I was thinking of making Glynis' Ranch Potato Salad - but what section of grocery store will I find real bacon bits??

I just laughed at myself over this. In my head I was saying exactly what aisle at Dorignac's they have these. Then I remembered I'm is MS now. Shoot. Hormel sells these. Look by the pre cooked bacon and you SHOULD find it there.

I find them in the section where the salad dressing mixes are. They are either in a jar, or in a foil bag. Of course, you could make your own, if you wanted. I never do. The premade ones are too easy!

We are having the baked chicken reubens tonight. I know that my kids will hate the sauerkraut, so I'm doing half with and half without. I'll steam some broccoli and make a noodle dish to go along with it. I can't wait!!!

So, I caved and bought a few grocery items because I'm already sick of the chicken. Tonight we're going to have Turkey burgers on the grill and my aunt's cole slaw.
Aunt Niennie's Cole Slaw
Package of cole slaw mix
1 can of water chestnuts
1/2 C. sunflower seeds
1/2 C. Craisins (dried cranberries)
1/2 C. real bacon bits (yep, another reason to find them in your store)
1 bottle of cole slaw dressing or you can make your own. I prefer a more sweet dressing, especially for this recipe.
Combine and enjoy. It is my favorite!

That is what I did too and it came out perfect. I gave the recipe to a co-worker who was gonna make it this weekend and I can't wait to see what she says.
BTW, I was reading the October issue of Better Homes and Gardens and they have a whole section talking about pot roasts and also several recipes. I had to laugh cause nothing can be easier or tastier than Glynis' recipe! :thumbsup2

I haven't posted on this thread for awhile, and man, you guys are really rocking!!! I went back and read all that I have missed and it looks like I missed many good meals!!
Tonight we are having smoked pork chops, mac and cheese and winter blend veggies. Everyone is eating in shifts so this one is easy to do.

THat sounds good! I wonder if my DGD would eat them if I added pasta instead of rice. She made more faces during dinner and had all kinds of reasons why she could not eat her dinner. Seems the only food she could eat was the potatoes.

If you try this make sure to only half cook the macaroni or it turns to mush...They are also great to make in the crock pot

Tonight was leftover night in our household. We had too many leftovers and I just couldn't let them go to waste, so it was a little bit of this and a little bit of that.
Okay, Glynis, here ya go:
Chunky Apple Cake with Butterscotch Sauce
Cake
½ C. butter, softened
2 C. sugar
1 tsp. vanilla
2 eggs
2 C. flour
2 tsp. pumpkin pie spice
½ tsp. salt
½ tsp. baking soda
6 C. chopped peeled tart apples, such as Granny Smith
Butterscotch Sauce
1 C. packed brown sugar
1/2 C. butter
1 C. heavy whipping cream
In a large mixing bowl, cream the butter, sugar and vanilla. Add eggs, one at a time, beating well after each addition. Combine the flour, pumpkin pie spice, salt and baking soda; gradually adding to the creamed mixture and mix well. Batter will be very stiff. Stir in the apples and mix well. Spread into a greased 9” x 13” pan. Bake at 350 degrees for 40-45 minutes or until top is lightly browned and springs back when lightly touched. Cool 30 minutes before serving. For butterscotch sauce, combine brown sugar and butter in a small saucepan. Cook over medium heat until butter is melted. Gradually add cream. Bring to a slow boil over medium heat, stirring constantly. Remove from heat. Serve with cake. Store leftover sauce and cake in the refrigerator, reheating the sauce before serving. Leftover sauce is great on vanilla ice cream too. Serves: 12.
Cheesy Chicken Enchiladas
1 T. vegetable oil
2 skinless, boneless chicken breast halves - boiled and shredded
1/2 cup chopped onion
1 (7 ounce) can chopped green chile peppers
1/2 (1 ounce) package taco seasoning mix
1/2 cup sour cream
2 cups small curd cottage cheese
1 teaspoon salt
1 pinch ground black pepper
12 (6 inch) flour tortillas
3 cups shredded Monterey Jack cheese
1 (10 ounce) can red enchilada sauce
1 (8 ounce) bottle Ortega taco sauce
To Make Meat Mixture: Heat oil in medium skillet over medium high heat. Add chicken, onion and green chile peppers and saute until browned, then add taco seasoning and prepare meat mixture according to package directions.
To Make Cheese Mixture: In a medium bowl mix sour cream with cottage cheese and season with salt and pepper; stir until well blended.
To Assemble Enchiladas: Heat tortillas until soft. In each tortilla place a spoonful of meat mixture, a spoonful of cheese mixture and a some of the shredded cheese (use about 2 C total for the enchiladas and same the remaning cup of cheese for the top). Roll tortillas and place in a lightly greased 9x13 inch baking dish. Combine enchilada sauce with taco sauce and pour over enchiladas; top with remaining 1 C cheese. Bake at 350 degrees for 30 minutes or until cheese is melted and bubbly.

I was strolling through the recipes and keep stopping on the pie recipes. Glynis, I love the idea of a pie night before Thanksgiving! We usually have our dessert the night after because it is impossible to squeeze dessert in after dinner.
An alternate pumpie pie recipe from Ina Garten, the Barefoot Contessa
For the crust:
2 cups graham cracker crumbs (14 crackers)
1/3 cup sugar
1/4 teaspoon ground cinnamon
1/4 pound (1 stick) unsalted butter, melted
For the filling:
1/2 cup half-and-half
1 (15-ounce) can pumpkin puree
1 cup light brown sugar, lightly packed
3/4 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 extra-large egg yolks
1 package (2 teaspoons) unflavored gelatin
1 ripe banana, finely mashed
1 teaspoon grated orange zest
1/2 cup cold heavy cream
2 tablespoons sugar
For the decoration:
1 cup (1/2 pint) cold heavy cream
1/4 cup sugar
1/2 teaspoon pure vanilla extract
Orange zest, optional
Preheat the oven to 350 degrees F.
Combine the graham cracker crumbs, sugar, cinnamon, and melted butter in a bowl and mix well. Pour into an 11-inch tart pan with a removable bottom and press evenly into the sides and then the bottom. Bake for 10 minutes and then cool to room temperature.
For the filling, heat the half-and-half, pumpkin, brown sugar, salt, cinnamon, and nutmeg in a heat-proof bowl set over a pan of simmering water until hot, about 5 minutes. Whisk the egg yolks in another bowl, stir some of the hot pumpkin into the egg yolks to heat them, then pour the egg-pumpkin mixture back into the double boiler and stir well. Heat the mixture over the simmering water for another 4 to 5 minutes, until it begins to thicken, stirring constantly. You don't want the eggs to scramble. Remove from the heat.
Dissolve the gelatin in 1/4 cup cold water. Add the dissolved gelatin, banana, and orange zest to the pumpkin mixture and mix well. Set aside to cool. Whip the heavy cream in the bowl of an electric mixer fitted with a whisk attachment until soft peaks form. Add the sugar and continue to whisk until you have firm peaks. Carefully fold the whipped cream into the pumpkin mixture and pour it into the cooled tart shell. Chill for 2 hours or overnight. For the decoration, whip the heavy cream in the bowl of an electric mixer fitted with the whisk attachment until soft peaks form. Add the sugar and vanilla and continue to whisk until you have firm peaks. Pipe or spoon the whipped cream decoratively on the tart and sprinkle, if desired, with orange zest. Serve chilled.
The jury was out in my house because they are allergic to change, it was not my traditional pie recipe. I thought that it was good, just different.

We love our pie night almost as much as the actual Thanksgiving meal! We've gotten to the point that most of the children who were toddlers when we started are now teenagers, and they want to try their hand at pies, too. It's so much fun to see them start out making pies with pudding and cool whip, and then the next year try something harder. My SIL's teenage son who has been having major emotional problems, baked an apple pie for our last pie night. It was delicious, and you should have seen his face glow as people raved about his pie! What a boost for his self-esteem!
As we get closer to Thanksgiving, I'll have some other pie recipes to post. Do try the Derby pie, though. If you like warm chocolate chip cookies, you'll love that one!!!!

I made stuffed peppers with orzo and veggies once and it was fabulous - but like Jenny said, I only half cooked the orzo.
Well, today's dinner was leftover chili and some fruit salad (pears, cantaloupe, apples and zucchini / "bikini" - he thought it was a fruit, I guess.) my 3 yo nephew made for me- he cut the slices of fruit into smaller pieces with his plastic knife. He's the cutest, so of course I ate it anyway. Bikini and all. :)

I'm sure it could. Just make an indentation all along the top to fill with the cheese. If you want to make it even more like pizza, put pepperoni in the indentation before you add the cheese. I can't see why it wouldn't work!

Stuffed Bell Peppers
8 med size green bell peppers
1 1/2 Tbsp veg oil
l large onion, chopped
1/2 c chopped parsley
3 cloves garlic, minced
1 1/2 lbs. ground beef
2 pounds shrimp, peeled and chopped
Tony Chachere's creole seasoning
l small stale loaf of bread(about 10 oz)
2 Tbsp butter, softened or melted
Cayenne pepper, optional
1/3 c dry breadcrumbs
Cut peppers in half, clean and parboil for 10 minutes; drain well. Heat oil in a large skillet over high heat, add onions, parsley and garlic and saute until onions are browned, transfer to a mixing bowl. In same skillet, cook beef over medium heat until browned. Add shrimp and reserved onion mixture, folding all together. Continue cooking for 10 minutes more. Season heavily with Tony's and remove from heat. (If Tony's is not available I'm sure any creole seasoning will work). Pre-heat oven to 350. Chop four of the bell pepper halves and mix into meat. Transfer mixture to a large mixing bowl. Sprinkle bread slices with water (they shouldn't be soaking wet) and add bread to meat mixture. Mix until the bread disappears. Add butter and taste for seasoning (should be very well seasoned), adding cayenne if desired. Stuff mixture into remaining bell pepper halves and arrange on a baking sheet. Sprinkle with breadcrumbs. Bake uncovered until breadcrumbs are nice and toasty, around 30 minutes. These freeze very well too!

First I should tell you,I'm not italian but I make pretty good lasagna... Also this recipe is not exact..If I am missing a cheese,oh well...I have also been known to switch cheeses for whatever is on hand.. Some people like some sour cream mixed in with the ricotta and this is very good also.. I've also been known to add anything from sun dried tomatoes to kalamata olives to the sauce..I don't like a sweet sauce..It you want a a sweeter sauce add some sugar to the sauce
Jenny's Lasagna
Sauce
2 cans crushed tomatoes
1 sm can diced tomatoes
1/2 c red wine or balsamic vinegar
Basil..I use fresh basil
Oregano
Mushrooms
crushed red peppers (pinch) (optional)
sliced black olives(optional)
3 Bay leaves...Remove before serving
1 pound GB
3 links hot italian sausage
garlic 3-4 cloves diced
Cheeses
Parmesano reggiano
Ricotta
mozzarella
Provolone
pecorino
2 eggs
Lasagna noodles
1 I cook the sauce all day ..Put crushed tomatoes,diced tomatoes, Red wine,crushed red peppers, basil, oregano, black olives,and bay leaves in crock pot or pan Let it simmer for at least 4 hours.
2 In a small amount of olive oil brown mushrooms , garlic ,sausage and ground beef
3 Add to crock pot sauce...Let simmer another hour or 2
4 put on a pot of water to boil
5 Mix ricotta cheese with eggs,I use a large ricotta cheese..I also add some more diced,fresh basil to this cheese
6 shred other 4 cheeses
7 Place 6-8 lasagna noodles in pot of boiling water
7..Lay out a sheath of aluminum foil and spray it with Pam
8 Put a thin layer of sauce in the bottom of lasagna pan (I'm lazy and buy a disposable one from the store..No cleaning)
9 Remove the pieces of lasagne when they are only half cooked and place them side by side on the aluminum foil.This keeps them from sticking and lets them cool quickly so you can handle them
10 put 6-8 more lasagne noodles in pot
11 place 3 or 4 lasagne noodles in lasagna pan...Remember,they will expand.
12 put a layer of sauce over noodles(keep and eye out for the bay leaves) put another layer of noodles..Put half the ricotta cheese on this layer, add 1/3 of the other cheeses,using some of all 4 cheeses)
13 remove next set of noodles,place one final layer of noodles into boiling pot and repeat steps 11-12
14 put very last layer of noodles on top and cover with sauce
15 place in 350 degree oven for 45 minutes
16 remove lasagne from over and place one last thick layer of 4 cheeses on top(no ricotta this time) bake 15 more minutes
17 Let cool for 10-15 minutes before serving or it willfalll apar
Your lasagna should be layered as follows

cheese.Last 15 minutes

We are having NY System weiners,which is, ironically , a Rhode Island thing...They are hot dogs on steamed buns with a spicy celery salt based meat sauce..I'm going to make fries with them and pumkin pie with homemade whipped cream...It's almost time to start making home made eggnog..YUMMY!!!!!!

I've never made egg nog. We are not alcohol drinkers, so for us it's easy just to buy it from the store. Is it easy to make? Can you make it without alcohol and have it still be good?

Well, we had left over Glynis' Pot Roast from Friday on Sunday and I must say that it was even better the second time around!!! Yum! Thanks for the recipe!
Last night was a roasted turkey breast and all the trimmings...had alot left over so I had a nice turkey sandwich for lunch.
DFi is out of town until Friday so I will be taking it easy for the next few days...
tonight: frozen beer battered fish and rice and some kind of veggie...DS8s request...I am not good at frying fish...it always comes out dry.
tomorrow: Mickey Ds - going shopping for his Halloween costume...I love to make costumes but he wants to be that guy from Scream. A few years ago he was a fire breathing dragon...what a great costume and probably the last that I will make...I may be Mrs Potato Head...making it of course...Wow am I way OT!!!!
Thurs: My son's favorite meal...Sausage Shells and Peas...this is am original recipe that is quick and easy...this may be the first recipe that I contribute here...anyone interested?

Episode: Christmas
6 egg, separated*
3/4 cup sugar
1 pint heavy cream
4 pints milk
1/2 pint Bourbon
1 tablespoon vanilla
Nutmeg
In a bowl beat the egg yolks with the 1/2 cup of sugar until thick. In another bowl beat the egg whites with 1/4 cup of sugar until thick. In a third bowl beat the cream until thick. This sounds yummy! Can you post the meat sauce recipe? I have not read all the recent posts so please forgive me if you posted it already...I have heard about celery salt on hot dogs but have never tried and the way you decribe it sounds great. TIA :)
Here is the recipe.......... Too be honest,I used 1 pound of ground beef and didn't measure any of the spices...If I am missing a spice,I skip it....The Celery salt is a neccessity though...I used Nathans dogs and no butter
This hearty, flavorful wiener sauce is like the kind you'll find in Rhode Island and Massachusetts. It may be frozen until ready for use. JennyMominRI, your lasagna sounds fantastic! I would have never thought to add red wine or balsamic vinegar to the sauce, but I bet it is really tasty. I am putting this on my list to try.
We had one of my favorite chicken dishes tonight: Chicken in Basil Cream and I served it with baked potatoes, although it is really good served over fresh pasta.

Well, we had left over Glynis' Pot Roast from Friday on Sunday and I must say that it was even better the second time around!!! Yum! Thanks for the recipe!
Last night was a roasted turkey breast and all the trimmings...had alot left over so I had a nice turkey sandwich for lunch.
DFi is out of town until Friday so I will be taking it easy for the next few days...
tonight: frozen beer battered fish and rice and some kind of veggie...DS8s request...I am not good at frying fish...it always comes out dry.
tomorrow: Mickey Ds - going shopping for his Halloween costume...I love to make costumes but he wants to be that guy from Scream. A few years ago he was a fire breathing dragon...what a great costume and probably the last that I will make...I may be Mrs Potato Head...making it of course...Wow am I way OT!!!!

Yup! I plan early and shop early, too. We will do a roast turkey, Rachael Ray's apple and onion stuffin' muffins, cranberry sauce (my kids like it from the can), corn, mashed potatoes and gravy, yams, rolls and butter, some kind of green salad (I like to add pomegranite seeds and apples to my salad, yum!), perhaps a jello salad, and pumpkin pie for dessert.
I've already mentioned here that we do a pie night the night before, but you still have to have a pumpkin pie for that night. We will also eat any leftover pie from the night before.
We used to do Thanksgiving with extended family, but for the last 3 years, it's just been our little family! I have to say I like it, but I do have to really schedule out my day (and the day before) in order to get everything done. I only have one oven, so I have to maximize my time!

I've never made egg nog. We are not alcohol drinkers, so for us it's easy just to buy it from the store. Is it easy to make? Can you make it without alcohol and have it still be good?
Glynis, I never add alcohol to my eggnog. If anyone wants to jazz it up they can but I like to be able to have something everyone can enjoy. This one is so easy, and it looks pretty in a punch bolw. It is one of our traditional Christmas beverages.
6 egg, separated*
3/4 cup sugar
1 pint heavy cream
4 pints milk
1/2 pint Bourbon
1 tablespoon vanilla
Nutmeg
In a bowl beat the egg yolks with the 1/2 cup of sugar until thick. In another bowl beat the egg whites with 1/4 cup of sugar until thick. In a third bowl beat the cream until thick. Add the cream to the yolks, fold in the egg whites, and add the milk, Bourbon, vanilla, and a pinch of nutmeg, if desired. Chill in freezer before serving.
Serve eggnog in a large punch bowl

Here it is:
Chicken in Basil Cream
¼ C. milk
¼ C. dry bread crumbs
4 boneless skinless chicken breast halves (about 1 lb)
3 T. butter
½ C. chicken broth
1 C. whipping cream or half-n-half
1 jar (4 oz.) sliced pimientos, drained
½ C. grated fresh Parmesan cheese
¼ C. minced fresh basil
1/8 tsp. pepper
salt to taste
Place milk and bread crumbs in separate shallow bowls. Dip chicken in milk, then coat with crumbs. In a skillet, over medium-high heat, cook chicken in butter on both sides until juices run clear, about 10 minutes. Remove chicken from pan and keep warm. Add broth to skillet and bring to a boil over medium heat; stir to loosen browned bits from pan. Stir in cream and pimientos; boil and stir for 1 minute. Reduce heat. Add Parmesan cheese, basil, salt and pepper; cook and stir until heated through. Serve chicken with sauce. Sometimes I add some chopped artichokes (from a can or jar, drained) to this and it is a nice addition. Serves: 4

I did not use the buttermilk, mine was out of date, so I used milk. It worked well. I served them with parmesan noodles, gravy and corn. This one is a keeper! 1/2 cup sugar
1/2 vanilla bean
1 (15-ounce) container ricotta cheese
1/2 tablespoon instant espresso powder
1 (3-inch) biscotti, crushed
Pinch ground cinnamon
Pinch cocoa powderPlace the sugar in a food processor. Cut the vanilla bean open lengthwise, scrape out the seeds, and place them in the food processor with the sugar. Run the machine to make vanilla sugar. Place the ricotta and espresso powder in the food processor. Blend for 1 minute. Stop the machine to scrape down the sides with a rubber spatula. Blend for another minute. Spoon the mixture into 4 small coffee mugs. Cover and refrigerate for at least 1 hour and up to 1 day.
To serve, top the ricotta cappuccino with crushed biscotti. Sprinkle with cinnamon and cocoa powder.

Ground nutmeg to taste
COOK pasta as directed on package.

That definitely sounds like a very satisfying meal (BTW, if you are making that cake, I'd love to see the recipe!!) ~ so, I would say not to worry about the appetizer unless they are going to be arriving more than 30 minutes prior to the meal or if it was an actual dinner party. If it is just close friends and family coming for a meal and they'll be arriving very shortly before dinner, I say no need to put out an appetizer. This is JMHO ;) , I hope you have a great dinner whatever you decide! :thumbsup2

1 package Devil's food cake
1 box (5.9 oz) instant chocolate pudding
3/4 cup Kahlua
1/2 cup water
1/2 cup vegetable oil
4 eggs.
Preheat oven to 350. Grease and flour (I use Pam for Baking) a bundt pan.
Mix ingredients and bake for about 45 minutes (toothpick should be clean)
Easy, eh?? There is a glaze that goes with it, but I find it to be a little too much, so I just dust some powdered sugar on top of the cake after it cools and serve it with a scoop of ice cream or Cool Whip :)

Well, I have a few minutes before I head to the grocery store to get everything I need for the pizza and cake so here it is:
Chicken with Lime Butter
4 skinless boneless breasts
1/2 tsp. salt
1/2 tsp. pepper
2 Tbsp. oil
1 large lime
6 Tbsp. butter
1/2 tsp. dried dill weed
1/2 tsp. dried or fresh chives
Sprinkle chicken with salt & pepper. In skillet over medium heat, in hot oil, cook chicken until browned on both sides. Remove from skillet and keep warm. Squeeze juice from lime into skillet, over low heat, cook until lime juice just begins to bubble. With a wire whisk, stir in butter, 1 Tbsp. at a time; cook, stirring until butter becomes opaque and forms a creamy sauce. (Do not use margarine, or sauce will not be creamy). Stir in the dill weed and chives, return chicken to skillet just to warm through. Serve over angel hair pasta or rice.
P.S. I rarely use butter, but I find it really does make a difference in this recipe!

Lindsay - I think that your meal sounds really good. I don't know as you would need the appetizer at all. You could set out a veggie tray for people to munch if you want, but I don't think you need to stress out about an appy.
We're taking the kids to the circus tonight, so dinner will most likely be cotton candy, hot dogs and peanuts at the circus. At least it means I don't have to cook!
The hamburger vegetable soup I made earlier was so yummy! When I get back from league bowling, I'll post the recipe!

Lindsay, Your menu for your party sounds great. I don't think you need to go crazy...Glynis' idea for vegies and dip are great or maybe cheese and crackers or a smal antipasto.
I am having JennyMom's Brisket tonight...It really smells yummy in the crockpot...I have not even thought of sides but it will probably be mashed potatoes and broccoli.
Here is the recipe I promised for My Son's Favorite Sausage Shells and Peas:
Serves: 4 - 6 depending how much pasta you use.
5 - 7 links of Sweet Italian Sausage (Pork is the best but I have used turkey and it comes out almost as good)
29oz can of Tomato Sauce
1 cup of Chicken Broth (I usually open a can and whatever remains - I add to the pasta water while it cooks)
2 - 4 tbs Olive Oil
1 clove of Garlic minced
3/4 TBS Italian Seasoning
1/4 TSP Crushed Red Pepper
1/2 TSP Adobo
Salt and Pepper to taste
1 1/2 - 2 cups Frozen Peas (canned can be used, but I prefer frozen)
1 lb - 1 1/2 lb Medium Shell Shaped Pasta - cooked according to package
1 TBS butter
Parmesan Cheese
1. Parboil sausage by putting them in a pot covered with water, bring to a boil and then simmer for 20 minutes. Drain and cool. (This can be done ahead of time).
2. Cut sausage in 1/4" coin size pieces. *** if using turkey, take the casing off.
3. In a 4qt or bigger sauce pan, heat the EVOO (as much to cover the bottom of pan), then add sausage and garlic and cook for about 10 minutes until brown (stirring frequently).
4. Add broth and seasonings and simmer for 5 minutes.
5. Add sauce and simmer for 10 minutes.
6. Add peas and cook until the peas are cooked - about 5 - 8 minutes.
7. Add butter and stir until melted.
8. Toss pasta with some of the sauce (about 1 - 2 cups) and cheese. Serve with remaining sauce on the side.
Serve with bread and salad...
*** This is a recipe that can be altered to use jarred sauce or cook the above sauce longer but this is how I make it. The sauce can be made ahead and add the peas at the last minute. I have used jarred sauce for this but like it this way better.

I have been thinking about it and may nix the appetizer altogether. Do you think that will be ok?
I often forego appetizers if the meal is enough for us. I agree that if your company is arriving more than 1/2 hour before you are ready to serve dinner, it may be nice to have a little nibble available, if only to give you some time to get your food to the table without feeling as though you need to rush.
I always prefer dessert to an appetizer, and your cake sounds delicious.

Since I have the day off I was thinking about making dessert too....there is a recipe for croissant bread pudding in this month's Everyday Food that sounds pretty good...plus it might be good for breakfast if we don't eat it tonight.

Tonight I'm having Penne Arrabiatta..
1 pound penne pasta
1/2 cup extra-virgin olive oil
1 tablespoon garlic, finely chopped
3 cups canned, whole peeled tomatoes, chopped up teeny
1 tsp red pepper flakes
salt
1/4 cup white wine
basil leaves, chopped
add some cheese if you'd like
It's rather spicy so you can tone down the peppers and garlic if you'd like :) It's super good! I make it once a week.
Cook garlic in a pan, add the rest, and simmer on low for 1 hour. Put on top of penne. :) Tada!

I am starting to think about the Holidays also. I am in the process of trying to use the groceries that I have ahead so that I can resupply my baking and Holiday meal ingredients.
I have cooked a brined turkey, and it was a hit! Last year I made a squash lasagna and my DS was in heaven! We always have the traditioal sausage stuffing, a sweet potato casserole that is to die for, potatos and gravy, veggies, homemade cranberry sauce that I tinker with each time, along with anything else I feel like cooking. And then there is dessert.......
I wonder if anyone would be interested in posting some of their favorite recipes so that we can compare notes and try some new "tried and true" appetizers, sides and desserts. I have had so much fun with the recipes here that I know the Holidays in your homes must taste really good.

I made the bruschetta chicken last night, a double batch so that I would have leftovers. Well, first it was very good, but then I forgot it on the counter all night :confused3 . I had to toss it, although it broke my heart. Now I don;t know what I will fix for dinner, I'm going to work for a little while, so I will probably pick something up on the way home.

Did you look in the international foods aisle? The chile paste should be with the thai foods. If there isn't any there, does your store sell sriacha sauce? You might be able to use that...the chile paste will give your ribs the heat, so if you don't like spicy you could probably leave it out. What are the other ingredients in the recipe?

Today I worked with my Mom and my sister to make it. My Mom was in charge of course! Basic recipe: cut your washed apples into quarters, leave the peel on, seeds in, etc. Fill your pot with the apples and then add about 1/2 inch of water. Cover and cook on medium high heat, stirring occasionally, until the apples have softened and are starting to collapse--about 15 minutes. Then, run the apples through a food mill. (Make sure you use a food mill, not a food processor! The mill holds back all the skin, seeds, etc.) Season with sugar to taste. That's it!

JennyMominRI, the brisket was a hit! DFi and DS loved it! I made it with mashed potatoes (like Rachel Rae made today with cream cheese) and corn. I wasn't sure if I should make the broth a gravy, but I did and I must say we all loved this recipe. Thank you!!!
I also love your idea about Thanksgiving recipes...I usually go to my Dsis house and only contribute sides...green bean caserole, sweet potatoes and my new thing is a Cranberry Salad...if all agree to post the recipes here, I will post it.
I also make apple sauce, but peel and core the apples and add some stuff and then mash with the potato masher...
I am getting off easy this weekend and eating out on Sat and going to DSis on Sunday. I will be making Cherry Cheese Cups...this is the classic with the Nilla Wafers...anyone need the recipe!

Thanks for the response, I checked the int'l aisle - nothing, not even the sriacha sauce. The other ingredients are garlic, brn sugar, molasses, hoisin sauce, soy sauce and red currant jelly. We do like heat, so I may just add red pepper flakes. Thanks again!!
By the way the Mega Meatball pizza is awesome, I had to put off doing the cake because we are having some friends over Sunday and I'm planning a big BBQ, so I'll do the cake then!! I love this thread guys. :thumbsup2

The roast was a huge hit. I can see why it calls for two roasts. The small one I fixed was gobbled up like my family was starving. ;) They said my roast is always good, but this one was outstanding. I will be fixing it again.

I'm making steak on the grill, mashed potatoes and some veggie. I don't know about anyone else, but I have also quit buying bagged lettuce besides spinach! My thinking is, if it is processed the same as bagged spinach, then the e-coli can be in there too. Also, I read somewhere that bagged lettuce is one of the dirtiest things you can eat..boo-hoo because I use to love the convenience of that!

I decided I'm not going to make any of the things I mentioned in my earlier post. LOL Instead we're having beef stir-fry (with leftover pot roast) and rice. We don't usually have dessert, but tonight I'm making Caramel Hot Fudge Brownie Sundaes. The brownies are in the oven now and they smell wonderful. If it wasn't for DS and DH I'd probably skip dinner and go right to the sundaes.

Here are a couple of recipes I will make this week
Crockpot Lentil and Sausage soup
1 package hot italian sausage sliced
2 cans chicken broth
1/2 bag of lentils
1 small can diced tomatoes
2 Carrots sliced
1 tsp thyme
1 tsp basil or 3 fresh basil leaves,torn up
2 bag leaves
2 cloves garlic diced
1 Combine all ingrediants in the crock pot and cook in low all day..This will also cook in about 3 hours on the stove on medium heat
I serve with a crusy bread...... Make sure you remove the bay leaves
Chicken Parmegiana
Sauce
1 Can crushed tomatoes
2 cloves garlic
3-4 basil leaves, torn
1/2 c red wine or balsamic vinegar( wine makes huge taste difference)
Optional additions
kalamata olives
sun dried tomatoes
mushrooms
Chicken
5-6 chicken breast tenders
1 bowl with small amount of flour
1 bowl with 2 eggs
1 bowl breadcrumbs with more basil added and
Parmesano reggiano
Cheese
Mozzarella
Parmesano Reggiano ( specialty deli cheeses,You can substitute with a good parmesan)
Provolone(optional)
1 Put all of the sauce ingrediants in a pot to simmer for at least an hour.
2 Dredge chicken first in flour,then eggs then bread crumb-parmesan mixture
3 layer chicken in a medium sized oven pan
4 top with the 3 cheeses,all shredded...I think a good fresh shredded provolone and Parmesano reggiano makes a huge difference in taste.... Reserve some reggiano
5 Pour sauce all over chiiicken and cheese..Top with extra Parmesan cheese
6 Bake at 350% for about 45 minutes...Serve over spaghetti

Have some chicken bone-in breasts in the crockpot for Sticky Chicken (my way of explaining Sticky Chicken Breasts :teeth: ). We will have that with potato pancakes (leftover mashed potatoes), salad and broccoli.
Dessert is intended to be Cinnamon-Pecan Streusel Coffee Cake- even if it rocks I can't give the recipe because the mix comes from a gourmet food company great sales section when I was ordering something months ago. It comes in a coffee can-type canister from Europe.

We are going out to eat today but later we will have my cream cheese cake. Everone loves this cake. Recipe looks long but it is really easy. This is the first recipe I am posting, hope you like it.
CREAM CHEESE CAKE
Crust:
2 sticks salted butter, melted
½ cup sugar
3 cups graham cracker crumbs
pinch of cinnamon
Cream Cheese Middle:
16 oz cream cheese, softened
½ cup sugar
3 eggs
1 tsp vanilla
Topping:
16 oz sour cream
1/3 cup sugar
1 tsp vanilla
Combine crust ingredients and press into square 13 x 9 pan. (I use brownie/lasagna pan.) Refrigerate crust for ½ hour.
Mix softened cream cheese well with ½ cup sugar.
Add eggs one at a time, then add vanilla.
Spread mixture over crust and bake at 350 degrees for 20 minutes. Cool in refrigerator for a couple of hours.
For topping, mix sour cream with 1/3 cup of sugar, then add vanilla. Also cool in refrigerator for a couple of hours.
After both have cooled, pour topping over cheesecake and spread evenly.
Bake again at 350 degrees for 10 minutes.
Refrigerate again for several hours or overnight before cutting.
Cut into squares. (I place each square into a paper muffin cup for presentation.)

We are having spaghetti and meatballs. I took some homemade sauce (my version anyway) out of the freezer and I will make some meatballs in a little while. Also making garlic bread and salad. This meal is always welcome in this house. Everyone loves spaghetti. I plan on eating around 4:30 around the beginning of the Pats game. My dh worked all night so he won't be up too late tonight.

Tonight is Spaghetti with Broccoli in a Garlic Olive Oil sauce.
1/2 cup olive oil
5 cloves garlic, chopped
Touch of salt (optional)
1 lb. pasta, cooked
1/2-1 cup parmesan cheese (to your liking)

I don't really have a recipe for the pot roast, but here's what I do:
I start with a nice piece of chuck.
Season it with salt and pepper.
Then I make several slits in the meat and insert a clove of garlic in each.
In a big oven safe pot I brown the meat about 5 min on each side.
Then I add a onion - sliced up and let it brown a few minutes.
Then I add some beef stock and some wine until the meat is almost covered. If I have some tomato paste I add a heaping spoonful as well and also throw in a bay leaf.
I then covered the the pot with a double layer of foil and seal it well around the edges.
I put the meat into a 325 oven for about 3 hours.
I do mine the night before so that I can get off as much fat as possible before serving.

The burrito bake was really good and super easy.
Burrito Bake
8 flour tortillas
1 can (taco bell) refried beans
1 lb cooked ground beef w/taco seasonings added (follow directions on seasoning package)
approx. 2 cups shredded cheese (I used a 4 cheese blend)
sour cream
lettuce
tomatoes
salsa
Preheat oven to 350. Grease pie plate. Put 4 flour tortillas on the pie plate. Layer 1/2 of the refried bean mixture over the tortillas, on top of that layer 1/2 of the meat mixture, top with 1/2 of the cheese. Repeat layers starting with another 4 flour tortillas (refried beans, meat, cheese). The recipe called for another top of 4 flour tortillas, but next time I make it I'm omitting that layer. Too much bread for us. Bake for 30 minutes or until heated throughout and cheese melted. We added the tomatoes, lettuce, salsa, and sour cheese once our slices were on our plates. It's a nice twist on burritos! (I got the recipe from last year's holiday Kraft food and family book.) It's a keeper for us. :)

Here's another one! I've been making banana bread using this "recipe" :) and it always turns out great. A few days ago I sustituted zucchini. Quick and easy. We all love the banana bread and zucchini bread. It only takes minutes to prepare prior to baking!
Great for all of those bananas (or zucchinis) that don't get eaten in a timely manner.
Banana or Zucchini Bread
1 package of extra moist yellow cake mix (follow directions on package but reduce water to 1/2 a cup)
3 ripe bananas (or 3 small zucchini for zucchini bread)
1 cup chopped walnuts (optional)
Preheat oven to 350. Grease two loaf pans. Follow directions on package of extra moist yellow cake mix. Reduce the water that's called for to 1/2 a cup. Add sliced bananas (3) or zucchini. Add nuts if you want. Blend well. Pour mixture into loaf pans. Bake for about an hour. Check for doneness with a toothpick. It may need a little more baking time depending on the size of the bananas or zucchini.
The more bananas or zucchini you add, the less water you'll need. I still play around with the recipe some. Depending on if I have more bananas (or zucchini) I'll adjust the baking time and/or the amount of water. The bread always got gobbled up! It's delicious! :)

Sweet and Sour Macaroni Salad
1 (8 oz) pack elbow macaroni
3 medium carrots, scraped and diced
2 stalks celery, diced
1 medium onion, chopped
1 medium cucumber, peeled and chopped
1 large tomato, peeled and chopped
1/2 c. vegetable oil
1/2 c. cider vinegar
1/3 c. sugar
1 tsp. salt
1/2 tsp. pepper
Cook macaroni according to package directions; drain, rinse with cold water; drain again.
Combine macaroni, carrots, celery, onion, cucumber, and tomato. Combine remaining ingredients; mix well. Pour over macaroni mixture; toss gently. Cover and chill 8 hours.

Saturday, DH and I went to 50th birthday party so dinner was out. This was when I decided I needed to lose weight. My DH and I used to go dancing a lot, but not so much anymore.....well we danced and he was not out of breath, but the jitterbug nearly gave me a stroke! No Kahlua cake for me for a while :guilty: .
Today I was supposed to go and clean out the rest of the furniture from my DS home in NY. Well, I packed a picnic lunch for us because a good portion of the 3 1/2 hour ride has no place to eat, and he lived 30 minutes from any civilization. We found out that he could leave the furniture with the house, so we cancelled, and I have tons of sandwiches to use up, so no cooking for me.

Last night: Dsis and the kids came over. We had grilled porterhouse steaks, and an unsuccessful tomato risotto (too acidic), plus green beans with almonds.
Today, my Dsis and I attempted to make gnocchi from scratch. Erm. Not so successful! Thankfully, we had the presence of mind to taste one before mixing them with my 'killer' sauce. Final menu was back-up-plan cheese ravioli with the sauce, garlic bread, and an arugula salad (same one I always post about).

Here is the chowder I am making for tomorrow's dinner, it is so tasty, and I basically lived on it in college:
Corn and Cheddar Cheese Chowder
1 large potato, peeled and diced
2 cups chicken stock, hot
1 bay leaf
1/4 tsp. dried sage
1/2 tsp. cumin seeds
3 tbsp. butter
1 onion, finely chopped
3 tbsp. flour
kernels from 2 ears of corn
1 1/4 cups heavy cream (or half and half, or milk, whatever you like)
4 oz. sharp cheddar cheese, grated
salt and pepper to taste
1/2 cup white wine
Boil the potato in the stock with the bay, sage, and cumin until just tender, about 15 minutes. In a seperate saucepan, melt the butter and then saute the chopped onion until softened. Add flour and stir for two minutes. Add the wine and simmer for two minutes. Then add the cream. Whisk together and then pour this mixture into the potato/stock mix. Now add the corn kernels and let the soup simmer about 5-10 minutes. Stir in the grated cheese and stir until melted. Eat.
Serves 4

I do have a question if anyone can help me. I bought a boneless beef shoulder roast on sale. What can I do with it for tomorrow night's dinner? Preferably in the crockpot as dd has cheer. Also something that would go well with egg noodles as I have some I need to use. I already have plans for potatoes and rice this week so wanted something different.

I tried two yummy receipes over the weekend that I thought I would share! The first is a dip,
1. 1 Large can of Hot Tamales, the kind you buy in the grocery store, take the peelings off of the tamales.
2. 1 Large can of Hormel Chili with No Beans!
3. 1 Block Velveta Cheese!
Thats it, put it in the crockpot and mix it all up, serve with Fritos Dips or whatever. This was awesome!! My DH said he could eat it without the chips, LOL!
Pina Coloda Cake
1. One box white or yellow cake mix or coconut whichever your like.
2. One small can of Sweetened Condensed Milk
3. One can of Cream of Coconut Drink Mix (usually found where the alcoholic drink mixers are but no alcohol in it.)
4. One can crushed Pineapples (Can be any size depending on your pineapple likes, also can be optional.)
5. One Large Container Cool Whip
6. Shredded Coconut (Optional.)
Cook the cake according to the directions. While it's still hot, combine the Cream of Coconut and Condensed Milk in a bowl. Poke holes all through the cake and pour the mixture into the holes. Use all of the mixture and just smother the cake with it.
Put the cake into the fridge and let it cool very very well. When cool or cold drain the crushed pineapples and spread them over the cake. Put a little or alot depending on your likes.
Then smother the cake in the Cool Whip. Top with shredded Coconut!!!! Serve Cold!
VERY VERY RICH!!!!!!!! It's also good without the Pineapple and Coconut!

Today I made "Carolina Style Barbecue" (used pork loin) in the crockpot. I got the recipe for the rub and the vinegar sauce from my friend in Raleigh, but she usually makes in in a smoker, and I quartered her recipe for my amount of meat. It was good! I made it with low fat cole slaw and rolls. We had some "gifts" in the fridge, too. Sat. was my niece's christening and my Aunt made old fashioned Italian "gravy" (red sauce) with meatballs and sausage. Mmmm! So we had a little of that, too. :)

Glynnis' Pot Roast tonight along with a salad,bread and cake for dessert. My aunt is coming for dinner so I'm adding in stuffed clams as an appetizer.
This is my first time making Glynnis' Pot Roast BUT my boss made it last weekend and called to tell me how they all loved it. Then a friend made it mid-week and loved it! When the recipe first "broke out" on this thread I had just made a pot roast and we had eaten on it for 3 days, so I just had to wait a while before doing another. Looking forward to it!

We're having leftover pot roast tonight. I did want to share what I did to make some yummy mashed potatoes last night.
I steamed fingerling potatoes until fork tender. I smashed them and added some of the cooking water back in, drizzled on some EVOO, added fresh ground pepper and shredded parm. cheese.
If any is looking for some new wonderful slow cooker recipes the latest edition of Cooking Light magazine has them. They're for beef, pork & lamb.

The chicken was so good tonite!
Ranch Chicken
1/2 cup dry breadcrumbs 1/4 cup grated parmesan cheese (http://www.recipezaar.com/library/getentry.zsp?id=467) 2 tablespoons yellow cornmeal (http://www.recipezaar.com/library/getentry.zsp?id=59) 1/2 teaspoon italian seasoning 6 chicken thighs (http://www.recipezaar.com/library/getentry.zsp?id=221) (skin removed) 1/2 cup bottled ranch salad dressing
In a shallow bowl, combine crumbs, Parmesan cheese, cornmeal, and Italian seasoning.
Dip chicken into salad dressing, then coat with crumb mixture.
Place chicken in a greased 13x9 baking dish.
Bake, uncovered, at 375 degrees for 45 minutes or until juices run clear.
I can't say my cream biscuits came out right.They tasted good, but were kind of dry and heavy. 1st attempt at biscuits :confused3 I'll try again.

Sorry it took me so long. DH kicked me off the computer all weekend, so this is the first chance I've had to catch up. Here's the recipe:
Mini Tuna Loaves
1/2 C. chopped celery
1/3 C. chopped onion
2 tsp. canola oil
3 cans solid white tuna, drained and chopped
2 C. soft bread crumbs
1/2 C. toasted wheat germ
2 eggs, lightly beaten
1/4 C. milk
2 Tbs. minced fresh parsley
1/2 tsp. dried thyme
1/4 tsp. salt
1/4 tsp. pepper
1/3 C. shredded cheddar cheese
In a small skillet, saute celery and onion in oil for 5 minutes or until tender. In a large bowl, combine the tuna, bread crumbs, wheat germ, eggs, milk, parsley, thyme, salt and pepper. Stir in celery mixture. Shape into 6 oval loaves. Place in a 15 X 10 X 1 inch baking pan coated with nonstick spray. Bake at 350 degrees for 20-25 minutes or until lightly browned. Sprinkle with cheese. Bake 5 minutes longer or until cheese is melted.

I want to try the ranch potato salad but I am not a terribly huge ranch dressing fan. Have you made it before?
It's my recipe, and I'll tell you that you can adjust the ranch to taste. We like the ranch flavor, so I use quite a bit of dressing. If you want to try this, just add the ranch a little bit at a time.

I won a baking contest with a recipe very similar to that Pina Colada cake! I used white cake, no pineapple (my mom's allergic) but all the other ingredients were the same. I also used a bag of coconut and a jar of caramel topping and some coconut rum. I toasted the coconut in the oven until it just browned. After the cake came out of the fridge, I warmed up the topping, added a shot of the rum and stirred it around. Then I sprinkled the top with the toasted coconut. It really was fabulous! If you like coconut, definitely try it!
Tonight I caved and ordered food. I was busy watching/spoiling my 2 yo nephew today. It's on its way! (Chicken Francese with rice and salad :) )
Tomorrow is Crockpot Shrimp Newburg. :)

My son gave me an idea yesterday about his favorite dish "Glynis's ranch potato salad". He had heated up a plate of leftovers with the potato salad in it and said it was even better warm. So I made a little batch and popped it in the oven, just until the cheese melted - OMG it was incredible!! It will now be a side dish, not a salad in my house. :thumbsup2

Not sure what I'm fixing yet. DD has play rehearsal after school. I never know what time she'll get out (it can be as late as 7:00). Tonight she has a choir concert at 7:00, so I know they'll let them out a little early but maybe not early enough to come home and eat. Guess I should crockpot something so we can eat whenever, but I'm uninspired. Or maybe I'll make Six Can. It's an old standby at our house. I try to keep the ingredients on hand because it's easy to throw together and my kids like it.
Six Can Casserole
1 can reduced fat cream of chicken soup
1 can reduced fat cream of mushroom (or celery) soup
1 can Chinese noodles
1 can evaporated skim milk
2 small cans chicken
bread crumb topping optional
Combine the soups and the milk. Flake the chicken and mix it in. Pour in the can of Chinese noodles and mix. Pour into a 9x13 baking dish. Top with bread crumb/butter topping if desired. Bake at 350 about 20-30 minutes or until bubbly. I often use a large can of chicken instead of two cans or sometimes fresh chicken that I've cubed. The recipe is very forgiving, so play around with it.

This sounds good. Can you please tell me what type of noodles to use? Are they the crunchy chow mein noodles?

Fingerling potatoesHi, sorry I didn't answer yesterday. I got them at Wegman's. I've seen them at other grocery stores from time to time as well. They're so good they really don't need anything.Thanks. Guess I'll have to keep looking. There's a more upscale grocery store I go to sometimes, maybe they'll have them there.
Dinner tonight is grilled salmon (if I have enough propane), noodles, sugar snap peas and salad with my pop pop's famous dressing.

You got it, they're chow mein noodles. And they soften in the casserole. It's good. Serve it with a roll and a salad or vegetable and you've got a quick and easy dinner.

Left over shredded beef, twice baked potatos, and strawberry pretzal jell-o.
We had friends over for dinner on Sunday night and there was a lot of food left over. We'll be eating this meal for awhile.

Well my dinner with my friends ROCKED!! The food was awesome and I think they really enjoyed themselves. And it was a good call to skip the appetizer. There was more than enough food and they were very stuffed when they left. It was so funny. I made a huge salad with just greens and tossed in a broccoli, cauliflower, and carrot mix, and chopped up some cremini mushrooms. I made a condiment plate that had red onions, green peppers, cherry tomatoes, black olives, and pine nuts on it. The cool part? Everyone went back for seconds on the salad!! :)
Tonight we are obviously having leftovers :)

Homemade pizza. I have Weight Watchers tonight so Wednesday dinner is always a little on the "treat" side (after weigh in of course!) :thumbsup2

Lindsay, I'm glad that your dinner turned out well, I knew no one would leave your home hungry.
I did not feel well last night so we had Chinese take out. I asked for hot and sour soup, but ended up eating the fried goodies, chicken fingers dumplings and generals chicken :confused3 . It was good, and the soup will be a nice lunch.
I have chicken thoghs thawed out, I'm not sure what I will have. I really want chicken soup, but DH will need something else with it.

tonight will be beef enchiladas (nothing special--using a box kit!)
I thought I would post this recipe that I made for dinner last night--it was definitey "fabulous"!
Aunt Martha's Fabulous Chicken Spaghetti Casserole ( not sure who Aunt Martha is, but her recipe is yummy!)
4 cups cooked chicken, diced
1 lb spaghetti, cooked al dente
3 tbsp butter
2 tbsp flour
1/2 cup milk
1 can chicken broth
1 cup mayo
1 cup sour cream
1 cup Romano cheese
1/3 cup white wine
1 tsp garlic powder
1 tsp Dijon mustard
salt and pepper
8 ounces of sliced fresh mushrooms
Make a basic white sauce by melting 2 tbsp butter in pan, whisking in the flour and cooking until bubbly. Add milk and chicken broth, stirring and cooking until slightly thickened. Set aside and let cool slightly. Then add mayo, sour cream, cheese, wine, mustard, salt and pepper; stirring well to combine. Saute mushrooms in remaining butter. Place mushrooms, chicken, and spaghetti in 3 quart casserole dish. Add sauce and mix well. Sprinkle with additional romano cheese. Bake at 350 for 30 minutes!

Hi Mermaid! I have always done the same thing while on WW...I have not been on program for a while but I am rejoining today. THe treat on weigh in day is always the best!

I am not cooking today. It is my birthday and I'm sick :sick: , ugh. I'm so congested that I was up every hour last night because I couldn't breathe so there is no way I'm going to stand over a stove cooking. I think I'll just run out for fast food before work today.

a simple chicken soup might help, it always makes me feel better, I just boil some boneless, skinless chicken breast in chicken broth, when its done I chop it up or shred it then throw in some simple veggies and season, within an hour its good and I feel better! Fast food is not good for a cold!
