We may take the kids to Chuck E Cheese (YIKES!) to make up for not going on DS's bday as planned.

If I remember correctly they have darn good pizza!!

It is pizza and wings nite in my household!!

I'm still feeling under the weather too. and now I'm itching & popping benadryl so I'm feeling really tired. So probably no cooking here tonight. It'll be either leftover red beans or takeout.

I think I'm having a bad day. I went to get some hot water for some tea and got distracted and forgot to add the tea bag. Needless to say hot water is not tastey. Now I did add the tea bag only to have it fall off the string. I think I may jsut call it a day and go home now.:sad2:

I think we are going to have chili tonight I plan on spicing this cold out of me.;)

Well the photography studio is yanking my chain again.:headache: Now the proofs won't be in until Monday and now I find out in order to use the discount the school provided I have to place the order within three days of getting the proofs. It's going to take me a while, I found out there are 88 proofs.:scared1:

Instead, I had spaghetti and meatballs. Liam wanted pasta AGAIN (as Caili said) so since he was the sick one, he got his way. I am happy to report that he is feeling much better. I'm not sure whether it was the Tylenol, the eight hours of Gameboy or the apple crisp I made for dessert that did it, but he is fever-free and looking like himself again. :thumbsup2

We are down in Houston. Love the schnauzer, we just got one. In fact, we are trying to find someone to watch her while we are in DL at the end of the month.
No, dinner for us tonight. DH and I are attending a Gala for our girls' school. The kids will get....Uh.....frozen pizza. Maybe I'll be nice to my MIL (who is babysitting) and order her a deluxe.

Thanks for all the kind words regarding Sunday! My goal is to practice some more tomorrow but try to not think about it after that. My gut can't take the stress so I have to put my mind on something else ;)

Tonight is grilled chicken, potatos, and some veggies. Easy easy!

Just quickly checking in to say Good Morning Friends!

Hope everyone is doing good and feeling better!

We have really enjoyed our time in Disney...eating way too much good food.

Went to Marrakesh, Nine Dragons and Le Cellier and Raglan Road tonight. Also tried alot of the offerings at F&W...even had some Rosa! ;) The St. Germaine martini in France was awesome...we have some pics to share but mostly of me and BigMama doing what we love to do...:drinking1 :drinking1

Marrakesh was OK...way too loud in there.

Nine Dragons OK too. You know us, we love Chinese. Nothing special but a must do for the boys.

Now, LeCellier is my neck and neck restaurant with Cali Grill. I had the mussels, mushroom filet and mousse. My dear friend, Kathy, turned me on to those mussels and OMG, they are good! :thumbsup2 They were smaller mussels this time and the broth seemed thicker, but just as good as the last time.

That cheddar cheese soup is to die for. We had it outside (F&W) and in. the one outside was a little different...not as sharp but good. Tom had the NY Strip which the chef recommended when he stopped by the table. :thumbsup2

We enjoyed this dinner with my SIL, BIL and nephew (BigMama and Clark-Kent) and they enjoyed this restaurant very much - they were LeCellier virgins. BigMama had the salmon...said it was the best ever.

OK, I think I have babbled enough to make up for the week I've been gone. I miss you guys.

Becky, I was talking about your great pics with my BIL yesterday. He has taken up photography as a hobby and I was raving about all your pics.

Oh, I had an IRMA moment when I fell onto the bus last night. The bus was higher than I stepped so I misjudged or maybe it was the martini, torontopolitan, bass, ice wine, and whatever else I drank all day! ;) :thumbsup2 ETA: We also had the frozen drinks in France. Love them! I liked the Grand marnier orange one the best.

Good morning everyone.

Tonight we are having leftover chili. I may make an apple pie since I have apples that need to be used up soon, maybe ice cream on the side.

I feel much better today I think that sore throat and stuffiness was just my allergies since it still hasn't done anything else. I hope everyone else is feeling ton's better.

AimeePlease try not to stress I know it's easier said than done. Take care of yourself.

Well, we did end up having pizza last night, but not at Chuck E Cheese (Thank God!) I convinced DH that CEC would be a tad crowded on a Friday night, and did he really want to fight all those kids??? He heard the voice of reason and we hit our local pizza joint instead.

Not sure WFD tonight. But I'm cooking lunch for one of DH's co-workers and his GF. Nothing too exciting--mainly b/c I ask DH what they like to eat and he says, "Um, well, I know he likes chicken and corn" What kind of answer is that! He knows I need a tad more info than that. So, I'm making BORING teriyaki grilled chicken breast with corn on the cob and a green salad. And I guess this guy is also a neat freak, so I get to spend all morning cleaning. Goody for me.

Hi All! Just a quick Hello, I have a lot to do today. Dinner last night was leftovers for Buddy and me, I shopped with Marisa and Kady at the Disney Store ( amazing deals there, we each got a 30% coupon and I found a pretty dress coat for Kady along with some Holiday dresses) I have no idea what the rest ate, they went to Daniels.

Tonight I am going to try to make spaghetti and sausage with a salad and garlic bread. I am testy with Buddy (again) so I may not.

Aimee- stop thinking about it....we will think enough for you, you just enjoy the experience :thumbsup2

Stephanie Glad you dodged the CEC bullet. :laughing: Mine are too old for that thank heavens. Now they are at the Miyabi age (Benihana type steakhouse). That is normally their birthday request. Now I normally think those places are alright, but the one closest to us that the kids love is not so alright. The upside is that is doesn't matter what you order, everything tastes exactly the same. :rotfl:

Janice Glad to hear you are feeling better. You must be to consider making apple pie. I love it but hate prepping the apples to make it.

I don't know what we're having for dinner tonight. Last night's leftovers are going to work with Kenny for lunch. I'm trying to get him to commit to dinner however. I don't know if he wants to have football snacks in front of the TV watching the games tonight or if he wants steaks, potatoes, etc. And men say women are indecisive.

Not sure WFD tonight. But I'm cooking lunch for one of DH's co-workers and his GF. it's another HUGE football weekend here, so once again our supper will be from the crockpot. :lmao: We are having French Dip sandwiches, Rachael Ray's potato salad (the only potato salad we make now), and key lime bars. I'm mixing up an easy and yummy artichoke dip to snack on during the day.


Artichoke Dip
2 cans of artichoke hearts chopped
1/2 cup mayonnaise
1/2 cup sour cream
1/2-3/4 cup mozzarella or parmesan cheese
Combine all and put in baking dish. Top with more cheese.
Bake in 400 degree oven for 30-45 minutes.
I slice and toast baguette points to serve with this.

Morning all

I just dropped Ross off at karate, he teaches the little dragons on Sat mornings.
The football banquet was fun, the coaches gave a nice little comment about every kid. It is good for the kids to hear this, as they are usually having their behinds chewed out on the field, lol.

Nancy--I am glad to hear that Kady made out so well at her sleepover!!

Kathy-- What a run around..I think Janice hit the nail on the head with them this time!

Stephanie--You made a wise choice on the CEC part, that place is insane on a reg night, never mind a Fri., luckily the one we have is 2hrs away so we have only taken Ross 2x and that was about 3x to many!

Janice- glad you are feeling better.

My head cold is running me down, I have chronic/acute sinusitis so I am hoping this doesn't flare it up, but it is triggering my migraines, if I can make it through the tournament tomorrow then I can deal with anything though. It will be hot as heck in there and loud as well, great combo, lol. What we do for our kids huh?!!?

Lauren- you made me have a good chuckle this morning....I hope other then your pride nothing is hurt,lol. It sounds like something I would do, lol.

Ross wants breakfast for supper, so eggs bacon and toast it is! Simple and yummy!

I hope those who feel ill are getting some rest and feel better soon!

Tonight I am making cod pomodoro, linguini with garlic and olive oil, crusty bread, and a mixed greens salad.

Last night we ate the same food we had on Thursday because we really loved the soup.

I don't know what we are having tonight. Last night we attended the GALA at our girls' school. We had a blast, but are moving VERY SLOW today. I think I'm getting too old for that sort of thing.

DH is deer hunting today so I've been piddling around the house. My dad knew I was on the verge of a nervous breakdown so he graciously offered to drive over today and spend the day with me and just stay the night, since he was going to come tomorrow to church anyways.

So, my plans for tuna casserole are probably shot since Dad probably won't want it! DH hates it so I make it everytime he leaves. We'll see what he wants to do - maybe go out and have him buy!

Don't know what's for dinner yet. We need to go buy a new camera. It was dropped on the trip, & it still takes pics but the screen doesn't work.

Y'all say some prayers for my DD. She had a super tough week with her company's convention and school then on Friday had to have a wisdom tooth pulled! Then go to class yesterday & today. This week she has to have her dept's budget done, a final exam on Friday & then take off for Paris on Sat.! She is super super stressed!

Don't you love it when he volunteers you for stuff like that?? I'm sure I told you about the time my DH invited a co-worker and his GF to our house for dinner and I couldn't use any onions or garlic because she was supposedly allergic to them. I hope your lunch went well.

My head cold is running me down, I have chronic/acute sinusitis so I am hoping this doesn't flare it up, but it is triggering my migraines, if I can make it through the tournament tomorrow then I can deal with anything though. Sheryl -- At least your daughter has Paris to look forward to at the end of her crazy week. That would be one heck of an incentive for me! Tell her to have a great, successful, and not too stressful week.

We spent the weekend at my parents', so I had Becky's GREAT cod pomodoro yesterday and today, Mom made roast beef (rolled, boneless rib roast this time...it's fattier than the sirloin roast, and I thought it was really flavorful), gravy, roasted potatoes, eggplant sticks and butternut squash. It was yummy (even if I did have beef three days last week...but hey! Sunday is a new week, right??)

The kids and I are a little disappointed tonight because DH was supposed to arrive home around 7 this evening; however, his flight was delayed and now we won't see him until tomorrow morning. But we will see him tomorrow, so :cheer2: :banana:

Good Evening all!!

Laura thanks for asking--The tournament today which was put on by our dojo (and has been for the past 11 years so it being new is no excuse) was a complete mess, I won't bore you with the details, but there are about 8 sets of parents and we are all very close good friends, and we all were ashamed of our schools lack of preparation for this to say the least. It left many people po'd, ourselves included! That being said, Ross did very well, he placed in both events. He did get the wind knocked out of him twice, and brusied his shoulder, but all that is par for the course. A lot of kids were hurt this year, it kept the emt's running.

Lindsey-- Welcome Home, we missed you girl!! I can't wait to hear the story!!

Sheryl--I will keep your daughter in my thoughts...she will need a break after all of this! I hope that going to Paris is for relaxation and not work.

Aimee--How did you make out today? I am sure you impressed them all! I know we are all proud of you!

Laura--I love the bunny pic, soooo cute! Please tell Liam that is dinner looks delish!;)...........I am sorry on the delay on dh, but I am so happy that you will get to have him home for a bit....How long before he heads out again?


Lori hasn't been around for a few days...I hope that it is just being busy with helping Rick and nothing else! I miss her!

Ross has gone to work with Kris on taking out docks and boatlifts...he is earing money for wdw.....it is 30 degrees here so I am sure it is perfect lake weather,lol! Better them then me!
We ordered out pizza and salad for a "lupper" before they left.
and dessert was pbcups I hid from the halloween candy:)

Thanks for asking about me, guys! IT'S OVER! I am such a perfectionist that I have been second guessing myself all day... I screwed up the welcome, but I doubt anyone cared. Then I tripped over some words when talking to the 1st graders but I just corrected myself and went on.

The sermon went fine - I got more comfortable the longer I was up there and I felt good about it but I evidently talked faster than I intended. DH said I could still be understood but I just talk fast in general.

We got out 15 minutes early today - but I know it couldn't have been all me because my sermon was only supposed to be 14-16 minutes and it wasn't just a minute long! I think we should have stuck more in the service or something. Of course, the church members didn't mind at all that they were out early ;)

DH, in all his wonderfulness, pointed out that I flipped my hair the entire time. My sideswept bangs fell into my eyes when I looked down at my paper, I guess, and I flipped my head back to push them back when I looked up. I of course didn't realize I was doing it and now feel stupid for not pinning my bangs back somehow.

I should have told him that I only want to hear POSITIVE things since I can't change it at all!

Everything else was grand. My kids did great, I heard great things from people, good attendance, and I felt good about the context of the sermon. My pastor was complimentary and told me I should be proud. One of my 2nd graders whispered to his dad after I finished that he'd rather me preach than the pastor ;) That made me feel good, even if it's an 8 year old saying it!

My gut already seems better - isn't that funny? We had lunch afterwards and I didn't have any pain at all...? I see the GI on Tues to talk about stress management since stress never goes away!

Tonights dinner...? I came home from lunch and crashed for a few hours so didn't put anything out. I'm all for fast food but we'll see what DH wants.

Wendie -- Aarrgh! You parents must be so frustrated with the tournament! I am glad Ross did well, and didn't need too much EMT attention. :eek: I can relate doing the skating competitions. There are just some rinks that can't seem to run smoothly, always are off schedule, etc. It is very frustrating, and it would be so much more so if it was the home rink. I would suggest that the parents try to help the dojo be more prepared next year, but you are already way too busy, so please don't volunteer! :laughing:

Greg is home for two weeks. We weren't expecting to see him again until his morale leave, so this time is bonus for us.

Aimee -- I am so glad the sermon went well. Take the 8 year-old's comments to heart. As the parent of an 8 year-old, I can tell you that they don't mince words. If that child said you did a good job, then you did. Congratulations!

Aimee--Great Job!!! What you are second guessing on are things that others wouldn't have noticed. (dh doesn't count, lol).........the first time is always the hardest...easy sailing from here on out...glad to hear that your stomach is doing better!!!

Kathy--Ross said to let you know that he is A-OK, lol but he loves the hug smiley:) He put icy hot on his shoulder. The worst for us was when he was laying flat on his stomach and not moving at all for over a minute....I earned a few grey hairs on that one,lol.

Laura--Frustrated, is a start of how we feel. It isn't even a matter of something we can help with. I wish it was! The set up and score keeping is something we all help with, this was a lack of preparation on the family that owns the dojos part. (we run 2 major tournaments a year..one for over 30 years and this one for over 11 so none of this is new to them) Just to give you an idea of what went on....they know weeks ahead how many are in this. (we had schools from all over new england and 70 people from canada) They did not have enough trophy's for the kids division so the child in a couple of divisions who had 1st place had to go home with a 2nd place trophy and others were handed down medals (that the runners up are given) in place of their hard earned trophy.
They did not have any recording for the canadian national anthem..which is a huge disrespect...when we went to their tournament they had ours for us.
The list goes on and on.....................

I am so over the top happy for you to have this extra bonus time with Greg!!! How wonderful!! The kiddos must be over the top excited!

Aimee- :cheer2::cheer2: High praise from the second graders, and I think they are the toughest critics (except for DH's, who don't have survival skills :lmao:) You have got to be proud though, because public speaking is so difficult that there are classes for people. If the worst little faux pas was hair flipping I'd day you aced it!

Lindsay- Welcome home! I am embarrassed to admit that I am so disorganized that I would never have gotten the index updated for at least a week :rotfl2:

Kathy- Osso Bucco? How was it? That's the kind of meal I am always afraid of.

Dinner last night was good, for the most part. We had spaghetti with sweet sausage and turkey meatballs, salad, garlic bread. I made brushetta to start. I make the worst meatballs lately. I am having a little trouble with the egg free, cheese free no beef meatball :confused3. And then after that Kady would not touch them, although as they began to disintegrate I did not blame her :rotfl2:
We had tiramisu and apple pie for dessert. (Both from Costco)

I have to figure out who is going to be home and what I feel like cooking for tonight.

Hi everyone! DH is on his annual hunting trip so the kids and I are on our own til Wednesday. Yesterday ds requested fish chowder- so there's enough of that left for tonight... I did save out a piece of haddock for myself to bake and stuff.... :rolleyes1 so I'll have that tonight.

Wendie I'll have to remember the hiding of the Halloween candy trick. ;) How devious of you. Although in our case, there wasn't much to hide. Hailey doesn't trick or treat because it is too upsetting for her and there are only certain types of candy she will eat anyway. This year was Amanda and Patrick's mother's turn to have them for Halloween. All I can say about her is she is consistent. Like in years past, she returned them home after their bedtime, exhausted, and starving because she did not bother to feed them from the time she picked them up from school until she delivered them to us. Oh, and they were hopped up on sugar because she did allow them to eat the candy from their bags while trick or treating. :scared1:


Aimee Congrats on a job well done! And as others have said, if the 8 year old said you did a good job, you did. The minor stuff doesn't matter.

Me either, but I have started getting myself together. I've bought all the non-perishable items I need for the dinner and I made a dip yesterday that I put in the freezer. Not that it will mean I won't be running around the Wednesday before cooking my brains out til after midnight. It's just that I have less pre-stress this way. :rotfl:

Tonight I'll be eating whatever the cooks at work are making. We have deacons meeting tonight and it's going to be a long and painful one. Thankfully, they serve dinner at 530 so I'll grab a plate of whatever is offered. DH is driving through Taco Bell =)

I anticipate a late night tonight. If we're out by 930 I'll be shocked.

Greg did make it in last night and arrived here this morning. The kids were so excited to see him they were jumping all over him. At least he knows he's been missed.

Unfortunately, Liam was kind enough to pass his cold along to me, so I feel pretty lousy today. In an effort to kick it out of me quickly, I am going to make soup for dinner. Greg doesn't like chicken noodle, so I'll make cheddar beer soup like Becky did last week.

Gretchen, hopefully you will love Raglan as much as we did. We were pleasantly surprised we loved it so much.

Here's a quick review (no pics though...forgot the camera):

Tom was looking forward (kinda sorta) to having Kevin's Heavenly Ham...it was the only Irish type food that he liked on the menu. Well, they no longer serve this dish. He proceeded to get that grumpy look on his face and asked, What will I eat then? They don't have cheeseburgers here! What a grump he was.

The service was very good...a little slow but good. It seemed to be very crowded and the servers are very laid back. We had Vinnie as out server. He was very patient with all of my questions, in a sarcastic kind of way. I love people with that personality. Towards the end, we were all laughing since I was tipsy since I had a beer flight, a pint of beer and then a Grand Marnier. ;) ;) ;)

If they do not give you bread, ask for it. They say its soda bread but its actually a brown bread with oatmeal and wheat flour (its in the F&W cookbook). They give butter and a Guiness and brown sugar dipping sauce.

For apps we shared the Drunk Chicken (Skewers), Heaven on Earth (Ribs) and I had the Colpucinno Soup. Everything was very good. The chicken was a little bland and the dip tasted like mayo, but Andrew loved it. The ribs were good...I would like to try to replicate the sauce (Guinness and Brown Sugar). Andrew and I liked the soup, Tom thought it was just OK. There was a spice in there that he did not care for...I think it was dill, which he is having tonight in the Chicken Seinfeld I am making...;)

Vinnie recommended seafood, the salmon being his fav...I proceeded to tell he that the guys do not like seafood...I do but not salmon. Seafood is flown in everyday.

Andrew had the Gold'n Chicken: Chicken Tenders and fries...very good.

Tom had the Serious Sirloin Steak...he said this was better that Cali Grill and Le Cellier. He also had the corn side dish which was awesome...it was like a creamed corn but better (Probably like Becky's...;) ;) ;) )

I had the Its not Bleeding Chowder...OMG! The best thing I have ever eaten AND...it has little pieces of salmon, which I LOVED!!!

Desserts were:

Andrew: Ice Cream

Tom: Me Ma's Apple Pie: Very, very good.

Me: Ger's Bread and Butter Pudding: Yummy. Very buttery and drenched in the vanilla and butterscotch/caramel sauce...To Die For! ;) ;) ;)

Tom proclaimed this his favorite restaurant...I pretty much agree. :thumbsup2 :thumbsup2 :thumbsup2

Lauren Thanks for the review of Raglan Road. I chose it because I think it will really appeal to my Dad - scotch flight, pub atmosphere, step-dancer. The food was to be a bonus. I hope we have as good an experience.


I completely forgot to post what we're having for dinner tonight. Believe it or not, we are having baked salmon again. Kenny's request.

Last night we had different meals. Patrick killed his first deer last month and he just got the meat back from the processor. Anyway, Kenny, Patrick and Amanda had venison burgers from the grill and french fries. Hailey had a cheeseburger I fried in the skillet and I had a hamburger steak with sauteed onions. Truthfully, I had sauteed onions and some hamburger steak to go with it. :lmao: I had the leftover onions with the other half of my steak for lunch.

I know I should have been more supportive and eaten the venison, but I have strange food ideas that came from working in a couple of filthy restaurants growing up. Because the processors aren't inspected, I won't eat anything from them. My belief is that a lot of the places that are inspected aren't quite up to my food handling standards so I'm really not eating anything that came from a place that no one inspects. I know. I'm strange.

Kenny thought I was crazy, but all 3 of them were complaining of an upset stomach last night. I don't think it was a coincidence. I don't know what we are going to do with the rest of the venison that's in our freezer, but Kenny said he doesn't have any plans to eat any more of it.

My friend and I had a great evening. We went to a local place Weber Grill restaurant. They cook everything on huge Weber grills wonderful food plus tonight Alex and I have the rest of my dinner to eat :woohoo:

Aimee Glad to hear your sermon was given a :thumbsup2 from the younger crowd that to me more than from adults. The 8 year old across the street is very forth coming with commentary. Last night since she wasn't invited in the Girls night out she wished us a good time even though she wasn't INVITED.

Wendy I'm glad Ross did well at the tourney and didn't get more hurt. I used to go to a few tournements with my ex they can get pretty rough.

We LOVE Raglan Road, too!

I ended up with a turkey sandwich 15 minutes before the (long and painful) meeting. The glob they were serving for dinner looked disgusting so we dug into the fridge for sandwich fixings.

After THREE AND A HALF hours of meeting, I finally got to leave work. Just got in and ate some leftover loaded mashed potatos and chocolate chips. But not together ;)

I am not going to plan dinner for a while. I have a PT appointment and some errands this morning. Then if the rain stops I am going to tackle the yard work. I never took out my annuals, they were in full flower until 10 days ago, but now they look like fossils :scared:. My DH has also been waiting(not very patiently) for a good "damp" so that he can take the rest of the crop down. Well if it gets warm enough and if the rain lasts long enough he will get his wish so either way I am thinking take out :thumbsup2

I have no idea what is for supper tonight..I have a follow up with my Dr for my wrist, this morning to see where it is at.
This evening I have been asked to go watch my girlfriends daughter at a little dance program her dance school is putting on. Each parent has 2 seats, and her dad is out of town (he drives a log truck for the paper mill, and he is in the woods 3hrs away, this is a busy time of year). I am so excited as I do not get to do the girly things very often....Kris and Lauren have a special bond too, so he bought her some sour patch kids for this, lol.
Her son will stay here with Ross, and Kris will come home to take them to Karate.

I think like Nancy we will do take out as well....just no clue what or from where yet!

Ok folks. Here's the story.

My day began in the Magic Kingdom. This was a family trip consisting of me and my husband, his parents, and his brother. With BIL on the trip, I could ride a lot more things I normally can't, since he can give my husband a hand with my difficult transfer.

So about mid-day we head to Big Thunder Mountain and ride it. I haven't been on it in almost 10 years, so I was really excited. Woo hoo, it was awesome and all that. After a brief break at the resort, we all head to the Polynesian to have dinner at 'Ohana.

While dining, my husband points out that the MK is open until sometime after midnight. I suggest that after dinner we return to the MK and ride Big Thunder Mountain in the dark, which I have never done before. MIL and FIL decide they are too stuffed for rides and head back to their resort. My husband and I and BIL then head to the MK and to Big Thunder Mountain (from here on referred to as BMT).

We wait for the next available train and board the ride. BTM at night was awesome!! Loved it! As the ride neared the exit, we take the left track instead of the right. My wheelchair was on the right track, not the left!! When the train stopped, my BIL jumps out and runs to tell a CM. They tell us not to worry about it, to enjoy the ride again, and they would put us on the correct track this time.

Making the best of a bad situation, I told my husband, "Woo hoo! BTM twice in a row in the dark. Can't beat that!" He agreed.

As we are leaving the boarding area, hearing "hang on to your hat folks, cause this hear's the wildest ride in the wilderness" in our ears, I just got an odd vibe. Like something wasn't right. As we do the little zigzag before heading up the first hill, I realize what it is.

The lights are on.

I turn to my husband and say, "Well, this isn't right, is it?" He shrugged and agreed. We are in the next to the last car in the back of the train. As the front part of the train is heading up the hill, it stops. Just stops. A voice came on and informed us and said the train in front of us was having some trouble and we would be moving on in a moment. No problem, right? 5 minutes pass, and we hear it again. Then, to my horror, we hear:

"Due to technical difficulties we will be evacuating the ride. Please stay seated. A CM will be with you in a moment."

You could hear a pin drop. About to panic, I decided to joke and say, "Ok, who's going to piggyback the paraplegic off the ride?' Ha ha ha, right?

Well the CMs came and helped people off the ride and came over to us, saying they were on their way to help me get off the ride. So the CM, who's name was Roy, stays with us while we are waiting. We chat about the shutdown and the MK and whatnot, all the while I'm getting worried, wondering how in the world they are going to get me OUT of the train, let alone back to the exit.

Enter the Reedy Creek Fire Department

Yes folks, the EMS team is on site to deal with these kinds of situations. At this point, I'm not really sure whether to laugh or cry at the situation. They very carefully get me out of the train and into what pretty much looks like an airplane boarding wheelchair and get me back to the exit.

Everyone on the ride and in line waiting to ride BTM got an unlimited MK fastpass that expires the end of this month. Hee hee, I saved mine for my scrapbook to put under this picture.

The guys with the RCFD were so awesome. I am sending a letter to WDW Guest Services and a copy of this picture. Hopefully they can get it to them with my letter of thanks.

So, my WFD friends, I learned something very important on this trip:

It isn't a vacation until they call the Reedy Creek Fire Department on you.

We had gotten stuck in the Haunted Mansion...right next to the ghost bride. Had to listen to her for about 15 minutes - Andrew was getting pretty freaked.

Tonight's dinner is a pork chop casserole. It is a new recipe and one I chose because it can be assembled ahead of time and popped in the oven. I threw it together last night and will bake it tonight and serve with rice and peas.

I am going to a visitation tonight for the 89 year old mother of a dear friend. She was still very spry, but was killed in an auto accident. She insisted on driving even though her skills weren't quite up to par. She pulled out in front of another car on her way to get her hair done. Thankfully, the occupants of the other vehicle were not injured (although they are understandably very upset).

Morning all. The french toast bake was good--but you would've never guessed by the way the kids were screaming. You'd think I was trying to poison them. I tried to reason with Emma that the casserole had everything she liked in it: milk, eggs, sugar, apples, craisins. No such luck. Oh well, if anyone is interested in the recipe I'll post it. Tonight is going to be Clam Chowder with some crusty bread. Feels more like Spring out right now, so I need some comfort food to get in the fall mood.

Happy Birthday to your Mom! How are things with your siblings and your mother's care? Is she (your Mom) happy? Are you satisfied with the way things are going for her?

Things are tense between some of us. We cannot all agree with what is good for Mom. I am happy that she is at home but not happy that some of us think she is OK to drive. Her memory and skills are not the same so I am afraid. I've said it before, her health is pretty bad...multiple anuerysms, ulcers, spinal problems, etc. so it just makes me nervous. She is a very old 74...:sad1:

Hooray for Kyle! The scouts are going to have a field day with him so I know his choices are going to be excellent! I can't wait to see some of those pictures!

Lauren- Happy birthday to your Mom! I am sorry to hear that the aging process has not been kind. My Mom was driving when we wanted her to avoid it as well. I think that it is so hard for our parents to give up that last measure of independence, but it is equally hard to worry about them. This was an area of disagreement in our family as well.

Lindsay- you made my day with your story. You really touched my heart because I know that you have some limitations in regards to the attractions, but I really don't understand how they affect you, because you never let your disability get in the way of your life but you shared how happy you were on BTM I could feel it too. Then I stopped breathing when the ride got stuck, and then the calvary came! Thanks again for letting us know how wonderful the EMT's at Disney are and for that great pic!

Gretchen- I am so sorry for the loss of your friend. How sad for everyone :hug:.

Steph- I was dying when I read your French toast woes. I have the same problem here, but my whiner is 54 YO! :rotfl2::rotfl2::rotfl2:

Morning all! The chowder last night was really good--probably not as good as our NE members' chowder, but for this southern girl, pretty darn good. DH even had two bowls. DH left this am on business for a couple days. So since I"m just feeding me and the kids I'm doing kid friendly food. No sense in starting a battle when there's no back up in the house. I am making a pork roast, sweet potatoes and carrots...I know its alot of orange food but Tom wanted carrots...maybe some parsley will break it up a bit.

Tonight I am making a mushroom pot pie with a puff pastry crust. I have pictures from yesterday but have not uploaded them yet...maybe tonight.

Shovan, here is the pork roast recipe:

The pork roast recipe is paraphrased from a recipe I found in the Zuni Café Cookbook, by Judy Rodgers.

Pork Roast

For the brine:

5 cups water, at room temperature
1 ½ tbsp. salt
3 tbsp. sugar
3 bay leaves, crumbled
7 juniper berries, crushed
½ tsp. red pepper flakes

Combine all ingredients and stir until salt and sugar dissolve. Submerge pork and brine for at least 24 hours and up to 4 days.

When you are ready to cook, preheat your oven to 400 degrees. For the most even cooking, take the pork out of the refrigerator about an hour before roasting.

For the roast:

One bone-in pork loin roast, bones frenched, tied in between each bone (mine was a smaller, three bone roast, weighing about 2 lbs).

4 cloves garlic, minced
1 ½ tsp. kosher salt
1 tsp. cardamom, crushed
1 tsp. fennel, crushed

Combine all ingredients and rub over all surfaces of the roast.

Slice one large onion into ½ inch rings, and line the bottom of a roasting pan just slightly larger than the roast with them. Place the roast on top of the onions and cook until the meat reaches 140 degrees, about one hour.

Remove the roast from the dish, place on a cutting board, tent with foil, and allow to rest 20 minutes before carving between the bones and serving.

If you want to serve the fig compote with the pork, as it is shown in the picture I posted, simply rinse and halve one pint of fresh figs and add them to the roasting pan for the last 20 minutes of cooking. After you remove the roast from the pan, stir together the figs and onions and season as needed with salt and pepper.

Afternoon all!!

What a crazy couple of days...my follow up dr appt yesterday was an unreal wait time...my appt was at 10:20 and I didn't get in until 11:45...they had an emergency.so that messed up my whole morning,ugh...then I had p/t this morning and had to set up my appt for the next 4 weeks. Trying to get those taken care off, along with other appts for hair, nails etc to get ready for our trip next month, starting back at school tomorrow, and the holidays besides, I am running out of days!!!

Nancy--I thought Kady's sentence of the day was sooo sweet...your relationship reminds me of mine and my grandmothers...melts my heart!

Kathy--Congrats to Kyle..."aunt" wendie is very proud of him!!!!:) I can not wait to see these photos...he is so handsome that I am sure that it will be hard to pick! Make sure you let me know when his first game is, I want to follow his season!

Gretchen/Kathy--I am jealous, but so happy you two will be able to meet up...I expect pictures!! Give each other a hug from me too!!

Dinner was good tonight. Salisbury steak, baked potatoes, corn and salad. Gravy on the side.

I raked again but left the leaves in piles for Buddy to pick up. I dragged them on a tarp yesterday down the street to the leave dump but by the last trip Kady was helping me to drag them. I figure if she did not pull with me I would have been in one sorry lump, lost under a pile of wet leaves :sad2:. It was sad.


It is official, I hate oak trees! I never do the leaves adn now I remember why.

Nancy I would take a skinny old oak tree any day I have a huge maple. It hasn't even lost 90% of it's leaves yet and the villages free leave day is next week. Maybe I can nudge the tree with my car ;)

Her sentence of the day was "Tomorrow my Nana will hopefully have lunch with me." We are both bringing lunch and I'm glad of that! It took all day to recover from last week's burger :sick:.

That is so sweet. My stomach hasn't been appreciating burgers lately either -- I can't imagine what a cafeteria one would do.

As if I needing something else to happen to me, I am coming down with laryngitis. Not a big deal, except I am supposed to sing a solo at church Sunday.

I prescribe hot tea with lemon and honey. A friend of mine had strep throat and still managed a great solo after drinking this. If you don't like tea, just plain hot water, lemon and honey works too. Good luck Sunday!

Anyway, here is last night's lemon chicken...the recipe stretches the skin so tight, all the fat goes out and it is just crackling crisp:

Tonight I made a mixed mushroom pot pie. Here are the mushrooms starting to saute with some leeks. There are five kinds: regular button, shiitake, lobster, hen of the woods, chanterelle, and porcini (rehydrated):

We have those too. We have planned to take it down for two years and it, along with 4 oaks that I hate are still there. If I hear Buddy say they are nice shade trees one more time I am going to scream!

I don't blame you fro being upset. Mistakes happen and that's fine. What is not okay is not rectifying those mistakes in a timely manner, especially when they affect kids and their grades. I would have a headache too :hug:.

I have chicken for tonight. I think roasted sweet potatoes for us and a baked potato for Kady. He classes always used food to celebrate Holidays and after one tried to get her to try green mashed potatoes for St Patrick's day she told me she "don't eat orange potatoes", and she "don't eat green potatoes", She "only eats white potatoes". And she still won't touch anything that doesn't resemble a white potato.

Morning all! Not sure WFD--probably something kid-friendly again, like mac and cheese. But DD is having a Thanksgiving Feast at School today, so we'll have a big lunch. The school is providing the meat and the parents make the sides. Of all the stuff I love to cook for Thanksgiving, I got cranberry sauce and dinner rolls. Bread making and I do NOT get along so those are store bought--at least I made the cranberry sauce. This will be the first of 3 Thanksgiving meals for me and I'm all :cool1: . That and this is the first time I'm actually going to be IN the school with DD; I think I'm just as excited as she is!

What a day you had yesterday! I hope today is better and your headache is gone. I still get a migraine every now and again, but I used to get them quite frenquently from about age 15 til about age 27ish. They are horrible. The day afterwards, do you get what I used to call the hangover headache? The one where the migraine is gone but your head feels sore.

I would like baseball too. Patrick, unfortunately is into hunting. He only goes with people I trust, but it still worries me every time he goes. Kenny doesn't hunt, but says it is a hobby that should keep him out of trouble. Unlike the dirt bike racing that Patrick would love to take up. Or the surfing. Or the skateboarding. Or any other activity or sport guaranteed to give me an ulcer. :lmao:

Well, if I spelled it right you may have heard of it :) ...its actually Market Day. It is a company that sells, I believe, all frozen items. Andrews school just started offering it for a fundraiser. I ordered steaks, veggies, pies, popcorn chicken, etc.

This recipe makes a ton, I usually cut everything back a bit, almost by half. This can also be made with shrimp, crawfish, even pork! Kinda spicy, the flavors are wonderful!!!

Chicken Sparky

1/2 c. butter or margarine
1/3 c. olive oil
2 c. diced onions
1/2 c. diced tasso
3/4 c. diced red pepper
1 c. sliced mushrooms
1 tsp. minced garlic
3 bay leaves
6 boneless breasts, cubed
1/2 Tbsp. worcestershire sauce
1/3 c. lemon juice
1/2 tsp. hot sauce
1 tsp. black pepper
1/2 tsp. each dried oregano, thyme, white pepper, cayenne pepper and garlic powder
2 tsp. chili powder
3/4 c. chopped green onions
2 c. half & half
1/3 c. parsley
1 lb. angel hair pasta
Parmesan cheese

Heat the butter and olive oil in a large skillet. Add the onions and tasso and brown well. Add the red peppers, mushrooms, garlic and bay leaves and saute for about 3 minutes. Add the chicken, worcestershire, lemon juice, hot sauce, black pepper, oregano, thyme, white pepper, cayenne pepper, garlic powder and chili powder and continue to saute.

When the chicken is almost cooked add green onions and half & half. Simmer for 10 minutes or until thickened, add parsley at the end. Serve over angel hair pasta topped with parmesan cheese.

He let it slip that prunes do not agree with him so I have warned him that he better be careful if he eats anything that I make....

I have a friend who is 86 now and a bitty thing. Her husband was about 6'5" and huge. She told him one day after they had just gotten married that he better make sure that he never lifted a hand to her or upset her in any way.....after all she made his food :lmao::lmao::lmao: Now he adored her and never crossed her in any way, but I swear he was also terrified of her!

She was actually one progressive gal for her day and I'm sure that she broke through a slew of ceilings but I still chuckle when I think about that old bear willing to do anything for her and all she had to do was cook, and she was a fabulous cook!

He is finishing the shower/toilet aka "wet room" area first, because the cabinet shop has not even started on the vanity yet. (The owner broke his leg, so everything is backed up.) But that's okay, Mario said we will be showering by the middle of next week!!!!!

Sheryl ~ Your shower is beautiful! I would love to have it in my house. We have a very small shower to accomodate the huge tub in the master bathroom. I like the tub, but don't use it as often as the shower and I'm always hitting my elbows on the walls when I wash my hair. :headache:


Last night for dinner we had roasted chicken breasts, Stove Top stuffing, and green beans.

How big of a turkey do I need for that many?

Can I heat the make ahead mashed taters in the crock pot?

Anybody ever use one of those cooking bags for a turkey?

AND, the most important question:

Anybody have a thanksgivingy cocktail recipe?

Sheryl ~ Your shower is beautiful! I would love to have it in my house. We have a very small shower to accomodate the huge tub in the master bathroom. I like the tub, but don't use it as often as the shower and I'm always hitting my elbows on the walls when I wash my hair. :headache:

Thanks Sandy, I reeeaaallly wanted a big ole huge tub! DH worked on the plans for over a year, had some architecture buddies look at the plans too, but just couldn't figure out a way to fit a tub with the roll in shower. That's when we decided to make the shower really nice, so we wouldn't hurt the resale value of the house. Even a minimal roll-in shower would still have cost a bundle, so we wanted to make it something that didn't look like it was a handicap accessible shower. Since I can't have the jacuzzi tub I wanted, we put in massaging shower jets instead! I can't wait to try it out!

Lauren The cooking bags would make the turkey cook faster and I'm not sure how the stuffing would turn out. Just remember to open it at the end so it browns.

Well, if I spelled it right you may have heard of it :) ...its actually Market Day. It is a company that sells, I believe, all frozen items. Andrews school just started offering it for a fundraiser. I ordered steaks, veggies, pies, popcorn chicken, etc.

Bless your heart. I think I'll stop complaining about our bathroom now. I've been lobbying pretty hard for an upgrade in the shower head, but at least I can shower without injury (most of the time - I AM a clutz).

According to my sister who has made tons of mashed taters, you can re-heat mashed potatoes in the crock pot, but you may need additional moisture (sour cream, milk, butter, etc. - your preference). Plan accordingly.

As for the cocktail, I don't have a recipe to share. However, in my family we are thankful for whatever cocktail we are served. ;)

Well, the Thanksgiving feast was really fun. There was turkey and ham provided by the school. And both were really yummy. And then we had every side imagineable. And then there was the dessert table. I looked like such a pig--I loaded up my plate with a little of everything, hoping that DS would eat something. Of course, his lunch ended up being dinner rolls and cookies. So, I ended up eating everything on my plate (to not be rude;) ) Emma did eat Turkey and Ham along with salad. Pretty happy about that. Why the child will eat salad but not stuffing is beyond me--but I'm not arguing.

Lauren, My Mom usually rushes out & buys the turkey cus she's stuck on Butterballs, but when I get it, I do like to go big! I always want to have leftover turkey! Just make sure ahead of time that your roasting pan & oven will fit your turkey! Pasta for Turkey Day? That's a new one on me!

I'm going out now to Home Depot & Lowe's to scope out bath accessories, like towel holders, etc. DC ordered all of the plumbing supplies from FaucetsDirect.com but it seems to be locked up today. I wanted to let you know about that site though, cus it had some very good prices & everything came in quickly & all in perfect condition. We ordered all the faucets & piping, plus the lavatory & toilet from there.

Cocktail Recipe: Hot Apple Pie
1 oz Tuaca Liqueur
8 oz Hot Apple Cider

I do as much the day before as possible, put everything in casseroles that can go from fridge to oven and serve in them as well. I invested in Fantasia years ago and this has been the best time saver I have. You can reheat the make ahead potatoes in the crock pot according to all those cooks on recipezaar. The recipe calls for cream cheese and sour cream. They are good but rich. I save this one for Easter.

I agree that if you are stuffing your turkey you may want to avoid the cooking bag. Honestly, you can make your stuffing the day before and pop it in the oven that day if you want.

My biggest suggestion: delegate appetizers! You have enough to worry about without trying to manage that course too.

Now Erica just showed up with Peppermint Mocha Latte's from Starbucks so I am having dessert before dinner. YUMM!

Question? Do the Gooey Butter Cakes need to be refrigerated? I made the Gooey Pumpkin Cake (Paula Deen)- taste test- excellent! It is for a work thing DH has tomorrow- should it be refrigerated (about 24 hours after baking)?

BTW, the Ain't Yo Mama's Banana Pudding was pretty unbelievable and will be my go-to recipe for "events". The recipe is very easy to split into 2 desserts- one for work/etc. and one to keep! I mentioned to co-workers and DH that I wanted to add mandarin oranges and pineapple bits next time but all voted "Leave it be!".

The apple crisp recipe given earlier was great- I ran short on apples and added some blueberries. I froze some leftovers and will see how it fares.

Dinner tonight was breakfast- scrambled eggs, country sausage links, whole wheat english muffins with apple butter.

Lord, I'm going to gain soooo much weight these holidays!

Here's my thoughts:

For 12 people you should probably count at least 1 pound of turkey per person.

I usually make my mashed potatoes early in the day, and let them sit in my warm crockpot all day. I keep them covered in butter and they are fine. Just be careful and know how your crockpot works. You don't want them burned on the bottom.

Well, I did it! I'm all caught up! We had family with us all weekend, and then on Sunday I got really sick. I was down for Sunday and Monday. I felt much better on Tuesday except for a hacking cough. I was put on cough medicine with codeine, so I was pretty much out of it all day Tuesday! Yesterday I had to reclaim my house. Alan and the kids really let it go while I was out of commission. It amazes me how quickly things fall apart if I take to my bed! Oh well! I'm back now!

Dinner tonight is barbecue chicken with rice and green beans. Nothing fancy, but I had all the ingredients on hand, and didn't have to leave my nice warm house today.

I'm glad to see that you all are doing well! I've missed chatting with you all!

Sheryl, I agree with everyone else, your new shower is awesome! I would love to have those massaging jets. Our main bathroom is really weird. It has some marble like yours (but a bit darker), which is nice on the walls, but the marble is on the floor too, and good grief it is SO slippery on the floor! We have mats everywhere to prevent falls. We have a jacuzzi tub (rarely used, though I love it when I take the time to use it) in the main section along with the toilet and sink, and then in a seperate space the smallest shower ever! This (very small) space also has an extra sink and cabinet area that we never use...we've been talking about investigating removing the sink/cabinet and making that whole area a larger roll in type shower. That's a long LONG way off in the schedule though.

Well, I've finalized my pie menu for Pie Night on Wednesday. I will be making my famous pecan pie, key lime pie, coconut pie, and Jacob will be making eggnog pumpkin pie, and Katie will be making Hello Dolly pie. Yummy!!! If you don't see me around much after Tuesday, you'll know what I'll be doing.

At least I don't have to make an entire Thanksgiving dinner by myself this year. We are eating with one of Alan's siblings. I'll do the turkey, stuffing and sweet potatoes. Easy peasy lemon squeezy!!

I have to tell you, my sister is not thrilled to be in the kitchen but she is awesome about Holidays. One year we all headed to her home for Thanksgiving and are congregated in the kitchen. Sharon, my DH cousin is carving the bird and all of a sudden she stops, gives a furtive glance to see who is watching.......and sneaks her hand into that bad boy.....and extracts all kinds of goodies :scared1::scared::eek:. Now if there is turkey on the menu I head over and clean her bird :lmao::lmao::lmao:

It is the informal dinnerware from Princess House. I use the dinner set all of the time, have put my china, oh I have no idea where I put it. I bought a lot of the casseroles and serving pieces so my table always matches and I can serve in the same piece that I cook in. I think it is oven safe to 400 degrees or so. There are "holders" as well and I have them but seldom use them because they take up a lot of room.

What a lineup! What great kids, making their own contributions for pie night.

I made your pecan pie last year and Erica declared it the best pecan pie she has ever had, so of course it is on our dessert menu for this year. Wow, Some of you are really early risers!!! I'm only awake cus DH has snored me out of the bedroom! He caught the cold I had last week & it's giving him a rough time. Although he seems to be sleeping very well! :laughing:

Becky, We'd sure love junk food night at your house! DH would love that pork sandwich for sure. I really am going to have to cook that roast! If you ever are able to get around to doing the large shower, the tile we used is honed & filled travertine. I haven't gotten to use it yet, but I'll let you know if it's slippery or not. We were told by the tile store & DC that it would not be slippery at all. It really does have rough texture but we'll see. DH will be fine on wheels in there, but if it's slippery I could be in for big trouble!

Don't know what I'll be cooking for dinner tonight. I'm hoping to get started on some of the Thanksgiving dishes that I could stick in the freezer. Like the Pot Roast that my brother has already requested!

Anyone know if I could freeze the Sweet Potatoes? Probably not, uh. I'd just make them this weekend & stick them in a cold fridge but Nancy's Son might call out the Food Police on me!

Lindsay- There is a Throat Tea that is sold at Shaws in their natural foods section. I have used it and it eases it a bit, I think it has licorice in it. I heard that singers use it.

Now you need to rest. Just rest. Don't talk if you can help it and sleep as much as you can. Laryngitis takes time to run it's course and if you are tired I think it takes longer because your body is splitting all it's energy. You have two day before your solo so stay in your cozies and go back to bed! Tennessee is not THAT far away.....all the Mama Hens on the WFD will converge :hug:

Lindsay- There is a Throat Tea that is sold at Shaws in their natural foods section. I have used it and it eases it a bit, I think it has licorice in it. I heard that singers use it.

Now you need to rest. Just rest. Don't talk if you can help it and sleep as much as you can. Laryngitis takes time to run it's course and if you are tired I think it takes longer because your body is splitting all it's energy. You have two day before your solo so stay in your cozies and go back to bed! Tennessee is not THAT far away.....all the Mama Hens on the WFD will converge :hug:

A quick morning check in...I missed yesterday totally, I had meetings at school with the social worker to plan what families will be getting the Thanksgiving food baskets. There seem to be a lot more in need this year, very sad. I am sure we will have more for the christmas tree as well:(

Lindsey--Listen to Nancy and take it easy..rest is the best thing I agree...I also agree with her that if you don't listen we will be on your doorstep in a flash!!:)

Sheryl--I have been wondering where Lori is as well. I will send her a PM this afternoon if she doesn't check in!!
The bathroom looks so handsome and rugged....errr I mean beautiful and Luxurious.......I am anxious to see it finished!!

It has been raining (pouring) since yesterday morning and it will be changing over to snow this afternoon...we should get just a few inches they say..just enough to make things a mess....we still have leaves to rake this weekend, so we will be raking through the snow again this year it seems. (this is for the red maples out front..our reg maples out back haven't dropped a leaf yet drives us insane!!) Kris still has two more boatlifts and docks to take out this weekend...at least he has wet and dry suits!

Dinner tonight will be Hamb Gravy with peas and hashbrowns. I am working switching over the summer/winter clothes so I need a quick meal. I have to fig out what we are bringing to florida so I don't put it away.

Lindsay, My Dad swore by apple cider vinger, honey, honeym hot water and lemon. Wendie- Things are getting tight for a lot of folks. Buddy was upset that we did not get as much put away as we wanted to get through the winter months, which is his slow time. He calls it paycheck to paycheck and I had to tell him that he has forgotten what paycheck to paycheck really is. I think some folks are going to have a rough winter :sad1:

TarheelTink- I don't refrigerate the butter cakes but my son is positive I am going to kill everyone with some of my habits. He is a certified food handler and I think if he comes into my kitchen when I thaw chicken he is going to be "certifiable". :lmao:


There's no possible way your defrosting/food handling techniques are in any way worse than those of my mother. My sister and I laugh about it to this day and say we are probably immune to any food borne bacteria. This is the woman who would put a leftover pizza box in the oven (cold) and serve it to us the next day :scared1: (Does this help explain why I'm nuts about that kind of stuff now?) Anyway, one of our funniest stories about this was when she decided to defrost a family pack of hamburger - outside - lying on top of the boxwoods in the back yard - in SC in May. Several hours later when she went to get it, it had disappeared. She thought my brother was playing a trick on her and had hidden it. She accused him for hours of taking her meat. :rotfl: He had no idea what she was talking about and it was only when I found the styrofoam bottom that she realized neighborhood dogs must have gotten it. :lmao: :lmao:

So tell your son it could be worse. Much worse. :rotfl:


Well, I did it! I'm all caught up! We had family with us all weekend, and then on Sunday I got really sick. I was down for Sunday and Monday. I felt much better on Tuesday except for a hacking cough. I was put on cough medicine with codeine, so I was pretty much out of it all day Tuesday! Yesterday I had to reclaim my house. Alan and the kids really let it go while I was out of commission. It amazes me how quickly things fall apart if I take to my bed! Oh well! I'm back now!


Glad to see you back! I hope you are feeling better, but don't do too much too soon. You don't want a relapse just prior to Thanksgiving.

I agree with Nancy, it seems like a great many people will be having a difficult time this holiday season. There was an article in our local paper just yesterday about the increased demand at the food bank. The director said they had about a 25% increase in the number of families they were serving.

Kenny ate the baked grits last night and pronouned it ok. The kids however, loved it and the basalmic chicken (but not the mushrooms).

Tonight's dinner is braised pork chops (not Lauren's - new recipe) with corn pudding and salad.

I am such a nerd - we are Costcoing tonight and I can't wait!! We are going to peruse what they have and decide what we want for Thanksgiving lunch since it's just us this year (we're boycotting family get togethers).

So, we'll be eating out tonight. I think I want Pei Wei - haven't had it in awhile. DH is leaning towards Chipotle, but we had that not too long ago.

:eek: Liam is not a daredevil -- he won't even ride his bike -- so I don't think I have to worry about him taking up any extreme sports. I'm sure he'll find other ways to give me gray hairs.

I have a question for y'all. We've never viewed Wishes from anywhere except the Contemporary Resort. We're planning on being in the MK this time for Wishes - any tips on a good place to view it?

Like others have said, Main St is the best view. However, last year, we watched it from the Main St train station. Some people don't like that spot because the lights are on, but we had a clear view of all the fireworks and plus, we didn't have to fight the crowds to leave the park.

Yesterday I had to reclaim my house. Alan and the kids really let it go while I was out of commission. It amazes me how quickly things fall apart if I take to my bed!

My house was clean on Monday before Greg came home, and it is a disaster now. I am mostly ignoring it, for now. I am glad you are feeling better.

Hey ya'll. I've been working alot and have been lurking some. No cooking for the most part.

Rick and I lost Wanna B Monday night. The vet says it looked like a stroke. We're devastated. So things here are a little crazy. We had him cremated and the gals dropped off his little wooden urn today- so I'm weepy and Rick's just a mess. Not sure how Rick's gonna react when I bring the little guy home tonight.

I'll be working with Rick every week till our Christmas trip- it's good therapy- but I'll be lurking, if not posting.

Wendie- tell Ross I found the Harry Potter candy- We're good to go for Christmas!:laughing:

For 12 people you should probably count at least 1 pound of turkey per person.

I usually make my mashed potatoes early in the day, and let them sit in my warm crockpot all day.

It is very sad of the amount of people that are less fortunate...I have not been back to church since vacation but I am sure the giving tree is packed with requests. Our church even sends things to ME...not sure of the town.

Brrrrr, it is getting cold here too but not as cold as you all...we had a flurry today. Keep warm...I'd be drinking hot toddies every night.

The leaves...what a mess. We have about 5 - 6 maples that are still dropping. Yuck! I am not used to this.

I was working in Bloomingdales NYC a while ago (about 15 years) and this man is staring at me and following me up the escalator. He starts talking to me, flirting, and then a while later he comes over and hands me pics with notes and autographs...it was evil Knivel (sp)!!! How weird is that???? Oh to be young...

Kathy I can't believe you have already done the Christmas decorations. (Sigh). I am terrible at decorating and so I put it off until the last minute. Last year, Amanda asked to decorate the tree by herself so I let her. Yes, all the ornaments were on one side and none were higher than she could reach, but she was proud of it and I finally had a good excuse as to why it looked like it was decorated by a 8 year old. :rotfl:

Lauren Glad your mom is coming for Thanksgiving after all. All's well that ends well. Try not to let her initial response and the reason for it get to you. I'm sure you will be given many more opportunities to get upset from the sound of it.

As for the pork chops, I don't know yet. Kenny isn't home from work so I haven't tried them. They don't smell as good as yours, but if they are good, I'll share the recipe.

It's an asian bistro - same company as PF Changs, but counter service style sorta. Order at the counter, find a seat, they bring it to you and clear it for you. Open kitchen, nice atmosphere - I got the honey crispy chicken with brown rice for $7.50 and it's enough for 2 people easily. I brought half home, even after DH took some pieces. He gets pot stickers (fried - 8 for $6) and wonton soup (HUGE bowl for $4). They also have great iced chai tea.

We ate and ate and brought the rest home. I'll have it for lunch tomorrow :woohoo:

Nancy your memory is amazing! Hailey is indeed the girl who likes to eat her Krispy Kremes while lounging in the jacuzzi. I'm sure she will be doing that in approximately 9 more days. And, for the record, I have no idea what Pei Wei is either. :confused3

Kathy I can't believe you have already done the Christmas decorations. (Sigh). I am terrible at decorating and so I put it off until the last minute. Last year, Amanda asked to decorate the tree by herself so I let her. Yes, all the ornaments were on one side and none were higher than she could reach, but she was proud of it and I finally had a good excuse as to why it looked like it was decorated by a 8 year old. :rotfl:



I remembered because donuts in a jacuzzi is my idea of Heaven so I thought "That girl has the right idea :idea:! I know that you all are looking forward to relaxing in just about a week, so ask your Princess to have a KK for me.

I am amazed that Kathy has her decorations up as well. I thought I was doing well by giving the house a good clean before Thanksgiving :lmao:. All og the Christmas decorations are still in the attic :guilty:

We did have pizza last night :thumbsup2. DH has no idea what time he will get home tonight so I'll catch up with him later on to see if I should cook dinner. I would prefer to go out, but that is nothing new :upsidedow

Hey ya'll. I've been working alot and have been lurking some. No cooking for the most part.

Rick and I lost Wanna B Monday night. The vet says it looked like a stroke. We're devastated. So things here are a little crazy. We had him cremated and the gals dropped off his little wooden urn today- so I'm weepy and Rick's just a mess. Not sure how Rick's gonna react when I bring the little guy home tonight.

I'll be working with Rick every week till our Christmas trip- it's good therapy- but I'll be lurking, if not posting.

Wendie- tell Ross I found the Harry Potter candy- We're good to go for Christmas!:laughing:

DS was sick yesterday but seems better today. We couldnt' get his peak flow meter out of the "red zone" yesterday... we saw 2 different doctors (our primary and then we had an allergy testing appt with the allergist- she was appalled at how sick he was..."He is much too sick to be tested." I really felt like mother of the year:sad2: ) The allergist called his primary right up (we'd just come from there) and talked about his medications. Then she asked if we had a follow up with him and I said "no" and she looked at me like I was nuts and said, "I want to see him next week, whatever day and time is good for you."

Now if I can keep him quiet... not easy to do with a adhd/pdd child. He's already watched "How the Grinch stole Christmas" this morning. The more he races around though, the worse his breathing gets. When I went to fill his prescriptions yesterday, I had to put him in that wheelchair with the grocery basket on it (our pharmacy is in the grocery store).

I don't have any advice about keeping kids quiet, I had two who were quiet when they were sick and one I had to let do yard work after an hour or so. I hope your little guy feels better real soon, allergies, breathing issues and colds are tough combinations to stay on top of.

I think tonight will be chinese take out. I now have a taste for chinese with all this talk of asian food. We have PF Chang here but no Pei Wei that I know of.

Mermaid I hope your son and you get some much needed rest. That made me laugh when I read he was reading the classified's maybe he is looking for a special gift for you.

Gretchen & Nancy - Please don't be impressed with me getting my Christmas stuff up - it was completely out of sheer desperation. I jut know that after vacation I'll be in a funk and we wouldn't even have a tree up. This way when we get home I can feel secure going into my post vacation depression that I'm not letting the family down. OK I'm rambling now....:laughing:

I'm making a huge pot of vegetable soup today. I'm doing what my Mom always did, I'm putting a whole chuck roast in it, it'll be good & hearty. Got every vegetable I could find going in too!!

We started with a cocktail I saw Bobby Flay make on the Food Network the other night--it's just four ounces of fresh squeezed orange juice, four ounces of lillet, and 2 ounces of soda water. It's very light and refreshing...I guess the only problem is that it really does not taste like it has any alchohol in it!

DO you brown the meat or just braise the whole thing as is? I love a beef barley soup and generally start with a beef soup bone and then add browned chuck roast after I cut it. It is a lot of work so any shortcuts would be welcomed!

I brown it first then put the whole thing in and let it fall apart on its own, of course it takes a while, that's why I do it on weekends only.;)

I'm impressed. I usually do not do any till 2 weeks before. When I went to the store yesterday for some decorations, they didn't have too many thanksgiving ones. So, I just got some more green garland, gold bows, white lights and autumn leaves and that will go on the mantle with some candles. THen all I have to do is replace the leaves with something christmassy and the mantle will be done...;)

Greg and I are going to our neighbors' house tonight for a little pizza party. We are making them ourselves, but I think only one can be made at a time, so who knows when we will actually eat. My asthma is out of control right now, too. I'm on Prednisone, using my nebulizer daily, and STILL sucking on the Albuterol more than I should. CRazy weather, I guess.

I hope his breathing improves soon.

It is pretty chilly here today..right around 30 and super windy out. Kris is setting up staging for a window replacement job he is starting tomorrow, and as soon as the guy who works for us is done at his other job this afternoon they are going to go take out two boatlifts and docks. (one is huge so we hired 2 other guys to lend a hand) These are the last two of the year, as soon as Kris gets home I will stick him in a hot shower!
Ross is outside raking leaves, he just asked if he could take a break after finishing the side yard for some hot cocoa, lol.
I am going to pack for our trip, as we won't be needing shorts or tshirts around here any time soon, and it might warm me up a bit to be packing sumer stuff that we will be wearing in a month!
This evening we are going out to eat at a local place, they have the best rolls!!! (mmmm carbs, lol) Then we will go get some groceries.

Dinner tonight is actually going to be something healthy for a change. I am making a huge pot of vegetable soup. It's a good way to clean out the fridge and make room for the Thanksgiving stuff. It's simmering now and so far has white onions, red onions, leeks, garlic, carrots, thyme, rosemary, potatoes, bay leaves, parmesean rinds (for flavor, I am fishing them out later) and chicken stock. Still to be added to the pot are tomatoes, green beans, peas, corn, pasta, and butter beans. Plus I am making some pesto sauce to swirl in at the end with some extra parmesean cheese.

Of course, you know after eating that healthy soup I am attacking last night's cheese plate for leftovers!!

Bear--I make a vanilla whipped cream, by using heavy whipping cream and adding extra vanilla extract, and a few table spoons of instant vanilla pudding mix, and sometimes, if I can find them one vanilla bean scrapped into it, while whipping it. I also make a chocolate whipped cream by adding in hershey's syrup as well as a bit of choc pudding mix.

Hi bear74, I would buy your store brand topping and a box of french vanilla pudding. Try whipping the topping with the french vanilla pudding mix adding 2 tbsp. at a time, until you get the flavor you want. The only thing I wonder about is if that would give you a grainy topping. The solution would be to stir the pudding mix into a little milk, just enough to get rid of the graininess, and then whip that into your topping. You'd have to refreeze the topping before using it in that case.

Bear- I would mix some instant vanilla pudding with milk or heavy cream, add a touch of vanilla and then stir it into the cool whip before it thickens up, stick it back into the fridge to set. I also pick up heavy cream when I am at Sam's, it is pretty inexpensive there. Then I add a few teaspoons of the pudding into the cream with a little confectioners sugar and vanilla. Beat it up and it is very good. The pudding helps to stabilize it so it does not break down. It is probably a little more expensive than the store brand cool whip but I think the price may be about the same as the regular Cool Whip. Can you let us know how you make out?

Dinner tonight was a clean out the fridge night. I started shopping for the Holiday so I have to get rid of everything I can to make room. We never even made it to the table, Erica was hobbling around, frozen to the bone so Buddy built a fire to warm her up. He put a rocker in front of the fireplace and she has not budged all night. The rest of us found seats around it as well.

I have a nice spiral ham for Sunday dinner and if I get all of my errands done early enough I will bake a cake.

Has anyone tried the pumpkin pie bars in the Kraft Food magazine? They look good to me and I was thinking of making them for Thanksgiving. I also am drooling over the truffle pie

We ended up with Qdoba. Never had it before but we saw it on the way to Jason's Deli and I suggested we try it. Very yummy. I had shredded pork nachos. He had a taco salad.

I have made my Thanksgiving Day menu and needed some "gourmet" ingredients so we went to Central Market tonight to spend loads of money. It's a good thing we only had an hour before they closed or we would have had to take out a small loan.

My random menu of things we are going to chow down on all day:

Cocktail shrimp
Crab cakes
Spiced nuts
Crispy olives stuffed with sausage
Blue cheese gougeres
Deviled eggs
Spinach artichoke dip
Avocado egg rolls
Cheddar bay biscuits
Mulled wine (Jenny's recipe she posted)
Chicken quesadilla pinwheels
Everything chicken tenders
Cheese and spinach puff pastries

I may add more if I come across some great recipes. Since it's just us, I didn't try to make it balanced at all (notice the lack of fruit!) ;)

Morning friends..

It is 23 degrees here so on the menu tonight is fish chowder, made with fresh haddock, corn, carrots and potatoes. I slow cook it in the crock pot all day, adding evaporated milk the last hour. It is sooo good and perfect for a day like this!

We're having stuffed pork cutlets and some type of potato.... haven't decided which yet. Probably baby peas for dessert.

Dh has gone to Home Depot (his Church) and then he's going to Target to look at an artificial tree. As much as I HATE the idea.... with all of ds's breathing problems as of late (as well as my own) I really think we need to go artificial. There are plusses though- no watering and it's pre lit. We always have an issue with the lights and dh has to put them on "just right" :rotfl:

Kris and I go away the first weekend of Dec. to Portland to do all of our Christmas shopping. Ross goes to Kris' folks. We do nothing before and nothing after.
Ross' gift this year is our trip. We will have a few small things for Ross for that morning at the resort, but we will be gone from the 15th until the 1st, so I am sure we will buy him more "things" along the way, lol.
We are having our family christmas on the 14th at the outlawz.

I am not putting up a single decoration, as it is bad enough to come home from vacation to the unpacking, I do not want to have to face holiday decoration take down as well! Right now my formal living room has suitcases in it instead of holiday decorations...wish I could decorate it like that every christmas, lol.

I'll be doing my Turkey Day prep work in the kitchen today, chopping veggies, peeling shrimp, etc. so we'll be getting Scooters Chicken tonight.

I have no Christmas shopping to do, kinda sad, no family. Our vacation is our family gift. Of course Kyle will pick up quite a few items, on my tab ;), while we're in Disney.

Magic Shell Ice Cream Topping

1 (6 ounce) package chocolate chips
1/4 cup (1/2 stick) butter or margarine
1/4 cup vegetable oil

Melt chocolate chips and butter in a double boiler. Add oil and mix in well. When spooned over ice cream, it will create a hard chocolate shell.

Morning friends..

It is 23 degrees here so on the menu tonight is fish chowder, made with fresh haddock, corn, carrots and potatoes. I slow cook it in the crock pot all day, adding evaporated milk the last hour. It is sooo good and perfect for a day like this!

The crockpot chicken tacos were great. It's going to be added to those meals that we do a good bit around here.

Crockpot Chicken Tacos
1 lb chicken (boneless skinless or on the bone works)
1 cup chicken broth
1 pack taco seasoning

Season the chicken with garlic powder, onion powder, and I used some seasoned salt, too. Warm the chicken broth a bit and mix in the taco seasoning, blend well. Pour over the chicken and cook on low for 6-8 hours.

I took the chicken out, pulled off the skin, took it off the bone and shredded it. Then I put it back in the broth and let it sit another 30 minutes or so.

This was so easy and really good. It makes a lot and can be frozen, too.
