We ate out at a Chinese Buffet. Yea! Stuffed and happy. :)

The breakfast bake (pg. 180) I made the other night was decent. I think I liked it more than everyone else. LOL. The next time I make it, I think I'll have biscuits on the side and top it off with more shredded cheese. I'll have to tweak it some more. It wasn't wow. But it was good and filling. Oh well. Thought I'd give you guys an update.

DH's birthmother is passing through town this afternoon/evening. We're going out to dinner with her tonight. She's vegetarian and kind of choosy about what she eats, so it's easier than cooking for her. So I get a day off. :thumbsup2

I'm using the crockpot. We're having chicken and gravy with diced potatoes & green beans. I'll bake some biscuits just before we eat. I think I'll make a vanilla pudding & Cool Whip pie for a light dessert. :)

I've got my version of Osso Bucco in the crockpot, will fix pasta with pesto sauce and roasted cauliflower to go with it! YUM!!

Hi All,

Grilled Rib Eye steak, some sort of potatoes, salad and creamed spinach (frozen). I may roast the potatoes...it is cold here and the heat is not working here so the oven will warm things up a bit! :)

I have apples baking in there now and the fireplace is going! I will be warming my hands as well over the grill later!!!! :)

I am debating between New York Strip steaks, baked potatoe and green beans or a Thankgiving Dinner with a chicken instead of Turkey. I think the later might be too much work though.....

I'm making marinated grilled chicken tenderloins, rice, broccoli, peas, and cucumbers.

We were going to eat on the patio, but it's still too hot outside. :sunny: Hopefully it'll cool down before the time change.

It is cooking now. I'll let you know if its good. It was a Dream Dinners choice so I dont have the recipe written down but in the glaze was about a half cup cola, lime juice, brown sugar, not sure what else, they put ginger in a lot of stuff but I dont think in this one. You heat it up to thicken it. It makes pretty much and you baste the roast with it and then serve the rest at the table.

I spent yesterday cleaning and shopping, and then getting ready for DGD 5th birthday party with teh family, so we had pizza for dinner. Today was her party and for appetizers we had an apples with a caramel and nut topping, cranberry cheese and crackers, a hot onion dip with crackers and some kind of greek focacia bread. then we had tuna salad, chicken salad, and ham salad finger sandwiches and corn chowder. Cake and ice cream along wiith a chocolate fountain with cut fruit, pretzels, oreos and marshmallows. Yum!

I made the recipe for Spaghetti Casserole that was posted here. It was great and a definite "make again"!!! Not only did it taste great, but it's a meal that I can make ahead and heat up on those "NO TIME" nights!

It is cold here also. We have that nasty cold running thru our house, we all seem to be taking turns. I thawed out extra chicken for the salad yesterday and I have chicken bones in the freezer from the last time I roasted chickens for dinner so I think I will make a good rich chicken noodle soup to have tonite.

I think I'm going to make Lindsay's cheesy crockpot chicken tonight. With the sickness in our house I need to get dinner going and forget about it--I think I'm going to throw in a can of Rotel in with the chicken as well--make it sort of mexican!

Yesterday for Sunday linner we had a test run for Thanksgiving and roasted a turkey, and also had gravy, mashed potatoes, stuffing, honey-roasted butternut squash, roasted brussels sprouts, roasted carrots, and a spinach gratin.

I don't know what I am making tonight yet...

Yesterday, my dad roasted a turkey and made some mashed potatoes, corn, green beans, crescent rolls, gravy and cranberries.

Today, I think we'll probably have leftovers, but potatoes are gone, so I'll probably make stove top stuffing with some celery and mushrooms.

We're having a super easy chicken crockpot meal tonight. It's my do-nothing day today, so I wanted something that would cook itself. I've been working hard for the last week or so. I deserve a break!

I wish I could send you cold people some of our Florida heat. I have my A/C on. Actually, it's a bit cooler today, it's 82° right now. If it were up to me I'd have the A/C off and the windows open, but DH would have a fit.

Tilapia fillets are on sale at Publix so I'm grilling those for dinner, along with Teriyaki noodles and green beans.

I've got our dinner in the crockpot right now! I'm making Lemonade chicken. I've tried it once before, and it's yummy. It reminds me of lemon chicken from my favorite chinese place. Right before serving I'll cook up some brown rice, and steam some broccoli. For dessert I'm making some pumpkin bread with chocolate chips.

Nope. I'll post it, though.

Lemonade Chicken

6 boneless skinless chicken breast halves
3/4 C. lemonade concentrate
3 Tbs. ketchup
2 Tbs. brown sugar
1 Tbs. cider vinegar
2 Tbs. cornstarch
2 Tbs. cold water

Place chicken in a slow cooker. Combine the lemonade, ketchup, brown sugar and vinegar; pour over chicken. Cover and cook on low for 3-5 hours or until chicken juices run clear. Remove chicken and keep warm. For gravy, combine cornstarch and water until smooth; stir into cooking juices. Cover and cook on high for 30 minutes or until thickened. Return chicken to slow cooker; heat through.

I was really tired today so we just crashed in front of the TV with panini--turkey, cheddar, apple, honey mustard, bacon. They were good. I have the other half of mine to bring for lunch tomorrow. And now it is time for bed! :)

Nucpharm29, the squash is super easy. Here is the recipe:

One butternut squash, halved, peeled, and cut into 1 1/2 inch chunks (or cheat and buy the pre-peeled chunked stuff!)
1-2 tbsp. butter, melted
salt and pepper to taste
1 1/2 tbsp. honey

Toss everything together and bake in a 400 degree oven until tender and carmelized on the edges, about 40 minutes.

Tonight I made southwestern chicken chili from Cooking Light Magazine along with cornbread. The chili was really good and quick to make. I added some shredded Mexican cheese on top.

Cooking spray
1 cup chopped onion (1 medium)
1 cup diced green bell pepper (about 1)
2 garlic cloves, minced
1 pound skinless, boneless chicken breasts, cut into 1/2-inch cubes
1/4 cup chopped fresh cilantro (I used parsley instead - no cilantro at the store)
1/4 cup strong brewed coffee
1 tablespoon chili powder
1 teaspoon brown sugar
1/2 teaspoon ground red pepper
2 (15-ounce) cans kidney beans, rinsed and drained
1 (28-ounce) can diced tomatoes, undrained
1 tablespoon masa harina or finely ground cornmeal
3 tablespoons water
Chopped fresh cilantro (optional)

Heat a Dutch oven over medium heat. Coat pan with cooking spray. Add onion, bell pepper, and garlic; cook 5 minutes or until onion is translucent, stirring often. Add chicken to pan; cook 5 minutes, stirring often. Add cilantro and next 6 ingredients (through tomatoes), stirring to combine; bring to a boil. Cover, reduce heat, and simmer 10 minutes.

Combine masa harina and 3 tablespoons water in a small bowl. Add to chicken mixture, stirring well to combine. Simmer, uncovered, 10 minutes. Garnish with chopped cilantro, if desired.

Rain on the way here too. We should be seeing it late this afternoon, but it is raw and overcast now. My DGD has her birthday party at Libby Lu this evening, and my DD is really not feeling well yet, so I am going to give her a hand. She has pizza from Sbarro for the girls and theor mom's after the party. DH can have leftover soup and sandwiches.


Last night was DGD 5th birthday. DH and I took her to Red Robin to celebrate her special day because we wanted to give DD time to rest and not worry that DGD was not having her day stand out.

Well I just received a $25 gift card to Landry's restaurants from Sunshine Rewards :sunny: . We have to go shopping tonight and finish up dd Halloween costume as she has a party this week. Also she has a few friends with bdays this week so spending too much on that. So for us it will be Rainforest Cafe or Joe's Crab Shack. $25 won't cover the whole bill but it is a nice start. Gotta love those reward programs. :goodvibes

It is going to rain tonight and I am fighting off the beginnings of a cold (figures!), so I am making soup tonight with chicken stock, lots of garlic, ginger, scallions, udon noodles, sesame-chile oil, maybe a little soy sauce, some cilantro, and a poached egg for each bowl.

LaurenI didn't have one, but my stepsister did.. Like anything orthodontic, it might be sore after they first put it in and everytime they adjust it. Keep some children's Advil on hand. :grouphug: for your DS

Another wet and drizzly day here! I'm making Hawaiian Ham Bake tonight with brown rice on the side. I wish I could get my kids to like brown rice better! I guess if I just keep offering it, and not making white rice, eventually they may decide it's ok, right?

My stepsister is in town from NM so I am going to my parent's house for dinner. We are having Aunt Betty's Chicken, which is chicken breasts topped with swiss cheese, cream of something soup, and Stove-top. Mmmmmmmmmmm! I will post the recipe later.

Another easy night for me...DS and I are going to our friends house after school so the kids can play so we are having pizza there...

DS8 also made out well at the orthodontist! I guess it was an easy procedure to put the spacers in...it took about 5 minutes. Thank God!

DFi is working late so he will not be coming to our friends...I'll make him something quick when I get home...

Tonight for dinner I'm making Glynis's pot roast recipe, either mashed potatoes or au gratin potatoes, corn and rolls.

I have a quick question- I got the ingredients for the pot roast the other day. I noticed the brown gravy mix and the ranch mix were the same size package but the italian dressing was much smaller (even though it says it makes 8 ounces?) so I got two. Should I use one packet or two?

Also- I'm making this recipe in the oven, not in the crock pot (I don't have a crock pot yet.) Should I put some beef broth in the bottom of the pan, the roast and then the seasoning mixture poured on top, or the seasoning mixture in the pan first? Since I'm using the oven and not the crockpot I thought I should use more than 1/2 cup water like the recipe says (or did I read that wrong?) How should I do this?

Just use one packet of the italian dressing mix. I've never made this in the oven, so I'm not really sure. I know some here have done it in the oven, hopefully they'll be able to help you out. I don't think I'd add any broth though, as it might make things more salty.

I think you'll like it Jennifer. I do have a suggestion, though. I let the chicken cook longer than the suggested time, and it was just wonderful. I think that you need to cook it until it shreds easily, and then you can mix it with the yummy sauce, and serve it over the rice. I tried to keep my chicken breasts together, and so the middle of the chicken didn't get any of the sauce. It would have rocked if I'd shredded it.

well DH was supposed to take the chicken out of the freezer last night. Well he forgot. so I put it in the crock pot frozen. I also only have 3 chicken breast. But I am sure it will be fine.

I did mine frozen, too. I put them in at about 11:00 in the morning, and we ate at 7:00 that night. You should be fine!!!

I think chunks would be fine! Just watch your cooking time so they don't fall apart on you. I think this would also be a really good recipe to use with breaded chicken nuggets for kids. It wouldn't take nearly as long either, since you're just heating the nuggets and sauce together. Hmmmmm....

I LOOOOOVE beef tips at steakhouses, but just can't seem to get any good ones at other people's homes. The meat is tough or something. How do you make yours?? *drooling just thinking about them w/ mushrooms!!*

Well, I cheat. I buy a roast (usually beef bottom round or rump) and roast it until it is to the point of nearly falling apart then I cut it into cubes (I find an electric knife works so much better than a regular knife) instead of slicing it. I make the gravy from the roast drippings and red wine with fresh mushrooms. It may be cheating but it is soooooooo good.

Tonight we will be having Baked Chops and Fries. There's broccoli in the recipe, so it's kind of an all in one dish. DH has late meetings, so this works for the rest of us. The kids are in the kitchen right now making some sugar cookies with our Halloween cookie cutters, so that's what we'll be having for dessert.

Tonight dh and I had scrambled eggs with grilled shrimp (shrimp were left over from last night). I put the eggs/shrimp on toasted french hoagies, buttered and topped eggs with tabasco! :thumbsup2

I do beef tips in the crockpot too. I use a big package of stew meat with one package of dry onion soup mix and a can of cream of mushroom soup with a little water added and some mushrooms. You could add wine if you wanted to. I cook it all day on low and part way through cooking I make sure the beef is all mashed up a bit, since I sometimes put it in frozen. I serve over noodles and it's quite good.

Yesterday it was almost 90 degrees here, so I scrapped the oven fried chicken and ended up grilling the chicken

But, I was a little stumped as to what I was going to cook for tonight, but after reading the previous posts--I think it will meatloaf here too! With mashed potatoes and some veggie! :thumbsup2

Glad you liked it...I like to make easy things! I have never made it with the chicken but we love it with prok chops too! :)

Tonight I am making Glynis' Lemonade Chicken. I am going to cut the chicken in strips or chunks and then monitor the cooking...I will let everyone know how it comes this way...we are having broccoli and brown rice on the side.

Well, the baked chops and fries was wonderful last night! Tonight we're having Cinnamon Raisin Chicken. DH and I love it, but the kids don't. Tough! They'll either eat it or not! I like to keep exposing them to things so they'll continue to give things a try! For sides we'll have green beans and some kind of noodle dish. I haven't decided that one, yet.

Looks like I'm missing out on a trend with meatloaf, though. Hey, if anyone wants it, I have a great recipe for Sweet and Sour meatloaf. The good part is that you cook it in the microwave, so you don't have to heat up the whole house cooking it! Let me know!

Here is the chicken enchilada recipe I love! It's from Southern Living Magazine Feb. 2000

3 cups chopped cooked chicken
2 cups (8 ounces) shredded Monterey Jack cheese with peppers (I just use a mexican blend)
1/2 cup sour cream
1 can (4.5 ounce) chopped green chiles, drained
1/2 cup chopped fresh cilantro (can be omitted if you don't like cilantro)
8 8-inch flour tortillas
1 8 ounce container sour cream
1 bottle (8 ounce) green taco sauce (I use whatever taco sauce I have on hand--usually a red)

Stir together the 1st 5 ingredients. Spoon chicken mixture evenly over each tortilla, and roll up. Place each tortilla seam side down, in a greased 13X9 baking dish. Coat tortillas with vegetable cooking spray

Bake at 350 degrees for 35-40 minutes or until golden brown

Stir together sour cream and taco sauce. Spoon over hot enchiladas. You can then sprinkle with whatever toppings you wish--diced tomato, Chopped avocado, chopped green onions, sliced ripe olives, chopped cilantro, more shredded cheese.

This is definitely a favorite in our house--I should make it again sometime soon

My mother's chicken enchilada recipe. A family tradition the day after Thanksgiving! I usually hate recipes without amounts, but this is a very friendly recipe. DH doesn't like olives,onions,jalepenos,etc. so I omit or adjust as needed. Sometimes I stuff half of them with my favorites and put some pepper slices on the top so I know which are mine. Served with a salad and bread and a tasty drink it makes us a great dinner! Cheese variety varies with what I have on hand, but I usually use sharp cheddar (more flavor).

I usually use about 2 cups of shredded turkey or chicken.(or pork or beef)
In a non-plastic bowl mix a regular sized can of enchilada sauce with a can of chili (can even be a can of hot dog chili).
Put a small amount of sauce mix in a sprayed casserole dish, then add the enchiladas (follows).

In either a flour tortilla or a softened corn tortilla (as in softened in small amount of hot oil in a skillet) put some meat, a spoonful of sauce, some diced onion, sliced black olives, and a handful of shredded cheddar cheese. Roll it up and put in the dish. Depending on the size of the tortilla it usually takes about 8 large ones or 10 smaller ones. Spread remaining sauce over the top and cover with shredded cheese. Heat at 350 degrees until bubbly. I always freeze leftovers with great success. Like I said, it is great with leftover turkey scraps!

It's so funny that everyone is making meatloaf today. I was just thinking about the meatloaf my mom used to make when I was a kid (in the 80's). I remember it had an orange cheese sauce on top and it was soooo good. I think it was some kind of mix you bought in a box.

We aren't having meatloaf though... tonight is turkey breast, mashed potatoes, gravy and butternut squash.

So, guess what, dinner friends? I am leaving for Disney in 9 days with Dsis and the kids (Dh flies down Monday) AND Liam is sick! He got diagnosed with strep throat today! He will be fine by the time we leave, but I've got my fingers crossed that he doesn't pass it to his sister or my Dsis. Argh!!

Here you go!

Sweet and Sour Meatloaf

1 egg
5 Tbs. ketchup, divided
2 Tbs. prepared mustard
1/2 C. dry bread crumbs
2 Tbs. onion soup mix
1/4 tsp. salt
1/4 tsp. pepper
1 pound ground beef
1/4 C. sugar
2 Tbs. brown sugar
2 Tbs. cider vinegar

In a bowl, lightly beat the egg. Add 2 Tbs. of ketchup, mustard, bread crumbs, soup mix, salt and pepper. Crumble beef over mixture and mix well. Shape into an oval loaf. Place in a shallow 1 quart microwave safe dish; cover with waxed paper. Microwave on high for 11-12 minutes or until meat is no longer pink, rotating a half turn once; drain. In a small bowl, combine the sugars, vinegar and remaining ketchup; drizzle over meatloaf. Cover and microwave on high for 3-5 minutes. Let stand for 10 minutes before slicing.

Enjoy! DH says it's his favorite meatloaf!

No pizza for me - I'm going to my cousin's 21st birthday. My aunt rented out a room at the Japanese Steakhouse/Hibachi so I will be having that - 5 appetizers, your choice of meats/seafood on the hibachi, soup, salad, cake, green tea or red bean ice cream and open bar. (I'm hoping for a coconut martini) :)

I will probably have scallops - the ginger dressing for the salads is so delicious. Can you believe I'm looking forward to that salad dressing with all the other goodies?!

It tastes like a Mars bar to me.....Love it! A local restaurant makes this and sells it for $4.00 a slice. The total ingredients cost me about $6.00.

4 (1 1/2 ounce)Hershey chocolate bars with almonds
1/2 cup milk
1 cup heavy cream
1 tsp vanilla
1 (8 inch) graham cracker pie crust

Melt marshmallows and candy bars in milk over a double boiler. Remove from heat and cool. Whip cream until stiff and fold into cooled chocolate mixture. Add vanilla. Pour into prepared crust and chill.Good as is or top with whipped cream.

Oh this sounds so good! I have everything onhand except the crust, and I can make my own with some graham crackers on the shelf. This sounds like a dessert this weekend.

Dinner was so good last night. DH ordered surf and turf and had bay scallpops and prime rib. I had veal picatta. The show was so much fun....it is always nice going down memory lane with DH. I don't know what is for dinner tonite. I really don't feel like cooking, but we have eaten out twice this week, so I cannot justify ordering in.

DH is coordinating downtime tonight and probably won't be home until 1am so I took the kids to McDonalds and I am making a pumpkin cheesecake for me. ;)

I had a HUGE wet burrito for lunch and I am really not hungry but pumpkin cheesecake sure sounds good. ;)

Tonight is chicken enchiladas with salad and some cookies for dessert. I assembled the enchiladas this morning (I keep cooked and shredded chicken in the freezer so quick and ready to go).

Well, silly me, the recipe for the lentil/sausage soup I talked about earlier I found on here!!! So, looking forward to it.

We did have another soup earlier in the week. I got this recipe from a friend, and I always look for ways to get in more greens/ veggies etc. We enjoyed it, hope you do too!

Kale Potato Soup

cooking spray (or EVOO)
1 1/2 cup chopped onion
2 cloves garlic, diced
4 cups chopped potatoes
1/4 tsp salt
1 bay leaf
7 cups chicken broth
1 cup instant potatoes
1 tsp dried basil
6 cups chopped kale (about 3/4 lb.)
(optional) 1 1/2 lb fried sausage slices (I use smoked sausage links cut into 1/4 inch slices)

Soften onions cooking for about 8 minutes. Add garlic and stir. Rip kale off stems and soak in water, drain. Boil kale over steamer rack about 5 minutes. (Kale sould not be touching the water ... should still be crisp.) Toss kale with onions/garlic. In a separate pot, stir together chicken broth, chopped potatoes, salt and bay leaf. Bring to a boil, cover and simmer 15 minutes or until tender. Add I cup instant potatoes and sausage. Stir in kale and basil. Remove from heat. Makes 8 servings.

I ended not cooking last night - we ended up at Applebee's - it was pretty good - had the new Tyler Florence chicken dishes

tonight we are going out with my neice (9), nephew(6), my dad and his wife. I have not seen my neice and nephew in a month - I am very excited to see them. They lived with me for 10 months and moved with their Dad in Aug - now they live in VA - 3hrs away

tommorrow I will make the sausage/pumpkin/sage pasta.

I am in South Florida. It was hot today but didn't seem as bad as I expected. Lunch was ok. Somehow it never tastes as good as it sounds. Especially when I am looking forward to it.

We had a really good dinner. Chucks is an old barn that has been aroung for years, we used to go there often. They closed and just reopened under different management two weeks ago. Dinner was amazing. We each had steak...DH had 22 oz NY strip and I had a 16 oz filet mignon. Both were really good.
has anyone ever had garlic bread with ham and cheese? WOuld you make the garlic bread and then add the ham and cheese and broil?

DInner tonite was comfort food....hotdogs, sauerkraut, and peirogies.

Tonight will be Garlic & Wine Grilled Shrimp, with Lemon Pasta and crusty bread for dipping in the garlic/wine sauce. OH so GOOD!!

I'm also marinating a roast today for tomorrow. I'm using FormrCastMbr's Mom's pot roast marinade. Can't wait! :Pinkbounc


Make sure to make a gravy out of the marinade and the cooking juices...it is really good! I don't know if many people do this, but my Mom always added some of the vegie and potato cooking water to the gravy...yum!!! Now much though...maybe a half cup of each. I hope you enjoy it!

Dinner was take out chinese tonight...DFi is now on his way to the airport and DS8 is sleeping over my sister's house...I don't know what to do with myself...watch a chick flick probably!

Last night we had that wonderful pot roast recipe again. This time I did two roasts (like it says) and put one in the freezer. I love cooking in advance like that! I put the gravy in a big measuring cup and skimmed off the fat, then put it in a saucepan with a couple of cut potatoes. I let it cook a bit, then threw away those potatoes. They removed a lot of the saltiness that I wasn't fold of last time. We had carrots and potatoes and peas along with the meat and gravy. It was VERY, VERY good.

Not much cooking going on around here this next week. DH is leaving on Monday morning for another business trip. DD is in the school musical Wednesday through Saturday, so rehearsals are hot and heavy right now. And our dog is in the opening scene, so I'm having to go to part of every rehearsal and performace. But it's all fun. We may be doing lots of fast food this next week.

Did you enjoy your evening out, Glynis? I love dinner on a Friday, but I don't know why it is my favorite evening to eat out.
We had a really good dinner. Chucks is an old barn that has been aroung for years, we used to go there often. They closed and just reopened under different management two weeks ago. Dinner was amazing. We each had steak...DH had 22 oz NY strip and I had a 16 oz filet mignon. Both were really good.

I did! We went to Wallaby's which is an Australian bbq place. I had pulled pork and BBQ beef with pickled cucumber salad. It was really nice!!!

I'm sure it would have been better without the cold, though.

Hi all, I am new to this thread. I created a fabulous soup today and just wanted to share the recipe with others. Someone directed me to this thread as a good place to post it, so here I am. Hope someone enjoys it!

Chicken Tortilla Soup Better Than in any Restaurant

4 chicken leg quarters, cooked in a crock pot with salt, pepper, and 1/2 yellow onion, chopped, then deboned
1 pkg Lipton Fiesta Sides Mexican Rice, prepared as directed
3 14.5-oz cans chicken broth
1 15-oz can black beans
1 15-oz can hominy, drained
1 packet Williams Chipotle Chili seasoning
1 cup of salsa or picante sauce

Combine all in a big pot, and heat to boiling. Turn heat down and simmer for 20 minutes or so, then serve hot topped with crumbled tostada shells or thick tortilla chips, and shredded Mexican blend cheese.

Sunday dinner here! Roast Pork- mashed potatoes- baby peas-yeast rolls-stuffing. I was going to serve around 2 pm but my dh and ds just went to our hunting camp for the day so I'll probably do it around 4 pm.

Today we are having a New England boiled dinner: ham and cabbage, potatoes, carrots and turnips. Rye bread and butter. We can have te leftover cake for dessert, I have a lot of yard work today, DH is out in the yard and can get rid of all of the yard waste.

I am so glad you liked it Kathy. I talked to my sister yesterday about this recipe and she makes hers in the crockpot and says it comes great that way too...I think I will be making Glynis' later on this week as well...

Well, as I posted earlier, my DFi is away on business until Wed so it is just me and DS8...we overslept this morning and were hurrying around and I yelled at him a couple times :guilty: :guilty: :guilty: (DFi also decided to call 15 minutes before we were leaving for the bus)...I feel very bad that I yelled so I told him he could have whatever he wants for dinner...

I think he is leaning towards Chinese...we just had it but I love love love it! :love:

Did I mention that DFi already has requested Lindsay's Crockpot Italian Chicken when he gets back??? He is not too happy with the food at the conference...he said last night they had some kind of cow jowls over salad...YUCK!

Sure. It turned out really yummy!

Apple Brickle Dip

1 pkg. cream cheese, softened
1/2 C. packed brown sugar
1/4 C. sugar
1 tsp. vanilla
1 pkg. English toffee bits
3 medium apples cut into chunks

In a mixing bowl, beat cream cheese, sugars and vanilla. Fold in toffee bits. Serve with apples. Refrigerate leftovers.

That's all there is to it! It was really yummy! And a big hit!

Well, I'm a bit put out with my in-laws! Apparently, pot luck means to them "run to the grocery store for a couple of bags of chips, and a bucket of chicken from the deli." I was the only one who made something for our get together last night. On the up side, my stuff was the first gone.

Tonight is Salsa Ravioli! I'm using a really mild salsa since my kids don't really like spicy. I'll make some garlic breadsticks and a big green salad on the side. Nice and easy!

Tonight we are having a huge pot of chicken provencal soup. I got the recipe from 30 Minute Meals. It is so good and makes the house smell yummy!!

2 medium carrots, peeled and chopped *I actually buy a one pound bag, half the carrots, then chop them)
2 cloves garlic, chopped
2 tablespoons extra-virgin olive oil, 2 turns of the pan
1 medium zucchini
1 small to medium red bell pepper, seeded
1 medium yellow skinned onion, peeled and halved
Salt and pepper
1 tablespoon herbes de Provence, available on spice aisle or, 1 teaspoon each dried sage, rosemary and thyme
1 1/2 pounds small red skinned potatoes
1 cup dry white wine
1 (14-ounce) can diced tomatoes or coarsely ground tomatoes ***I use tomato sauce instead of diced or crushed tomatoes***
1 quart plus 1 cup chicken stock, available in quart and 1 cup paper box containers on the soup aisle
1 pound chicken tenders, diced
1 small jar black olive tapenade, 4 ounces, found with Italian foods or on condiment aisle
2 tablespoons chopped flat-leaf parsley

Crusty bread, to pass at table

One medium soup pot preheated over medium high heat. While soup pot heats, chop carrots into 1/4-inch dice, then add garlic, and stir to coat in extra-virgin olive oil. Chop and drop in the zucchini, pepper and onion next, 1/2 inch dice. Season all the veggies with salt and pepper and herbes de Provence. Cook the veggies together 5 minutes. While they cook, cut potatoes into thin wedges. Add wine to vegetables and reduce a minute or so. Add the tomatoes, cut potatoes and stock to the pot, cover the pot and raise heat to high. Bring the stoup to a boil, then add cut chicken and simmer 8 to10 minutes until potatoes are just tender and chicken is cooked through. Serve stoup in shallow bowls and stir in a rounded spoonful of black olive tapenade at the table. Top soup with chopped parsley and pass crusty bread at the table for dipping and mopping.

I am making cornbread to go with it. It sounds like a lot of work, but it isn't.

I'm having broccoli and cheese stuffed chicken breast (frozen), but nobody else here likes that. My son has a late afternoon appointment so who knows how long we'll be- I needed easy.

We might be having ice cream for dinner. DS's stupid school changed the Honor Roll assembly from the normal morning time to 4pm. Then after the ceremony is an ice cream social, by that time it will probably be around 5:30pm. Not a great idea, in my opinion. Ice cream at dinnertime, what were they thinking? :confused3 The kids will probably like it though. :rolleyes:

I'm trying out the Paula Deen pot roast recipe today. I left it cooking in the crockpot this morning. DH is working a bunch of OT this week, the kids all have CCD tonight (at different times, of course) plus athletics right after school so I needed something that would basically cook itself! It's supposed to start raining this afternoon so I'm looking forward to going home and smelling the roast!

Tonight we're having an old favorite:

SHRIMPLY DELICIOUS RICE

¼ cup cooking oil
½ cup chopped onions
½ cup chopped celery
½ cup chopped green pepper
1 cup raw rice
1 lb peeled and deveined shrimp
2 tsp salt
½ tsp black pepper
¼ tsp cayenne pepper
2 ½ cup water
¼ cup parsley

In a large saucepan, preheat oil. Add onions, celery and green pepper, sauté until vegetables are soft. Add rice, shrimp, salt, black pepper, cayenne pepper, parsley and water. Stir, bring to a boil. Reduce heat to a simmer, cover and cook for 20 to 30 minutes, stirring occasionally.

Well, I decided on crockpot sloppy joes for the kids and DH tonight. Here's the recipe for the "unfried Chicken" I made last night--it was yummy!

Unfried Chicken (from WW Simply Delicious) 6 pts. per serving
1/4 cup reduced cal mayo
1 tsp Dijon Mustard
2 tsp grated lemon zest
1/2 tsp salt
4 drops hot pepper sauce
1 (3 1/2lb) chicken, cut in eighths, skin removed (I used chicken breasts)
3/4 cup cornflake crumbs

Preheat the oven to 375. Spray a large, shallow baking pan with nonstick spray

Whisk together the mayo, mustard, lemon zest, salt and pepper sauce in a large bowl. Add the chicken, toss to coat

Place the cornflake crumbs ina large zipper bag. Add the chicken, one piece at a time, and shake to coat

Place the chicken in the baking pan. spray the top of the chicken lightly with nonstick spray. bake until golden brown and cooked through (do not turn) about 45 minutes.

He was actually right outside of Paris in Chantilly...I think the Dolce hotel...

Mind you, he is a very picky eater and was on business so they had set menus...the first night they had a salad with cow jowls and some kind of fish...he hates fish and I eat almost anything but I don't think I would eat anything's jowls!!! :) :) :)

I went to Paris about 10 years ago and I loved the food...you seem adveturous with you eating, so you will be fine...I remember eating a big pot of mussels with crusty bread and a glass of wine...it was heavenly! People watching!

Maybe put the majority of the loaf on foil and then put that on the rack??? Or make in the normal way and drain off the fat before you put any sauce on top...

Has anyone ever tried cooking a meatloaf on a rack? I never make meatloaf because it is so fatty. However, I'm going to make it tonight and I'm trying to figure out if it will fall through the rack if I try to bake it that way. :confused3

I've always baked my meatloaf using a broiler pan, doesn't fall through and the grease slides right into the bottom pan!

Maybe put the majority of the loaf on foil and then put that on the rack???I was thinking about that. Maybe I'll put heavy duty foil on the rack and punch some little holes in it so the grease will drain. Hope it works.

I bought a meatloaf pan at Target last year or so that has an insert that you put the loaf in and it has holes in the bottom. You place that insert inside a slightly bigger pan that holds all the fat drippings. Love it!! I need to make meatloaf soon.

Being down here in Florida I don't crave the warm comfort foods as much anymore and I miss them!

Although we're having meatloaf tonight, the main thing DW and I will be doing tonight is coming up with what to make next week, so we can come up with the list for the grocery stop tomorrow.

I'm thinking we should keep it next this week. Boneless, skinless chicken thighs, covered in BBQ sauce, in a pyrex baking pan, baked long and slow. Also, cut potato wedges, cover with butter and pressed garlic, in a pyrex baking pan, baked until golden brown. Add some steamed broccoli or asparagus, and we're all set.

Easy, and very savory!

Tonight was ham and salami hoagies and home made beef barley soup. I was going to do a chicken thing but I was called in to help build sets for a play and DH works late so he can make his own sandwich.

It might not completely fall through but it might bake into the rack. You will have to experiment!

I cook my meatloaf like this all of the time. You just have to make sure that your meatloaf doesn't have too much moisture in it and you have binders in it, ie:bread crumbs, egg etc.

I found this to be the healthiest way to cook it besides the meatloaf pan with the holes in it (I'm too cheap).

We're debating on going out for pizza or eating in. I have most everything pre-made. Except for dessert, I'm making that now. It's an easy blueberry cobbler. First time using this recipe. I'll let you guys know how it turns out.

I've made pork chop schnitzel (basically pounded the pork chops, dipped them in egg, and coated them with Italian seasoning, salt & pepper, then fried them in olive oil). I have scalloped potatoes and peas to go with it and flaky biscuits.

If we don't eat the pork chop dinner tonight, we'll eat it tomorrow night.

Tonight DH and I have a Halloween party to go to, I know there will be lots of yummy appetizer type things, I'm still deciding what to have for dinner, for the girls, and for us to have something so we don't go wild on the party food! :rotfl:

Glynis--I made those Pumpkin Ginger scones (stones as DD called them) and they are delish!!! And the other great part, cooking them made my house smell like the holidays! DH walked in from work and asked where the cookies I baked were---he was a little disappointed to find out no cookies, just scones--too bad for him, Yippee for me!! Actually, I'm having one right now with my morning coffee!! Thanks for sharing the recipe

We ended up having the pork chop schnitzel. (I guess that's how it's spelled.) It was really good. Lindsay, the blueberry cobbler was great!! We didn't have vanilla ice cream but we had plenty of Cool Whip. I'll have to pick up some vanila ice cream today. Cobbler + ice cream is the best! I will post the recipe later today. It was super easy!

Don't know what where having for dinner today. I'll have to see what we have on hand.

I'm trying a new recipe I found in the local newspaper last week - Crock-pot lemon roasted chicken . Hope it turns out good. I'll fix confetti risotto to go with it.

I've also been marinating a london broil for a few days in FormrCast Mbr's recipe. That will be for tomorrow.

The recipe was from WW, originally for salmon, but I use it with tilapia as well. Very easy and very tasty.

Baked Dijon Salmon

1.5 lbs fish filets
3 T. prepared dijon style mustard
1 T. honey
2 T. cornflake crumbs (I have also used crushed Honey Bunches of Oats with Almonds)
1 T. butter, melted
1 T. fresh chopped parsley
salt and pepper to taste

Preheat oven to 400 degrees F. In a small bowl, stir together mustard and honey. Set aside. In another bowl, mix together cornflake crumbs, butter and parsely. Spread mustard mixture over filets, top with crumb mixture. Bake in preheated oven until fish flakes easily with fork, approx. 10 - 15 minutes. Season with salt and pepper.

4 servings

Optional- you can add one clove of crushed garlic to the mustard mixture.
WW about 8 pts per serving.

I'm missing you guys. I haven't been checking in much. Makes me feel too guilty. With my daughter and dog both being in the school musical, we've been eating out or having stuff like cold cuts or nachos. I don't even want to admit what we've been eating lately. Tonight is the final performance. I think I'll throw a meatloaf in the oven this afternoon. I'm ready for some real home cooking. And after today I'll be back on track because the play is closing tonight. :cool1:

Chocolate Almond Pie

This is from the Paula Deen newsletter- made it yesterday- OMG!
It tastes like a Mars bar to me.....Love it! A local restaurant makes this and sells it for $4.00 a slice. The total ingredients cost me about $6.00.


I made this yesterday for our dessert and it was so good! It is a little sweet, but I would bet it is because I monkeyed around woth the recipe in order to use up all of the marshmallows :guilty: . I made my own crust ising brown sugar and that was really good too.

I had pizza yesterday. DH and DGD prefer pizza take in, but I made my own crust and used leftover sauce. The rest of us liked it, but I now have ammo when I want to go out for dinner and DH wants to stay home.....Nancy's homemade pizza with turkey meatballs. We'll be in a restaurant fast :lmao: !

My favorite is Rachael Ray's Apple and Onion Stuffin' Muffins. I've posted the recipe on the holiday recipe thread, but I'd be happy to post it here as well! It's so yummy! I like to make the muffins to help me control portions, but I've also just made it in a casserole. I don't stuff the turkey, as my family hates that, but I bet you could do it that way, too.

Nancy - the crock-pot lemon roasted chicken just came out and to be honest it's fall off the bone tender, but I had to put it under the broiler to crisp up the skin and I will tweak it next time for more lemon flavor by putting sliced lemons inside the chicken! Here it is:

Lemon Roasted crock-pot Chicken:

1 whole chicken
1/2 c. chopped onion, I also put slivers of garlic under the skin
2 Tbsp softened butter
juice of 1 lemon
1 Tbsp chopped fresh parsley
1/4 tsp. salt
1/4 tsp. thyme
1/4 tsp paprika(or if you can get Paul Prudhomme's Poultry Magic seasoning, use it instead of the seasonings above) - salt, thyme and paprika.

Rinse chicken well and pat dry. Place the chopped onion and parsley in the cavity. Rub the chicken with the softened butter, place in crock-pot. Squeeze the juice of the lemon over the chicken and sprinkle with seasonings. Cover and cook on low for 8 hours or high for five hours.

I used the drippings, which does have a lemon flavor, to make a very nice gravy!

Lindsay, here's that blueberry cobbler recipe. I got it from Recipezaar. Super easy. You can use the fruit of your choice. I just finished a nice warm bowl of it with vanilla ice cream. It was soooo good! :)

Easy Yummy Cobbler

2 - (21 oz) cans of pie filling
2 eggs
2 cups of flour
2 cups of sugar
1 cup butter, melted
cinnamon to taste

(This could almost be called the recipe of 2s!)

Preheat oven to 350 degrees. Spread the pie filling in the bottom of a 9" x 13" pan. Combine eggs, sugar and flour.
Mixture will be crumbly. Spread the mixture evenly over pie filling. Pour the melted butter on top of crumble mixture. Sprinkle with cinnamon to taste. Bake for 30-40 minutes. Topping should be golded brown.

I only used one can of blueberries and that was 15 oz (I think--it was small), just what I had on hand. But I kept to the recipe other than that. Mine was more cakey (which we like). It still had plenty of fruit for us. It was super!

Today I am making baked spaghetti. The recipe is on page 1 somewhere. It's really good. It isn't your average (or my average, actually) "make up some regular spaghetti, put it in a casserole dish and cover it with cheese, then bake" kind of recipe. It's VERY different, but so yummy! I picked up a foccacia to go with it.

My Il's are coming over. I am having a deli type lunch with meat and cheese tray and rolls. Added in some macaroni salad, potato salad, slaw and a fruit salad. That way my MIL can eat as light as she wants (FIL doesn't eat lunch) and my family can eat normal. For dinner we are having: steak, Emerils prawns, baked potatos with sour cream and butter,broccoli, salad (they always begin their meal with a salad), bread with a tomato and basil dipping oil, olives. I am holding off on dessert since she will most likely bring something. If she doesn't I will make a Key Lime Pie and maybe an Oreo pie for my hubby and dd. Whew I am tired already. Cleaned for 2 days (and really my house is clean but I stress too much).

Well, we didn't have the tomato fettucine last night. DH took the older 2 kids deer hunting. The twins and I ended up just having some toast and milk for dinner. Guess we'll have the fettucine tonight. I'll make a dessert of some kind. Probably Halloween cupcakes for the kids. Just something easy. Tonight is our night to carve pumpkins, roast pumpkin seeds and watch "It's the Great Pumpkin, Charlie Brown." Should be a fun night.
