Lindsay - for real, don't bother asking him for his opinion anymore. Fix what you and Scott want and if they want to eat, they can. I wouldn't purposely fix things he hates, but I also wouldn't cater to his whims. Does he always have bad manners, or is the new romance caused him to lose his mind?


Kevin has always been, shall I say, blunt, in his delivery. Part of his problem is he's gotten away with it all this time. Just the other day I was discussing this with Scott and I told him no more. I'm calling him on his occasional smart **** comments.

Like other posters have said, and I agree, we are spending too much time with Robin and Kevin as a couple. We aren't going to do that anymore. We are getting together NYE and exchanging our Christmas presents and ringing in the new year. We had thrown out the idea of going to see National Treasure 2 and eating out on NY Day, but they went to see it on Christmas Day with her family. Ooooooook, I thought. So Scott and I have decided if they want to do something NY day then they can come up with something.

Other than that, we are taking a break from them. Like I said, it is not Robin that's making me nuts. It's Kevin.

Hey All!

Thank you all for your thoughts and prayers; they really mean the world to me...:hug: :hug: :hug: I am doing better today emotionally now the physical part is another story but why complain...I'll be fine. ;)

I hope all the kiddos that haven't been feeling well, are a bit better today.

Lindsay, You are worrying too much about what they want to eat. Subway would be fine...I love Subway! But how about making a light pasta salad with the burgers...a box of wheat or dreamfields pasta, loaded with veggies and just toss with a light italian dressing? Or serve a condiment bar for the burgers (lettuce, onion, tomato, pickles, cheese - this way if they want a side salad or burger toppers they can do both).


OK Ladies, Now on to important stuff.............

Kathy has put me to work thinking about having a girls weekend get together...there are several of us I know that are interested in doing a weekend getaway.

We are thinking the sooner the better...maybe end of Jan or Feb...we are also looking itno where...we can stay in Disney....the value resorts start at about $82/night and the next tiered rooms are about $149...OR, I was thinking a Savannah, GA trip and have a meal at the Lady and Sons....

So at this point, I guess we need to start with (PM me your info):

1. Would you like to attend?
2. What weekends are good for you?
3. Do you want to do Disney or another location?
4. What kind of buget should we try and stick to?

Oh, I am making weight watcher chicken marsala tonight without the mushrooms, egg noodles and broccoli.

Oh, a girl's weekend getaway! How fun!!! I'll have to look at things, but you'll probably have to count me out. I'm in charge of the school play that is being done in February, so I probably shouldn't take any time away. Not to mention the fact that DH is sending me and Katie to London for 10 days in June. I'm not sure how he'd react to me asking to go away for another weekend. If I can't go with y'all in person, I'll definitely be there in spirit!!!

I'm puzzling over dinner tonight. I definitely need some inspiration, so I'm off to the first page of the thread to see what I can come up with!

I would love to come to a meet; unfortunately I, more than likely, won't be able to make it. We're headed to Disney in less than 2 weeks, IL's here in February, wedding in May, Girl's Disney Weekend in June, and then Hilton Head in July. Can't believe we're booked through July and it's not even January yet!

WFD tonight is up in the air. DH has been at work for over 24hrs. now, so he'll more than likely sleep through dinner. Maybe I'll take the kiddos out. Who knows?

Lindsay - I don't think it was tacky at all, and I def think you should call him on his comments.

I don't think I could do a get together, either. =( Airfare is SO high from here so we'd have to budget it for awhile. Jan and Feb are booked solid for me, too - every stinkin weekend. Sounds like fun!!

WFD - I think we're going to eat something out. DH got Academy GCs to buy a new driver so we're going tonight to do that.

A girl's weekend would be a wonderful thing. Unfortunately probably not possible for me. First of all we are already going in Feb for the Daytona trip. And then for me to leave Bob for several days would be quite a hardship on him & probably DD & SIL. He would probably need them to come stay over here to help him. But let me know what y'all plan & I'll check into it. It really is something I'd love to be able to do!

Last night I cooked mustard greens only because they'd been in the fridge for days & were going to have to be thrown out soon. DH picked up outback, so we had steak, potato & mustard greens for dinner last night! :confused3 I know strange.;) No ideas yet for tonight.

DD is going to have a small New Year's Eve party, so I need to figure out some appetizer finger food things for that. I'm drawing a blank right now. Any good ideas out there?

Glynis, Glad to hear your girl is feeling better so quickly! That is good news! And what's this about going to London? Wooweee, that sounds fabulous!

Lindsay, You are worrying too much about those two! Do you always do all of the work when friends come over? If we had friends who hung out at our house as often as Kevin & Robin are at your's, they'd be bringing pizza or sandwiches or something for everyone, at least some of the time. Why should it always be up to you to "host" them?

This lasagna recipe was pretty good! Easy, and I'll make it again.

Simply Lasagna

Prep Time: 20 Minutes
Ready In: 1 Hour 35 Minutes
Yields: 12 servings

INGREDIENTS:
1 pound ground beef (we used italian sausage instead)
1 egg, beaten
2 1/2 cups shredded Low-Moisture Part-Skim Mozzarella Cheese, ivided
1 (15 ounce) container Part Skim Ricotta Cheese
1/2 cup 100% Grated Parmesan Cheese, divided
1/4 cup chopped fresh parsley
1 (26 ounce) jar spaghetti sauce (I used 1.5 jars, as reviewers said more sauce did better)
1 cup water
12 lasagna noodles, uncooked

DIRECTIONS:
1. Preheat oven to 350 degrees F. Brown meat in large skillet on medium-high heat. Meanwhile, mix egg, 1-1/4 cups of the mozzarella cheese, the ricotta cheese, 1/4 cup of the Parmesan cheese and the parsley until well blended; set aside.
2. Drain meat; return to skillet. Stir in spaghetti sauce. Add water to empty sauce jar; cover with lid and shake well. Add to meat mixture; stir until well blended. Spread 1 cup of the sauce onto bottom of 13x9-inch baking dish; top with layers of 3 lasagna noodles, one-third of the ricotta cheese mixture and 1 cup of the sauce. Repeat layers twice. Top with remaining 3 noodles and the remaining meat sauce. Sprinkle with remaining 1-1/4 cups mozzarella cheese and remaining 1/4 cup Parmesan cheese. Cover with greased foil.
3. Bake 45 minutes. Remove foil; bake an additional 15 minutes or until heated through. Let stand 15 minutes before cutting to serve

I also made the garlic bread based on your tips and DH said 'the bread is really good!' so I guess I did it right!

Drunk Dawgs

2 large packs Lil Smokies
3/4 cup brown sugar
3/4 cup ketchup
3/4 cup bourbon

Mix the sugar, ketchup, and bourbon together and put in crock pot. Stir in the packages of Lil Smokies and heat through in the crock pot.


I turn the crock pot up high at first to get it all hot then turn it down and keep it warm during the day. These can also be done in an electric skillet.


Goat Cheese Stuffed Grilled Peppers

(These pair exceptionally well with wine, both red & white. I always enjoy a South African wine to compliment the goat cheese.)

1 oz soft goat cheese (chevre)
1/4 cup shredded monterey jack cheese (1 oz)
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh basil
2 medium red, yellow, green or orange sweet (bell) peppers, seeded and quartered lengthwise (red & green look great at the holidays)

To make cheese mixture, mix cheeses & herbs in a small bowl. Set aside.

Preheat & prepare grill. Grill peppers directly over medium hot coals until crisp tender, about six to eight minutes, turning occasionally. Do not allow to brown. Take peppers off as they're done and put them on a platter.

Keep grill on.

Spread the cheese mixture evenly in each pepper. The peppers should look like little boats and (for the most part) be able to "hold" the cheese mixture.

Return peppers stuffed with cheese/herbs back to the grill and grill for two or three more minutes until the cheese is melted. Serve immediately.

How about a crockpot full of Li'l smokies cooked in chili sauce and grape jelly. So yummy! You could also do sweet and sour meatballs.

I'm so excited about it!!! My cousin and her family live in London (at least for the next year), and she's invited us to stay with her family. So, housing is taken care of. Alan has enough frequent flyer miles to cover the plane tickets for both me and Katie, so that is taken care of. My dad (it was his idea to begin with) is giving us 250 dollars for museums, show tickets, etc., so that is at least partially taken care of. It was kind of a no brainer to do it!

I haven't been to England in almost 20 years, so I can't wait to get back. Katie has never been, and she is so excited! She's been researching England ever since she found out about it! So far, she's decided we have to go to Westminster Abbey, the Tower of London, the British Museum, a ride on the Eye, possibly a day trip to Stonehenge and Windsor. We'll be there for 10 days, so we could do quite a bit!

Glynis, We've done the meatball sauce with the grape jelly in the sauce, never thought to do it with the little smokies. Sounds yummy!

That sounds like a wonderful trip for you & Katie!!! 10 days in London!!! Wow, you both must be so excited! I'm excited for you! :banana: Very nice of Alan & your Dad to treat you to this! I wish I had family that just lived anywhere that we could visit. The furthest I ever get to visit family is Houston & San Antonio. ;)

The Girls' Weekend sounds fun, but I'm afraid I will have to live vicariously through those of you who can attend. Caili has a skating competition in Lake Placid in January (Want to meet there? It will be REALLY cold!! :rotfl2: ) so that is the travel budget. Even if we didn't have that, though, it is tough for me to get away. I look forward to hearing about it!

Glynis -- Your London trip sounds fabulous! I love London. I spent a month there in college and didn't see everything. Add the National Gallery to your list, and of course, you HAVE to go see Shakespeare's Globe theater. It wasn't built the last time you were there. It's a bit of a pain to get to, and we couldn't find too much else to do over there, but it was worth it. Also, unless Katie really has her heart set on it, I would skip Stonehedge. It's a long trip and the rocks are all roped off, so you can't get up close. Windsor was a good day trip. Can you tell I am excited for you?

Dinner tonight is going to be the last of the leftover turkey, the mashed turnips I never made for Christmas, eggplant sticks and spinach. The kids want noodles.

I haven't read that far into the article - weird idea about the meatballs. As far as the wine either red or white or both.;) I've mixed the meatballs and the smokies together - pretty good!!

Glynis- glad the little peanut is feeling better! I do the grape jelly chili sauce thing too. I use meatballs, smokies and sometimes I use the cocktail franks. All are really good.

Sheryl- I use kielbasa in that mix as well and that is very good. I tend to stick to turkey kielbasa so there is less fat. I don't have a recipe but one favorite here is a mixture of brown sugar, lemon juice, a little corn syrup and some corn starch to thicken. Cook this into a sauce and toss in crock pot with sliced kielbasa. Yumm!

Dinner tonight is roasted chicken, stuffing, mashed potatoes and gravy, curried sweet potatoes, broccoli, corn and cranberry sauce. I have a rustic bread to go with dinner. Dessert is leftover from the holiday.

I will definitely add the National Gallery! Last time I went to England, you could mingle with the stones at Stonehenge. I have pictures of my roommate touching one of them! I would love to see the Globe! We'll have to see how it pans out! The very last time I went, we got to be locked in the jewel room in the Tower of London. Our guide was a friend of my dad's. At the time he was 85 years old, and was the oldest living Beefeater. He was the only person outside the royal family who was allowed to touch the jewels. He gave us such a history lesson! He would unlock the cases, take out the jewels, and tell us about them. It took us about 5 hours! But what an amazing thing!!!

I'm also hoping to get to Stratford-upon-Avon! I spent a couple of wonderful weeks there years ago! I would buy a small pastry a juice, and go watch the sunrise in the yard of Shakespeare's house. Talk about a wonderful experience!

You can bet I'll be taking tons of pictures to share with everyone!!!

Glynis- I forgot to congratulate you on the trip! When Dan was in HS he played the trumpet with the Madrigals band. They went to England and parents could go as chaperone's. I went on every stinkin' field trip, class trip and class project for each kid. I really wanted to go on this one but he REALLY did not want me to go. When he got back he said "Oh Mom you would have loved it! we saw......." I think he was very close to death at that moment.

I wanted to let you all know that the Greek potatoes were awesome! I have roasted potatoes before but I am going to do them like this from now on. They made great home fries as well!

Thanks so much y'all!!!!!!! Even if I'm trying to pretend that this ...gasp... :scared: 49th birthday is not happening to me!!! ;)

Tomorrow we are having another Christmas Celebration with Bob's side of the family. This is one of our fav get-togethers cus we still have little ones on that side to watch opening presents! It's a casual all day family gathering & I usually get a "surprise" birthday cake. So it will be a great way to celebrate even if I am getting old! ;) I fixed & froze the dip I made for that . My other job for this party is the the drink of the day,which I think will be Cosmos! So I'm off to the grocery for that!

I wanted to let you all know that the Greek potatoes were awesome! I have roasted potatoes before but I am going to do them like this from now on. They made great home fries as well!

I printed out that recipe, it sounded really good. Did you have to make any adjustments to it?

It has finally stopped snowing here. Big huge flakes all day outside too.:rotfl: I kill myself sometimes.

girls weekend sounds like a good idea January is out for me Febuary might be too soon budget wise. But I have to see.

I'm off to see what's for dinner. Maybe going out I'm too tired after shovelling and dealing with the flakes.

Hi all - I was off work today and spent it shopping, so I'm just now getting to the computer. I haven't read thru all the posts as I only have a few minutes. Dinner tonight is Beef Enchilada casserole and some kind of spanish rice my DH is putting together from recipes from a new cookbook. It was a christmas present from son & daughter in law and they are coming to dinner in just a bit.

Lauren - so sorry for your loss.
The girls trip sounds like fun, but alas, I won't be able to join.

Nancy - here's my lasagna recipe. Like I said, a bit of work, but so worth it!

Lasagna al Forno

1 large onion, chopped
3 T olive oil
1½ lb lean ground beef
¾ lb boned, skinned chicken thighs, chopped
1 clove garlic, minced or mashed
2 cans tomato sauce (8 oz)
1 can tomato paste (6 oz)
½ cup dry red wine
½ cup water
salt to taste
1 tsp oregano leaves
1 T basil leaves
½ cup chopped fresh parsley
½ tsp pepper
½ tsp sugar
5 hard boiled eggs, finely chopped
¼ lb prosuitto ham, finely chopped
½ lb mozzerella cheese, thinly sliced
1 cup grated parmasaen cheese
lasagna noodles

In a large frying pan, saute onion in olive oil until soft, add beef, chicken and garlic and cook until meat is brown and crumbly. Stir in tomato sauce, tomato paste, wine and water. Add seasonings, stirring until mixed. Cover and simmer slowly about 1½ hours.

While meat and sauce simmering, prepare Salsa Bescianello.
4 T butter
1 T flour
1 cup milk, boiling
salt
pinch white pepper
pinch nutmeg
tie together - 1 tiny onion, 1 sprig thyme, 1 bay leaf

Melt the butter in a saucepan over low heat. Add the flour and cook until golden, stirring constantly. Thin mixture by slowing adding the boiling milk until sauce is smooth and velvety in texture. Add salt, pepper, nutmeg and the tied seasonings and simmer for 15 minutes. Remove the tied seasonings before using.

Cook the lasagna noodles until tender, then rinse with cold water and drain.
In a large shallow casserole dish, put a layer of meat sauce, eggs, ham, cheeses and salsa bescianello, then noodles. Repeat the layers 2-3 times, then top with parmasean cheese.
Bake uncovered for 30 minutes or until heated through.

Well, it seems I spoke too soon regarding Leslie! She decided she was tired at noon, so went into her bed. At 6:00 I realized that no one had seen her since. I had to go in and literally shake her awake! As she got up, I noticed that her right ear looked funny. Upon closer inspection, I found that her eardrum has indeed burst. She had gunk oozing out of it! Great! Of course it happens now, when the doctor's office is closed. I'll give him a call in the morning, and have him call in some eardrops. I'm not really surprised, but was hoping that we'd caught the infection in time. On the upside, she's not complaining about ear pain anymore!

I can also say, it's a good thing that Alan has a work project that will keep him up late tonight, as Leslie will definitely NOT be sleepy at her usual bedtime. I think I'll just let her veg in front of a movie while Alan works, and I get everyone else to bed! Myself included!

Morning ladies. We ended up with pizza AGAIN last night, but at least this time it was from a good pizza joint! Tonight is another "up in the air" night. DH is back at work today, so we'll see what I come up with.

We didn't get to much snow since it was pretty wet not the fluffy dry stuff. It could have been very intense. I think we are getting into the high 30's here :thumbsup2 If I can get to my grill tonight I may grill inside we will have to see.

Kathy- I am going to wait until after the New Year to figure out my finances. Buddy is still in a walking trance over Christmas, I told him how much NYE cost and then he got the insurance bill. I need to give him a chance to recover before I send him over the cliff ;)

I did not adjust the potatoes at all. I made a lot so I used two whole bulbs of garlic, they were not garlicky, they were not lemony, they were just tasty.

Glynis- The ooze may not be the burst eardrum. I had never had an ear infection, but then got a doozy. My eardrum was close to an explosion but the drugs helped with that. I had a lot of drainage but the Dr said that was the fluid from the infection. It was nasty and there was a lot. I hope little Leslie is the same. nasty drainage but no damage. Give her a hug from Auntie Nancy, will you?

Sheryl- I love to watch little ones open their Christmas gifts. There is something so wondrous about them on this special day. My sister asked us to stay while she and the girls opened their gifts on Christmas Eve and of course Kady "helped". Her excitement over even someone else's gift was contagious.

Zipuzee- I cannot wait to make the lasagna for Donny. Now I have two recipes that I can use to bribe him into coming over. He is not a crowd guy and will generally pass on "Family Fun Day" until I pull out the big guns and ask Kady to call him. Now I will have another weapon in my arsenal :thumbsup2

I'm pretty sure that it has burst. If not the eardrum, at least the blister that had formed on top of the swollen eardrum. I called the dr's office, and they are prescribing some drops, and I'll take her in to see him on Monday, and we'll go from there. At least she's not in any pain, anymore!

We are taking the kids to IKEA today. Katie gets to pick out a new bed, and Alan and I are picking up some DVD storage. Depending on when we go, we'll either have lunch there, or dinner. I'm pressing for dinner. I haven't started defrosting the hamburger yet!!!

If we eat here, it will be sloppy joe pizza. Better get to defrosting. If we don't have it today, we'll have it tomorrow.

Good Morning All!

I am not getting any email notifications from the DIS since the boards were upgraded. Am I the only one?

I have to tell you all. I get a lot of teasing about my WFD friends, but since I put all of the cards up my DH reads them all. He asks who is who and of course I have lots to tell him. Lori- he told me his GM always called a sandwich a "sammich" and got a kick out of your card. I think it took all of these cards to make you all as real to him as you are to me.

I'll figure out dinner later on. We are going out for NYE so I shopped for appetizer food for NYD but I can't even think of cooking lately. We have a lot of food that seems to keep piling up in the refrigerator and we love leftovers so maybe we'll just finish them all up. We have another Nor'easter heading our way tonight, we'll see how that turns out.

We saw Charlie Wilson's War last night - very good!! And we went out to Cheddar's for dinner and I made excellent dinner choices. I'm on a strict diet to drop this 10-15 pounds I've added in the last two months. I went shopping for clothes this week and burst into tears. I had no idea I had packed on that much - I'm almost 2 sizes larger.

It wouldn't be as huge of a deal but I have a really really big day coming on Jan 23rd and I wanted to 1)buy a new suit for it and 2)look really good in it. So, I'm trying my hardest to drop it fast. Which also means I need to hit the grocery store for healthy snacks!

Tonight, I am making the BBQ chicken hashbrown casserole thing. I think I'll make a veggie for me and only eat a bite or two of the hashbrowns, and pull off the cheese. That way it'll just be a baked BBQ chicken breast. That should still get me under my daily calories.

I hate dieting.

Becky- you served Parmesan with balsamic vinegar. Chris will be home tomorrow and i know that he will be here during his leave for a meal. He would drink balsamic vinegar adn I always have a nice loaf of crusty bread to dip in good olive oil and vinegar, but how do you serve the cheese? I bet he would like that.

Marisa found some soy pizza and mac and cheese today at the grocery store so Kady gorged on pizza. I have been eating cookies in front of the fire place while I try to clean out the Christmas movies on the DVR so no cooking here. I'll just finish off the lemoncello cake :lmao:. I also have to finish off the opened wine so I don't need to toss it. I will pay for this tomorrow night when I have to somehow get into a dressy outfit for NYE :scared: but I'll deal with that later. We are going to see the second Harry Potter movie later on this evening.

Morning all. DH has been nice enough to share his cold with me, so I've been feeling pretty puny the past couple days. As long as it's gone by our trip next week, I'll be fine. AAAHH, we leave next Thursday and I'm not one bit ready (besides the actual marathon training). And between now and then I have 7 work days scheduled. I spent the weekend un-decorating our house, so at least that one major thing is off my to-do list. I hate to see Christmas "gone" so soon, but I was not having that job after our trip. Oh, and cooking's been non-existant around here. DH brought me Chinese on Saturday and then last night was sauce out of the jar on some spaghetti noodles.

We don't have any plans tonight, so I think I'm gonna make some snacky foods for hte kids, DH and I. Tomorrow morning we're headed to a Cotton Bowl party to watch AR play. I'm supposed to bring some "brunch-y" item. I got a tiramisu cheeseball mix for xmas, so I'm gonna do that with some graham crackers and then a fruit tray. Someone else is bringing french toast bake and egg casserole, so I thought I'd just do something light!

We'll eat and play our Disney Scene It, and Disney Haunted Mansion Clue. I will sneakily move the clocks forward so that when it is really 9:00, the kids will think it is midnight. We can ring in the New Year, have some sparkling cider and the kid's will go to bed.

Our kids get a visit from Baby New Year who leaves them small gifts so that will happen shortly before I go to bed, and I'm hopeful that DH and I will be watching the ball drop from the warmth of our bed! In actuality, I haven't seen a ball drop in years! I'm just too much of a fuddy duddy, I guess.

As for tomorrow, we don't do much food wise. We'll snack around throughout the day, and I'll make sloppy joe pizza for dinner.

Happy New Year's Eve!

We're having party food for dinner tonight. Crackers and seafood dip, shrimp cocktail, grilled pizza, and wings with celery, carrots and blue cheese. Since I'm from Buffalo, you'd think I'd know how to make wings, but I've never actually made them. Everyone I know who lives/lived there always went out for wings. So I'm just going to "wing" it and and see how they turn out. :laughing: sorry about the bad pun.
If we get hungry later we'll make some Chex mix and Wallaby Darned frozen drinks. Ooh, and if I don't forget again (like I did on my bday) I'm going to finally open my first bottle of Rosa Regale.

Tomorrow we're going to my mom and step-dad's to watch the Sabres game, open presents, and have dinner. We were with them, at my cousins house, on Christmas, but we like to have our own little Christmas with just my parents, DB, SIL and the three of us. I'm not exactly sure what else we're having for dinner, but I'm taking a lasagna.

Happy New Year's Everyone! Sorry I haven't checked in sooner today...its just been one of those days. DH and I are home tonight...REALLY missing A who is with the donor.

I didn't cook last night. We went to the local diner that has the best salad bar, open faced turkey sandwiches and great bakery. They are Greek and every time I go I HAVE to have dessert. I think I finally figured out how to say what I order instead of pointing at it...Gadabureko...or something of that sort.

I was planning on making one of Tom's favorite's tonight...Chicken Francese but I went to BJs today and bought alot of appys so we will have chicken tomorrow. I also have some pies in the freezer that need to be baked so I will make a pie too since the next day we will start the diet AGAIN! :)

So hubby and I are drinking some wine, have the champagne and Rosa chilling, played TV Scene It (I never played b4...love it!!!) and munching out.

I wish you all the very best. I have really enjoyed the year with each and every one of you. Thank you for your friendship. Happy New Year All!

I never made it to midnight. Somewhere I around 8:30 I got a really "good" migrane and called it a night around 10:00. I guess our little change in weather pressure set it off. Looks like we got around 4-5 inches since I got home yesterday.

I had to make it early because we'll be going to my parents house early this afternoon. Should I put it in the fridge and bake it right before dinner or should I bake it now, put it in the fridge, then heat it up later. :confused3

You can do either bake now or wait till later. I agree about the lasagna tasting better the day after. Probabaly cause you not so tired after cooking all day.

I'm a wee bit frustrated... I made a new chili recipe from the latest Cooking Light (remember I'm on a diet right now!) and it was a flop. I liked it, and my MIL said she liked it, but my FIL and DH didn't eat it. =(

It was chocolatey, but I like chocolate. *shrug*

Chili with Chipotle and Chocolate


Smoky chipotle chiles and earthy chocolate add depth and richness to chili.


Cooking spray
2 cups diced onion (about 1 large)
1 cup chopped red bell pepper
1 teaspoon minced garlic
1 1/4 pounds ground turkey breast
3 tablespoons brown sugar
2 tablespoons ancho chile powder
1 tablespoon unsweetened cocoa
1 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
2 (15-ounce) cans pinto beans, rinsed and drained
2 (14.5-ounce) cans diced tomatoes, undrained
1 (14-ounce) can fat-free, less-sodium chicken broth
2 chipotle chiles, canned in adobo sauce, minced
2 ounces unsweetened chocolate, chopped
1/2 cup light sour cream
Chopped green onions (optional)

Heat a Dutch oven over medium-high heat. Coat pan with cooking spray. Add onion, bell pepper, garlic, and turkey to pan; sauté 8 minutes or until turkey is browned and vegetables are tender. Add sugar and next 9 ingredients (through chipotle) to pan, stirring to blend; bring to a boil. Reduce heat; simmer 15 minutes or until slightly thickened, stirring occasionally. Add chocolate, stirring to melt. Ladle 1 1/4 cups chili in each of 8 bowls; top each serving with 1 tablespoon sour cream. Garnish with green onions.

Yield: 8 servings

Fudgy Brownies

Ingredients

1 cup sugar
2 large eggs
1 tablespoon hot water
2 teaspoons instant coffee granules
1/4 cup butter, melted
1 teaspoon vanilla extract
1 cup all-purpose flour
2/3 cup unsweetened cocoa
1/4 teaspoon salt
Cooking spray
1 tablespoon powdered sugar (optional)



Preheat oven to 325°.

Place sugar and eggs in a large bowl; beat with a mixer at high speed until thick and pale (about 5 minutes). Combine hot water and coffee granules, stirring until coffee granules dissolve. Add coffee mixture, butter, and vanilla extract to sugar mixture; beat at low speed until combined.

Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, cocoa, and salt, stirring with a whisk. Gradually add flour mixture to sugar mixture, stirring just until moist (batter will be thick).

Spread batter into an 8-inch square baking pan coated with cooking spray. Bake at 325° for 23 minutes or until brownies spring back when touched lightly in center. Cool in pan on a wire rack. Garnish brownies with powdered sugar, if desired.

Yield: 16 servings (serving size: 1 brownie)

And I made this dip (gotta have blackeyed peas on NYDay!) It was yummy, but a lot of steps. It really wasn't spicy at all.

Spicy Black-Eyed Pea Dip

This dip is like a Southern-style hummus; serve with bread toasts, crackers, pita bread, or cut-up veggies. The dip is delicious served warm. To do some of the work ahead, prepare the recipe through step four, but combine all of the ingredients and bake the dip just before serving. It's also nice as a sandwich spread.

Ingredients
1 1/2 cups dried black-eyed peas
4 cups fat-free, low-sodium chicken broth
1/2 cup diced onion
4 garlic cloves, crushed and divided
1 poblano pepper (about 4 ounces)
1/4 teaspoon kosher salt
1 (8-ounce) container reduced-fat sour cream
1/3 cup chopped green onions
Cooking spray
2 tablespoons chopped fresh cilantro

Preparation
Sort and wash peas; place in a medium bowl. Cover with water to 2 inches above peas; cover and let stand 8 hours. Drain peas.
Combine peas, broth, onion, and 2 garlic cloves in a large saucepan; bring to a boil. Partially cover, reduce heat, and simmer 1 hour or until tender. Drain.

Preheat broiler.

Place poblano pepper on a foil-lined baking sheet; broil 15 minutes or until blackened and charred, turning occasionally.

Reduce oven temperature to 375°.

Place pepper in a zip-top heavy-duty plastic bag; seal. Let stand 15 minutes. Peel and discard skins. Cut a lengthwise slit in pepper; discard seeds and stem. Coarsely chop pepper. Combine remaining 2 garlic cloves, pea mixture, pepper, and salt in a food processor; process until smooth. Add sour cream; process until blended. Stir in green onions. Spoon mixture into a 9-inch pie plate or shallow 1-quart baking dish coated with cooking spray. Bake at 375° for 15 minutes or until thoroughly heated. Sprinkle with cilantro.

12 servings (serving size: about 1/3 cup)

Looking at those pictures just reminds me how much food I've eaten in the past few days, and you haven't even seen the ones from yesterday and today. Groan. There is a reason I am wearing elastic waist pants right now.

Linner today was turkey, stuffing, mashed potatoes, gravy, cranberry sauce, spinach gratin, and green beans. I may not eat for the rest of the week. :laughing:

I hope everyone had a wonderful New Year! I am not sure how it happened but my appetizer day made more mess than a full meal :confused3. At least I am blaming the mess on the mini meals. Buddy and I never go out on NYE but we did this year and did not get home until after 2:30 AM. Then it snowed in the morning, he built a fire and I was done for the day. I am going to pay today.

I think we are going to have meatloaf and mashed potatoes for dinner. I need to clean out the refrigerators and get rid of whatever made it's way to the back, but I really want to go back to bed.

but, i had pork chops in the freezer

sooooo

dice an onion and put in bottom of crockpot
lay chicken breasts (or pork chops) on top
sprinkle with chili powder to taste
pour 2 c salsa on top

turn on to your time specifications and when done serve with rice

i cook mine all day because that fits my schedule, so it's 10 hours on low

i use the rice in the pouch

The Romance of the Smitten Kittens

The SKs came over Friday night for dinner. Robin got here around 2:30. We sat and yakked while we waited on Kevin (neither had to work a full day and Scott was working from home that day). Anyway, started off awesome.
Kevin got here around 3:30 or so. There they went again with what I've started jokingly calling "their moments."

Robin brought one of her favorite movies, "Some Like it Hot." About halfway through it, we all decided we were hungry. So Scott and Kevin left for Subway. Let me interrupt with something. I had been quiet since Kevin arrived, and not totally unintentionally. On top of having to deal with "their moments," I was really starting to feel like a 5th wheel with our group. I had taken notice that Kevin never really talked to me unless I addressed him. I'd had a bad vibe from him for a long time that he didn't like me much, but I just chalked it up to be paranoid. Thinking maybe I was just being silly I put it to the test. I clammed up a bit just to see what would happen (totally not me, I am a yakker). He asked me once if I was ok, I said yes. Ok, no big deal.

While they were going to get dinner, Kevin asked Scott if something was wrong with me. Scott tells him I'd just had a bad day. :rolleyes: On the way back, he mentioned to Kevin that although we loved the both of them and were soooooooo happy things were going well for them, their lovey-doveyness was making us uncomfortable, and could they tone it down just a wee bit? Kevin's response, "Sorry." All righty then. Note: I didn't know all this happened until after they left.

So we eat dinner, yak awhile, finish the movie, watch a few episodes of "Scrubs," and they leave about 10:30. I told Scott I didn't think his talk with Kevin did much good.

Fast forward to NYE. I whip up a ravioli lasagna and homemade Chex mix for the evening. Last week Robin brought a bottle of champagne for the occasion, too (<--- I was really looking forward to this since I'd never had champagne before).

They arrive together at about 5:15. I thought that was a little odd since Robin was coming straight from work. But then again, Kevin lives a whopping 5 minutes from here, so I just thought they wanted to ride over here together and then say their goodnights at Kevin's house.

We first opened our gifts from each other. That was really cool. It was fun to do it on NYE. Our dinner was awesome and they really bragged on it, making me feel much better about the No Fries Incident last week, lol. Then we played Pirates of the Caribbean Life for awhile. Afterward, we played Catch Phrase for what seemed like forever. By this point I have noticed they have toned down "their moments" A LOT. Whew, I was thinking. Kevin wasn't mad about that and our poor eyes get a break, lol.

We then watched a pirated copy of "Song of the South." (please don't judge, it wasn't mine!) When we finished that it was about 11:45. So we go into the kitchen where I pour the champagne (yeah, Kevin thought I wasn't going to be able to do it. Hee hee, I showed him and no one lost an eye, lol!!!)

We talked for a few minutes and had our champagne (which, FTR, I love!!). Toasted the New Year, and yakked some more. Scott and Kevin disappear into our office, and Robin and I started talking. I was getting concerned at this point because I was feeling really buzzed and was concerned about Robin driving home. So I asked her if she was going to be able to get home later. She grinned, leaned forward and whispered, "I'm not going home. Kevin asked me to stay at his house tonight." "Holy crap!" I replied!! He's already gone from "Not before my first wife and not again until I'm remarried," to asking her to stay with him NYE? Wowza!! She explained he knew it would be a lot safer for her to stay with him than drive all the way back to her house.

I said, "So are you crashing their for the night or.....?" She rolled her eyes and said, "Girl, you know what I hope!!" She then filled me in on "how things are going." Things are a lot more serious than I had originally thought. They shared their first "I love yous" on Christmas Day and are musing about the future. Cool, eh?

Now to the hilarious part.

Robin was on call yesterday and said she would probably end up having to actually go into work because we were expecting a MAJOR cold snap. Kevin said he was going to play paintball with friends at 8:00 yesterday. Knowing she was spending the night and he was leaving early, I pulled her aside and told her if she was still in town and alone in the morning to give us a call and we could do lunch. She said thanks but she was going to her parents house for lunch and to watch football (plus it's close to work in case she has to go in).

Ok so Kevin is going to be playing paintball and she is going her mom's. Are we straight here?

On our way out yesterday, Scott and I were talking about the 2 of them. We left for Chattanooga around 11:30. Curious (read: nosy), and because it's on our way, we drove by Kevin's house.

Guess whose car was still in the driveway? :lmao::lmao::lmao::lmao::lmao:

So it looks like the Smitten Kittens may have taken their relationship to the next level. As we got on the interstate, I texted the two of them. I texted Kevin a simple Happy New Year and have a great day. I texted Robin, "Happy New Year. Have a great day! Hope you had a good evening <wink wink>" She texted me back, ";-) Happy New Year to you too!!" :rotfl:

Part of me really hopes they, um, rocked the casbah, if nothing else to get out some of their hormones that were raging. KWIM?? Not to mention, I am really happy for them as a couple and am so glad they are truly in love. They both deserve to be happy.

Robin is off today but Kevin has to work. I e-mailed him asking him if he wanted to come eat chili with us tonight. With Robin being off, it's conceivable she may be with him today. But if he comes over I really want to clear the air about last Friday.

Hi Everyone! I hope you all had a wonderful New Year's and that all you who are sick/injured are feeling better today.

After another aggravating bout of internet trouble, I'm glad to be at work today where I feel like I have returned to civilization. The cable tech is supposed to show up today, so maybe all will be well when I get home tonight.

Yesterday's dinner was smothered cabbage and black eyed peas.

Tonight's dinner is a hubby request - Lauren's braised pork chops (the old recipe).

Well, I'd better get back to work. I'll check in tonight (hopefully).

I think we're having crab cakes for dinner. I'm not sure what to serve with it... maybe brown rice and a salad? DH won't want brown rice so I'll figure something out for him.

Dinner tonight is up in the air. I really want to do sweet and smoky chicken wraps (to lighten things up after the holidays), but it's really cold, so I'm thinking that clam chowder may be what we do. If so, I'll make some biscuits to go along with it.

Janice, I think it is supposed to get near zero here tonight and only get to about 20 tomorrow. You must be sharing your cold weather with us. Brr.

Dinner tonight was late as Caili had skating and Liam needed new sneakers (he grew an entire size!) so I just stopped at the grocery store and let the kids get what they wanted from the dinner to-go. Liam had a black bean burrito and Caili had fried chicken. I had tomato soup, but not very much of it. I am still full from the weekend.

Laura We certainly have enough cold to share. I think Canada is the culprit for this cold weather.

We ended up having French dip and tater tots with the leftover roast.

Oh Kathy I forgot to thank you again for that website. I made the blackeyed peas with a recipe I found. I liked them but Alex was not thrilled. Poor kid was wondering if he could still have good luck with 3 forkfulls?

Lauren - I added a ticker today too, but my trip isn't until early November. I'll try not to be jealous. :angel: Hope your cat is better. We are down to only three and a floater. Our floater comes and goes and just when we think something terrible has happened to him, he shows up at the back door bedraggled and thin.

Kathy - I printed the fried chicken instructions but I think I'll need a lot of liquid courage before I give it a try. :goodvibes Thanks though.

Janice and Laura - I'll think of each of you tomorrow morning when it is 32 degrees at my morning commute. It was 31 this morning at 7:00 when I left the house and I thought I would freeze to death. I promise however to think of each of you tomorrow and be thankful.

It's 39 here and I'm frozen! =)

Tonight's dinner was delish. I made crabcakes and served it with brown rice, salad, and spinach. My crash diet is going well so far - I'm under my minimum calories right now so I'll need to eat something later but something small. Crab is so low fat and calories that I could eat a really nice big crabcake tonight. YUM!

The Romance of the Smitten Kittens

Lordy mercy what a day I had yesterday!!! Grab your popcorn and a cup of coffee popcorn:::surfweb:

Ok, where to begin? First off, I talked to Robin yesterday about New Year's Eve/Day. To my shock and surprise, they did not do the nasty. They did, however, sleep together. Awwwww, right? Well, anyway, Robin threw me a curve ball. She told me not to get too excited, just file it away in the back of my mind- she said be deciding what I want to wear as her maid of honor.

They aren't talking marriage or anything, just the future and the possibilities. Make sense? Anyway, I was floored that she asked MEof all people!!!!!!! I knew I loved her to death, but I had no idea she considered me that close of a friend!! Awesome!!

So after getting this piece of news, I decided I had to clear the air with Kevin. I don't know if I mentioned it any yesterday, but since Kevin is in town this week I invited him to come eat chili with us last night. He accepted. Knowing he was coming over and it would just be the three of us, I took advantage of the opportunity.

We sat and talked for 5 hours. Boy do I feel a lot better about everything. We talked about my vibe that he didn't like me; the Nashville trip; him and Robin and "their moments"; and details in general. He confided a lot in us, something he never does.

Oh, let me tell you a funny. As we were sitting down to eat, he said, "Yeah, Robin and I both slept in. I didn't go play paintball. I texted her yesterday morning and we met at IHOP and hung out the rest of the day." I exchanged a look with Scott, both of us know he'd just told us a bold faced lie. It was all I could do not to bust out laughing.

After dinner we went to sit in the living room. Scott went to the bathroom and Kevin started in again about how the met up for breakfast and such, and I was looking at him with a huge grin and my head cocked to the side, basically saying, "I'm listening to you, but I know you are totally full of it." Finally he grinned and said, "What?" I said, "Kevin sweetie, don't look me straight in the eye and lie to me. I know she didn't go home NYE." "Really?!" he said. "Yes, I knew she was staying with you before you guys left the other night." Shocked, he said, "How did you know?" "She told me, silly," I informed him.

At this, he busted out laughing. I think he was afraid Scott and I would judge him, or something. So now that the air was cleared about that, we started talking about the two of them. Robin had told me that hadn't had sex and she knew better why now. I didn't question that. I figured if she wanted me to know, she'd tell me. Well Kevin told us last night.

I was floored.

It turns out his first wife had been raped by an ex-boyfriend. She's had an AIDS test, then a repeat 6 months later and all was clear. Kevin never got tested. That is a HUGE reason he hasn't done anything with Robin yet. Talk about making your heart hurt for someone!!!!!!!!!!!!!!!! So anyway, I told Kevin I'd find a good GP in town (he moved back down here last March and hasn't found one yet) so he could get this cleared up. Not to mention he was wanting a physical anyway. Also, his first wife had HUGE intimacy issues because of being raped, as you can imagine. He said there wasn't much after their wedding night.

I'd be cautious about being intimate with someone, too. Wouldn't you?! Geez! Bless his heart!

Like I said, we talked for 5 hours. Everything is totally great with us now. You don't know how much of a relief last night was. Not to mention Kevin hugged me as he was leaving yesterday. That meant a lot. Kevin's not a hugger (not counting Robin, of course!).

Sorry so long, but there is your update on The Romance of the Smitten Kittens.

Stephanie- I am officially jealous! It was 1 degree this morning and breezy. We are up to 8 degrees so I am going to hibernate until I go out to pick up Kady.

Dinner will be something warm. I have ground turkey thawed from yesterday's non dinner so I may use that. I know you Southern Gals are chilly as well so I'm thinking of you and trying not to compare temperatures ;)

Lindsay- sounds like the SK's are really considering a relationship.

Gretchen- Buddy is fine in the kitchen if there is food that does not need to be cooked. My Christmas dishes are rimmed in gold so he has not figured out how to heat anything up though :rotfl:. He thinks I should take another nap today and I may just listen to him :thumbsup2

The kids wanted cheese plate for dinner tonight (my parents gave me a bunch of different cheeses for my Christmas present) but right now, with the wind chill, it is negative 7, so I am thinking something a little warmer might be in order...maybe pasta. I am not going to the store.

We can do cheese plate tomorrow when it warms up to 30. :thumbsup2 :laughing:

But very glad the DIS is working so much quicker & I was able to quickly scan back to check up on things! I would have been so sad if I'd missed all those beautiful pics of Becky's food!!!!!:thumbsup2

We had some great food yesterday! I have to say all the fancy restaurants & even Disney f&w didn't hold a candle to the freshest Louisana oysters we had last night! My BIL & godchild's husband went out in the freezing cold temps ( yes we did actually have some freezing temps here;) ) yesterday morning & brought home two sacks full of yummy salty oysters. We headed over to my uncle's house cus he has such a great set-up for outdoor frying, grilling, etc. I made a butter garlic cheese sauce to do charbroiled oysters & brought soaked applewood to get the smoke flavor. I think I even taught my expert Uncle a thing or two about grilling! I wish I had brought the darn camera with me. We ate them raw, charbroiled & fried! It was a true Louisiana feast!!!

Unfortunately, DH backed into a metal light post when we were leaving my aunt & uncle's house last night. Big dent in the van & caused my neck to hurt again this morning. It was just starting to get better too.

We are freezing our southern patooties off this morning! It's still only 30 degrees right now & for us that is really cold! We've actually had to worry about pipes & plants the last two days.

Don't know what's for dinner. I still have cabbage & ham in the fridge, but don't really feel like eating that again. I did have a black eye pea dip that my SIL fixed that I actually liked. That was the first time I ever tasted a black eyed pea I liked. I guess it was more like a chunky salsa or relish, with hot pickled peppers, tomatoes, garlic etc. Really surprised me.

I'm freezing my butt off! :cold: The low last night was 39°. It's 54° right now and that's probably as high as it's gonna get today. I know I shouldn't complain, almost everyone else is a lot colder, but this is not normal for south FL.

We had pancakes, sausage and clementines for dinner last night. I'm not sure what I'm making tonight, have to go to the store. Maybe soup or something that has to bake in the oven for a long time so it helps heat the house. ;)

Well I made a baked pasta dish today. I needed something to put in the oven, I am cold today no matter how high I put the heat. I usually turn it down and have a mutiny on my hands but that is not going to happen today! I probable have some salad with it.

I am waiting to hear from my nephew. I have not seen him yet, and it is not looking good. He has a GF and they spent a few days in Manhattan with her folks and then headed up to Greenwich to that home. Then his sister told me his two week trip is cut short to go back to her house for a few days. My sister is annoyed and my niece is trying to hold her tongue. We'll see if she can, they are going out tonight. Did I mention the girl's Dad works for Disney? It is not helping my niece to like her :sad2:. Oh well, girl friends.....

I'm hosting my book club tonight, so DH and the kids will have a pizza for dinner. The ladies from my club are coming to discuss To Kill A Mockingbird, so in honor of the South, I have made Hoppin' John, ham biscuits, and hummingbird cake. Haven't decided on a drink, yet. My gut instinct is to go with water, but I'll probably make some lemonade, too. What do y'all think?

I am home sick today, though I'm starting to feel better now (Vicodin has kicked in). In my attempt to eat healthy, I have been eating fresh veggies and fruits. Evidently I overdid it yesterday because I couldn't uncurl from the fetal position this morning and had to call in. I have Crohns, and there is a lot of damage in my colon so things don't pass through easily. I should have known better but I thought maybe things had improved. Oh well. I am (now) working from home instead.

Tonight I am planning to make a maple glazed pork tenderloin from the lastest CL. I think I'll do broccoli and cheese and maybe sweet potato fries to go with it. Hopefully I can eat solid foods again by then.

Tonight I am making a rustic sausage stew with spinach, tomatoes, onions, and white beans. I might heat up some crusty bread to go with it.

Last night I went simple and we just had some warm baguette that I spread with some softened butter, gruyere cheese, and proscuitto. Plus some olives on the side. We ate snuggled under blankets on the couch while watching TV--we checked out a little bit of the first season of Entourage. It's pretty funny but the language is a crude, more so than I expected for some reason.

My mom used to make dumplings to put on top of her beef stew. You could also add cooked rice or pasta at the end.

I always add root vegetables to my beef stew and finish with tomatoes. Can you have parsnips, carrots, turnips or rutabagas?

Glynis- You are not alone with the Santa explosion! I bet most of your guests are kissing your feet because they would have had to plow through the treasures in their home.

Laura- Buddy's aunt always added dumplings to her stew. They were these doughy things, but oh my I loved her stew! We used to try to get more than our fair share of those dumplings!

I did hear from Chris. He and his GF are coming for dinner tomorrow night. We need an early dinner as he wants to join some friends for a birthday party but that is fine, I am glad that he can make it.

Dinner was so good tonight. Not at all good for you becasue it has cream cheese and sour cream along with shredded cheese in it, but so good on a cold night.

I don't know what the heck I was thinking, cooking tonight. My kitchen sink is clogged and I have no way of washing dishes now. I poured Liquid Plumber in it and just assumed it would clear out while I was cooking dinner. No such luck. :headache:

have none of those in the house. Asked DH his opinion he said rice. It turned out okay. More like beef tips instead. I messed up and put the rice in the soup before it was cooked then got busy BF DD #2 so the rice cooked as long as the corn bread.

Nancy - Glad Chris is coming. I was afraid he was going to start a family conflict, as young men in love will do from time to time. I certainly remember my brother tossing my mother off for the family of his latest squeeze. It used to make her furious, but because he was (and still is) her boy, all was forgiven and forgotten as soon as he walked in the door.

And BTW, Kenny can't reheat any food either. I swear I don't understand it. He is mechanically competent, but give him a plate and a container of leftovers and place him in front of the microwave and his IQ drops 60 points. I don't know why he thinks there is something magical about the microwave that makes it only work if I'm the one pushing the buttons, but he does.


Janice - We didn't see zero today, but it was 24 degrees when I left for work this morning. That is quite cold enough for me, thanks.

And I think you have the right idea about Stephanie's marathon. I'd be more than happy waiting on her to finish the marathon by the pool in the sun, preferably while sipping a drink. ;)


Laura - I don't blame you for not wanting to brave this weather to go to the store. If it was that cold here we would definitely be making do with whatever I had in the pantry.


Sheryl - I hope your neck and back are feeling better now. If all else fails, try a massage. It seems to help me.


Aimee - I hope you are doing better now. I'm getting ready to say something motherly now, so bear with me. No diet is worth your overall health. So, take it slow and easy.


Becky - I've been meaning to thank you for your recommendation of Artist's Pointe. We loved it. The duck appetizer was superb and I wished I could have ordered it for my main meal as well.


ISweet tea is a good idea! We'll see how I'm feeling once I get the biscuits made, the hoppin' John put together, and my house cleaned! Why did I volunteer to host right after the holiday???? My house still looks like Santa vomited in the middle of the floor!!! Wish me luck!

I don't know what the heck I was thinking, cooking tonight. My kitchen sink is clogged and I have no way of washing dishes now. I poured Liquid Plumber in it and just assumed it would clear out while I was cooking dinner. No such luck. :headache:

I don't know what you were thinking either. ;) I'd have certainly used that as an excuse to get take out (or get taken out).


Tonight's dinner was tilapia in a mushroom and white wine sauce, couscous and sauteed yellow squash.

Morning Y'all,

Not quite as cold here as yesterday, it's back up to 50 but windy. Still a lot better than yesterday. Didn't cook last night or eat leftovers, my dear DH picked up a roast beef po-boy for me. :love:

I'm still achy, supposed to have Alexis for the afternoon & then if I can possibly manage it, get fixed up to go out to a fancy rest. with DH's business assocs. It's a rest. I've been dying to go to & it will be on someone else's tab. So I have to get myself together to do it! It's about an hour 1/2 drive from home though, but it's a French rest that's been around for years. The chef there was John Besh' mentor for many years & they remained close friends. The chef was up in age, became ill & sold the rest to John Besh last year. So Besh is owner/chef with another well known French Master Chef running the place. So I really do want to go, but just feel so funky.

Gretchen, I sure wish I would have thought of scheduling a massage today! Well maybe next week. Today, I've got to get on the phone & schedule some dr's appts.

Tonight we had our cheese plate, so it was assorted crackers and breads; brie, gouda, gruyere and cheddar cheeses; a spinach salad with gouda and candied pecans; and baked apples.

Here's my really complicated baked apples recipe :rotfl:

Wicked Easy Baked Apples (serves 4...unless you are talking about my kids and then it serves 2)

4 apples, preferably Macintosh, but any baking apple will do, peeled and cut into pieces
cinnamon
pat of butter
You can add a little brown sugar if your apples are tart

Put apples into microwave safe bowl. Sprinkle with cinnamon. Top with butter. Cover and microwave for 3 minutes. Stir. If apples seem too firm, microwave a minute more. Stir again. Serve.

Tough, huh? The funny thing is that whenever I make them for guests, not only does the house smell good but everyone loves them!

Y'all, this recipe was very tasty and low calorie too! It is also very quick, I fixed it in about 15 minutes.

Maple Balsamic Glazed Pork Tenderloin

Ingredients
1/4 cup maple syrup
3 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
1 (1-pound) pork tenderloin, trimmed
2 teaspoons olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Combine syrup and vinegar in a small saucepan; bring to a boil. Cook until reduced to 1/3 cup (about 3 minutes), stirring occasionally. Remove from heat; stir in mustard.

Cut pork crosswise into 8 pieces. Place each pork piece between 2 sheets of heavy-duty plastic wrap; pound to 1/4-inch thickness using a meat mallet or small heavy skillet.

Heat oil in a large nonstick skillet over medium-high heat. Sprinkle pork evenly with salt and pepper. Add pork to pan; cook 3 minutes on each side. Add vinegar mixture; cook 1 minute or until desired degree of doneness, turning pork to coat. Place 2 pork medallions on each of 4 plates; drizzle about 1 tablespoon syrup mixture over each serving.

The Romance of the Smitten Kittens

Bear with me. I have a lot to cover.

I felt soooooooooo much better talking to Kevin Wednesday night. Seriously, you have no idea. I was e-mailing him about something else on Thursday, and made a point to tell him something along the lines of, "I hope you know you and Robin are always welcome at our house. Please don't wait for an invitation." Well, Robin called me Thursday night. We had been yakking off and on all day on AIM, which she has on all day for work anyway. She had said many times how bad of day she was having. I told her to feel free to call me when she got off if she needed to vent. The poor girl got home at 8:50 and called me and we were on the phone until 10.

Anyway, I made mention to her something like, "If you guys are ever bored and don't have any idea what you want to do, please know that you are always welcome at our house. Please don't wait for an invitation. Just let me know so I can make sure I'm not in my pj's, LOL!" kind of thing. *After discussing soooooooo much with Kevin and realized he cared about us, AND the four of us as a whole, a lot more than I realized, I wanted to make sure they knew they could "pop in" anytime. And I meant it.*

Oh, one more thing. I told you guys we were going to let them come to us for awhile and let them make the plans. So I didn't invite them over last night like I had been. But I wanted them to know if they wanted to come over on a Friday night not to wait for us to invite them.

Anyway, I got a text message from Robin yesterday morning. It said, "Want me to bring the stuff to make Le Cellier soup tonight?" I laughed and told Scott, "I think we are having company tonight!" You don't know how much that pleased me. Am I making sense?

So they came over last night. Robin brought in ingredients to make Le Cellier beer cheese soup (it's killer, I'll post the recipe if you want). We sat around and talked forever and watched some episodes of Scrubs. At one point we had 2 separate conversations going: me and Robin, and Scott and Kevin. Kevin was talking about the 4 of us going up to Pigeon Forge here soon. Robin and I can go shopping, and he and Kevin can go biking at Cades Cove. So we are making plans for all of us again :)

So all is well with all of us and there is no more "please please please get a room" vibes in the room anymore. They toned it down a LOT and we are no longer uncomfortable. Plus, the element of friendship with us had been bumped up a thousand.

Oh, I also found Kevin some good general practitioners in the area to get his problem taken care of. He thanked me for them yesterday and said he was going to get right on that. I'm so glad. What a horrible burden to have to carry with you for so long.

A dead refrigerator is NO FUN! Are you going to try to get it fixed or just bite the bullet and buy a new one?

Due to bad weather, my son's "NYE part for the elderly" had to be postponed until today- so I have to go to my Mom's and make some cheese spread and shrimp dip. I'm trying to lose weight and this will be a challenge. I had lost a pound and a half this morning on the scale so I'm going to cling to that thought at the party.

I need some ideas on what to do with boneless chicken breasts for dinner tonight. Something without a lot of fat and calories. I thought maybe a lemon and garlic stir fry kind of thing, throw some frozen green beans in it and a little fresh grated parmesan. Maybe serve it over a little angel hair pasta.:confused3

Yep, it's 75 degrees here today. It was 25 earlier this week. NUTS!!! But at least we can grill in comfort ;)

DH is golfing so I'm working from home and watching trashy TV. Aw, I love Saturdays like this.

I have a chick roast in the crock pot when it is done it will be turned into shredded beef~I have been so hungry for it that I decided to make it today.
I also am having a beer cheese fondue (I read it on a thread last night and thought I would give it a try)
I also have a pot of sauce on for tomorrows dinner.

I found it in the freezer section not too far from the Tiramisu. I think it may be seasonal for th Holidays so I picked one up to keep on hand. I was glad he came. He is a great young man, he told us that he has all of his Greenside clearances and is not on to his white side clearances. He also heard from Timmy who was having a rare day off. Apparently he has learned his lesson and does not want to feel the sharp side of his sisters tongue so he told me that Timmy said it was quiet and that he was bored. Chris is at least 6' tall and his sister just breaks 5'2" but he still has a healthy respect for her temper :lmao:

Never! We welcome newcomers!

Caili did well in her competition, despite being frozen. She got third place in one event and she got second in her freestyle program, so she was very pleased with that. We have to go back tomorrow for her team event, and I know she'll be getting first place in that. I checked the program, and they aren't competing against anybody! :laughing:

Caili says she wants lambchops for dinner tonight (I REALLY, REALLY don't) so unless I can persuade her otherwise, we are having lambchops, rice and spinach.

Hi spalady! What is a chick roast? It must be your regional name for a cut of meat, but I don't know which. I am just starting to cook with larger pieces of beef and have a lot to learn.

Tonight I am making a roast chicken that I made an herb-lemon-garlic butter for and stuffed that under the skin and all over the outside. I stuck a bunch of herbs and garlic in the cavity too. I have not figured out the sides yet...I usually make mashed potatoes with chicken but we had potatoes yesterday...

Caili did a nice job skating today. She really has fun with it. However, the rink was FREEZING! I still can't really feel my toes. Here is my favorite picture from today:

You've got to try Glynis' crockpot roast recipe! It's a regular for all of us here, your family will love it!

Lauren - Did I tell you how much we loved the kabobs from Omaha Steaks? I just re-ordered some along with some steaks. Their 50% off sale ends today I think.

I will second the pot roast. Tom (DH) declared it his favorite meal today when we were having left overs for lunch...he said it was the best and I didn't even make gravy out of the juices or mash potatoes...we just had the potatoes that I threw in the pot....easy peasy lemon squeezy in my book! :thumbsup2

I thought about the kabobs a couple days ago and thought you didn't like them so I didn't say anything...did you add anything to them? I think I did them with the regular marinade that was on them and then did them once with Sweet Baby Rays.

OK, back to unpacking groceries...anyone else hate this job?

I didn't even do the SBR, we ate them with just the marinade they came in. They are awesome!!!:thumbsup2

No I haven't so I guess I gotta go check out the sales! I wouldn't go out of my way to order the chicken kabobs or the brats...only if they are in an incredible package but they are good (for reference ;) ).

They're ribeyes are really good!!

Our dinner plans may be changing - we're waiting on furniture to be delivered. They were supposed to be here between 12-4; they called around 3 and said that they were running behind. DH just called them and they said that they are still running behind but they will be here as they don't quit until all is delivered.

Tonight we had our cheese plate, so it was assorted crackers and breads; brie, gouda, gruyere and cheddar cheeses; a spinach salad with gouda and candied pecans; and baked apples.

Here's my really complicated baked apples recipe :rotfl:

Wicked Easy Baked Apples (serves 4...unless you are talking about my kids and then it serves 2)

4 apples, preferably Macintosh, but any baking apple will do, peeled and cut into pieces
cinnamon
pat of butter
You can add a little brown sugar if your apples are tart

Put apples into microwave safe bowl. Sprinkle with cinnamon. Top with butter. Cover and microwave for 3 minutes. Stir. If apples seem too firm, microwave a minute more. Stir again. Serve.

Tough, huh? The funny thing is that whenever I make them for guests, not only does the house smell good but everyone loves them!

ETA: Nancy, I'm glad you got to see Chris!

That's how I make baked apples!!! I love them, but always hated how long they took in the oven. Once I tried them in the microwave, I never went back!!! I hope I am not imposing here but I just thought I would add what I am having for dinner tonight.
I have a chick roast in the crock pot when it is done it will be turned into shredded beef~I have been so hungry for it that I decided to make it today.
I also am having a beer cheese fondue (I read it on a thread last night and thought I would give it a try)
I also have a pot of sauce on for tomorrows dinner.

No imposition! We love new posters!!! Keep posting and join us in our craziness!!!

My family did fondue for NYE, and it was scrumptious!!! I love a good fondue!!!

The food for book club went over really well! Surprisingly, they all loved the hoppin' John. DH did too! He was thrilled I'd made a huge pot of it! He's been eating it for lunch since then. The hummingbird cake was a huge hit, as well!

Last night I'm not sure what was for dinner. I got hit with something right after my bowling league. I crawled into bed around 3:00 and don't remember anything else after that. I do remember waking up once at 10:00, and again at 3:00 this morning. Guess whatever it was worked it's way out of my system since I feel just fine today. Ever since my gastric bypass surgery, this is what happens when I get the flu or some other stomach bug. Since I don't really have a "real" stomach anymore, I just literally pass out until the bug goes away!

Tonight I'm making macaroni and cheese for the kids with chicken nuggets on the side. DH and I are going to see Sweeney Todd and go out to dinner! Actually, we'll be eating our dinner in the movie theater. I love being able to order my favorite Mexican food and take it in the movie with me!

Glynis - so glad it worked it's way out so quickly! We talked about seeing Sweeney Todd tonight at our favorite Movie Grill but I wasn't sure about eating and watching it at the same time. Heard it was gory. We farted around too long and missed the chance to go tonight anyways so I'd love to hear your review.

Yeah, but I'm bad and serve this as a side dish for dinner, not for dessert, so the ice cream is out. My kids would think I was awesome if I ever included ice cream as part of dinner though.

Oh, and dinner tonight was not lamb chops. I didn't want to go to the store, so Caili had grilled cheese (Liam is with Becky to avoid the rink tomorrow), and I was going to have Indian food, but it smelled terrible, so I just had naan. It's okay. I wasn't hungry anyway, since I had a huge bagel sandwich after Caili's skating.

Y'all, I feel terribly guilty about something and need to just get it out.

I know I'm doing the right thing, but it still sucks.

We have quite a bit of consumer debt, DH got every card offered to him when he turned 18 and racked up tons and we had to charge some of my medical bills when I was first dx (while I was in grad school). We are really trying hard to pay it off and making good headway. I am more committed to the cause then DH, mainly because I want a baby and we need to pay off a little more to make room for that =) Baby bug hasn't bitten him yet.

We don't exchange Christmas gifts. We rarely have $ budgeted so we just do stockings and go on. No biggie. This year, at his parent's Christmas morning, I got a golf set from "santa" which was from him. I was excited as I want to learn the sport, and more excited that he saved his fun money and bought it for me as a surprise. We budget in fun money each month for each of us.

They accidently sent the wrong set so he shipped it back in order to exchange it.

In the meantime, I asked him one night how he got around me noticing the debit in the checking acct. He said he charged it. I asked if he just put aside money to pay more on that card this month and he said no.

I didn't wnat to hurt his feelings, but honestly - is it really a gift if you charge something and expect your spouse to help pay it off 10x over (since you're carrying a large balance?). The card he put it on is not one we're aggressively paying off right now so it really will sit for awhile.

My gift no longer felt like a gift. It was an obligation.

I playfully asked why he didn't save his fun money and he told me he spent all that on golf. How ironic?!

In the meantime, the replacement set has been delivered to his parents (they got the first set to keep it for him until Christmas so the company shipped it to the same place). We have plans to see them later this month and will get it. I told him last night that I had been thinking... that maybe we should return that set until we can pay cash. It's not expensive, we can budget for it, but I didn't want anything else put on a credit card. I didn't go into the whole 'it's not a gift' because I knew it would hurt his feelings.

He was hurt, but offered to email his sister who was going to order the same set anyways. She is going to buy them from us so we don't lose $ on shipping costs or restocking fees.

I know he's upset, and now his sister thinks I'm a ***** for returning his gift. I don't want to be a ***** but honestly, this type of spending is what got him (now us) into trouble. It would have meant so much more to me to know he gave up a few rounds of golf to buy me something. Flipping out a credit card and charging it isn't meaningful to me.

The deed has been done and we're selling them. But I still feel guilty for doing the responsible thing. Please agree with me and tell me it'll be alright ;)

Aimee, I am sorry you are having a rough time...I am not great at giving advice, just a shoulder to cry on and support. I will just say that I am better at saving and budgeting than Tom. I am not sure if its a man thing, but at times I find Tom does not think of the big picture with spending and using the credit cards.

Yes this is soon, yes it is quick, but I am so happy for them. It makes me TRIPLE glad I talked to Kevin the other night and worked everything out. Know what I mean?

Anyway, I am WIDE awake now with no plans of going back to bed. I honestly don't know how Scott is sleeping right no after me squealing, crying, and slinging snot and such.

I will know more details tomorrow. Plus she said she'd call me tomorrow evening. We already made plans for her to come over Tuesday (she's off and it's Scott's monthly Geek meeting). I can't wait to see her!! She has truly become my best friend :)
