or corn. We just got back from the beach so I'm making something really easy.

I too headed to my in-laws. MIL is not a great cook. However, today wasn't too bad. She prepared bone-in rib roast. The last time she made it, it was completely overcooked. This time, she cooked it for less time...she said she didn't realize that the searing time counted toward the overall cooking time. We also had roasted asparagus (I had to trim the ends off...she wasn't going to...I didn't bother mentioning peeling them), mashed potatoes, and butternut squash, which she purchased. The gravy was terrible. I think it was just beef stock.

I'm now thinking about what snack I will have later.

We were going to have rack of lamb and mushroom risotto, but DH is on a low fat diet for a few days, so Sunday's linner instead is grilled cornish hens, marinated in cumin and lots of black pepper, with a mango salsa, sweet potato oven fries, roasted asparagus, and a big mixed greens salad. I think I am going to make a pan of cornbread too, as I have some buttermilk to use up. I have not figured out the wine yet--something red!

Later tonight we'll have a cheese plate with the Sopranos (not DH-he can have pretzels).

Well, time to get offline and go boss my sister around in the kitchen! :)

Editing for a menu change. It went from being a nice day to freezing! Now we are having grilled cornell chicken--if you have not tried this method, you should. It makes very moist, flavorful chicken. Here is the recipe:

For two chickens, combine 2 cups cider vinegar, 1 cup vegetable oil, 3 tbsp. kosher salt, 1 tbsp. poultry seasoning, 1 large egg, and 1 tsp. fresh ground black pepper in a blender and whirl to combine. Baste this mixture on your chicken every five minutes or so while grilling. I usually marinate my chicken in half of this mix for a couple of hours before throwing it on the grill, then use the other half for basting.

I am serving this with a salad of grilled corn, tomatoes, hearts of palm and mixed greens, and cornbread.

I know I am late posting this, but I was supposed to have some nice halibut tonight with some grilled asparagus and probably a baked sweet potato, but my dinner got derailed when I called DS's pediatrician this afternoon because he had a bad cough over the weekend, and while better today, he is still coughing. They said we should come in for a listen. An hour and a half later, they tell me he has pneumonia. This is the child I took ice skating this morning...do they still have that Bad Parents thread on here somewhere?? Anyway, after the wait at the doctor's then the wait for prescriptions, no halibut. I had Indian food take-out, DS had a pizza and DD had a chicken sub.

We'll try for halibut again tomorrow.

I couldn't decide what to do with the chicken breasts I had out last night, so I decided to cut them into strips and make fried chicken at the last minute. I haven't fried chicken (or anything else for that matter) in years and it was so good! I also fried some onion rings, and we had corn on the cob and green peas.

Tonight I'm extremely tired so DH is picking up Subway.

I just read thru this whole thread and LOVE it!

Tonight we just had tater tot casserole...different from the Duggar's and I just threw it together..but was so good.

Tater Tot Casserole

1 pound ground beef, browned
1 can french style green beans, drained
French fried onions
Tater tots
2 cans low fat cream of mushroom soup, mixed with about half a cup milk
shredded cheese

Layer the ground beef then the green beans in a small casserole dish. Sprinkle enough french fried onions to your liking(one small can would probably work well), then layer with enough tater tots to cover. Pour on the soup mixture and bake at about 375 degrees til bubbly(I wasn't watching the time...sorry). Add enough shredded cheese(I used the fiesta mix) to cover or to your liking and bake til cheese is melted. Before I put on the cheese, I poked holes in the casserole to give a chance for the soup to run down in to the casserole.

My DD loved it and she hates tater tots. This would feed about 4 with a salad.

Tonight we are having a Rachael Ray dinner. She did a whole show dedicated to her dog, and this was one of the things she made. It was such a cute episode and it's also in the 365 No Repeats cookbook. It's really yummy :)

Boo's Smokey Chicken Patties on Buttered Toast (we are doing buns)

1 1/2 pounds ground chicken breast
1 tablespoon smoked sweet Hungarian paprika, available on spice aisle in small cans*, a palmful
1 1/2 tablespoons grill seasoning blend (recommended: Montreal Steak Seasoning by McCormick)
1/4 to 1/3 cup chopped parsley, a couple of handfuls of leaves, chopped
1/2 medium yellow skinned onion
4 cloves garlic, finely chopped
2 tablespoons extra-virgin olive oil, 2 turns of the bowl
8 slices sandwich white or whole-wheat bread
2 to 3 tablespoons butter, softened
2 cups chopped baby spinach, watercress or arugula (Boo would skip the greens)

Heat a large nonstick skillet over medium high heat. Place chicken in a bowl and add the smoked paprika, grill seasoning and parsley to it. Using a hand held grater or microplane, grate the onion into the chicken. (Boo liked onion juice and its flavor, but she did not like big pieces of onion). Add the garlic (Boo LOVED garlic!) and mix to combine. Make a mini patty, the size of a quarter, and cook it up, a minute on each side, to taste and check seasonings. If you want it really smoky, like Boo, you can adjust the seasonings accordingly. Drizzle the chicken mixture with about 2 tablespoons extra-virgin olive oil and form 4 large thin patties then place them in the pan. Cook patties 5 minutes on each side. Toast bread slices and spread liberally with softened butter. Serve patties on buttered toast with some chopped dark greens.

Lindsay, would you mind sharing what's in your sauce? I"m trying to perfect a homemade sauce recipe and something is just not quite right!

I will confess that the base of my sauce is from a jar, but by the time I'm finished, it tastes nothing like how it began :)

1 big jar of Ragu Old Worldstyle
1 lb. ground beef
1 red/green pepper, chopped
1 sweet/red onion, chopped
Some frozen meatballs (sometimes I make my own, sometimes I just take the easy way out)
3-4 garlic cloves, finely chopped
6 portobellinis, finally sliced
A splash of red wine (I use merlot)
1-2 tbs. grill seasoning
Pinch or 2 of dried parsley (you can also use fresh)
Pinch of basil (dried or fresh)

Hee hee, I think that's everything.

I brown my ground beef with the grill seasoning until it's done. Drain it off. While it's draining, heat a deep skillet over moderate heat (you could also use a soup pot). Saute in olive oil the following: pepper, onion, garlic, mushrooms. Just until they are tender, not mushy. Season with salt and pepper. Add the wine and reduce about 1 minute. Add your beef and meatballs. Throw in your jarred sauce and heat slowly. Add parsley. When sauce is hot and meatballs are heated through, add the basil.

You now have my sauce!!! It sounds like a lot of work but it isn't. The only reason I use jarred sauce is because it has a consistency I have been able to do yet.

So now I am wondering if I can make fish chowder or some other fish soup using halibut. I usually use haddock or cod. Has anyone ever tried this?

Halibut makes good chowder. You can use it just like cod or haddock--it will flake nicely. Here is my favorite chowder recipe:

Fish chowder

2 tablespoons (1/4 stick) butter
1 1/2 medium leeks (white and pale green parts only), thinly sliced, or same amt. of onions
8 ounces yukon gold potatoes, peeled, cut into 1/2-inch pieces
2 cups bottled clam juice
2 tablespoons chopped fresh thyme or 2 teaspoons dried
1/2 cup whipping cream or heavy cream
1/2 pound haddock or other firm white fish fillet, cut into 1-inch pieces

Melt butter in heavy large saucepan over medium heat. Add leeks. Cover and cook until leeks begin to soften, stirring occasionally, about 3 minutes. Add potatoes; stir 1 minute. Add clam juice and thyme; bring to boil. Cover pan, reduce heat to medium-low and simmer 6 minutes. Add cream; return to simmer. Add fish and simmer uncovered until potatoes are tender and fish is opaque in center, about 5 minutes. Season soup with salt and lots of fresh ground pepper.

2 Servings.

Tonight's meal was yummy.

We overproduced a mexican marinade this morning, so I got the excess. I braised Chicken cutlets in it, then made twice baked potatos and sauteed green beans. Yum!

tonight it's lasagne! I'm a little afraid to cook tonight, though, as last night I almost burned out house down. I had set the italian sausage on the stove to defrost--we have the smooth top cooking surface, well, I turned on a burner, which I thought was the one with the pasta water on it--Wrong! I set the Italian sausage package on fire--I walked back into the kitchen and could see the package burning! I was really freaked out! OH well, I'll just be more careful today!

Ha ha! That sounds like something I would do. I am a terror in the kitchen. I even set MYSELF on fire once!

I've done that before, and it was scary!...My DGD says that I am a firefighter because I set the grill on fire and put it and our beautiful steaks out with the hose. DDIL caught the whole thing on her camera phone.

Anyway, tonight we are having spagetti and meatballs and sausage. Yummmmm. Maybe some garlic bread.

I am totally taking a day just for myself today. I normally work out on Fridays (at 2:00), but I told them yesterday to take me off today's schedule (this is also the place I work). I am staying in my pajamas and not doing a dad-blame thing today (hee hee, how Southern am I?).

I am going to cook tonight though. I am making us a pizza. It's easy and quick and yummy :)

Tonite I am going to a Tastefully Simple party at my SIL. My DD and DGD are coming with me, so the men are on their own for dinner. Guess that they will have sandwiches.

I am not cooking tomorrow either because I will be in NYC :goodvibes, so my family can have spaghetti with meatballs and sausage. I better come up with something good for Sunday, so I am heading to the 1st page. for some ideas. Thanks Lindsay, for keeping all of these yummy recipes in one place!

We have invited the neighbors over. DH is doing big juicy pork chops on the grill; I made sweet potato casserole, biscuits, asparagus, and a chocolate pie. I also made some sort of burger/noodle casserole for the kids.

I have not decided what I am making tonight yet, but I do have to say something funny about last night's dinner.

For a vegetable, we had bitter greens--they were dandelion greens. I'd never made them before, so I probably cooked them wrong, but they were not that good--very, very bitter, much more than I was expecting. DH ate a few bites, then put his fork down and said: "This tastes like Ursula food." Huh? What's Ursula food? I asked. He said "You know, Ursula food. In the Little Mermaid, when Ursula is throwing all that stuff in her big kettle to make the voice potion. I bet her concoction would taste like this."

Maybe you had to be there, but I laughed so hard! Needless to say, the rest of the "Ursula food" went down the garbage disposal.

I've been at my sister's most of the week so I haven't been cooking :teeth: ~ we had Asian Beef Noodle Bowls the first night, then we went to Lonestar and the last night we grilled hot dogs and had pasta salad & mac & cheese.
Yesterday we drove home and had McDonald's for dinner.

Today I am grilling chicken drumsticks smothered in spicy brown sugar BBQ sauce and I'm making a batch of french fries and corn on the cob to go with it. :sunny:

Well,since I can't find the actual asian noodles here,I cook thin spaghetti.. Cook the following in a saute pan with a touch of water. Szechuan (SanJ makes a good one)sauce,garlic soy sauce and whatever veggies I have on hand,Broccoli, cabbage ,clilantro(this is a must) onion ,pepper mushroom, Baby corn(in a can).. Then add the noodles and cook a bit longer...It's good hot or cold. If you want it to be a full meal you can add shaved meat like chicken on beef...Sometimes ,I actually rip up and add sliced roast beef or leftover chicken breast,even pork.
I sprinke with sesame seeds
The Szechuan sauce is hot,if you want it more mild,use a szechuan teriyaki sauce. If you use whole wheat spaghetti it's very healthy and low cal

This one is Original Kitten Chicken :) (the "original" is there because I have MANY "kitten chickens": nutty kitten chicken, maragrita kitten chicken, mustard kitten chicken, etc. This was the first Kitten Chicken). Anyway.... :)

Ritz Parmesan Chicken

4 boneless, skinless chicken breasts (I remove all the extra fat)
1/2 cup grated Parm cheese (pizza cheese)
1 1/2 "rolls" Ritz crackers, crushed (you can also use the low-fat ones)
1 stick melted butter

Preheat oven to 350.

Combine the cheese and Ritz crackers in a bowl. Dip the chicken in the butter, then coat well in the cheese-cracker mix. Place in a 9x13 casserole dish that has been sprayed with Pam (or whatever you use). I sprinkle what is left of the crackers on top of the chicken. I usually cover this in foil because your crackers can burn if you aren't careful. Bake for about 30 minutes or until chicken is done.

*You will NOT need to salt the chicken because of the crackers. I add some pepper to my cracker mix.

*I have also sprinkled some thyme on the chicken as well*

Well dinner tonight is going to be easy. I am making a pizza topped with the leftover sausage from last night, fresh mozzarella, basil, and tomatoes. DH is suffering from a mjor allergy attack and won't be able to taste anything anyway, so there is no point in going all out. Curse you, pollen!

Today me and my hubby are going on a date. :) We our treating ourselves to diner and a movie. We are going to have an early lunch at the Olive Garden (one of our faves), and going to see "The Sentinel." Afterwards, we are going to get our groceries (not normally part of your average date, hee hee). We will probably munch on popcorn or something for dinner.

If I can get them defrosted in time, I am making sesame chicken wings. The kids love them.

Here's the recipe (I can't remember what book I got this out of. I've made it so many times, it's memorized):

Sesame Chicken Wings

2 lbs chicken wings, cut into pieces with wing tip discarded or saved for stock
1/3 c soy sauce (I used reduced sodium)
1/4 c sherry
1 tbsp sesame oil
1 tbsp brown sugar
1 clove garlic, minced
1 tbsp fresh ginger, minced
3 scallions, chopped
2 tbsp sesame seeds, lightly toasted
handful of cilantro, chopped (I don't use this because the kids don't like having green stuff on their food, but it is good)

Put the chicken in a single layer in a glass baking dish. Mix all remaining ingredients except the sesame seeds and cilantro and pour marinade over the chicken.

Marinate for at least one hour or overnight.

Preheat oven to 400.

Bake the chicken for one hour, or until cooked through (If I'm coordinated, I will turn the chicken over once or twice during cooking, but most of the time I forget). Sprinkle the sesame seeds over chicken in the last ten minutes of cooking. Once the chicken is done, remove from oven and sprinkle with cilantro for garnish (if using).

Tonight I am making pan seared veal chop (for DH only, no dead baby cow for me!), broccoli, green beans, and this awesome macaroni gratin. Try this if you want something different from the usual mac and cheese:

macaroni gratin

3 quarts whole milk
4 druched garlic cloves
1 tbsp. flour
1 tbsp. butter
salt and pepper to taste
3/4 cup heavy cream
3/4 lb. penne
2 trays of ice cubes
1 cup grated gruyere (4 ounces)

Preheat the oven to 500 degrees. Butter a 9x13 gratin dish.

Heat the milk and garlic until bubbling. Remove from the heat and let steep 10 minutes. Discard garlic. Measure 1 cup milk and reserve. Place the rest of the mlik in a pot and set aside.

In a small pan, melt the butter, then whisk in the flour. Cook for 1 minute--do not let the flour brown. Remove from the heat and whisk in the one cup of milk you measured out earlier. Stir constantly until the sauce is completely smooth. Season generously with salt and pepper. Return the pan to low heat and cook, whisking constantly, until the sauce is thick. This will take about 5 minutes. Remove from the heat, cool slightly, and then stir in the cream. Set this sauce aside.

Add 1/4 cup salt to the milk you poured into a pot earlier and bring to a simmer. Add the pasta and cook, stirring over medium high heat so the milk is just simmering, until the pasta is al dente. Remove from the heat and add the ice cubes to stop the pasta from cooking. When all the ice cubes have melted, drain the pasta and transfer to a large bowl.

Add the sauce to the pasta and toss to coat. Transfer the pasta to the gratin dish. Sprinkle the cheese over the top and bake for about 10 minutes, until bubbling. Turn on the broiler and broil the pasta until the cheese is golden, about 3 minutes. Let the gratin stand about 5 minutes, then serve.

Serves 8.

I can vouch for this...it's yummy!...and if you're having macaroni and cheese, you aren't really thinking about calories or cholesterol anyway.

I am really posting because I have had to change my menu. My chicken wings are a giant, frozen block, and I know I could defrost them, but I've decided I don't want them tonight. Now I am making pizza with this really great homemade mozzarella cheese from Maplebrook Farms in VT. It is the best fresh mozzarella I have ever had, so the only other things I am putting on my pizza are olive oil, fresh tomatoes and basil...and maybe a little parmesan.

Tonight we are having a yummy pasta dish. I stole the recipe from 30 Minute Meals, played with it, and made it my own. Here is MY recipe:

Vegetable Pasta Toss
1 lb. mini penne
Salt and pepper
1 10oz. box chopped frozen spinach
EVOO
1 medium zucchini and 1 medium squash, cut into half moons
12 baby bellas, sliced
1 medium onion, thinly sliced
3 cloves garlic, chopped
2 T. butter
2 rounded tablespoons all-purpose flour
1 cup vegetable or chicken stock
1 cup milk
1 ˝ cups part skim ricotta cheese
˝ cup grated Parmesan

1. Heat a pot of water to a boil for pasta. Salt water and cook pasta. Save a ladle-full of pasta water for later.

2. Defrost and wring dry the spinach. Set aside.

3. Heat a deep skillet over medium high heat. Drizzle w/ EVOO. Add zucchini and mushrooms. Cook 2-3 minutes.

4. Add onions and garlic. Season with salt and pepper. Cook for about 5 minutes. Break up spinach into bits and add to skillet. Toss to heat through. Cook for about 2 minutes.

5. Transfer veggies to a separate dish. Add butter and flour to skillet to make a roux. Allow to cook for a minute or 2. Whisk in stock and milk. Bring to a bubble. Let cook for 2-3 minutes on low. Season with a sprinkle of salt and pepper.

6. Place the ricotta and Parmesan in a large serving bowl. Add the ladle of pasta water and combine well. Drain pasta and toss with milk sauce. Then add to the serving bowl and toss with the other cheese.

Today is my long day in the office, so DD(13) gets to make dinner! Spaghetti is on the menu tonight, quick and easy (but Mom gets to do the cleanup) :sunny:

Last night we had Enchilada Pie, made in the crockpot. There's something you can make with ground beef, smilie.

Enchilada Pie: Serves 4 - 6

1 lb. ground beef (I use a mixture of ground turkey and ground beef)
1cup chopped onion
1/2 cup chopped green pepper
1-16oz can red kidney beans, rinsed and drained
1-16oz can black beans, rinsed and drained
1-10oz can diced tomatoes with green chilies, undrained
1/3c water
1 1/2 tsp chili powder
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp pepper
1cup shredded cheddar
1cup shredded mozzarella
6 flour tortillas (6-7 inches in diameter)

Cook meat, onion, green pepper in skillet until veggies are tender. Add
next 8 ingredients and bring to a boil. Reduce heat, cover and simmer 10
minutes. Combine cheeses.

Spray the crock pot with cooking spray and layer:
3/4c hot meat mixture
1 tortilla
1/3c cheese

Continue layering until all ingredients are used (end with cheese on top).

Cook on low about 4 hours. Can serve with sour cream and picante sauce.

I'm still thinking about what to make for dinner tonight, but here is the recipe for yesterday's linguini with clams:

4 lbs. littleneck clams, shells scrubbed well
1/2 cup dry white wine
1 bottle clam juice
2 tbsp. olive oil
1/4 cup chopped fresh parsley
1 jalepeno pepper, seeded and finely chopped
4 cloves garlic, finely chopped
2 plum tomatoes, seeded and chopped
3 tbsp. butter
1/4 cup chopped fresh basil
salt and lots of fresh ground pepper to taste
1 lb. linguini

Place a large pot of water to boil.

Place the clams in a large saucepan with the wine, cover, and cook over med-hi heat until the clams open. Remove the clams from the pot, reserving all the pan juices. Take the clams from their shells, cut them in half (use scissors), and place in a bowl. Strain the clam cooking juices into a bowl through a paper towel to catch any stray sand, and then add the bottle of clam juice. Set aside.

Wipe out the large saucepan you steamed the clams in and place it on medium heat. Add the ovlie oil, warm briefly, then add in the garlic, jalepeno, and parsely. Cook for about 2 minutes, then add the tomato and butter. Cook for a few minutes more, just until the tomato starts to soften. Add the reserved clam juice, and keep warm over medium heat.

Cook your linguini in boiling salted water until a minute before al dente. Just before the pasta will get to this stage, turn the heat up under the clam juice to bring to a simmer. Strain the pasta, then add it to the clam juice. Cook the pasta in the clam juice until it is al dente, about 1-2 minutes. Just before the pasta is ready, stir in the chopped clams, the basil, and salt and fresh ground pepper to taste.

Serves 4-6

Tonight I am going to make frisee aux lardons--it's a salad of frisee topped with a poached egg, thick cut lardons of bacon, and a dressing of shallots, red wine vinegar, olive oil, and mixed herbs. Serving with a baguette. Not exactly diet food, but it is cold and rainy here today, and this will be comforting as well as fast.

I'm making Pollo Rosa Maria like they have at Carrabbas.

It's a little complicated, but it is SO good!!



4 chicken breasts, split for stuffing
4 slices prosciutto ham
1/2 cup Fontina cheese

Lemon Butter
1/2 cup clarified butter
3 cloves garlic
1/2 small yellow onion, diced
1/4 cup white wine
4 tablespoons unsalted butter
1/2 teaspoon white pepper
1/2 teaspoon salt

Topping
8 ounces sliced mushrooms
1/2 cup fresh sweet basil, chopped
Lemon Butter Recipe (above)
1 lemon, juiced

Chicken: Open chicken breasts and place butterfly-style on grill, cook until done. Remove from grill.

When chicken is cool enough to handle, hold breast halves together and stuff each breast with one slice of prosciutto and 1/8 cup Fontina cheese. Secure with wooden picks. Set aside in a warm place.

Lemon Butter and Topping: In a large sauté pan over medium heat, combine clarified butter, garlic, and onion and sauté until tender. Deglaze pan with white wine. Add unsalted butter, salt, and pepper.

Add mushrooms to lemon butter and sauté 1 to 2 minutes or until cooked.

Add basil and lemon juice and stir to combine. Place chicken on a serving platter and top with mushrooms in lemon-basil butter and serve.

I usually serve it with tagliarini picchi

16 oz angel hair pasta
8 oz extra-virgin olive oil
8 lrg garlic cloves sliced
16 ripe Roma tomatoes diced
16 basil leaves roughly chopped
4 pch salt
4 pch freshly-ground black pepper

Cook pasta according to package directions.
Meanwhile, simmer sliced garlic in olive oil over very low heat for about 10 minutes. Add remaining ingredients and stir over medium heat another 2 minutes.
Toss with cooked angel hair pasta and serve.

This is my grand gesture for the week. It's back to sandwiches and hamburger helper day after tomorrow!

Yesterday I went on an 11.5 hour field trip (FL Everglades) with DS's 4th grade class. So dinner last night was McDonald's with 22 ten year olds and 14 frazzled chaperones. :crazy:

Tonight I'm making Rice Krispy Chicken (if I can find the recipe), mashed potatoes w/ gravy and a broccoli/carrot/cauliflower veggie mix.


Rice Krispy Chicken
2 cups Rice Krispies, crushed (don't pulverize them though)
1/2 teaspoon garlic salt
1/2 teaspoon paprika
some dried parsley flakes
1/4 cup melted butter
3 boneless, skinless chicken breasts

Mix cereal, garlic salt, paprika, and parsley together in a shallow bowl or large zip bag. Dip chicken in butter, then coat with cereal mixture. Place in a greased 9x13 pan. Bake 20-25 minutes at 400°.

My poor cousin is staying with us and he is a meat and potatoes person, our house is chicken and fish. :teeth: I saw that one and thought he would like it. Now I need to see if there is any other beef in the freezer I can make between now and Friday when he moves to my sisters house. :rolleyes: I have about 20 packages of chicken, another 30 fish.

I did something tonight I almost never do and usually avoid...made three meals. I had tuna tacos, DD had baked haddock, and DS had black bean burritos.

The meals were okay...they were eaten...but I hate feeling like I am running a restaurant here.

Yes..that's right. I usually add the sour cream into the soup at the very end though. We just like this better. And usually its loaded BAKED potato soup, but I peeled them...I like it better that way :rolleyes: .
I don't use a recipe, but I just cook the bacon(chopped) and then add diced onion and some celery and carrots(I use a larger microplane for the last two so DD's don't notice they're in the soup). I then add a stick of butter after the veggies have cooked. When that's melted, I add a couple TBS of flour for a thickener, then a couple cups of chicken broth or stock. I then add milk til it looks right(I use anything from skim to whole to cream in this..its good every time). Somewhere in there I add my (larger) diced potatoes and salt and pepper to taste. I cook til the potatoes are done, then add cheese(tonight I added shredded cheddar and Velveeta). If I use all real cheese then i turn off the fire first and let the cheese melt that way. After the cheese has melted I take my hand blender and puree some of the potatoes to make it even thicker. Then i add the sour cream. I just would rather have the "loaded" ingredients already in, and maybe have extra for topping also. :)

This sounds really good.

The mac and cheese casserole is the bomb, though...I'll post the recipe when I get home. Very fattening, but totally worth it when you want comfort food! (If you don't tell your kids what is in it, I guarantee they will eat it...I had to lie to my husband while I was making it.)

I picked up this new curry simmer sauce at a new market in our area today--so that's what's for dinner! Going to cook up some chicken breast and a package of bell pepper slices and simmer it in this yummy looking sauce. Serving it with Jasmine rice and warm pitas! Love me some Indian food!

Well, I got stuck late at work last night and did not get home until 7:30, so roasting the chicken did not happen. Instead, we got take out indian food. Yummy!

I'm leaving work early today (and have tomorrow off, whoo-hoo!), so will roast the chicken tonight. I'll post the recipe, along with the one for the bread salad, when I get home.

As soon as I'm done typing this I'm going to make meatballs and throw them in the crockpot with marinara sauce. Then all I will have to do is cook the spaghetti noodles and put a salad together later.

Zuni Cafe Roast Chicken and Bread Salad

For the chicken:

1 chicken, about 3 1/2 lbs.
salt.

1-3 days prior to serving, rinse the chicken, discard the giblets and remove any extra fat. Dry very thoroughly. Season the chicken very liberally with the salt--about 3/4 tsp. per pound. Cover loosely and refrigerate 1-3 days.

When you are ready to cook, preheat the oven to 450. Preheat a flameproof roasting pan or skillet over medium heat. Wipe the chicken dry, brushing off any visible salt, and place breast up in the pan.

Roast in the center of the oven for 30 minutes, then flip the bird over. Roast for 20 minutes longer, than flip back over to recrisp the breast skin, 5-10 minutes longer. At this point, check to see if it is cooked. If yes, tip any juices inside the chicken back into your cooking skillet and set the chicken aside to rest. If not, keep cooking til it's done!

While the chicken is roasting, you can make the salad:

For the salad:

1 tbsp. dried currants
1 tsp. red wine vinegar
1 tbsp. warm water
8 ounces crusty peasant bread (not sourdough though), bottom crust trimmed
6-8 tbsp. olive oil
1 1/2 tbsp. white wine vinegar
2 tbsp. pine nuts
2 cloves garlic, thinly sliced
1/4 cup thinly sliced scallions
2 tbsp. salted water
a few handfuls of salad greens (I use arugula)

Place the currants in a small bowl with the red wine vinegar and the warm water, and set aside.

Cut the bread into large chunks and brush with olive oil. Broil or toast to get it a little crisp, then tear into smaller edible sized chunks. Toast the pine nuts lightly at the same time you prepare the bread, then toss them together in an oven proof bowl or dish.

Combine 1/4 cup olive oil with the white wine vinegar and salt and pepper to taste. Set aside.

Heat 1 tbsp. olive oil in a small skillet, add the garlic and scallions, cook until just soft then add to the bread. Drain the currants and add them in. Add in the warm water and toss everything together.

Cover the bread salad with foil, and place it in the oven 10 minutes before your chicken is done.

While the chicken rests, defat the pan juices in your skillet, then bring to a simmer. Take the bread from the oven and place in a salad bowl. Drizzle the pan juices over, add some of the olive oil/white wine vinegar mix to taste, then toss in the greens.

Serve the chicken, cut into serving pieces, nestled in the bread salad.

It looks like a long recipe, but it only takes an hour, and it's really good!

I don't get very fancy with balsamic dressing. I just use good quality olive oil and balsamic vinegar (I also don't measure but if I had to guess, I use 1/3 vinegar to 1 part oil). Whisk until blended, then I add some dijon or grainy mustard (not much, like 1/4 tsp at first, then more as necessary) and some dried thyme, rubbed between palms to make smaller. Then of course, salt and pepper. Then I taste and adjust as necessary. It's a light dressing...I don't think I would use it on plain greens...but it is good on salads with lots of ingredients.

Tonight we are eating with my parents and brother, and I am making pizzas. Four kinds: margharita--just fresh tomatoes, fresh mozzarella, and basil. Then a white pizza with oilve oil, pancetta, parmesean, black pepper and truffle oil. A red sauce pizza with fresh mozzarella toppd with lots of arugula. And finally, a sausage pizza. Should be lots of leftovers for Sopranos tomorrow.

Pumpkin Ravioli

2 tbsp. butter
1 small onion, finely chopped
1 garlic clove, finely chopped
1 15 oz. can pumpkin
1/2 cup grated fontina cheese
1/2 tsp. salt
pepper
1 package wonton wrappers
2 tbsp. vegetable oil

toasted pine nuts, 3 tbsp. butter, 1 14. oz can chicken stock, and parmesean cheese, for serving.

Preheat oven to 400 degrees.

Melt the 2 tbsp. butter in a small pan and saute the onion and garlic until soft. Remove from heat and stir in the fontina, the pumpkin, and the salt and pepper.

Lay out the wonton wrappers, a few at a time, and place about 1 tbsp. pumpkin in the center of each. Brush the edges of the wrappers with water and then top with another wrapper, pressing down on the edges to seal and squeeze out air pockets. Continue until all wrappers are used.

Place a large baking sheet in the oven to heat. When hot, remove from the oven and brush with 1 tsbp. vegetable oil. Place the ravioli in a single layer on the baking sheet and then brush them with the remaing 1 tbsp. oil

Place ravioli in oven and bake for eight minutes, flip them over, and bake for eight minutes longer.

While the ravioli is baking, heat the remaining butter in a small pan until nut brown. Add the chicken stock and heat until hot.

Place the baked ravioli in serving bowls and top with some of the broth, the pine nuts, and parmesan cheese.

Serves 4-6

Morning!! It's the 30th! Where has April gone?!

Tonight we are having the Ritz chicken. Sun, wasn't it yummy?? :) We are having green peas and some rice with it. I make my rice the old way, not instant. I use chicken stock and a small pat of butter. Bring it to a boil, add rice, and let cook for about 20 minutes. MMMM!

We went to Fox and Hound for lunch yesterday. I had Ziti al Pesto and boy was it yummy!!!!

Tonight, I'm having my former coworkers over for fondue night. Haven't decided whether both fondue pots will be cheese fondues or one court boullion and one cheese.

For dessert, the little chocolate fondue pot will be going. That one does a cool fondue, not warm. Jury's still out on whether we like it that way!

Brown your chicken pieces in a large skillet (or pot) in some vegetable oil until they are nice and golden. Once that is done, I add a can or two (depends on how much chicken) of any cream soup (plus a bit of water to thin it a little) and simmer for about 20 minutes for boneless and about 45 minutes for bone-in chicken. During the last 5 minutes of cooking, add about 1/2 cup sour cream (optional but it does make it extra yummy ;) ) to the sauce and cover the top with colby jack shreds ~ enjoy! :sunny:

Oops, also wanted to add that the seasonings I use are fresh cracked pepper, kosher salt and a few sprinkles of paprika. Sorry about all of the edits but I do this one freestyle and I kept remembering more things, lol.
