Well my dinner with my friends ROCKED!! The food was awesome and I think they really enjoyed themselves. And it was a good call to skip the appetizer. There was more than enough food and they were very stuffed when they left. It was so funny. I made a huge salad with just greens and tossed in a broccoli, cauliflower, and carrot mix, and chopped up some cremini mushrooms. I made a condiment plate that had red onions, green peppers, cherry tomatoes, black olives, and pine nuts on it. The cool part? Everyone went back for seconds on the salad!! :)
Tonight we are obviously having leftovers :)

phew.... thanks for not using the flame thrower.... Im new to this thread, but the meals sound really good, does anyone find that some of these ishes work well with the picky uns'? I dont know why Im asking now, I leave friday for WDW, i will have to check it when I get home!
Most of the meal ideas I've gotten off this thread have passed the picky eater test at my house. The meal that's gotten the best raves by my picky son? The chicken pot pie!! That's a fabulous one. In fact, he wants it again. Guess I'll have to work it into next week's menu!
Welcome to our thread! Your breakfast for dinner sounds great! my kids love to have scrambled eggs, bacon and french toast for dinner.

I am not cooking today. It is my birthday and I'm sick :sick: , ugh. I'm so congested that I was up every hour last night because I couldn't breathe so there is no way I'm going to stand over a stove cooking. I think I'll just run out for fast food before work today.

I have not cooked the past two nights. DH and I both have colds and have been surviving on takeout from the local indian place. Curry is always good for a cold!
I'm feeling better today and am making frisee aux lardons for dinner. It's just another version of bacon and eggs for dinner. I guess a lot of us are of the same mindset recently, foodwise.

I just tried a new recipe for tonight - quick potato chowder - and it came out great. I think we'll have biscuits with it.
QUICK POTATO CHOWDER
3 stalks celery thinly sliced
3 Tbsp butter
2 Tbsp all purpose flour
2 14 oz cans chicken broth
1 (1 lb 4 oz) pkg refrigerated diced potatoes with onions
1½ cups milk
1 cup half & half
4 slices bacon, crisp cooked and crumbled
salt and pepper to taste
In a deep saucepan cook celery in butter over medium heat about 5 minutes. Stir in flour until combined. Stir in broth, bring to a boil, stirring constantly. Add potatoes, return to boiling. Reduce heat, simmer uncovered 15 minutes or until tender. Slightly mash potatoes. Stir in milk, half and half and bacon. Heat through. Season with salt and pepper.

Easy dinner tonite. Chicken in a lightly flavored cream sauce over noodles. No cooking tomorrow night as DH has an appt at the Mass Eye Institute and it is scheduled to last all day. Last year we did not leave until almost 7 PM.

Taco Soup
1 lb cooked beef
1 or 2 cans Diced or Chopped Tomatoes
1 can Rotel Tomatoes
1 can Black Beans (not drained)
1 can Corn (not drained)
8 oz. can Tomato Sauce
8 oz. Water
1 pkg Taco seasoning
Simmer for at least 30 minutes. Serve with grated cheese, sour cream and corn or tortilla chips crumbled on top.

I fixed OceanAnnie's Burrito Bake for dinner tonight. Only rather than heat up the kitchen, I just stacked several tortillas with beans, meat and cheese on each plate. (I also combined the taco meat and the refried beans so I could get them both hot with just one pan.) Then we microwaved our plates and topped with lettuce, tomato, salsa and sour cream. It was very easy and quite filling. Thank you!

Tonight I am making meatloaf and smashed potatoes. I am trying something different with the meatloaf tonight. Lately I have seen/read people sauteeing some onion, pepper, and garlic instead of adding them raw to the meatloaf. So I am going to give it a try. Any tips?

Woo Hoo!!
Last night the power was off at our house so I used the hamburger I had gotten to make stuffed peppers with just grilled on the BBQ.
I got organic beef yesterday for the 1st time. My family laughed and said they had never heard of organic beef and really teased me about spending more money on it. I have to say they all said the burgers were very good and maybe organic meat isn't such a crazy idea!
We are going to have the stuffed peppers tonight I hope!

Fried Oreos
INGREDIENTS:
Oreos
3 eggs, beaten
2 cups milk
4 cups all-purpose flour
1/3 cup sugar
1/2 teaspoon salt
1 tablespoon baking powder
oil for deep frying
sifted confectioners' sugar
PREPARATION:
Beat eggs with milk. Sift together flour, sugar, salt, and baking powder; add to eggs and milk. Beat until very smooth. Heat oil in deep fryer to 370°.
: skip down:
Fry for 2 to 3 minutes, until golden brown. Transfer fried funnel cakes to paper towels to drain. Shake sifted confectioners' sugar over drained funnel cakes.
Makes 20 to 30 funnel cakes, depending on size.
ok that is the funnel cake mix, now once youre oil is hot you dip a oreo in the batter, then push it in the oil carefully, fry until golden brown, let cool, sprinkle with powdered sugar. Enjoy every sinful moment.

I have tried sauteing the vegs before putting them in the meatloaf and it does come out better. I'm sure it will be great.
Tonight we will have chicken/andouille gumbo that I took out of the freezer, cooked a few weeks ago. Probably cole slaw or salad of some kind, french bread.

Last night's pork roast was a hit...the only thing that DFi said was that next time, can you make it as slices and not shredded...the pork just fell apart...What difference does it make???? It all tastes the same... :confused3
Tonight we are having TigerKat's Baked Chicken Reuben...it was sooooooo good the last time, I can't rave about it enough. If you have not tried this one yet, put it on your list...Like Kathy, DS8 does not like kraut so I left his off and add some caraway seeds to mine...YUM!
I started Weight Watchers yesterday and this is also a great recipe that can be made low fat......YEAH YEAH YEAH! :cool1:

OK so I have gotten 85 pages in MS word from you all, all filled with recipes, SO I talked to tom and asked him what his favorie meals around here are, this is a regular Sunday dinner for us, at least once a month or so, I hope someone enjoys! Its from Food Network
Shaker Cranberry Pot Roast
10 pounds scalped beef shoulder ( we used 5)
Garlic cloves, for rubbing beef
3 tablespoons vegetable oil (we used 1 and 1/2 )
1 quart cranberry juice (1 pint)
Cranberry Sauce, recipe follows
1 1/2 gallons Beef Stock, recipe follows (3/4)
Salt and freshly ground black pepper
Garlic Mashed Potatoes, serving suggestion, recipe follows
Preheat the oven to 350 degrees F.
Clean the beef shoulder and then split it in half. Rub meat with garlic. Heat oil in a large pan over medium-high heat, and then add beef and sear until golden brown on all sides. Add cranberry juice and deglaze pan, scraping the bottom with a wooden spoon to remove any browned bits. Transfer beef and pan juices to a roasting pan with the Cranberry Sauce and beef Stock. Roast for approximately 5 hours, or until meat is completely tender and pulling apart. Serve with Garlic Mashed Potatoes.
Cranberry Sauce:
3 cups whole cranberries (1 and a half)
6 ounces sugar (3 ounces)
2 cups water (1 C)
Place all ingredients in a medium saucepan and slowly bring to a simmer over medium heat. Reduce heat to medium-low or low and let sauce reduce until thickened and the sauce "comes together," about 1 hour.
beef Stock:
12 pounds beef bones (6 lbs)
9 quarts water (4 and a half qrts)
1 1/2 pounds mirepoix (mix of chopped celery, onions, and carrots) (3/4 lb)
1 standard sachet of garlic cloves, peppercorns, parsley stems, and bay leaves
1 can tomato paste (1/2 can)
Preheat oven to 400 degrees F.
Roast the bones in the oven for 1 hour. Put the roasted bones in a large pot and add water to cover. Add all other ingredients and simmer for 24 hours. Drain stock and discard bones.
Garlic Mashed Potatoes:
2 1/2 pounds russet potatoes, peeled
4 ounces chopped roasted garlic
3/4 cup half-and-half
4 ounces (1 stick) butter
Salt and freshly ground black pepper
Place the potatoes in a large pot and cover with cold water. Over medium heat, bring to a simmer and cook until the potatoes are tender. Drain potatoes and add to a mixing bowl. Add all remaining ingredients and mash with an electric mixer or hand mixer to desired smoothness.
Yield: 8 to 10 servings
It takes some time but its perfect for a sunday family meal!

We had Stuffed Pepper soup last night, and it was very good! I used ground turkey instead of hamburger, and DH loved it! I knew my kids wouldn't like it since it had peppers, but I was surprised that my oldest had 2 bowls. She really liked it! I'm loving that her tastes are maturing as she gets older. My 4 year old twins ate it too. They did eat around the peppers, but they ate all the meat and rice. DS HATED IT! Not surprising. He hates almost everything except salmon! Go figure!
Tonight we're doing the Farmhouse Chicken recipe from the fall Kraft magazine. I'll let you know how it is. I'm off to the bakery for a nice crusty loaf of bread to go along with it. I'll also make a nice green salad.

I have a ham in the oven and just cleaned the green beans to cook in the ham juice when the ham is done for tomorrow night.
Tonight we are having stuffed pork chops with that honey teriayki glaze from Pampered Chef.
Currently making hot sausages and meatballs for my brother in law's house moving party this weekend.
My house smells like a restaurant that could feed about 50 people right now!

I can't take credit for this myself. Stacy posted this on page 14 of the thread...and I think she got it from another Stacy on the Budget Board. I'm giving it a try tonight. Hopefully, it will be great since we had a huge drop in temperature in NE! Here it is:
2 chicken breast--boneless/skinless (I just wanted to add that I've been using 2 lbs. chicken thighs instead...the breasts were too dry for me)
1 can cream chicken soup
2 T margarine
2 cans biscuits
1 soup can of water
Put the chicken breasts in a crockpot, top w/ soup, margarine, and water. Cook on low 6-8 hours or high 3-4 hours. Then, shred the chicken w/ 2 forks and stir. 45 minutes before serving (turn to "high" if cooking on "low"), add cut up biscuits.

DH still hasn't gotten the propane tanks filled. :mad: I wanted to make grilled BBQ pork chops tonight. Well, we're having the pork chops, but I threw them in the crockpot with a little BBQ sauce on top. I've never done them like this, hope they turn out okay. DS has been requesting tater tots, so we'll have those with some kind of green vegetable and a salad.

Sure. Here it is. I got it out of an old Quick Cooking Magazine
Stuffed Pepper Soup
1 pouch (8.8 oz.) ready to serve long grain and wild rice mix
1 pound ground beef
2 C. frozen chopped green peppers, thawed (I just chopped some from my garden)
1 C. chopped onion
1 jar chunky tomato pasta sauce
1 can Italian diced tomatoes, undrained
1 can beef broth
Prepare rice according to package directions. Meanwhile, in a large saucepan, cook the beef, green peppers and onion until meat is no longer pink; drain. Stir in the pasta sauce, tomatoes, broth and prepared rice; heat through.
I served it with breadsticks. It was really yummy and very easy!

Today I "experimented" - It's kind of a modern version of bigos (Polish stew) in the crockpot. It smells good but I am not sure. It's definitely different from real bigos, but that's where my idea for this debacle came from. If it's edible, I'll post a recipe. :)
I might get some rye bread too, since I'm going out. I don't need the extra carbs, but every Polish meal has rye bread. It's for the "poprawini" (My spelling is probably horribly wrong but the w is pronounces like a v since Polish doesn't have a letter v."
Poprawini is probably something all of you do on holidays, or on days where you make a really yummy meal, you just don't know it! It means when you have already eaten dinner, but a few hours later on that night (sometimes at 8 or 10, or 11, or even 3 am) you pull out all the leftovers and start eating again. Do you have leftover ham at midnight on Easter? Do you have a turkey sandwich at 1 am on Thanksgiving? You got it - only the Polish actually have a word for it, lol! Anyway, Polish meals always serve bread but people rarely eat any with the meal - usually it's eaten at the poprawini.
Sorry so long - teacher mode, I guess. lol. :teacher:

I don't want to cook this weekend, so I am cooking tonight. I made chili, mac and cheese, onion burgers. The onion burgers are a new recipe. They are like sloppy joes/white castles.
1 lb ground beef
1 can cream of onion soup
1T. flour
1/3 can of water
fry ground beef, drain and add flour, soup and water and simmer for 20 min. It smells wonderful. We will have them tomorrow night so I can see if they taste as good as they smell!

Tonight I made shrimp fried rice. I made it up as I went along after finding about 6 jumbo shrimp in the freezer. It was a big hit - even with my picky DD although she wanted nothing to do with the shrimp or the egg. DH and DD fought over the last little bit and I had to throw together more for DD to take for lunch. I served it with pineapple chunks.
Shrimp Fried Rice - makes 2 good sized servings
1 bag Uncle Ben's whole grain brown rice (the kind that's ready in 90 sec)
1 cup frozen peas
2 lightly beaten eggs
6 fully cooked jumbo shrimp
Asian stir-fry sauce (I used a soy-ginger one)
vegetable oil
In large pan heat small amount of oil.
Add eggs and cook w/o stirring until set - then flip and finish cooking. Remove from pan.
Add rice w/o heating in microwave. Stir fry for a few minutes until rice is a little golden and crispy.
Stir in frozen peas.
Remove tails from shrimp and stir in.
Add stir-fry sauce and combine.
Serve immediately.

Well, I did not cook what I posted yesterday...time got away from me before work and it was quicker to just throw together a burrito bake so that's what I did. Today we'll have the cubed steaks, baked potatoes and tomato/mozzarella salad (I marinated it last night and we'll just have it as a salad instead of skewers). :sunny:

Nacho Pie:
1 lb ground beef
1/2 cup chopped onion (I omit onion & it tastes fine)
1 can (8 oz) tomato sauce
2 Tbsp taco seasoning
1 tube (8 oz) refrigerated crescent rolls
1 1/2 cups crushed nacho tortilla chips, divided (Doritos)
1 cup (8 oz) sour cream
1 cup (4 oz) shredded Mexican cheese blend or cheddar cheese
In large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce and taco seasoning. Bring to a boil; reduce heat and simmer uncovered for 5 min.
Meanwhile, separate crescent dough into 8 triangles; place in a greased 9" pie plate with points toward the center. Press onto bottom and up sides to form a crust; seal perforations.
Sprinkle 1 cup chips over crust. Top with meat mixture. Carefully spread sour cream over meat mixture. Sprinkle with cheese and remaining chips. Bake at 350 for 20-25 minutes or until cheese is melted and crust is golden borwn. Let stand 5 min before cutting. 6-8 servings.
Our family loves this meal! I usually make 2 pies at a time since I have 3 teenage boys! Serve with a salad. Delicious!!

Lastnight's dinner was yummy, DH and DD liked it! Here is the recipe if anyone is interested in an easy Etouffee dish!
You can make it with crawfish and/or shrimp!
(and I get the pre-cooked ones, that way everything goes together very fast and I can't tell the diffrence in taste!)
Crawfish Etouffee
1 Stick Butter
2 Tablespoons All-Purpose Flour
1 Cup Chopped Yellow Onion
½ Cup Chopped Celery
½ Cup Chopped Bell Pepper
¼ Cup Chopped Green Onions
1 Tablespoon Minced Garlic
2 Bay Leaves (I omit)
1 teaspoon Salt
¼ teaspoon Cayenne Pepper
2 Tablespoons Dry Sherry
1 ½ Cups Shrimp Stock or Water (I use Chicken Broth, 1-14 ounce can)
1 Pound Cooked Crawfish Tails (I use 14 oz. Crawfish & 12 oz. Shrimp)
2 teaspoons Fresh Lemon Juice (I omit)
3 Tablespoons Chopped Fresh Parsley Leaves, plus more for garnish
Cooked Long Grain White Rice
In a large pot, melt butter over medium-high heat. Add the flour and cook, stirring, to make a light roux. Add the onions, celery, bell pepper, green onions, garlic, bay leaves, salt and pepper and cook, stirring until the vegetables are soft, about 5 minutes.
Add the sherry and cook for 2 to 3 minutes. Add the stock and crawfish tails and bring to a boil. Reduce the heat and simmer until thickened, about 5 minutes. Add the lemon juice.
Stir in the parsley and remove from the heat.
Adjust the seasonings to taste. Serve over rice, garnish with additional Parsley.
Serve with garlic bread.
Serves 4.

I am making Carne Asada,which we will either use for burritos or tacos..
Carne Asada, which is a seasoned meat
Take however much meat you will need for your family...I get a good cut of meat... Strip steak, Porterhouse ,even a flank steak.....Poke holes in it..Squeeze the juice of 1 lime all over the meat.. Sprinke with Adobo seasoning,which you can find with other seasoning or in the mexican section. Drop lots of minced garlic on the meat.....Let it marinate for at least 5 hours.
Cook on high heat for 5 minutes on each side...Remove to aluminumum foil and wrap it up.
It will continue to to cook in the foil and will leave it with a lot of juice
Cut in small pieces and use astaco meat.

I ended up not making the chicken dish last night. It was a night for soup, so I tried a new recipe for tortellini soup. It was wonderful.
One large can of chicken broth, or home made stock
One small can of diced tomatoes with italian seasoning
One small can of cannellini beans, or white kidney beans
One small onion chopped fine
Red wine vinegar 2 or 3 splashes.
One bag of frozen or fresh 3 cheese tortellini.
Put all the ingredients into a crockpot and allow to cook all day. I usually add the Tortellini at the very end. About an hour before I get ready to serve. That way the pasta doesn't swell too much with the liquid.
Tonight DH and I are going on a dine around. We have to provide the dessert. I'm going to throw together a couple of different trifles. I'll let you know how they are. If they turn out alright, I'll post the recipes. I like to do trifles, since they are easy to throw together!

We are going to a friend's 30th birthday party and will probably eat there. Woo hoo, I don't have to cook! :)
This morning I made us something really cool for breakfast. Here's the recipe, with a few noted changes:
Almond-orange-apricot crescent rolls
1 package crescent rolls
¼ cup apricot preserves or all fruit spread
¼ cup orange marmalade
1 egg with a splash of water
1 tbs. sesame seeds
½ cup sliced almonds
Preheat oven according to package and roll out dough on a nonstick cookie sheet. Cut and separate dough into triangles. Combine the preserves and marmalade in a small bowl. Place bowl in the microwave and cook for 15 seconds to loosen the preserves. Use the back of a spoon to spread a thin layer of the apricot-orange jam across each dough. Roll crescents up, brush with a little egg wash and coat with sesame seeds and almonds. Bake to package instructions until deep golden in color.
*I just used strawberry perserves, almonds, and poppy seeds. They rocked!!*

OUTBACK RACK OF LAMB CABERNET SAUCE
This recipe makes 7 cups of sauce - it freezes well.
1 1/3 c. cabernet wine
1/4 c. butter
2 1/2 Tbsp. flour
1/4 c. fresh parsley
6 c. au jus sauce (from packaged mix)
2 Tbsp. lamb seasoning (salt, pepper, mint & rosemary)
1 Tbsp. garlic powder
In a bowl mix 1/3 c. of the wine with flour, set aside. Put remaining wine, au jus, parsley, lamb seasoning and garlic powder in saucepan. Bring to a gentle boil, then turn the heat down and reduce about 4 to 5 minutes. Stir in the flour mixture.
While you are reducing liquid, brown the butter in another pan (Don't just melt it, BROWN it, but don't burn it). When you have finished reducing the liquid, add the browned butter and mix well. The sauce should be semi-thick. At this time you can adjust the mint/rosemary seasoning to taste.

Tonight I'm making Chinese Barbecued Pork Tenderloin, Asian noodles, and broccoli. The pork recipe is so easy and we all love it.
1 tablespoon hoisin sauce
1 tablespoon ketchup
1 tablespoon soy sauce
1/4 teaspoon garlic powder (or 1 teaspoon fresh minced garlic)
1 teaspoon sugar
pork tenderloin
Mix all ingredients together (except pork) in a small bowl. I use a 9x13" pan lined with foil, makes clean-up much easier. Place pork in pan, coat with sauce, and let stand at room temperature for 20 minutes. Bake at 350° for about 35-40 minutes, thermometer should read 150° when it's done. Let meat rest for 5 minutes before cutting. DS10 likes to dip his in extra hoisin sauce.

Tonight I ate Chinese- my dad and boyfriend were busy building a closet and an entertainment center today and I was making a topiary out of baby things (bibs, socks, hats, washcloths, onesies, etc.) for my friend's baby shower in 2 weeks. I had steamed chicken with string beans in red pepper sauce. My dad had Moo Goo Gai Pan and my boyfriend had the "Honey Couple"- steak and chicken in a honey sauce with pine nuts.
Yesterday, we did a *ton* of shopping in Staten Island for birthday presents, baby shower stuff, etc. and we picked up a brick oven baked Pizza Margherita on our way home. I always want to eat pizza for dinner when we're in Staten Island!
I promise I'll cook *something* soon, though. :)

Morning all!! Today is going to be a fun day (food-wise). We are having a very light lunch because I am making hamburgers steaks topped with sauteed green peppers and onions on top, with, strange as it sounds, teriyaki noodles on the side. But that's not the fun part. The fun part is dessert :) My husband and I have a fun little tradition. We buy the Toll House ice cream cookies like the ones you get in WDW and watch the planning video. 28 days until we leave! WOO HOO!!!

Definitely NOT! I am not a fan of ranch flavored anything; I've made this recipe twice and it is delicious and I couldn't detect the ranch taste at all!

Italian Herb Chicken
2.5 lbs. chicken
1 pkg. fresh mushrooms, sliced or halved
1 pkg. mccormick seasoning
2 cans stewed tomatoes, undrained
1 can tomato paste
Diections
Place chicken and mushrooms in the slow cooker.
Mix Seasoning, tomatoes, and tomato paste until blended.
Pour over cicjen and mushrooms. Cover.
Cook 8 hours on LOW or 4 hours of HIGH.
Remove chicken and vegetables to serving platter.
Stir sause before serving.
This is already cooking. We will have this over rice.

She's 83 and has Alzheimers, so its wait and see how she responds to treatment. I'm freaking out because this is what took my Dad's life one year ago. I'll probably spend the morning and early afternoon with Mom and then come home and cook. If anyone is interested the Bolognese recipe it is really good - I'll never cook regular meatsauce again.

Today's Sunday linner is going to be the cod pomodoro that I posted the recipe for a while back. I'm also making garlic bread and an arugula salad. Served at half time of course, so nobody misses any of the Pats game. Go Patriots!

It's going to be a good one tonight folks!
Italian Herb Chicken
2.5 lbs. chicken
1 pkg. fresh mushrooms, sliced or halved
1 pkg. mccormick seasoning
2 cans stewed tomatoes, undrained
1 can tomato paste
Diections
Place chicken and mushrooms in the slow cooker.
Mix Seasoning, tomatoes, and tomato paste until blended.
Pour over cicjen and mushrooms. Cover.
Cook 8 hours on LOW or 4 hours of HIGH.
Remove chicken and vegetables to serving platter.
Stir sause before serving.
This is already cooking. We will have this over rice.
Which McCormick seasoning? This sounds good.
So does the Bolognese recipe. I'd love to have it, too.
I'll be thinking of those of you with sick relatives. No fun. Hope things get better soon. :grouphug:

Thanks for the reassurance on the pot roast gravy, I was a little worried about the ranch seasoning, but it smells wonderful, can't wait for it to finish cooking.
Thank you also for the well wishes for my Mom. This has been a trying few months. My MIL and her sister both passed away within a day of one another at the end of August. The whole family was with MIL when she passed, and while comforting, it was just really hard watching someone take their last breath and pass in front of you. Two viewing & funerals all within 3 days was a lot to handle as well, but we are a close family and have been supporting each other through it all. Now my Mom being sick, I feel like things are spinning out of control. She had a blood clot in her leg, was hospitalized for that, released on blood thinners, then went back in within a few days for a herniated disc. It's just been a bit overwhelming. The dis is a good place to try and forget your troubles for awhile. Sorry if this is really OT, but I feel a little better. Thanks for listening and all the great recipes, for when I have more time and energy to cook!

Don't mean to stay OT, but glass slippers, I can feel your pain in your words and the sense of feeling overwhelmed. Been thru a lot with my Dad - 16 years of illness prior to his death. I wish I could tell you it gets easier, but when it's your parents it's very tough. I will keep you in my prayers. I also want to thank all of my DIS buddies for being so supportive in times like these. I only have DH and DS, so you guys are like family. THANKS! :grouphug:

Not sure if I'll get to cook my Spaghetti Bolognese today, my Mom was admitted to the hospital yesterday with pneumonia. She's 83 and has Alzheimers, so its wait and see how she responds to treatment. I'm freaking out because this is what took my Dad's life one year ago. I'll probably spend the morning and early afternoon with Mom and then come home and cook. If anyone is interested the Bolognese recipe it is really good - I'll never cook regular meatsauce again.
Please know that the WFD crew are thinking about you and your mom :grouphug:

Here you go!
Ritz Parmesan Chicken
4 boneless, skinless chicken breasts (I remove all the extra fat)
1/2 cup grated Parm cheese (pizza cheese)
1 1/2 "rolls" Ritz crackers, crushed (you can also use the low-fat ones)
1 stick melted butter or margarine
Preheat oven to 350.
Combine the cheese and Ritz crackers in a bowl. Dip the chicken in the butter, then coat well in the cheese-cracker mix. Place in a 9x13 casserole dish that has been sprayed with Pam (or whatever you use). I sprinkle what is left of the crackers on top of the chicken. I usually cover this in foil because your crackers can burn if you aren't careful. Bake for about 30 minutes or until chicken is done.
*You will NOT need to salt the chicken because of the crackers. I add some pepper to my cracker mix.
*I have also sprinkled some thyme on the chicken as well*

We have had some craxy days here, and my cooking has been hit or miss. Friday I cleaned all day, so DH and I had dinner out at an Italien restaurant in town. The management had changed recently. It was so good. DH still tries red sauce out, and is always disappointed. He likes mine. Saturday we had leftovers after delivering furniture to my niece.
Last evening was prime rib, mashed potatoes and gravy, steamed brocolli and garlic bread. Our starter was a warm cheesy artichoke spinich dip on sliced bagette. Yummy!Dessert was apple pie and pumpkin pie with homemade whipped cream.

I can cook and I can bake but I cannot seem to master apple pie! Our pie was okay last night, but it was not great. Do any of you bakers have any tips for me or a recipe you would share? I added about 2 T of flour to the apples, but it was still a little to juicy to keep any kind of shape when I cut it. It was warm but not hot, so I don't think that was the problem. Apple pie is my DH all time favorite dessert, and I would like to make my own instead of relying on Schwanns.

Thank you Lauren, things are looking up for us - Mom's pneumonia is "very mild" according to the doctor. She was very alert and responsive yesterday, hopefully we'll continue with "good news"!

I don't know what I'm doing for dinner yet. But we had the best, quickest lunch! :) I sometimes order quesadillas when I'm eating out, but I haven't made them at home! I just gave it a whirl with what I had on hand. It was great!!!
Cheesy Chicken Quesadillas
2 flour tortillas
1 breaded chicken patty (Tyson), or about 1/2 cup grilled chicken
approximately 1/3 cup of Tostitos Salsa Con Queso Medium (cheese dip with chiles)
approximately 1/3 stick of butter or margarine
Melt butter in a pan on medium heat. Liberally spread the Salsa Con Queso on both flour tortillas. Dice the chicken patty (I heated it first.) Place the chicken on top of one of the tortillas. Place the other tortilla on top of the other (salsa side down). Put torillas in pan. Heat both sides until golden brown. Enjoy! :)

I tried another pumpkin pie today, and this one seems to be better, I did not like the pumpkin yesterday either. The crust is an oil crust I found on Recipezaar that was made in the pie plate. If it comes out as well as the reviews say it should, I'll post the recipe.

We're having leftover baked ziti. Yesterday I made crockpot beef stew and it was yummy. I made up the recipe so I'll try to remember as best I can
1 1/2 lb lean stew meat
1 can low sodium beef broth
1 bottle beer
1 heaping TBS tomato paste
3 cloves garlic - smashed
4 or 5 red skinned potatoes - quartered
few handfuls of baby carrots
2 bay leaves
flour for dredging
corn starch for thickening
oil
Heat about 1 TBS oil in large pot. Season some flour with salt & pepper and dredge meat. Add to pot and brown for 2-3 minutes on each side. Remove meat and put in crock pot. Lower heat and add some broth to deglaze the pan. Pour mixture over meat and add remaining broth and the beer. Stir in tomato paste. Add carrots, potatoes, bay leaves and garlic. Set pot on high and cook 4-6 hours. Remove some of the liquid and mix with a spoonful of corn starch. Stir back into pot and allow to cook several more minutes until liquid thickens a bit.
Serve with rolls and salad.

I remember the first time I made apple pie...I was on the College Program and all of us worked on Easter but planned a nice dinner when work was done....I made cornish hens and apple pie...well, the apple pie was like soup!!! It was good! What do college kids know about cooking??? ! :)
I use a recipe that I found on Google now...I do not have the recipe handy but you may find it by googling "Grandmas Apple Pie". I have since been able to make a pie....we went apple picking yesterday but we are on diets and just made some apple sauce with cinnamon...YUMMY!

Here's the recipe
Peach Coffee Cake
1 C. butter, softened
1 3/4 C. sugar
4 eggs
3 C. flour
1 1/2 tsp. salt
1 1/2 tsp. baking powder
1 can (21 oz.) peach pie filling
Icing:
1 1/4 C. confectioners sugar
1/2 tsp. almond extract
3 to 4 Tbs. milk
In a large mixing bowl, cream the butter and sugar until light and fluffy. Add the eggs, one at a time, bating well after each addition. Combine the flour, salt and baking powder; add to the creamed mixtures and beat just until combined. Spread 3 3/4 C. of batter into a greased 9 X 13 pan. Carefully spoon the pie filling to within 1 inch of edges. Spoon remaining batter over filling. Bake at 350 degrees for 20-25 minutes or until a toothpick inserted near center comes out clean (cover loosely with foil if edges brown too quickly). Cool on a wire rack. In a small bowl, combine the icing ingredients. Drizzle over coffee cake.

Tonight we had BBQ shredded beef on hot biscuits with coleslaw and cheesy potatoes (frozen stouffers). The beef was really good and it made a lot so we have left overs for poprawina!

I'm feeling a bit under the weather today, so I am opting for comfort food tonight.
Baked Potato Soup
2 Medium Potatoes (about 2 cups chopped)
3 Tablespoons Butter (or whole stick)
1 Cup Onion, diced
2 Tablespoons Flour
4 Cups Chicken Stock
2 Cups Water
¼ Cup Cornstarch
1 ½ Cups Instant Mashed Potatoes
1 teaspoon Salt
¾ teaspoon Pepper
½ teaspoon Basil
1/8 teaspoon Thyme
1 Cup Half and Half
Garnish:
½ Cup Shredded Cheddar Cheese
¼ Cup Bacon, cooked and crumbled
2 Green Onions (green part only), chopped
Preheat oven to 400 degrees and bake the potatoes for 1 hour or until done. When potatoes have cooked remove them from the oven to cool.
As potatoes cool prepare soup by melting butter in a large saucepan and sauté onion until light brown. Add flour to the onions and stir to make a roux.
Add stock, water, cornstarch, instant mashed potatoes and spices to the pot and bring to a boil. Reduce heat and simmer for 5 minutes.
Cut potatoes in half lengthwise and scoop out contents with a large spoon. Discard skin. Cut baked potatoes to make chunks that are about ½ inch in size.
Add chopped baked potato and half and half to the saucepan, bring soup to a boil, then reduce heat and simmer for another 15 minutes or until it is thick. (Can add the remaining stick of butter at the end.)
Spoon about 1 ½ cups of soup into a bowl and top with about a Tablespoon of shredded cheese, ½ Tablespoon of crumbled bacon, and a teaspoon or so of chopped green onion.

We are having Lindsay's Crockpot Italian Chicken...YUM!
I have a roast marinating for tomorrow. This is my Mom's recipe. I make this pot roast on the stove it comes better that way (crockpot is just OK)
...sear on all sides in EVOO, then add the marinade and more water if needed and cook on low for 2 - 4 hours...make a gravy from the marinade...this is a good one!!!
Mom's Pot Roast Marinade
3/4 cup water
1/2 cup soy sauce
2 TBS sugar
1 TSP thyme
1 clove garlic crushed
Pierce roast and marinate for at least 8 hours. Cook as above...makes a great gravy!!!!

Today is what Winnie the Pooh would call a "blustery day." It's cloudy, windy, and drizzly! So, we are having cold weather food: Salsa Chili with homemade cornbread and green beans. Yummy!
Last night's Pizza casserole was really good! DH and I loved it, and 3 of my 4 kids did, too. DS is picky and doesn't really like anything. He ate his required 6 bites, and then was done!
Here's the recipe:
Pizza Casserole
3/4 C. chopped onion
1 each medium sweet red and yellow pepper, diced
1 Tbs. olive oil
1 medium zucchini, halved lengthwise and sliced
1 tsp. minced garlic
2 Cans diced tomatoes, drained
3/4 pound smoked sausage, sliced
1 can tomato paste
1 tsp. salt
1 tsp. Italian seasoning
1/2 tsp. pepper
1/4 C. grated Parmesan cheese, divided
2 C. shredded mozzarella cheese
1 tube refrigerated breadsticks
In a large skillet, saute onion and peppers in oil for 2-3 minutes or until almost tender. Add zucchini and garlic; saute 4-6 minutes longer or until vegetables are tender. Stir in the tomatoes, sausage, tomato paste, salt, Italian seasoning, pepper and 2 Tbs. Parmesan cheese. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until heated through. Spoon half of the sausage mixture into a greased 13 X 9 baking dish. Sprinkle with mozzarella cheese; top with remaining sausage mixture. Separate breadsticks; arrange in a lattice pattern over the top. Sprinkle with remaining Parmesan cheese. Bake, uncovered, at 375 degrees for 25-30 minutes or until topping is golden brown and filling is bubbly. Let stand for 10 minutes before serving.
I didn't have any zucchini so I used summer squash. It was very yummy!

Tonight we had BBQ shredded beef on hot biscuits with coleslaw and cheesy potatoes (frozen stouffers). The beef was really good and it made a lot so we have left overs for poprawina!

Tonight we're having pasta with cherry tomato sauce. Basically, all our cherry tomato plants exploded with sweet little guys in August and we could not come close to eating them all, so we put them in huge freezer bags and froze them. I made a basic tomato sauce out of them. I made garlic bread and it's waiting to go in the oven. :)

I'm sure you could. The sausage, pepper, and squash make it chunky enough. I'd start with one can, though and see how that goes. I think it would be good!!!

Plus I am making oven fries and we have some cole slaw that I snagged from my Mom yesterday. The only problem is that the show is on and the food's not ready!!

For dinner tonight we had meatballs in plum sauce, mashed potatoes and cranberry coleslaw. I am sure many of you have tried the meatball recipe that combines grape jelly with chili sauce and my recipe is a take on that, only I substitute plum jam for the grape jelly.
It is supposed to snow in Minnesota beginning tomorrow. I can hardly believe it. My body is starting to crave winter food. I think I might have to pull out some soup recipes as they are always tummy-warming..

Tonight I am making parmesean chicken--not the kind with the tomato sauce and cheese. Instead, for this recipe you pound thin chicken breasts, marinate in olive oil, lemon juice, and thyme, then coat in a mix of parmesean cheese and breadcrumbs, saute until browned and cooked through, and then cover the chicken with an arugula salad tossed in a lemon vinaigrette, and shave some parmesean cheese on top. It's really quick and tasty.

The idea is pretty forgiving, so you don't really need to measure. This time, for the marinade, I used 3/4 cup olive oil, the juice of three lemons, 1 heaping tdsp. kosher salt, about 1/4 cup chopped fresh thyme, and about a tablespoon of coarsely cracked pepper. That is probably enough marinade for about 4 lbs of chicken. (I always make too much marinade!)
For the breadcrumbs, I do about 2 parts breadcrumbs to one part parmesean, and season with salt and pepper. I also dip the chicken in beaten egg before applying the crumbs.
I saute the chicken in olive oil.

I do have a panini maker--it is Flama brand. I have to confess though, that right now the panini maker is languishing in "Kitchen Purgatory," a large cabinet in my storage room that contains all of the kitchen gadgets I thought I really, truly needed, that actually get used about once a year, if that.
To make my panini now, I just heat a large, heavy bottom skillet, and weight the sandwiches down with a cast iron skillet while they are cooking. It is quicker and also simpler cleanup than the panini maker.

This weekend is the state teacher conference, so the kids are out of school Thurs, Fri, and Monday. We've decided to take an impromptu trip to visit my parents. So, I'm busy doing laundry and packing. Dinner will be really easy! Chili Tots, steamed broccoli and ice cream for dessert.

I have to share this with my WFD buddies. As you may know, my Mom has been in the hospital since Saturday evening. It's been quite hectic since, as I'm balancing being at the hospital and taking care of the family, not to mention trying to work from home. Monday night I was exhausted and we did fast food, which I very seldom eat, therefore, I paid for it ALL night long. I swore after that, that even if it meant getting up at 4 AM, I would fix my family a meal! I just received a beautiful bouquet of flowers from DH and DS with their words of gratitude to "Superwoman". I'm in tears right now, I'm sure you can all relate. We do these things for our families, as a labor of love and don't expect anything in return.
P.S. The flowers are going to the hospital tonight!! That way Mom will have a smile on her face too! :cloud9:

Citrus Garlic Shrimp:
1/2 cup olive or vegetable oil
1/2 cup orange juice
1/3 cup lemon juice
3 to 4 garlic cloves, minced
5 tsp grated lemon peel
4 tsp grated orange peel
1 tsp salt
1/4 tsp pepper
1 pkg (1 lb) linguine
1 lb uncooked medium shrimp, peeled and deveined
Shredded Parmesan cheese and minced fresh parsley
In a blender or food processor, combine the first 8 ingredients; cover and process until blended. Pour into a large skillet; heat through. Meanwhile, cook linguine according to package directions. Add shrimp to garlic mixture; cook for 5 minutes or until shrimp turn pink. Thicken if desired. Drain linguine; top with shrimp. Sprinkle with cheese and parsley. 6 servings.
This is delicious - very light - add garlic bread and a salad. My entire family loves this! I have trouble finding uncooked shrimp, so I use cooked shrimp and just cook it enough to heat it through. This meal is ready in 30 minutes or less!

My DGD got fed up this morning, she is my helper and after she helped me with the dough and roll it out again and again she suggested I buy the package. Out of the mouths of babes.....:rotfl2: .

That's where I get my pie crust, too! I like to use the kind you can unroll into your own pie plate, so no one knows you didn't make it. :teeth:
Seriously, though, I've tried to make crust, and for the sweat and aggravation, I figure it's cheaper for me to buy 2 crust for $1.94 then it is for me to do it from scratch. My homemade crusts always ended up like concrete.

Last night the spaghetti and meatball stoup was a hit with just enough left for lunches for DD and DSIL. Today I have to do something with Easter kielbasa and a ham steak. I think I will have a veggie and some fried potatoes, with onions in vinegar. My DH is Lithuanian and in his family there would be fried potatoes and sour cream, sauerkraut, maybe cucumbers in a sour cream dressing and onions in cider vinegar and cracked black pepper. Really good ethnic food, but I can feel our arteries clogging just thinking about it.

We ended up having sandwiches while my breakfast casserole was baking. The time got away from me. It sure smelled great! :crazy: Basketball practice was quickly approaching. Didn't want to be late. Here's the recipe:
Annie's Sausage & Egg Bake
Grease a 9 x9 pan. Pre-heat the oven to 375. Layer the bottom of the pan with hashbrowns (I used 3 small potatoes I had and grated them). For the middle layer mix 6 eggs, a splash of milk, about 1 cup shredded cheeses, cooked crumbled sage sausage, sauted onion, yellow and orange peppers. Pour over hashbrowns. For the top layer mix 1 cup Bisquick, 1/2 cup milk, 1 egg, and about 1/2 cup shredded cheeses. Pour it over the egg mixture. Bake for about 45 minutes.
So tonight I'm reheating that baby! I'll let you guys know if it was a hit! :)

I think I'll do either mashed potatoes and gravy or some kind of side dish pasta with it, and some kind of veggie.
I LOVE the instant pasta packets you can buy. I know Lipton is one of the brands, Lipton side dishes. They have all sorts of things. Lately, I've also been using the Uncle Ben's rice packets. You microwave them for 90 seconds and done!

Here you go!
Ritz Parmesan Chicken
4 boneless, skinless chicken breasts (I remove all the extra fat)
1/2 cup grated Parm cheese (pizza cheese)
1 1/2 "rolls" Ritz crackers, crushed (you can also use the low-fat ones)
1 stick melted butter or margarine
Preheat oven to 350.
Combine the cheese and Ritz crackers in a bowl. Dip the chicken in the butter, then coat well in the cheese-cracker mix. Place in a 9x13 casserole dish that has been sprayed with Pam (or whatever you use). I sprinkle what is left of the crackers on top of the chicken. I usually cover this in foil because your crackers can burn if you aren't careful. Bake for about 30 minutes or until chicken is done.
*You will NOT need to salt the chicken because of the crackers. I add some pepper to my cracker mix.
*I have also sprinkled some thyme on the chicken as well*
Forgot to mention, that I made this the other night. It was just dh and myself so I only made a few chicken tenders and I cut the recipe by about half. It came out delish - very tender and moist, too. :thumbsup2

Sure. Be warned, though, I haven't tried the pumpkin scones. It's a new recipe, and I'm always willing for my kids to be the guinea pigs. Do you want the peanut butter and banana one, too? I'll post both!
Pumpkin Ginger Scones
2 C. flour
7 Tbs + 1 tsp. sugar, divided
2 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 tsp. ground ginger
1/4 tsp. gaking soda
5 Tbs. cold butter, divided
1 egg, lightly beaten
1/3 C. canned pumpkin
1/4 C. sour cream
In a large bowl, combine the flour, 7 Tbs. sugar, baking powder, spices and baking soda. Cut in 4 Tbs. butter until mixture resembles coarse crumbs. Combine the egg, pumpkin and sour cream; stir in crumb mixture just until moistened. Turn onto a floured surface; knead 10 times. Pat into an 8 inch circle. Cut into 8 wedges. Separate wedges and place on a greased baking sheet. Melt remaining butter; brush over dough. Sprinkle with remaining sugar. Bake at 425 degrees for 15-20 minutes or until golden brown. Serve warm. Yield: 8 scones.
Peanut Butter and Banana Scones
Family Fun Magazine
3 C. flour
1/2 C. brown sugar
2 tsp. baking powder
3/4 tsp. salt
3/4 C. peanut butter
2 eggs
1 tsp. vanilla
3/4 C. +2 Tbs. half and half cream
1 C. chopped banana
Heat the oven to 375 degrees. Lightly grease a baking sheet or line it with parchment paper. In a large bowl, whisk together the flour, brown sugar, baking powder, and salt to evenly incorporate the ingredients. Combine butter, eggs, vanilla, and 3/4 C. of the half and half in a medium bowl. Using an electric mixer,mix the ingredients until evenly blended. Gently stir the peanut butter mixture into the flour mixture just until combined. Then gently stir in the bananas. Turn the dough onto a floured surface. Knead it twice, then gently pat it out so that it is 1 inch thick. Cut out scones using a round biscuit cutter and arrange them on the baking sheet. Spread the remaining half and half on top of the scones with a pastry brush and then bake them for 20 minutes or until the bottoms are slightly golden. Cool the scones on a wire rack, then serve them plain or with jam. Makes 20 scones.

Boneless NY Strip steaks, baked potatoes, and peas. I'm really in the mood to go out though. DS doesn't have school today so I think we're going to go out to lunch and then see a movie. Since we're going to be at the mall anyway, I'll have to stop at my favorite store - Yankee Candle.

I'm probably going to go pick up fried chicken & fixins from Walmart. I was going to make spaghetti and meatballs but the sink is backed up so I can't really cook until DH gets home to clear it. I think it is my fault. I drained hamburger into the secondary sink last night. Whoops! I won't admit to it though if DH asks. >;)

DS just called and said he MIGHT be coming home from school for dinner tonight. That means I need to plan on a bigger meal. He loves to eat! So I'm exploring what I have on hand to feed a crowd. ;) And then he probably won't come and we'll eat it all weekend. :rotfl:

DH is even luckier than me, though--he gets to Orlando on the 23rd! Granted, it is for a work conference, but the conference is being held at the Beach Club, AND his company is having a private reception in the Wonders of Life Pavillion, with both Body Wars and Cranium Command operating! How cool is that! I thought that pavillion was being used for storage...yes, I am jealous! I love Cranium Command! (Body Wars, not so much, always made me want to hurl).

I am not sure what we are having tonite. I worked today , and then took Kady to the Dr, back to work, and then me to the Dr. She says REST, so I think I will. We have plenty of leftovers in the fridge.

I've never had fondue but a new place just opened here called The Melting Pot. It is all fondue...I am dying to get there.

I had leftover take out from the Old Spaghetti Factory. Pasta with tomato sauce, bread with garlic butter and salad with balsamic dressing. I had Ciao Bella espresso gelato with Hershey's dark chocolate sauce for dessert. Yummy! :cloud9:

Tonight will probably be leftovers--got lots of spaghetti and meatballs, and chicken reubens left.
Lindsay--I think you can find silpats at about any specialty cooking store--I know Williams Sonoma carries them, also might try Sur la Table--I suppose Bed, Bath and beyond would have them as well

I saw them last week at Bed, Bath and Beyond. They had traditional silpat as well as pink ones for Breast Cancer awareness in a special display. I almost bought the pink ones, even though I already have silpats.
Dinner tonight is Moroccan Chicken with Preserved Lemons. I still have some Preserved Lemons in the fridge, so I wanted to use them. Hopefully it's as good as the shrimp made with them was. I'm not sure about a side dish yet, though.

Tonight we're going out - I think Chinese but tomorrow I've got plans to do some cooking for the week. I'll be making white chicken chili and stove top Chinese pot roast. Both recipes are from the latest copy of Cooking Light Magazine.

Along with that we are having homemade garlic mashed potatoes, fresh cabbage from our garden..
And for dessert..in the oven alongside the meatloaf is a big pan of apple crisp..to be served for dessert warm with either ice cream or whipped cream..
YUM..I can't wait for dinner!
