Hi everyone! It's been a while since I've posted here. Been super busy lately with Christmas shopping and DS's birthday party Saturday. I made him a surfboard cake. I'll post a picture later, when I'm on the other computer.

Last night we just had grilled ham and muenster cheese sandwiches for dinner.

Tonight I'm making mini penne in (white) clam sauce. I think we'll have peas for a veggie.

Well, I changed my menu tonight to make the Le Cellier Cheddar Cheese Soup...Andrew has been asking for it so I caved it. To hell with the diet till after Xmas!!!

I need help girls, cuz I cannot make a creamy soup to save my life. The milk separates like. It tasted very good but Tom was a little skeeved (sp) and only ate half of his protion. What am I doing wrong? Am I bringing it to to high of heat or something???

I may make the french toast tomorrow or maybe a new chicken recipe for the crockpot. We are probably having a friend of A's for dinner so I am not sure what he will eat...I don't think he is too picky.

I have a night alone, well, with the four legged babies. Tom and A went to see the Will Smith movie. I had no interest.

Lauren Have the heat on low. Did you scald the milk first?

Tonight we had pork chops, mac and cheese and apple sauce. Yes I know not balanced but it tasted good.

Janice I don't know about balanced, but your meal sounds yummy. And FYI, here in the South, mac and cheese is considered a vegetable. ;)

Sheryl Your daughter is absolutely beautiful! I'm sure you have many reasons to be proud of her, yesterday was one of the many. She looks so happy to be finished with school. What is she going to do with her time now? :laughing:

Lauren from what I've heard, be glad you didn't go to the Will Smith movie. If your TOM makes you weepy (like mine does - TMI, I know) it wouldn't be a good idea. Kind of like me reading The Notebook while pregnant. Very bad idea.

Laura I hope you defrosted from the time at the ice rink. The corn chowder sounds wonderful. I used to make a shrimp and corn chowder, but I don't anymore since I am the only one who likes it.

Stephanie I got your card. Thank you. It is on our mantle with the other WFD cards. They make me smile every time I walk into the den.


Tonight's dinner was the leftover baked spaghetti. Tomorrow will be takeout of some kind. Our dishwasher died last night - the mechanical one, not Kenny. After one night of hand washing dishes, Kenny went first thing this morning to buy a replacement. They hope to deliver it either tomorrow or Wednesday. Until then it'll be takeout since I don't know how to cook without messing up a million dishes.

Sometimes, if your milk boils, it will separate, and have kind of a curdled appearance. Keep the heat on low, or med-low, and stir it constantly. Just let come to a simmer.

Sorry about the blurry picture. It was a yellow cake - 15" long, 5.5" wide and 3.5" tall. My step-dad thought it was an upside-down boat. :rolleyes: DS's bday is actually this Wednesday.

Hey all! Glad to hear that the cards are making it! I don't even think I bothered posting this weekend. This was my weekend to work at the pharmacy, so DH is in charge of meals. Mexican restaurant Sat. and chili last night. Tonight was a frozen pizza. DS is coming down with some respiratory junk and we're dealing with some family drama right now (luckily not anyone under my roof, but tough none the less) To take up the slack from my less than stellar meals, DD and I did make chocolate covered pretzels tonight for Santa! So much fun making the kitchen a disaster with a 4 year old!

Thanks for all the compliments on my pretty & smart daughter! (yeah I'm gloating! )

But seriously, I don't know how Bob & I turned out with a child like that?! Since the Good Lord decided to bless us with just one, he must have decided to throw some extra looks & smarts into our Gene Pool!!! :laughing:

Gretchen, Our DD has really changed in the little bit of time since she finished classes! She's seems to be her old self again! Pleasant, charming not the stressed out grouch she had become! Her Dad has told her a while back that he missed his "old" girl & she replied "Yeah I miss me too!" So I think she's going to really enjoy her free evenings, weekends & NO tests!!!;)

Lauren, I have trouble with cream soups seperating also! I try to be really careful to not let it boil. I think I tend to cook them for too long while adjusting the taste.

I have to cook something easy tonight but with vegetables! We are really feeling it, with our pick up & take out schedule lately!

But first I've got to run to the new doctor this morning. Feeling mostly better, but I'm gonna change dr. anyway. Then I've got to head again to ToysRus, Alexis has decided ( at the last minute) that Santa is bringing her a Princess Vanity & all the stores have been out!

Also have to go get some sample paint for the den wall. Mario will be coming back tomorrow to sheetrock that wall.

I've been having trouble getting on the boards for the past couple days so my photos are backing up! Here are some pictures.

Saturday we had linguini with cod tomatoes, olives and capers:

Sunday there was a bunch of stuff. Ribs cooked for seven hours in a slow cooker with barbeque sauce. I did not eat these but DH said they were good, falling off the bone:

Last night, I made stuffed pasta shells with tomato sauce, garlic croissant knots, and a salad. I have photos but don't have them up yet.

Tonight I am doing some experimenting with appetizer type stuff in anticipation of some upcoming gatherings. The theme is "food on a stick". I'll take pictures for you!

Tonight we're grilling hamburgers - I'm stuffing mine with blue cheese. He usually turns his nose up to stuffing his with anything so it'll probably be plain. I think I'll just make some good ol' boxed Velveeta Shells and Cheese. I love that stuff.

I'm still feeling a little pukey, so I may not be eating. We'll see. It seems to get worse as the day goes on... strange. I am supposed to go to one of my kid's concerts tonight but we'll see how I feel at 730.

Thanks for all the info on creamed soups. I guess I cooked it too high. Yeah Janice, I did scald the milk...maybe I did that wrong too. :confused3 It sure did taste good though.

Tell me I'm being a brat and to shut up and move on.

My SIL is hosting our mini family Christmas party on Sat. MIL likes for our immediate family to get together to exchange gifts, and since SIL has 3 kids - it's at her house. This year, she kept consulting me on main course options and then decided on a ham.

So I get this email informing me that I need to bring rolls and baked beans. We live an hour away, so the rolls are going to be cold. Would make sense for her to throw in a can of rolls right before everyone arrives... I hate baked beans, and have never made them, but I guess I'll find a crockpot recipe so they'll stay warm.

I dunno. When I host people and we're all bringing food, I ASK them what they would like to bring or ASK what their "specialities" are. I have 3-4 "pot luck" recipes that are tried and true that I am always asked to bring. Seems weird to just create this menu and assign it without asking. She is having fruit salad (blech), corn casserole, potato salad, and baked beans (blech). Sounds lacking to me but what do I know...

It just rubbed me the wrong way. I know, I should be gracious and shut up about it. She is doing the ham - which is pricey - so I'll drop it.

But I won't be happy about it. =)

BTW - anyone have a kick *** baked beans recipe?

I posted a rootbeer baked bean recipe that I thought was good not Kick *** but good. I remember when we were visiting some friends in Memphis someone had put meat in theirs and that was really good.
I think there are as many recipes for beans as there is for bbq (sauces or dry rub)

Tonight we are eating more healthy kindof. Baked tilipia salad and corn bread. Yes I know but I was looking for some peanut butter in my pantry and thought corn bread sounded really good. Craving time I guess.

Dinner tonight is creamy chicken stew! I have been cold all day, and I'm hoping that this will warm me up.

If I have any energy left over after dinner, I'll wrap some more presents and make some more peanut brittle. I still have molasses cookies I need to make, too. Where is all my free time going???

Lauren -- I add the cream or milk to my soups as the last step, then I just heat it through, but don't let it come to a boil.

Sheryl -- Your daughter is beautiful! She looks so content and relaxed in the pictures, so hopefully, she will be a little more stress-free now that her classes are completed.

Becky will be jealous because I had Nantucket bay scallops for dinner. I quick-sauteed them, served them over a spring salad and made a white wine/butter sauce that had shallots and tomatoes in it. It was really good. For sides, I made gruyere potato pancakes and roasted cauliflower. I also made baked cod for the kids.

Aimee- I don't think you are a brat. I don't like to be told what to bring for dinner either, I like to at least offer some items and then let the hostess choose. Oh well. As with most things I make I don't have a recipe. I tend to open my cabinets and go from there, but I always start with bacon and onions. If I was making beans to go with ham I would start there, then scramble hamburg (or ground turkey) and crushed pineapple. I also toss in brown sugar, ground dry mustard and depending on the mood I am in some molasses or maple syrup. Maybe a pinch of nutmeg or cinnamon in this one.

This version is a big hit even though the ingredients don't sound like they mesh together.

Sheryl- I think your DD is stunning! Very easy to see why you and Bob are so proud. You are blessed to have those lovely girls in your life.

Laura- Becky is not the only on to be jealous!

Glynis- free time????? I do not see how you find time to sleep never mind have any free time!

I have been stalking the mailman lately to see those Christmas cards. It's a good thing I am alone a good portion of the day becasue if anyone saw me opening them up so many times I would be committed!

Well it occurred to me yesterday that Christmas is right around the corner and I am nowhere near ready! I spent yesterday trapped behind my iron because my pile got so high that it fell over and when I picked it up and moved it Buddy tripped over it. I did not get done until 7:30 last night! Today I need to clean the house and figure out what I need for some cookies tomorrow. Then Kady is supposed to bring a friend home after school to make gingerbread houses and Friday is shopping for groceries for Christmas dinner, which I have not planned, and dinner that evening with Buddy's cousin. She has been dating a nice young man for over a year and we really have not met him. I have but not Buddy, so I did nto have the heart to tell her that I cannot manage it this week. We are leaving early Saturday morning for NYC and will be gone until late SUnday night so this I think I may be in trouble.

I need some help for Christmas dinner. I am having dinner for 14 people. I want to start with French Onion soup but I do not have the little soup things to pop under the broiler and I really do not want to buy them. If I try to stuff more stuff in this house my DH is going to have a stroke!

If I make the soup and serve it with croûtons and freshly grated Parmesan cheese, do you think it will be okay?

So far the menu is:
Starter: French Onion Soup, Rolls and butter

Roast Prime Rib (I am making a boneless one)
Prosciutto Roast Pork
Greek Roasted Potatoes
Green Beans Almondine (sp)
Corn (of course)
Green Salad

My timing is never good so I am serving the salad with dinner. I know I need some appetizers and dessert, I haven't gotten there yet.

Hi All!

Aimee, I do not have a recipe for baked beans but my ex-SIL always made Calico Beans and they were awesome. There are alot of recipes if you google. Nancy's sound awesome too.

Nancy, I think you will be fine with the soup...maybe a shredded cheese would work too.

Its my birthday today!!! :cool1: I am now 37 but don't feel a day over 36!!!

Laura - I'm with Nancy, Becky isn't the only one jealous. We had take out wings last night which I had to reheat in the oven. The only one of us who really enjoyed dinner last night was DS and he is at the stage when he will eat anything not nailed down. He had about 20 wings and a HUGE piece of the derby pie my sister made with some vanilla ice cream on the side.

Stephanie - I hope today finds everyone at your house feeling better.

Sheryl - I'm sure your daughter is a different person now. It's hard to be nice when you are under that much stress. I know all of you are relieved to have her back to normal.

Glynis - If you find any free time, let me know. I've been wondering for years where I left mine. ;)

Kathy - I've been thinking about you. I hope you are doing well with the holidays coming up. :hug:

Aimee - I don't think you're being bratty, but DH's family does things the same way so I'm sort of used to it. I figure I'll just do my best on what I'm assigned and if they don't like it they won't ask me to make it again.

Tonight's dinner is southern comfort food. Chicken fried steak with gravy, rice, and butter beans. With my sister's derby pie for dessert.

Rick's sick (of course!) so we had Chinese take out soups and eggrolls last night. I got him a whole bottle of that red chili hot sauce stuff he loves for Christmas. I figured I'd burn the cough out of him! But no, he coughed and hacked all night-:headache: sooooo, now I'm trying to figure out how to Nanatize his food. I can't wait for a king size bed.:rolleyes1 Blessed sleep..........

So I have 1 present left to finish (monogramming towel sets) and wrap and everything's ready to ship. I'm doing our trip shirts while I'm here and then finish packing. Tonight'll probably be take out soup again so I don't have to dirty dishes.

And for the record I am one of those crazy people that like to cook at Disney (I would cram myself into the dishwasher if I could fit) so Christmas dinner is at home in the Villa.Rick requests it every year.

Shrimp Cocktail
Salmon patties
Creamed peas with Holland onions
Macaroni and Cheese

Leftover salmon patties will be reheated 26th am and made into eggs "salmon"-dict. I even remembered the hollandaise sauce mix this year!:rotfl:

If I don't get back on here beforehand- :santa: I wish every single one of you a Merry Christmas. And in this age of PC awareness- If you don't celebrate Christmas have a great freakin' day anyway!:goodvibes I appreciate all of ya'll more than you know.

Nancy - that recipe sounds yummy! I'll do some googling to see what I come up with (in all my spare time...) and then just improvise from there. I figure if it has bacon in it, how bad can it be? Maybe I'll even eat it!

Tonight's dinner is at church. It's our church wide Christmas dinner. They usually have turkey or ham, and traditional sides, so we'll eat whatever they have.

Aimee, I have a killer bean recipe, but I have to wait to get home to post it. If I forget, pm me!

Nancy, I really think the flavor of the gruyere makes onion soup. Can I give you another suggestion? Slice the baguette that you are going to put in the soup bowls, top them with heaps of gruyere, then run the toasts under the broiler until the cheese is nice and melted. Use a spatula to transfer the cheesy toast to your soup bowls.

Here are the foods on a stick I made last night:

There are chinese five-spice sesame chicken skewers with mango dipping sauce, spedini (I let the cheese melt too much but oh well!), with lemon caper sauce, parmesean chicken skewers with honey mustard dipping sauce, dates stuffed with chunks of parmesean and wrapped in bacon, and rare seared tenderloin with balsamic onion jam. It was all good, the dates were my favorite, and the beef was DH's. We have a good amount of chicken leftover. I might make chicken parmesean tonight to use up some of it.

Thanks for mentioning the dates, cause I forgot to add:

Nancy- If you're still looking for apps ideas (that Buddy prolly won't like) I've always done figs stuffed with goat cheese wrapped with proscuitto or bacon. Any dried figs would do- cut a pocket, stuff some goat cheese in a ziploc bag cut off the end and pipe it in the pocket, wrap with a piece of bacon or proscuitto, stick on a toothpick to hold it all together. Fridge till you need them- run them under the brolier to crisp/cook.

Easy cheesy and everyone always loves them. Heck I made them once and Rick ate almost the whole platter.

Becky- I am going to do that! I knew that coming her I would get help.
One more thing- I have russets, a lot of them, I normally use Yukon Gold or Red Bliss when I make roasted potatoes but if these would work I would rather use them up. What do you think?

I forgot to post dinner as well. I have no idea what is for dinner :rotfl2:Maybe I can talk DD into picking up pizza. We have to take the F-350 to the shop, it is part of the recall. I am a little peevish, we have spent a lot of money trying to fix what Ford said was a "characteristic" of the truck, and it turns out suddenly having the engine quit is not how that truck is supposed to run :confused3

I need some help for Christmas dinner. I am having dinner for 14 people. I want to start with French Onion soup but I do not have the little soup things to pop under the broiler and I really do not want to buy them. If I try to stuff more stuff in this house my DH is going to have a stroke!

If I make the soup and serve it with croûtons and freshly grated Parmesan cheese, do you think it will be okay?

So far the menu is:
Starter: French Onion Soup, Rolls and butter

Roast Prime Rib (I am making a boneless one)
Prosciutto Roast Pork
Greek Roasted Potatoes
Green Beans Almondine (sp)
Corn (of course)
Green Salad

My timing is never good so I am serving the salad with dinner. I know I need some appetizers and dessert, I haven't gotten there yet.

It all sounds good to me. I'm not a French onion soup fan, so I'm probably not the best person to give advice. Can I have the recipe for the Greek roasted potatoes???

Aimee, I do not have a recipe for baked beans but my ex-SIL always made Calico Beans and they were awesome. There are alot of recipes if you google. Nancy's sound awesome too.

Nancy, I think you will be fine with the soup...maybe a shredded cheese would work too.

Nancy, your dinner sounds fabulous! The soup sounds good, but I'd go with some shredded mozz or something with the parm. Nothing says Christmas like cheesy goodness!

Rick's sick (of course!) so we had Chinese take out soups and eggrolls last night. I got him a whole bottle of that red chili hot sauce stuff he loves for Christmas. I figured I'd burn the cough out of him! But no, he coughed and hacked all night-:headache: sooooo, now I'm trying to figure out how to Nanatize his food. I can't wait for a king size bed.:rolleyes1 Blessed sleep..........

So I have 1 present left to finish (monogramming towel sets) and wrap and everything's ready to ship. I'm doing our trip shirts while I'm here and then finish packing. Tonight'll probably be take out soup again so I don't have to dirty dishes.

And for the record I am one of those crazy people that like to cook at Disney (I would cram myself into the dishwasher if I could fit) so Christmas dinner is at home in the Villa.Rick requests it every year.

Creamed peas with Holland onions
Macaroni and Cheese

Leftover salmon patties will be reheated 26th am and made into eggs "salmon"-dict. I even remembered the hollandaise sauce mix this year!:rotfl:

Sorry I haven't posted earlier! Been a crazy day!!! I got to help with the kindergarten Christmas party, then I came home and wrapped some presents, made my molasses cookies (I think my shortening was too old, they didn't taste right), and then made some peanut brittle. I've decided to bag the rest of the cookies, and simply make some more pretzel wreaths, peanut brittle and oreo truffles for my neighbor gifts. What do y'all think? Would you be offended if that's all you got? Usually I do 3 types of cookies, the candy and a loaf of pumpkin bread. I'm just not up to it all this year. Don't know why. Time just got away from me.

Dinner tonight will be cheesy barbecue pasta with a green salad on the side.

Since we're talking Christmas recipes, I'll add mine:

sea salt (http://www.recipezaar.com/library/getentry.zsp?id=359)
fresh coarse ground black pepper (http://www.recipezaar.com/library/getentry.zsp?id=337)
Preheat oven to 440°F.
Put all the ingredients into a baking pan large enough to hold them.
Season generously with sea salt and black pepper.
Make sure your hands are very clean and put them in the pan and give everything a toss to distribute.
The garlic will drop into the water/oil solution but its flavour will permeate the potatoes, and this way, it won't burn.
Bake for 40 minutes.
When a nice golden-brown crust has formed on the potatoes, give them a stir to bring the white underside up, season lightly with a bit more sea salt and pepper and just a light sprinkling of oregano.
Add 1/2 cup more water if pan appears to be getting dry, and pop back into oven to brown other side of potatoes.
This will take about another 40 minutes.
Do not be afraid of overcooking the potatoes- they will be delicious.
Note: I often melt a boullion cube in the water; if you do, make sure to cut back some on the salt.

Well it occurred to me yesterday that Christmas is right around the corner and I am nowhere near ready!

I feel that way too. I am not even finished shopping for the kids, let alone anyone else. I haven't completed any cookies (I have some baked but not decorated and another with the dough made but not baked), and my house is a disaster, which I refuse to clean until I am done with the cookies. I usually make around 300-400 cookies, about 10 different types. I am really in trouble!

I think russet potatoes would be fine for your recipe. My mom made that recipe for her and my dad a lot at one time, and they really enjoyed it. I think she used russet potatoes.

What a day! Seemed like it was never going to end. Dinner tonight was nuked chicken nuggets and fries. How exciting--but in my defense I worked 8 hrs today, had to hit the grocery store afterward, and then bake cookies for DD's class party tomorrow (and DH is out of town)

Well, the baked beans may wait until Christmas Day. DH's grandfather passed away this afternoon, sorta suddenly. We had plans to go on Friday (he took off) and I regret he never got to see him alive one last time.

They may do the funeral on Sat, and cancel the big family Christmas on Christmas Day that is held at his grandparents house, which means we'll just go to his parent's and do what we were going to do at his sister's on Sat. Clear as mud?

All that to say - everything is in limbo until they meet with the funeral director in the morning.

A death in the family at Christmas is always so hard... I lost a grandmother about 10 years ago around Christmas. I'm sorry his family - esp his grandmother - is going through it. He was a nice, kind man who was so very loved.

Tonight's dinner was at church and they surprised us all and made curry chicken over rice. Not very Christmasy but how many times can you eat ham and green bean casserole? Decent change of pace, though DH turned his nose up and just ate salad. His loss.

Today is my daughter Megan's 18th birthday!!!:scared1: How the heck did THAT happen???? She and I hung out yesterday, went to Olive Garden for lunch (I had that sinful Fettucini Alfredo) and then we went to the mall and she got the cartilage in her ear pierced. ICK!

Tonight we are ordering in.... Texas Roadhouse (ds is allergic to peanuts so we can't go there and eat- he will have Burger King) and then we will have birthday cake. It's hard to believe that next year she will be at college and it will just be the three of us here (4 if you count the dog). Seems like yesterday I was bringing my little baby home on December 22nd. Sitting up all night beside the Christmas tree, listening to Christmas music. Unbelievable.:sad1:

Morning everyone! Just wanted to pop in and thank Lindsay again for the recipe that started it all....Ritz Parm chicken (isn't that Kitten Chicken?)

Lindsay, that recipe saved me last night. Came home with absolutely no desire to cook after trying to patiently deal with last minute errands & traffic. Kids had tests to study for (last set before end of the 9 weeks period & Christmas vacation), and I had a 7:00 meeting. I needed something quick, and the pantry / fridge was looking pretty bare. No eggs, no onions, no bell peppers, one pack of chx breasts left in the freezer....get the picture?

I remembered the kids liked your recipe, and 40 minutes later we had supper with green beans & chx Rice-a-Roni on the side. Not my best, but sure beat spending $$$$ on takeout!

No idea what's for dinner. I'll go to the store in about an hour, and see what inspiration strikes me.

Nancy - Here's the recipe for the twice baked potato casserole.

5 pounds Yukon gold potatoes (peel, cube, boil, drain well)
2 cloves minced garlic or 1 Tbs. jarred minced garlic
1 medium sweet onion, diced
2-3 Tbs. butter
2 16 oz. tubs sour cream
2 C. shredded Colby Jack cheese, divided
4 Tbs. chives
salt and pepper to taste

In skillet, saute onion and garlic in butter until tender. Mash potatoes very well with hand mixer. Mix in sour cream to desired thickness. Add 1 1/2 C. cheese, onions and garlic. Place in baking pan. Top with chives and remaining cheese. Bake at 350 degrees for 40 minutes until cheese is melted and edges are browned.

Hey y'all,

I had a car accident yesterday. I got up early & went to church with Alexis (weekly mass for her class). Then planned on a busy day to finish up my shopping. Before I even made it to the first store, I had the accident.
stopped at the yield sign looked saw no cars coming. Got almost straightened out into the middle lane & bam. I think they came out of the shopping center parking lot, but the cop ticketed me for failure to yield. He took the word of the 12 yr old in the car, as to where their car was located. She was the only person in the car who could speak English! Really ticked me off. And of course the mother & the two preteens in the car all claimed injury & was taken to hosp. by ambulance.
My neck is messed up, I went to the Urgent Care center & had x-rays, it's just whiplash, but I already had the disks problems in my neck. So I'm not feeling to great, and I'm loopy from the meds.
My car's not totaled but not drivable. Had to have it towed & get a rental. So of course none of the shopping got done.

I NEED to finish my holiday shopping! Last night I went on a quest for Pokemon stuff for Liam. I finally found a collector's tin....but when I got it home DH told me that it is the same tin I just bought for him when we were in Florida!:headache: What can I say? All that stuff looks the same to me. So, now he has two orange tins, I guess. I suppose he can trade the cards in this tin with his friends or something.

Plus, I was a complete doofus this morning and picked up another gift for Caili on a whim, which means I have to think of another gift for Liam! I am a stickler about making sure I give each kid the EXACT same number of gifts, and I try to spend the EXACT same amount of money on each. Everything has to be fair and square! When Laura and I were about 5 and 7, one of our aunts pulled Laura aside and told her she liked her the best! I thought that was so mean and I never liked that aunt after that. She's still alive, and I'm still holding a grudge! :sad2: :mad:

I also still have to get a gift for my parents, and figure out something for DH's parents....I don't know why I left everything to the last minute this year. It's not like me to do that.

I think it would be wonderful with ham. You could also try my recipe (I think it's posted) for funeral potatoes. We always serve that with ham and a green veggie.

Oh, I am so sorry!! I have had 2 accidents and both times really took me out of commission for a week or so. I hope the medications help take the edge off the backpain.

Thanks for all the kind words. Visitation will be tomorrow night, Funeral on Saturday. We are still 'negotiating' with his family about celebrating their Christmas. She wants to move it to Sunday night. I just can't take driving that much in 5 days time, so I suggested we just come a little early on Christmas and go to their house first. It's honestly not worth 2 hours in the car to open 3 presents, and we'll be with them tomorrow, Sat, and Tues.

His grandmother, who just lost her spouse, is adament that Christmas still be at her house this year. It'll be hard to be in the house and he not be in his recliner watching the grandkids opening all their presents.

Well, 30 minutes ago (at 10pm) we finally got dinner.

We had planned to go out to dinner - Logans, for a steak. But I forgot that I told my g-uncle he could come over tonight to work through some art he is storing in our spare bedroom. He called at 6pm to make sure he could still come and I of course said yes.

At 10pm, he was still up there. He just left, 5 minutes ago.

At 930 I convinced DH to go get fast food - ANYTHING - because I was hungry!

All that to say - we had fast food tex mex for a place up the street. Tostados, burritos, tacos. Not as good as steak but good.

Dinner tonight was grinders that DH picked up.

I got a lot of cookies made, although not as many as I would have liked. I have no idea why I thought that today would be a good day for Kady to bring her friend home to make gingerbread houses. They really needed to get harnessed in because they had been couped up all day on school. Then my niece delivered the candles we ordered and stayed for coffee. I love her but that was another hour lost to cookies!

Laura- I tried another substitute for egg today and finally I had a winner! I used 1 tablespoon of soy powder and 1 tablespoon of water for each egg and it worked perfectly. I still need to use Crisco for the fat because Kady cannot have margarine either but chocolate chip cookies finally resembled cookies. I also made snicker doodles for her but I'm not sure that that cookie is a good one to use Crisco in. It really needs the butter, but who knows? Kady has not had butter for about 9 months so she may like them.

Morning all! I finally got to sleep in this morning--till all of 7:15! No outside work today, gifts are wrapped, parties are done---what will I do with my free time. Need to bake up some more cookies, I suppose. WFD tonight will be whatever my parents order in, which will more than likely be pizza. We are heading to their house so they can watch the kidlets while DH and I have a "date". Yeah, right, date--we are helping Santa with some last minute items. DD informs me in the line at the grocery store the other day that Santa is bringing her an Aurora Doll--um, yeah, so Santa had NO idea about that one. If I can't find one, she might get an IOU to pick out one in WDW in a few weeks!

Becky - I hear you on the favoritism thing. Our grandmother was like that. She preferred my aunt's children and it was pretty obvious on Christmas. However, the most glaring example was in her home. My aunt's children's pictures were in her living room, with them ranging in age from about 2 to college. The pictures of my siblings and me were in her spare bedroom and were 10 to 15 years old. :rotfl: :rotfl: We weren't too wild about her either.

Lauren - I haven't received your card yet, but my mail is really really slow.

I managed to ship out the boxes to Lindsay and Sheryl yesterday. They should arrive by FedEx on Monday.

I realized this afternoon that while I was very good about counting under the tree presents, I was not good about stockings to the point that I hardly got anything for Liam's! He has 3 presents and Caili has at least 15. Ugh. I am hitting the stores tomorrow.

As for my cookie baking, I decided to scale back a bit this year because I don't really have a lot of plates to make up, which means most of the cookies are either going to my family's houses or staying at mine. I have three more kinds to make (I've done 4) and then that's it.

Dinner last night was linguine and clams, garlic bread and salad. Tonight I am making cheese soup...but I have to get off the DIS first!

I think I am done with christmas shopping for expect for 2 things and I know exactly what I what and where to go. I went for power shopping after work since I had nothing for Alex's stocking :confused3 or anything from Santa. I decided that having Santa give him socks or underwear was just plain weird. So the kid gets more pokemon cards from Santa.:santa:

Tonight we are having sloppy joes, corn and salad. I am beat so maybe an early night for me.

The Romance of the Smitten Kittens

The SKs came over last night and had dinner with us. Whew boy, those two make me a nervous wreck, and I think it's mostly my BILs doing. For starters, and this wasn't the first time they've done this, they hold hands while we eat dinner. For some reason, I think that's nuts. Robin always sits at the same place at our table and she always ends up having to eat left-handed, which she isn't. She doesn't complain, of course, but let the poor girl eat her food!!!

Then, out of the clear blue sky, they will just start kissing. Not a peck here and a peck there, but serious kissing. After we got back from the movies last night we watched a few episodes of Scrubs (trust me, after you see Sweeney Todd, you will be coming home and popping in your Cinderellla DVD. It's pretty gruesome). We would pause it to point out something in the episode, a comment we'd heard on a commentary, or just to recover from laughing. After which, yes, they would have to smooch. I looked at Scott at one point and said, "You need a book, or something?" And we all laughed. Truly, it's really making us a bit uncomfortable.

I'm not one to promote or condone premarital sex, but I wish they would hurry up and do it and let out some of those hormones that are raging. Alas, that isn't going to happen. Robin called and talked to me last week and she mentioned Kevin told her, "Didn't before the wife, and not until I get married again." She was a little bummed, but she said it wasn't a deal breaker.

As much as I love them both, for the next 2 or 3 weeks we are going to let them come to us. If they want to come over or go out and do something we are going to let them ask. Strangely, they don't act this way in public. We are getting together a few more times this month. She is coming over to my ILs on Christmas Eve to celebrate with them. They are both coming over on New Year's Eve to ring in the new year with us and open our Christmas gifts from each other. On New Year's Day, we are gong to go out to eat and go see "National Treasure 2."

Other than that, we are going to let them cool off for just a few weeks. It's getting exhausted being around them, LOL! My husband and I were very much in love when we were dating, too, but we kept it together when we were around other people. I, for one, never wanted to make anyone feel uncomfortable.

Good morning! WOW it is really foggy here it is a balmy 39 degree here.

This afternoon we are going my favorite Greek restaurant so maybe tonight we will just eat light.

I'm waiting for the last of my deliveries, I think I may have over bought:confused3. Oh well it's christmas and I paid cash so no bills to worry about thank goodness.

I forgot to mention yesterday at work, my coworkers were very generous. We received gift cards to the theater, a couple of bottles of wine, too many other things to list.

Lindsay I agree a stolen kiss here and there is one thing but :eek:. What they are doing could be considered sex by some.

Hope everyone has a good day I have lots to do including cleaning rugs and the entire house :scared1:

Lindsay, I have to say, if anyone was being that affectionate in front of me, I would flat out tell them to stop. Not the hand holding, but the making out stuff. You guys are close friends, there is no reason not to be honest with them. So what if it makes them uncomfortable? They are making YOU uncomfortable! I am sure they have other places they can be intimate with each other. I don't get why anyone would want to be that amorous in front of someone else....it seems kind of, well...icky to me.

Last night I made pizza. We were starving and scarfed almost the whole thing! No pictures. We also watched our favorite Christmas movie, Holiday Inn. I LOVE that movie (except for the Lincoln's birthday sequence...speaking of icky. We always fast forward over that scene.)

I FINALLY finished my Christmas shopping last night. I am so psyched because I snagged a wii for DH yesterday. They've been hard to find around here. I'm really happy with my gifts for Liam and Caili too. I have tons of pokemon for Liam, plus a starfinding guide and a telescope and for Caili I have a big wood pink castle with wood people and a beaded pink jewelry box that I filled up with pink glittery hair stuff and some jewelry. She likes dress up and I figured she could use the hair stuff when she is ice skating. So, today I am wrapping everything and then making dinner. Laura and the kids are coming over and spending the night. I was thinking of making fish chowder, but Laura had soup last night so I am going to revise the menu. I might make a braised chicken with olives, or else baked haddock.

Wow, what a lazy day my family is having. We all slept it a bit, well, I do not sleep late but was kinda lounging. Riley had me up at 6.

I am still in my PJs and getting started around here. I want to start baking today. I am only making peanut blossoms, toll house bars and those pretzels with the hershey kiss on top then garnished with an M&M and then sugared almonds (in the crockpot). I really wanted to make Janice's potato chip cookies but I am running out of time here.

We are going out to eat tonight...prolly TGI Fridays or something of the sort.

After consuming so many yummy martinis while we were in Disney, DH & I started last weekend having "Martini night". Last week we had Oprah's pomegranate martinis which were amazing. Tonight we're having "Electric martinis", with blue curacao, skyy vodka and sweet & sour mix. Along with the martinis we're having King Crab Legs and a pasta salad.

Becky - Congrats on the Wii. My sister went on a desparate search for one after her lovely daughter told Santa she wanted one last week. That was the first she had mentioned it so my sister almost had a heart attack. She spent several mornings standing outside the game store 1.5 hours before opening to be the first in line for the shipment. She was successful yesterday, and the store employee wrapped the package so no one could see what it was and walked her to her car. I guess the store has had problems with customers fighting over them. :confused3 I don't understand. I mean, they aren't shoes or anything. :goodvibes

I know I've missed a lot of you, and I'm sorry, but I have to run. I need to make two pecan pies to take to Kenny's Mom's house for dinner tomorrow.

The funeral today was really nice, one of the nicest I've been to actually.

Tonight we went out for mexican food while running errands. I had loaded nachos and they were fine, but not as good as Taco Bueno mexi dips and chips ;)

Good windy morning everyone! Last night around 2am I was awaked by pouring rain so heavy I went into the basement to check MR sump pump (he was doing his job well I might add)Temps were still in the high 40's Now it's extremely windy and in the high teen's. Kathy put the coffee on I'm going south were it's warm.


Last night pizza making was messy but really good. It's been awhile since I've made the sauce and dough from scratch. Alex and I were really stuffed.

I have no idea about tonights dinner probably beef stew in the crock pot.

Eventally I'll have to go out and get the rolls I forgot for Christmas dinner unless I get inspired and make from scratch.:idea:

Aimee - Glad the funeral went well. I think any funeral that leaves family and friends with a since of closure and good feelings about the deceased is a good one. I've been to bad ones as well.

Kathy and Nancy - I've been thinking a lot about the two of you and hope you are doing ok. Each time my mother has driven me crazy this week I have taken a deep breath and thought of you and reminded myself how fortunate I am. Tonight's dinner is with Kenny's family at his Mom's house. I'm making the mac and cheese and pecan pies. We'll open presents with them tonight, so the kids are going to be bouncing off the walls.

Dinner tonight.... I can't decide if I should do breakfast for dinner and do a french toast and sausage (have you seen that thread??? Makes me salivate whenever I look at it) or do teriyaki chicken and rice.... Maybe I'll do the chicken since dh cleaned off the deck and we can get to the grill again....

We never made it out yesterday so we had frozen pizza. Today we are going to Fridays for lunch and I have a flank steak marinating. I will prolly just have that and a tossed salad.

Did I tell you guys my sis requested my london broil for Xmas? I'll be stuck at the grill for a while.

Hi, everyone! Sorry I've been missing the past few days! Things got really hectic!

Thursday was the kid's last day of school, and Alan and I went to their annual Christmas sing program. It was cute, but because we have kindergartners, a second grader and a fifth grader, it meant we couldn't really sneak out. Oh well, it was only an hour. After that, I had to run to the store. Last chance to buy for Santa without the children suspecting anything.

Friday was quite nice! The kids all slept in. I did too! I didn't wake up until 6:00, so I felt quite good!!! The kids spent the morning cleaning their rooms, since it was too stormy to do anything outside. We got hit with the "storm of the season", and there was very little visibility! We live right next to a mountain, so we get all storms a little worse than those who live in the valley. Oh well, it was pretty to look at! Katie was thrilled since she specifically ordered a white Christmas. I spent the time making molasses cookies, and cranberry chip cookies. Then I made up neighbor plates, and when the storm decided to take a break, we delivered some of them. Alan and I then decided to have a date (I love having a child old enough to babysit the others!!!) We went to see National Treasure 2. It was a fun movie, but I liked the first one better. They have totally set it up for a third, though, so we'll see about that!!! After the movie we went to McGrath's Fish House for dinner. Alan and I split the crab and artichoke dip appetizer, and he had the Ahi tuna salad, and I had coconut prawns! So yummy!!!!! We rarely go out for seafood, so this was a real treat!!!

Saturday dawned bright and early. Alan sent me off on some last minute things while he mustered the troops and they cleaned the house from top to bottom. Well, at least that was the intent. Actually, they did get all the bathrooms cleaned, and the playroom. I'll take care of the kitchen tomorrow, and all should be well. By the afternoon, the kids were going stir crazy, so Alan took them sledding and I wrapped presents. I only have about 6 more to wrap and then I'll be done. I did get all the stocking stuffers divided to make tomorrow night easier. When they got home, I knew right away that something was not right with the twins. Both girls were burning with fever. Some children's Tylenol worked wonders for Mary, but Leslie was really quite sick. She spent the night feverish and vomiting. I'm glad it happened now, though, as she usually saves this kind of thing for a holiday! Katie complained of a sore throat, too, so all the girls were kind of under the weather.

This morning, however, things are much better. Mary is completely fine, Leslie's fever is a lot lower, and she's not throwing up anymore. Katie says her throat is "much better than yesterday." Hopefully, by tomorrow, they'll all be up to scratch.

Dinner tonight is Slow Cooker Curry. It's a recipe I got from a Kraft magazine last year, and it is a family favorite. The ingredients are kind of weird, but they combine to make a very passable curry. I just need to cook the rice and we'll be good to go.

I probably won't be on until Tuesday afternoon. Alan has to go to work after the present opening, and I know the kids will be occupied with their new loot, so I'll check in then.

No cold weather here, it was 80 and sunny today. DS and I went out and finished our last minute shopping and I was surprised at how light the traffic was. I was worried we'd spend all day on the roads trying to get places, but it turned out to be a very pleasant trip.

I finally made some Christmas cookies tonight. However, I lost my peanut butter blossom recipe and had to use the one on the back of the Hershey Kiss bag. They turned out very dry and crumbly. I thought maybe I baked them a little too long, so the next batch I baked for a lot less time and they still came out bad. Gotta find that old recipe.

Dinner tonight was Asian marinated grilled pork chops, rice, broccoli and egg rolls.

Hey Y'all,

Sorry I haven't checked in lately. So busy trying to get everything done. Shopping, wrapping, decorating, cooking, putting together a Princess vanity! whew, I should be sleepy, but while we were out shopping we hit Starbucks & the coffee stand at World Market!

The ent. center came in & looks wonderful. I'll try to post some pics soon. Trying to get everthing put back together in this house right now too.

My sinus infection is doing better, but the neck & back are still hurting since I backed off on the meds or else Christmas wasn't gonna happen around here!

Gretchen, I received a very nice Carolina surprise in the mail, that made me feel so much better!! And Bob was quite happy about it too!! He's really appreciating my Dis-friends lately! Thanks so much, it was really very thoughtful and sweet thing to do!!! I hope your coffee gets to you sometime soon!

I cooked my usual potroast today for Christmas day ( at Mom's house, thank goodness! ) Tomorrow I'll fix spinach artichoke casserole & dip for all the separate family gatherings. Have to make it easy as possible right now.

I wanted to wish everyone a Wonderful Christmas!

We are going to my sis and bro in laws house today. She has alot of yummy things planned for today. I will bring some cookies, chocolate pretzels and sugared almonds. Tomorrow will be at my sisters and she also has a great menu planned. I am bringing marinated flank steak...I think I mentioned that before.

The almonds I made were pretty easy and came out pretty good...they are a crockpot recipe.

I altered it a bit...

Sugared Almonds in the Crockpot

4 cups whole almonds, unblanched or mixed nuts
1 egg white
1 teaspoon water
1/3 cup granulated sugar
1/3 cup packed brown sugar
2 teaspoons cinnamon
1/2 teaspoon salt
***Extra granulated sugar during cooking if needed (see *** below)

Toast almonds in a 350 oven for 5 - 10 minutes. Stirring once so they do not burn. Place almonds in crock (I sprayed with pam).

Mix together, sugars, cinnamon and salt. Set aside.

In a med bowl, beat egg white and water with a wire wisk until frothy. Stir in sugar mix. Pour over nuts and stir gently to coat.

Cook for 4 - 4 1/2 hours. Stir midway. ***At the midway point, taste. If more sugar is needed, add a few tablespoons of granulated sugar and stir***

Spread on wax paper to cool. Store in tightly covered container in the fridge for up to 1 week.

I meant to do most of that yesterday, but yesterday morning was my last really long training run before the Disney Marathon. I was a "tad" tired afterward!

Okay, time for a quick shower, a call to Disney Dining to make some ADRs for June, and then fight the crowds at the store!

Good morning! last night I made baked mostacoli with garlilc bread. For dessert I made a peanut butter goey cake. WOW! that was really good. I even whipped cream up by hand no mixer or canned stuff. Poor Alex had no idea you could do that :rotfl2: he impresses so easy.;) Just shows you how lazy and busy i've been.

Today we will have Baked ham and potatoes and a salad.

Today is already warmer than it was all day yesterday (23 degree) with no wind. The wind yesterday was wicked 50 mile hour gusts which at times seemed back to back. I felt so sorry for all the people stuck at the airports.

Anyway have a great day everyone. I plan on spending most of the reclining on the couch.

Happy Christmas Eve!

We are going to the Christmas Eve service at 5pm - I actually have to supervise the preschool child care as my coordinator wanted to take vacation to visit her grandbaby this year. I will miss attending the service, esp since DH is playing in it, but that's my job ;)

After that, we are heading to my cousin's house to have Christmas with my mom's family. She won't be coming home this year sadly... but it'll be nice to be with her family anyways.

They are having tamales, rice, beans, chips, salsa, etc. for dinner. YUM!!

Trim off the very bottom of the sprout, just a shave worth, then cut a cross into the bottom of each sprout. Not too deep. Take off the outer leaves if they look like they need to go. Bring water to boil, add salt, then sprouts. Boil til just tender, about 8 minutes. Test for doneness by poking with skewer. Drain off well.

Meanwhile, take 2 tbsp butter and heat over med. heat, add about 1/4 cup chopped pecans and toss until toasty brown. Stir in sprouts and 1 tbsp good balsamic, toss all until hot and season with s/p to taste.

We did our tree at home this morning, then went to my Mom's (2 streets away) and did our presents there- and had a big breakfast, then we went to the inlaws to open SOME presents (not all because dh's twin brother and his family weren't there) and shortly we will go back there to open the rest of our gifts and have dinner. DFIL insists on cooking the prime rib roast medium... even though our whole family likes it rare.... he's e-coli phobic. Makes me tear up when I see him ruin that roast.

Laura - I got your card yesterday, and it just made me smile. You and your kids are gorgeous!!! I told my kids about your family, and how your husband is fighting to keep us free, and they wanted me to make sure you knew that they are adding him to their daily prayers. So, in our family prayer last night, we added a special plea for safety for Liam and Caili's daddy! I just want to thank you and your family for the sacrifice that you are making for us!

Lindsay - I got your card, yesterday as well, and it is just wonderful! You and Scott look so happy!!! I don't know how I can ever thank you enough for starting and maintaining this thread! It really is my salvation! I feel so grumpy and out of sorts until I come hear and check in with my "family".

Yesterday was a really fun day! We got up early and quickly cleaned our house for the big guy in red. Once that was done, the kids delivered neighbor gifts and presents to their friends. Then, we all piled in the car and went to MIL's house. She recently had a knee replacement, so we took her a present and visited for a while. After that, we went to IHOP for brunch. Usually, we got early in the morning for breakfast, but DH wanted to try going later. Well, that was a HUGE mistake. They were out of orange juice, bacon, and chocolate milk. We managed to pacify the kids with hot chocolate and pancakes. It was fun and we only had one spill!

When we got home, I made spinach dip, Chex mix, clam dip and cherry-pomegranate jell-o for dinner tomorrow. It was snowing by this time, so the kids bundled up (except for Leslie who was still running a fever), and they tried to build a snowman. We then made cookies for Santa and the kids had a great time decorating them. For dinner, we had Christmas present shaped pasta and meat sauce with a green salad. Then we cleared the table, and brought out the gingerbread house we had "glued" together, and the kids decorated it within an inch of its life!

Once that was done, we let the kids open their Christmas Eve presents (pj's and a new ornament). They all put them on, and we snuggled in to watch a movie together. The movie we chose was "The Nativity Story". It was SPECTACULAR!!! By the time it ended, we set out cookies and milk, and put the kids to bed. On Christmas Eve, they all sleep together in one room (makes it easy for Mom to keep prying eyes contained). I put together Peach French Toast for breakfast, and DH and I settled down to watch A Christmas Story until the kids fell asleep.

I played Santa, while Alan kept an ear open for the kids. All was well, though, and we were in bed and asleep by midnight! We woke up and did stockings and presents at 7:00 this morning, and then ate breakfast. The kids are now spending the day playing with their new toys, and munching on chips, dips and candy.

My roast is ready to go, and the potatoes are boiling for my twice baked potato casserole. I still need to do the creamed spinach and the acorn squash. I'm trying to decide whether or not to do the gingerbread trifle. We have so many plates of goodies, that I'm thinking it could be overkill. So, I'll probably save that for tomorrow or the next day.

I'm so very grateful for the friendships I've made here! You are all so very important to me, and I hope you know that I thank God for you each and every day!!!

Hi everybody! It sounds like everyone is having a great Christmas!

We were away for the weekend and had such a great time. Buddy is still in a trance from the prices in NYC, he had never been before and even though I told him how much burgers etc were he just could not help himself when he saw the menu for the first time, I thought I was going to have to pick him up off the floor! :rotfl2::rotfl2:The show was fantastic, the meal we had afterward was wonderful although again Buddy was sick at the menu prices, $10.95 for a lettuce wedge salad was more then he could stand. The dressing was outstanding, but there was not enough so he asked the server for more and I think he would have licked the dish, it was so good! Kady had some sorbet to die for, but it was nice to see her have dessert. She seldom gets it when we are out. This was one time I asked for the bill and took Buddy's glasses away, and he agreed he did not want to know, but it really was a nice treat. His heart is still racing but he will survive, I think.

I lost two days so I was behind all day yesterday, barely was ready for the early Mass and then dinner with my sister and her family.

This morning we opened out gifts and then I got dinner ready. I always get things done the day before but I really had no time so I was a little rushed. We had the prime rib and the roast pork, the Greek potatoes which were outstanding, corn that I overcooked because I forgot it and haricots verts with French fried onions. I also made the French onion soup.

Plenty of desserts that we will enjoy over the next day or so.

I want you all to know that I enjoyed the cards from all of you. They brought all of you to life even more than you are now for me and they meant a great deal. I feel blessed that I found you all and that you are part of my life. Merry Christmas to all of you.

Thanks so much, Glynis, and to your wonderful children. I will be sure to pass on your well wishes to Greg. He was wondering why I spent time on here when he was home -- not that much, really!! -- but there are so many people he doesn't even know keeping him in their thoughts and prayers. It's amazing.

We had a great Christmas. I am too tired to sort through photos now, but let's just say, the kids must have been REALLY good because Santa and Auntie Becky and Mommom and Grampy and my ILs were more than generous. It was a magical day.

Okay, here's the food rundown: for brunch with my parents, Beck, BIL and my brother we had fruit (barely, most of it is still in my fridge because everyone ate the bad stuff!); my mom's homemade cinnamon rolls; an herb, egg and cheese strata (insisted on by the boys...totally worth it to see the look of satisfaction on BIL's face); scrambled eggs with cheddar; bacon baked with brown sugar; juice; and of course, the necessary caffeine infusion provided by tea or coffee. For dinner, I made: Roast turkey, stuffing, gravy, mashed potatoes, cauliflower with gruyere cheese, maple glazed roasted carrots, cranberry sauce, and green beans with toasted almonds. I was planning to make mashed turnips with shallots, but I completely burned the shallots, so I just moved on. No big deal.

Enjoy the last few hours of Christmas, everyone, and I hope the magic and joy spreads to the few remaining days of 2007 for all of you.

Merry Christmas!!

I am so tired, thankful the day is over though I enjoyed it immensely.

We hit DH's parents at 1015 this morning, whcih meant we left the house at 915. Then went to his grandmothers house for a few hours, and lunch. THEN drove another hour to my dad's family. Then 2 hours back home.

Food was great, company was great, lots of nice things given to us.

We ate traditional ham, turkey, and sides at both spots. Last night at my cousin's house we had tamales - such a nice change!

I'd like to say I got up earlier than everone else but that's not the case here. For the first time the whole trip we stayed out late and closed down Pleasure Island tonight. I put to bed all my drunkies and am sitting on my balcony in the fog. I love it. Every single minute of it.:lmao:

I'm crazy, I know.

We had Rick's pick for dinner- salmon patties, creamed peas with onions, and Mickey mac and cheese (cause I forgot the Kraft stuff)- and there are NO PICS cause only I can ake a healthy fish and fry it in oil to make it totally unhealthy.:lmao:

And I took personal satisfaction today when my aunt (whom I despise & quit travelling home to visit because of) said she wished the family liked salmon patties- cause she missed having them......hmmm, come on down to Florida, I have plenty......;) :rotfl:

mmm. That might have been rather harsh of me......... nope.

I have thought of all of ya'll today for various reasons and I hope ya'll had a good holiday.


PS. Lindsay- thanks for the Reedy Creek story- I have medics with me and I got to regale them with your story. They found it fascinating. We're all "inquiring" like that. Thanks!

I hope that everyone is well ans healthy today, there was so much sickness here. My DH and my oldest DS are both not feeling well. Donny stayed home yesterday with my blessings. I think he got rundown with all he was doing at work and it caught up with him.

Tonight we are going to have whatever is in the fridge. I don't even want to leave the house. We have some friends coming for dinner on Thursday so I need to come up with a meal. Buddy said they mentioned chicken but I'll call tomorrow to check on likes and dislikes. They are truly stress free guests and I enjoy their company so much! She doesn't like to cook and so dinner here is always appreciated!

I do get a kick out of that! I made "Roast Beast" for our Christmas dinner last night, and when Alan got home from work, he took a sniff and said, "it smells ok, but why couldn't we have had your 'really good' roast?" Oh well, you can't win them all!

What we really ought to do is plan a WFD "retreat" somewhere where we could all gather with our families, and cook for each other! Now, that would be a dream come true!!!

I have no idea what we'll be having for dinner tonight. Probably just leftovers. I really have no desire to cook, and it looks like I'll be spending my day at the doctor's office with Leslie today. She has been running a temperature of between 100-104 for the past 4 days. It comes and it goes depending on the medication I give her, but it just won't go away!!! I'm getting really frustrated and so is she! She just doesn't feel very well! I'm starting to get concerned since she's not eating. She's drinking water all the time, so I'm not worried about dehydration, but she hasn't eaten a meal since Saturday. She has had bites of things, but not enough to my mind. I guess I'm concerned since she's such a little bit of a thing. She's 5 years old and only weighs 32 pounds. She can't afford to lose much!

We met Wendie and her family this morning. They are great! I want to adopt Ross! Wendie- when you get home and read this just know you're in for trouble....he's just like me and I was a handful!:lmao:

We're having leftovers tonight. We had a Glazed Ham, 'Ohana scalloped potatoes, broccoli & cheese, pineapple stuffing, cream cheese corn and a pumpkin crunch cake. The scalloped potatoes were the big hit - they are incredible. Has anyone made them using half & half instead of the heavy cream????

Like Nancy, I don't feel like leaving the house today, but Caili has skating this afternoon. She is already lobbying to skip it, which she has never done before, so that tells you how lazy we are all feeling today.

Dinner tonight is the leftovers from yesterday for me. I'll have to figure something else out for the kids...probably pasta.

Tonight I am making chicken enchiladas - and probably making mexican rice to go with it. I've never done more than Rice a Roni so I hope it turns out! I still have company, but it's my sister and we're both being lazy today. It's rainy and cold.

Well, lunch is turkey rice soup made last night from the leftover turkey dinner after our guests left.
Tonights dinner is fish sticks (DS' request :eek: ) and fish filets with leftover salad, rice and stuffing.
Tomorrow will be turkey and gravy, also made last night.

Ok, here are some of our favorites:

Cinnamon Raisin Chicken

1/2 C. chopped onion

3/4 tsp. ground cinnamon
1/8 tsp. pepper
1 Tbs. vegetable oil
4 boneless skinless chicken breast halves
3/4 C. orange juice
1/4 C. raisins

Ini a skillet, saute onion, garlic, cinnamon and pepper in oil until onion is tender. Add chicken; turn to coat. Cook, uncovered, for 10 minutes or until juices run clear. Add orange juice and raisins. Cook over low heat for 5-10 minutes or until heated through.


Slow Cooker Lemonade Chicken

6 boneless skinless chicken breast halves
3/4 C. lemonade concentrate
3 Tbs. ketchup
2 Tbs. brown sugar
1 Tbs. cider vinegar
2 Tbs. cornstarch
2 Tbs. cold water

Place chicken in slow cooker. Combine the lemonade, ketchup, brown sugar and vinegar; pour over chicken. Cover and cook on low for 3-5 hours or until chicken juices run clear. Remove chicken and keep warm. For gravy, combine cornstarch and water until smooth; stir into cooking juices. Cover and cook on high for 30 minutes or until thickened. Return chicken to slow cooker; heat through.


Creamy Tomato Chicken

6 boneless skinless chicken breast halves
2 Tbs. vegetable oil
1 can Italian diced tomatoes, undrained
1 can cream of chicken soup, undiluted
1/8 tsp. ground cinnamon
6 slices mozzarella cheese
Hot noodles

In a large skillet, cook chicken in oil over medium heat until juices run clear. Remove and keep warm. Combine the tomatoes, soup and cinnamon; add to the skillet. Cook and stir until heated through. Return chicken to skillet; top with cheese. Cover and heat until the cheese is melted. Serve over noodles.


Italian Pineapple Chicken

4 boneless skinless chicken breast halves
1/2 C. Italian salad dressing
2 Tbs. olive or vegetable oil
1 can sliced pineapple, drained
1/3 C. shredded Swiss Cheese, optional

Flatten chicken to 1/2-inch thickness. Pour salad dressing into a shallow bowl; dip chicken in dressing. In a large skillet, heat oil. Add chicken; cook over medium-high heat for 5-7 minutes on each side or until juices run clear. Remove and keep warm. Add pineapple slices to the skillet; cook for 30 seconds on each side or until lightly browned. Place a slice on each chicken breast half. Sprinkle with cheese, if desired.


Chicken in Creamy Gravy

4 boneless skinless chicken breast halves
1 Tbs. canola oil
1 can cream of chicken and broccoli soup, undiluted
1/4 C. fat-free milk
2 tsp. lemon juice
1/8 tsp. lemon pepper

In a skillet, cook chicken in oil until browned on both sides, about 10 minutes; drain. In a bowl, combine soup, milk, lemon juice and pepper. Pour over chicken. Reduce heat; cover and simmer until chicken juices run clear, about 5 minutes.


Tangy Almond Chicken

6 boneless skinless chicken breasts
3 Tbs. butter
1 jar currant jelly
1/2 C. prepared mustard
1/2 C. slivered, toasted almonds
3 Tbs. brown sugar
2 Tbs. lemon juice
1/2 tsp. ground cinnamon

In a large skillet, brown chicken in butter for 4 minutes on each side. Remove and keep warm. Add the remaining ingredients to the skillet. Cook and stir until jelly is melted and mixture is smooth, about 2 minutes. Bring to a boil. Return chicken to pan. Reduce heat; cover and simmer for 10-12 minutes or until chicken juices run clear.

Tomorrow we're going to the Nutcracker, so that should keep the spirit going as well.

I loved the Nutcracker! Kady liked it but she loves the music. Buddy was suffering through the ballet and then we put the story on the CD player on the way home. I did not know it was possible to cringe in so many ways :lmao::lmao::lmao:

I wanted to share that we got wonderful news on Christmas Eve. My sister heard from Timmy, which is a little unusual. He calls but between her hours and his, he ends up leaving messages. Then she is upset, but this time he reached her. He is scheduled to come home in less than two months which is earlier than we expected. he prepared her for a very long tour so this is welcome news. Please keep him in your prayers. Until he is back home we are going to worry, but now there is a light at the end on the tunnel.

Dinner tonight was chicken soup and sandwiches fore DH and sandwiches for me. DD went tot he movies with Kady so they will eat out. We also had some dessert left from yesterday. I have been eating cookies all day long :upsidedow

ETA: Not really a Smitten Kitten update, just a vent I thought I'd share. The SKs are coming over again tomorrow night. The other night I casually mentioned to Kevin that I had planned to make Boo Patties, and was that ok? He said yes but added, "No fries. It's too heavy right now." Um, ok. We've all been "fooded" to death with all the holiday food, so I can understand not wanting rich food.

I responded with, "Ok, how about just some chips and salsa/dip of some kind?" He makes a face like a child and says, "Nah, that's heavy, too." Ok, than what the crap to you serve with a burger that isn't "heavy" according to his standards?!?!?!?!? I said, " You think of something then and get back to me." He was so enchanted with Robin being by his side I don't think he got the hint that I was losing my patience with him.

***Oh, a side note. Please don't misunderstand me. It wasn't what he said, it was his attitude about it. Rather condescending, know what I mean? In another tone, and minus that disgusted look he gave me, it wouldn't have been a big deal.***

So in the spirit of making things easier on myself, and basically saying "screw it," we are going to get Subway tomorrow night. That way everyone will have exactly what they want and there won't be any complaints about my food being too rich right now. I know, I sound like I'm being bitter, but Kevin's been getting on my nerves lately.

On a positive note, it means I don't have to cook and there will be no dishes/pots and pans to worry about.

Whew, I feel better just venting about it!!! For my peace of mind, what would YOU serve with Boo patties? (it's ground turkey, grated onion, garlic, parsley, cumin, and paprika- basically a burger with some spices) If fries and chips and salsa are supposedly "too heavy" what would you suggest?

Lindsay- you are seeing too much of them. It happens all of the time, they started out as two friends dropping in to one couple feeling their way and at the same time they are both very comfortable in your home. Kind of like when college kids come home from school. Add in their need to grope in front of you and the romance is now not as much fun for you.

This is your DH brother so he is not going anywhere, but you can change the dynamics of your own kitchen. First I would ask your DH to let BIL know that the romantic sofa aerobics are getting old. Then I would not ask what anyone wants for dinner. Make what you want. If it is too heavy offer to let them take care of the salad from now on.

Make a date next Friday with your DH. Let Robin know that the two of you want to bring back a little romance of your own so you are going to dinner and a movie, maybe come home and enjoy a glass of wine together. She will understand and they can start their own tradition of spending some Friday evenings together.

It will get better, you just need to spend a little less time together because you are beginning to resent some of the liberties that never bothered you before. Plus now you have double the fun, if you know what I mean.

Oh Sweetie, you are not depressing me. I manage to do that well enough on my own. We never go out for NYE. We used to go for a nice meal together but since Kady came along DD will not go on the road that night so I open my house and we have a casual get-together. This year Buddy and I are joining my sister and her DH for NYE. My Mom's anniversary is January 3rd and I know that Gail cannot get last New Year's Day out of her mind so I need to be with her. Buddy almost keeled over when she said she invited my other sister and her weird DH :scared1:. He won't drink that night but if they were there he would need to :crazy2:. He can tolerate my brother if they show up but Pat puts him over the edge and her husband is just plain creepy.

Thanks for keeping Timmy in your prayers. I imagine that his Angel needs to work overtime over there so every bit of divine intervention helps.

None of this has to do with Robin. It's Kevin's attitude that I don't like. He never offers to bring anything, never offers to help, never thanks me for dinner. Robin does all of these things. It's just a matter me feeling appreciated. Know what I mean?

Sorry I haven't been around much the past couple days. It's been a crazy Christmas around here. My Christmas Eve spread was well received by everyone. More food than we needed, but made for good snackies the past couple days. We had Christmas linner at my parents and it was good, fairly traditional food. Yesterday, I had to work--BLECH!! I just seemed wrong to have to be at work by 8 the day after Christmas. Oh well, I could've been like DH, having to be in at 5am!:scared1: Since we were so exhausted last night from the past two days, we ordered pizza, DD's request. Not sure WFD tonight. Still have some ham hanging around, we'll see. We actually saw SNOW yesterday here, so it's pretty chilly--maybe some soup!

Kathy--you are NOT depressing! We are here for you!:hug:

Lori--Glad to hear you're having a blast. Hope the "drunkies" don't have too bad a headache this morning!

Now, the next big thing on the agenda for us, is getting ready to leave for Disney in two weeks! Two weeks from today I'll be boarding a plane!:woohoo: Now, if I can just get my house in some sort of order so I can at least find the suitcases we need to start packing!:laughing: :rolleyes:

I think I'm going to make lasagna tonight. I was going to do crabcakes but DH has a friend coming over to watch the game, and my sister is still here, so lasagna is way easier to throw together for a crowd.

I bought bread to make garlic bread. I never can get it as garlicy and buttery as the store or frozen kind does. Any tips?

Oh - I almost forgot!

On Sunday, I made breakfast casserole for my kids in Sunday School. This is the recipe I used - it was SO yummy, and they ate it up. I tried another recipe last Christmas that wasn't so good so I was nervous about this one but it turned out great!

Christmas Breakfast Sausage Casserole
Rated: 5 out of 5 by 514 members Prep Time: 20 Minutes
Cook Time: 1 Hour 30 Minutes Ready In: 9 Hours 50 Minutes
Yields: 8 servings

INGREDIENTS:
1 pound ground pork sausage
1 teaspoon mustard powder
1/2 teaspoon salt
4 eggs, beaten
2 cups milk
6 slices white bread, toasted and cut into cubes
8 ounces mild Cheddar cheese, shredded

DIRECTIONS:
1. Crumble sausage into a medium skillet. Cook over medium heat until evenly brown; drain.
2. In a medium bowl, mix together mustard powder, salt, eggs and milk. Add the sausage, bread cubes, and cheese, and stir to coat evenly. Pour into a greased 9x13 inch baking dish. Cover, and chill in the refrigerator for 8 hours, or overnight.
3. Preheat oven to 350 degrees F (175 degrees C).
4. Cover, and bake 45 to 60 minutes. Uncover, and reduce temperature to 325 degrees F (165 degrees C). Bake for an additional 30 minutes, or until set.

I use fresh garlic and mince it as fine as I can. If you have a garlic press this works too. Sometimes I use it a lot of times I just smash the cloves and add some kosher salt and mince it. Mix the garlic with butter, you can add a touch of EVOO if you want, and spread it on your bread. I use baguettes that I split in half, but you ca n use Italian loaves as well. I sprinkle some cracked pepper and some cracked salt over it. Now you can pop it under the broiler if you like the bread a little crispy or in the oven If you put it under the broiler watch it like a hawk. Burnt garlic is nasty.

Hi everyone!! A very belated Merry Christmas to you all. I just got soo busy over the long weekend that the computer never even got turned on. Glad to see that Santa was good to everyone. An now I back to work, while everyone else is home. Don't know WFD - DH is in charge of the kitchen today!

Laura - sounds like your kids had an awesome Christmas and that was my thoughts just from Becky's post!!

Kathy - sorry you are having a hard time. I had some rough christmases too after each of my parents passed. But it does get better. Just hang in there and know lots of people are thinking of you.

Aimeedyan - here's how I make garlic bread. I melt a stick of butter with two tablespoons chopped garlic; let that sit for about 10 minutes or so for the flavors to mingle; then I spoon it onto french bread. I bake it at 400 degrees for about 5-10 minutes then put the broiler on for a minute to get the top chrispy. Sometimes we add parmasean or mozzarella cheese, depending on what its going with.

Nancy - good to hear Timmy may be home sooner than expected. I'll keep him in my prayers for a safe return.

Sorry I haven't checked in since Christmas Eve. Just so busy trying to get it all together. Yesterday I was really hurting from all the activity & only moved from the bed to the couch. Feeling better today though.

Kathy, Sorry you've been so down. It does get easier, but the holidays are always so hard. My Daddy's b-day was in the beg. of Dec, then there's Christmas & then the anniv. of his death is Jan 9. So really this time of year, I'd really like to just stay in bed & pull the covers over my head. But Thank God this year my Mom managed really well. Almost every year she either hits the booze or her nerve pills, ruins the food & makes the whole family miserable. This year she was great! Maybe because she finally realized I needed help & couldn't pick up the slack. Anyway it was really good. ( Sorry to bring everyone down with this, just wanted Kathy to know, that I understand her sorrow. )

I will host New Year's Day at our house. I'm really bummed that everyone in the family (especially Mom) is pushing for the boring traditional foods that we already had so much of. New Year's Day has to have cabbage cooked down to mush, yuck and black eyed peas (I hate them) and a ham. Bleck! I was hoping to do something more exciting but they arent' going for it!

Sheryl- your entertainment center is gorgeous! I fell for you as well around the Holidays. It is good that your Mom stepped up, you cannot always do the work and it is better that she has something and someone else to think about. I would add some of my favorites to NYD as well as the old stand by's. Change is good :thumbsup2

We are just going to have appetizer food for NYD. I spend just about every Holiday in the kitchen and while I really do enjoy that I want to relax for this one. We are used to getting up early so we are in bed early. Well we are going to be up WAY past our normal bedtime the night before so I am not going to be spiffy with a stove :lmao::lmao::lmao:

I forgot to post dinner tonight. Buddy is not feeling too well, he has that sore throat thing still so I called our friends to let them know, postponed our meal until tomorrow and will make home fries with the roasted potatoes and heat the pork up in gravy. I'm told it was a little dry so this is the only way it is going to get eaten.

ETA: Not really a Smitten Kitten update, just a vent I thought I'd share. The SKs are coming over again tomorrow night. The other night I casually mentioned to Kevin that I had planned to make Boo Patties, and was that ok? He said yes but added, "No fries. It's too heavy right now." Um, ok. We've all been "fooded" to death with all the holiday food, so I can understand not wanting rich food.

I responded with, "Ok, how about just some chips and salsa/dip of some kind?" He makes a face like a child and says, "Nah, that's heavy, too." Ok, than what the crap to you serve with a burger that isn't "heavy" according to his standards?!?!?!?!? I said, " You think of something then and get back to me." He was so enchanted with Robin being by his side I don't think he got the hint that I was losing my patience with him.

***Oh, a side note. Please don't misunderstand me. It wasn't what he said, it was his attitude about it. Rather condescending, know what I mean? In another tone, and minus that disgusted look he gave me, it wouldn't have been a big deal.***

So in the spirit of making things easier on myself, and basically saying "screw it," we are going to get Subway tomorrow night. That way everyone will have exactly what they want and there won't be any complaints about my food being too rich right now. I know, I sound like I'm being bitter, but Kevin's been getting on my nerves lately.

On a positive note, it means I don't have to cook and there will be no dishes/pots and pans to worry about.

Whew, I feel better just venting about it!!! For my peace of mind, what would YOU serve with Boo patties? (it's ground turkey, grated onion, garlic, parsley, cumin, and paprika- basically a burger with some spices) If fries and chips and salsa are supposedly "too heavy" what would you suggest?

Oh - I almost forgot!

On Sunday, I made breakfast casserole for my kids in Sunday School. This is the recipe I used - it was SO yummy, and they ate it up. I tried another recipe last Christmas that wasn't so good so I was nervous about this one but it turned out great!

Christmas Breakfast Sausage Casserole
Rated: 5 out of 5 by 514 members Prep Time: 20 Minutes
Cook Time: 1 Hour 30 Minutes Ready In: 9 Hours 50 Minutes
Yields: 8 servings

INGREDIENTS:
1 pound ground pork sausage
1 teaspoon mustard powder
1/2 teaspoon salt
4 eggs, beaten
2 cups milk
6 slices white bread, toasted and cut into cubes
8 ounces mild Cheddar cheese, shredded

DIRECTIONS:
1. Crumble sausage into a medium skillet. Cook over medium heat until evenly brown; drain.
2. In a medium bowl, mix together mustard powder, salt, eggs and milk. Add the sausage, bread cubes, and cheese, and stir to coat evenly. Pour into a greased 9x13 inch baking dish. Cover, and chill in the refrigerator for 8 hours, or overnight.
3. Preheat oven to 350 degrees F (175 degrees C).
4. Cover, and bake 45 to 60 minutes. Uncover, and reduce temperature to 325 degrees F (165 degrees C). Bake for an additional 30 minutes, or until set.

Oh, yummy! I think I may try this for breakfast tomorrow!!! It sounds so good!!! I love things that I can put together the night before and just pop in the oven in the morning! It makes me look like supermom, too!!!

Well, I did take Leslie to the doctor and she has a MASSIVE ear infection in her right ear. Apparently, she either has a high pain tolerance, or the fever was making her so loopy that she really didn't feel anything. Her eardrum is bulging and has a large blister formed on it. The doctor says it will probably burst sometime today unless we're really lucky! She's now on heavy duty antibiotics and pain meds. It's kind of funny to see a 5 year old "drunk" on meds!!

Haven't decided on dinner for tonight, but I'm thinking of soup. It's just bitterly cold here, and I need some comfort food!

We really don't do much for NYD. Just kind of nibble around on appetizer kinds of foods and sandwiches. However, on NYE, we do fondue! I make a cheese fondue, a pizza fondue, a chocolate fondue, and either a caramel or strawberry fondue. We also do a hot oil fondue to cook meats, etc. The kids love it!!! It's always fun to eat off a stick! Don't tell my kids, but I also set the clock ahead a few hours, so when they think it's midnight, it's actually 9:00. They feel like they are celebrating, but I get them to bed at a decent hour. My parents began a tradition of a visit by Baby New Year. He brings a small gift to each child, so I like to get my kids in bed early to carry on that tradition.

Guess I need to get the fondue stuff this week, huh? I'm running out of time!

Lindsay, Here's what I served with your Boo burgers, when we were in diet mode. A light coleslaw. But If I were you I would definitely do take out & make it easy on yourself!

DD & SIL will be hosting a little New Year's Eve party & I'll be able to get everyone to come over later in the day on NYD so that shouldn't be too stressful.

I'll probably add some different sides for NY day, but I really wanted to do something new & interesting. Like either a roast beast or a stuffed pork loin, with roasted brussel sprouts & maybe curried sweet potatoes. And if I did that Mom would go ahead & cook all the regular stuff herself & bring it over! According to my Mother it is BAD LUCK not to have cabbage & black eyed peas on NYD!

I already told Mom I'd cook the cabbage to which she replied with raised eyebrows "YOU'RE going to cook it? Don't you like my cabbage?" :sad2: Well no I don't & she won't like mine & will be sure that everyone knows that she doesn't like it. What ya gonna do?.... ;)

Is that recipe for Ohana potatoes posted here? I'll go check.

Buddy and I were talking about the Holidays and he said it gets easier. He told me that there is always an empty place in his heart but that it is not as bad as it was. He said that I should expect to miss her every Holiday but that it would not hurt the same. I figure he knows what he is talking about, his Dad id gone for 20 years. He adored that wonderful man and has no family that he can really turn to during the Holidays but his cousin. :grouphug::grouphug:

The scallops are Becky's recipe on pg. 616. The Prime Rib is an old fool-proof recipe I've used for years:

Fool-Proof Prime Rib

1 prime rib roast (Bone-in)
EVOO
Salt, cayenne pepper, black pepper and garlic powder

Preheat oven to 500 degrees. Rub the roast generously with EVOO & seasonings. Place the meat on a rack in a roasting pan, uncovered, on the bottom shelf of the oven.

Cook the meat at 500 degrees for five minutes per pound, then turn the oven off. DO NOT OPEN THE OVEN and leave it in the oven for a total cooking-resting time of two hours. If your rack weighs 5 lbs, cook it for 25 minutes, turn oven off, then let it remain in the oven for 1 hour and 35 minutes. The meat continues to cook after the oven is turned off. The total time in the oven is always 2 hours no matter the weight of the meat. This gives you a perfectly medium-rare rib roast!

Dinner plans for tonight have changed - DH wants to go out instead of cook:rotfl: so we're going to Acme Oyster House. I promised DD we'd take her before she goes back to school. They do pretty good chargrilled oysters.
We are always home on NY eve; don't know what we're doing NYD yet; we were expecting a crowd, but found out on Christmas that the crowd was going out of town. I know we'll do cabbage and black eye peas. Daughter IL was talking about making gumbo, but I know she's working; so I'm not sure if she'll make it and send with DS or what.

I just wanted to check in and say hi. I have had a rough few days that started with family drama on Xmas (we left my sisters before dessert...my brother and sister - yes the A SS that has given me trouble before - started trouble again).

This was the start and the end was that I had a miscarriage today. We are pretty bummed but know in time things will work out. At least we know I can get pg with my thyroid problem, right?

I haven't been cooking but have to get back on track with healthier eating since we have gained quite a bit with our trip, Xmas and I took advantage of eating for 2 for about a week ;) ...

We are doing OK but please keep up in your thoughts to help us be strong. Love you guys!

It's simply a large rump or chuck roast. This year it was beef, but in the past we've also had elk. DH didn't manage to bag an elk this year, so we had to make do with beef. Oh well. We call it roast beast since my kids love How the Grinch Stole Christmas. We've tried to talk them into turkey for Christmas dinner, but they won't hear of it. It has to be roast beast!

we went to the dr on friday and got her on some antibotics she had fluid in her ears and her chest was very congested. I think if she still has the cough on monday after she finshes her antibotics I will be calling her Dr. She is on omnicef once a day.

Yes, that's it!!! DH husband always wears his Grinch pj's to carve for us. One of these years, I'll get him to put on a "fake Santy Claus hat and a suit."

Zipuzee and Nancy – Thanks for the garlic bread tips – I will try it myself in about 20 minutes when the lasagna is almost done.

Funny y'all mention NYD… my in laws may be coming over that day. Our #$&@#$ sprinker system has yet another leak and flooded our yard this week. Will just love that bill. DH asked FIL to come over and help dig up the pipes to repair it. I will need to make something for lunch/dinner, just not sure what. I always eat black eyed peas. I must have those, at least!

I got a food processor for Xmas – have wanted one forever! – and I can’t wait to use it. Maybe I will find a recipe that uses that, since MIL bought me it.

Lindsay – for real, don’t bother asking him for his opinion anymore. Fix what you and Scott want and if they want to eat, they can. I wouldn’t purposely fix things he hates, but I also wouldn’t cater to his whims. Does he always have bad manners, or is the new romance caused him to lose his mind?

Glynis – I love the fondue idea! We are still negotiating about NYE. All of our friends have preschool children (hint hint DH – we’re getting left behind!!) so it’s hard to do NYE. Maybe we’ll stay home, eat fondue, and go to bed early. I love that you set the clocks back. Sneaky… I love it! Yum on the food porn, too.

Lauren -- I just want to say :hug: . I am so sorry things didn't work out this time. The New Year is in five days, and with that comes new hope. I hope to hear happier news from you in 2008.

Glynis -- That sounds like a nasty ear infection. I hope Leslie is lucky and the blister doesn't burst.

Kathy -- Congratulations on continuing to stay smoke-free!

Nancy -- That is wonderful news about Timmy. I can't wait to hear about his happy homecoming.

I feel like I am missing someone, but it is time to get the kids to bed. We had a great time at the Nutcracker. We went out to eat after, and I had raw oysters (they were SO good), spicy fried calamari and fried clams. Liam and Caili had a hotdog and grilled cheese. Total gourmets those kids. ;)

This lasagna recipe was pretty good! Easy, and I'll make it again.

Simply Lasagna

Ready In: 1 Hour 35 Minutes
Yields: 12 servings

INGREDIENTS:
1 pound ground beef (we used italian sausage instead)
1 egg, beaten
2 1/2 cups shredded Low-Moisture Part-Skim Mozzarella Cheese, ivided
1 (15 ounce) container Part Skim Ricotta Cheese
1/2 cup 100% Grated Parmesan Cheese, divided
1/4 cup chopped fresh parsley
1 (26 ounce) jar spaghetti sauce (I used 1.5 jars, as reviewers said more sauce did better)
1 cup water
12 lasagna noodles, uncooked

DIRECTIONS:
1. Preheat oven to 350 degrees F. Brown meat in large skillet on medium-high heat. Meanwhile, mix egg, 1-1/4 cups of the mozzarella cheese, the ricotta cheese, 1/4 cup of the Parmesan cheese and the parsley until well blended; set aside.
2. Drain meat; return to skillet. Stir in spaghetti sauce. Add water to empty sauce jar; cover with lid and shake well. Add to meat mixture; stir until well blended. Spread 1 cup of the sauce onto bottom of 13x9-inch baking dish; top with layers of 3 lasagna noodles, one-third of the ricotta cheese mixture and 1 cup of the sauce. Repeat layers twice. Top with remaining 3 noodles and the remaining meat sauce. Sprinkle with remaining 1-1/4 cups mozzarella cheese and remaining 1/4 cup Parmesan cheese. Cover with greased foil.
3. Bake 45 minutes. Remove foil; bake an additional 15 minutes or until heated through. Let stand 15 minutes before cutting to serve

I also made the garlic bread based on your tips and DH said 'the bread is really good!' so I guess I did it right!

Well, I'm happy to report that Leslie is so much better!!! She says there is no more pain in her ear, and her fever is completely gone!!! Hooray for antibiotics, and the prayers of her WFD aunties!!!
